El presente estudio es de tipo analítico, cohorte retrospectiva, tiene como objeto estudiar un modelo de prestación de servicios de salud bajo el concepto de red integrada, conformada por las clínicas privadas de segundo y tercer nivel de complejidad del municipio de Sogamoso (Boyacá). Se analizó el período comprendido entre los años 2012 a 2014, donde se puede evidenciar la implementación y puesta en marcha del modelo. En el mes de agosto del año 2012, la estrategia de asociatividad la adelantaron las tres instituciones de manera libre y autónoma, utilizando como guía la metodología propuesta por la Cepal en el año 2010; las diferencias entre esta metodología y el modelo utilizado se deben a las particularidades de las clínicas y del contexto en el que se desarrolló. Este modelo de atención surgió de la necesidad de prestar los servicios de salud ofertados por las clínicas, acorde con su capacidad instalada, al total de la población de la Nueva EPS en Sogamoso, que en ese momento coyuntural no se estaba cumpliendo en el municipio, y ninguna de las instituciones tenía la infraestructura individual para atender a toda su población. El resultado de la asociación de las tres clínicas se logró gracias a un grado de confianza previo entre los directivos de las instituciones y posterior a varias reuniones, en las que se tomó la determinación de trabajar con el modelo de Unión Temporal, ya que no son una persona jurídica diferente a las que la conforman Se demuestra el impacto de este modelo asociativo de cada una de las organizaciones que la componen evaluando cuatro ámbitos como la capacidad de aprendizaje, capacidad de gestión estratégica, economía de escala y poder de negociación y externalidades. Para la recolección de la información se utilizaron las bases de datos de las instituciones hospitalarias con la información de los indicadores de oportunidad, así como el incremento de la facturación y del recaudo antes y después de la formación de la Unión Temporal; adicionalmente se realizaron encuestas a los directores de las clínicas como fuente de información para desarrollo de nuevos productos, reducción de costos, ampliación de la oferta hospitalaria, establecimientos de alianza, puesta en marcha de servicios comunes y apertura de nuevos mercados. Sumado a lo anterior, se realizó una encuesta adicional a los usuarios del nuevo producto desarrollado. Como resultado de este estudio se encuentra beneficio en todos los ámbitos evaluados para las instituciones que interactúan bajo este modelo y se espera que obtengan los mismos beneficios que los demás actores participantes en él, como las EAPB, los cuales no hacen parte del presente estudio. En Colombia no se observa la existencia de un modelo similar en sistema de salud, a pesar del leve intento de la Ley 1438 del 2011 por iniciar la conformación de redes; por esta razón se puede decir que este estudio marca un derrotero para que las organizaciones de salud tengan un modelo de articulación ante la falta de desarrollos de esquemas de red y por tratarse de un modelo con ausencia de reglamentación.

La revolución del internet ha llevado a muchos cambios. Con el paso del tiempo, dependemos menos de los papeles y más de los archivos digitales. Los niveles de información han incrementado exponencialmente y la interconectividad que han brindado servicios como redes sociales se encuentra en niveles jamás pensados hace media década. Sin embargo, el mercado laboral tradicional ha visto pocos cambios; a pesar de que han surgido numerosas ocupaciones y desaparecido puestos del mismo modo, la gran mayoría de personas se ven obligadas a buscar el sustento propio y de sus familias dedicándole una cantidad considerable de tiempo a su trabajo y dejando de lado muchos otros asuntos pertinentes al hogar, a los negocios e incluso asuntos personales. El sistema de adquisición de servicios se encuentra completamente estancado. En Colombia, según cifras de 2011 del Departamento Administrativo Nacional de Estadistica (DANE), existen más de 10 millones de viviendas y más de 500.000 establecimientos de comercio, que por lo menos una vez por año tienen un reparo para hacer, por esta razón, se genera una amplia demanda en la prestación de este tipo de servicios. Miles de personas continúan sin encontrar servicios específicos a sus necesidades en el momento adecuado, incluso cuando existe dinero destinado hacia los mismos, en gran parte debido a los esquemas tradicionales y la inhabilidad de conectar necesidades con servicios. Este emprendimiento busca cambiar ese esquema tradicional de las páginas amarillas, los clasificados y otras fuentes que se han quedado en el siglo XX como medio publicitario de trabajos realizados por independientes en temas relacionados con el hogar u oficina y abrir camino hacia una nueva forma de encontrar un apareamiento en tiempo real y enfocado en los consumidores, creando una sitio web y posteriormente aplicaciones móviles, en la que cada cliente puede comparar los precios estandarizados de cada servicio del hogar, pagar electrónicamente lo pactado y dejar calificaciones del servicio posteriormente; cambiando el estilo de negociación de modo más formal y bajo un esquema que logre acuerdos mutuamente beneficiales. En el corto plazo, se busca que las personas puedan considerar alternativas a los esquemas existentes para dar a satisfacer sus necesidades. En el mediano y largo plazo el objetivo del 4 proyecto es romper los paradigmas en los mismos que se han mantenido desde tanto tiempo y revolucionar su funcionamiento conforme a las herramientas existentes en la actualidad. El siguiente proyecto tiene como propuesta proveer una solución completa para los hogares y establecimientos comerciales en términos de adquisición de servicios prestados por personas independientes y con poca o nula regulación en el mercado actual. Es una propuesta que permite cambiar la logística y el modelo de negociación de mediante una herramienta virtual que adicionalmente brinde una respuesta más rápida y facilidad de uso.

