Permanencias culturales y culinarias del Manual de Cocina de Juan Pablo Sanz en Quito (Ecuador): protocolos, cocina tradicional y formas de preparación

La presente tesis analiza el primer Manual de Cocina realizado en Quito y escrito por Juan Pablo Sanz en el siglo XIX. Los objetivos principales de esta investigación son: A) Visibilizar las permanencias culturales y culinarias de este texto en la actualidad, a través del estudio de los diferentes protocolos alimenticios, recetas, artefactos y métodos culinarios. B) Presentar una clasificación de la cocina tradicional y definir sus elementos, a saber: barroca, ritual, festiva y cotidiana. C) Establecer un inventario de aquellas recetas del Manual de Sanz que existen en la cocina quiteña actual. Por otro lado, esta investigación desarrollará una categoría de análisis, tal es el caso del ethos protocolario, que ayudará al estudio social y cultural de la cocina tradicional de Quito y del Ecuador. Para finalizar, se analizarán dos tipos de preparaciones que se practican en los alimentos tradicionales quiteños y ecuatorianos, estas son: Alta Cocina Ecuatoriana y Cocina Tradicional Popular. Su principal finalidad es la diferenciación de los espacios físicos y sociales durante la preparación de estos alimentos.

While looking to the body and finding it engraved by cultural, imaginary and power-related texts through a discourse embodied in itself, this research proposes a new vertiginous approach to it by analyzing the following works: Poesia completa II, more specifically, Educação sentimental, and Novas cartas portuguesas. Such transgressive and performatic works are from Maria Teresa Horta (1937-), Portuguese writer, who proposes a new education by a renewed language: a sentimental education spawned from the erotic element. Starting from the deconstruction of the view over the spoiled body and exposed in Novas cartas portuguesas, from the poetic texts in Educação sentimental, as well as in remaining ones in Poesia completa II, Horta disassembles and reassembles the body, giving a new meaning to the symbols that surround us and our experiences. Other than proposing to all, men and women, such new meaning of the behavior and current practices models, Horta s education allows, through a performance action, the construction of a stage for female identity, free from the phallic influence. A new identity, able to handle all holy and profane characteristics of women, discarding the chromatic lens of sin. Horta s poetry emerges as a new proposal of literary labor

Birds of Santa Teresa, Espírito Santo, Brazil: Do humans add or subtract species?

In uplands and lowlands of Santa Teresa, central Espírito Santo State, Brazil, 405 bird species were confirmed by field, museum, and literature studies. Of these, 16 seem to have disappeared, while 67 other species seem to have been lost from the lowlands (where no large biological reserves exist). Due to a suggestion that human areas add species to beta-diversity, we verified that up to 79 species now present have perhaps invaded with human activity (and 10 others are likely to invade), a total similar to that for lost species. However, lost species are often rare and invading species often widespread, resulting in exchange of Picassos for Coca-Cola bottles. Furthermore, gains exceed losses only when large biological reserves are present, as in the uplands (Nova Lombardia, Santa Lucia Reserves, each with over 250 species). Small or irregular reserves usually lose well over half their species, and these are only partly replaced by the invaders, resulting in net losses of up to half the local avifaunas. If one lists only 31 probable invaders, rather than a possible 79, things are even worse; net losses occur even in the entire township and near reserves, reaching over 200 species around lowland private reserves. Future productive development of human areas can eliminate or maltreat many invading species, too. While approving taxes on improductive use of land, as it leaves other areas free, we suggest that many current local uses, such as for coffee, are luxury production and could, be taxed.

LC-DAD/ESI-MS/MS study of phenolic compounds in ash (Fraxinus excelsior L. and F. americana L.) heartwood. Effect of toasting intensity at cooperage

The phenolic composition of heartwood extracts from Fraxinus excelsior L. and F. americana L., both before and after toasting in cooperage, was studied using LC-DAD/ESI-MS/MS. Low-molecular weight (LMW) phenolic compounds, secoiridoids, phenylethanoid glycosides, dilignols and oligolignols compounds were detected, and 48 were identified, or tentatively characterized, on the basis of their retention time, UV/Vis and MS spectra, and MS fragmentation patterns. Some LMW phenolic compounds like protocatechuic acid and aldehyde, hydroxytyrosol and tyrosol, were unlike to those for oak wood, while ellagic and gallic acid were not found. The toasting of wood resulted in a progressive increase in lignin degradation products with regard to toasting intensity. The levels of some of these compounds in medium-toasted ash woods were much higher than those normally detected in toasted oak, highlighting vanillin levels, thus a more pronounced vanilla character can be expected when using toasted ash wood in the aging wines. Moreover, in seasoned wood, we found a great variety of phenolic compounds which had not been found in oak wood, especially oleuropein, ligstroside and olivil, along with verbascoside and isoverbascoside in F. excelsior, and oleoside in F. americana. Toasting mainly provoked their degradation, thus in medium-toasted wood, only four of them were detected. This resulted in a minor differentiation between toasted ash and oak woods. The absence of tannins in ash wood, which are very important in oak wood, is another peculiar characteristic that should be taken into account when considering its use in cooperage.