Introducción: Las estadísticas de siniestralidad laboral son el negativo de las condiciones de trabajo de la economía de un país. Las indeseables condiciones de trabajo que predominan en la actualidad probablemente sean consecuencia de las crecientes contrataciones temporales lo cual conduce a que se incrementen los accidentes de trabajo, debido a la pobre inversión en el área de riesgos laborales. Objetivo: Evaluación de la siniestralidad en pequeñas y medianas empresas de los sectores económicos de la regional centro en una aseguradora de riesgos laborales, Colombia, 2014. Materiales y métodos: Estudio tipo observacional descriptivo, retrospectivo, realizado a 14.994 eventos calificados como accidentes de trabajo en una aseguradora de riesgos laborales dela regional centro durante Enero a Diciembre del años 2014. Resultados: La mayor incidencia de accidentalidad fue en el sector económico de establecimientos financieros, seguros, actividades inmobiliarias y servicios a las empresas, con un 36.9%. Se encontró que el riesgo que genero mayor accidentalidad fue caída a nivel con un 17.2%. El grupo diagnostico que predomino fue el de heridas superficiales y heridas abiertas con un 77.4%. El tipo de atención que genero mayores atenciones fue la atención ambulatoria con 93.1%. Conclusión: El sector económico que se vio mayormente afectado en accidentalidad laboral fue el de establecimientos financieros, seguros, actividades inmobiliarias y servicios a las empresas. Al asociar dicho sector económico con el tipo de riesgo se determinó que el riesgo por lesión en accidente deportivo fue de un 61%, predisponiendo este al desarrollo de accidentalidad laboral. Por lo anterior se deben hacerr estrategias de intervención de prevención y promoción en las pequeñas y medianas empresas y como consecuencia disminuir las tasas de siniestralidad e impactar de manera positiva en la salud de los trabajadores, en las tasas de ausentismo laboral y el costo asistencial.

Durant la Guerra Civil, els quàquers es van plantejar ajuda calia detectar els punts de conflicte a Catalunya i cercar l'ajuda directa i alimentar els infants a través de les cantines per evitar desplaçaments que desarrelessin encara més els infants refugiats. Després van veure la necessitat de recolzar i organitzar colònies infantils al camp i a la muntanya per tal d'allunyar els infants dels focus insalubres i destruïts, estimular el seu estat de salut, millorar la seva educació i superar l'estat de desnutrició. Els testimonis en parlen agraïts. La xarxa que van establir els quàquers fou coherents, cohesionada i eficaç. També van coordinar algunes fonts d'ajuda humanitària de procedència estrangera a través d'una Comissió Internacional per tal d'unificar criteris de treball, aprofitar millor els recursos i canalitzar de manera òptima l'ajut econòmic i en espècies que arribava de diferents països. La seva ajuda fou excel·lent i van salvar moltes vides.

RESUMO: A violência escolar, entendida como todo ato praticado de maneira isolada ou em grupo nas instituições de ensino ou em suas redondezas, envolvendo o corpo discente e/ou docente desses estabelecimentos, é uma realidade vivenciada pelos mesmos e reconhecida por toda a sociedade. Nessa perspectiva, a presente pesquisa investigou a problemática nas instituições de ensino público da Cidade de Aracaju, capital de Sergipe, Brasil. A pesquisa possibilitou demonstrar algumas das causas e consequências da violência, e entender os motivos que permitem o seu desenvolvimento em escolas públicas, campo da pesquisa, com subsídios não somente na ciência da educação como também na ciência jurídica, visto que fundamenta suas ideias em Leis e Normas que orientam e tipificam o comportamento do indivíduo na sociedade. Nesta pesquisa – de caráter exploratório e descritivo, de cunho analítico, coerente com as questões e objetivos propostos ao objeto de estudo – recorreu-se a uma pesquisa de campo com análise quali-quantitativa com resultados apresentados em gráficos, quadros e registros de ocorrência, utilizando como universo pesquisado escolas públicas municipais de Aracaju, através de questionário aplicado aos diretores e funcionários em visita “in loco”. A pesquisa é baseada em teorias que fundamentam os resultados encontrados de que o “homem é produto do meio”, isto é, a sociedade em que vive e a família têm uma influência e um papel fundamental na formação da personalidade do indivíduo, seja ele bom ou ruim. ABSTRACT: The school violence, understood as any act performed in isolation or in groups in educational institutions or in its surroundings, involving the student body and / or teaching of these establishments, is a reality faced by them and recognized throughout society. From this perspective, this research investigated the issue in public education institutions in the city of Aracaju, capital of Sergipe, Brazil. The research allow us to demonstrate some of the causes and consequences of violence, and understand the reasons that allow its development in public schools, field of research, with subsidies not only in science education as well as in legal science, since it bases its ideas on Laws and Regulations that guide and typify the behavior of the individual in society. In this research, exploratory and descriptive character, of an analytical view, consistent with the proposed objectives and issues to the object of this study - resorted to a field research with quantitative and qualitative analysis with results presented in graphs, charts and records of occurrence, using as group studied public schools in Aracaju, through a questionnaire applied to directors and employees to visit in the place. The research is based on theories that motivate the results found that “the man is the product of the environment”, this means, the society in which they live and the family have an influence and a key role in shaping the character of the individual, be it good or bad. Os cosméticos sempre estiveram presentes desde os primórdios da Humanidade, existindo actualmente uma enorme panóplia de produtos ao alcance dos consumidores. Desde sempre o homem se preocupou com a sua aparência e para tal utilizou os cosméticos como forma de realçar a sua beleza. Durante o século XIX a área dos cosméticos e da farmácia sofreu uma grande evolução devido à revolução industrial e ao aparecimento de novas tecnologias. No século XIX surgiram pela primeira vez métodos de eliminação de rugas, de embelezamento do rosto e na higiene deu-se importância aos banhos com a criação dos balneários públicos. A crescente procura de beleza levou à criação de produtos cosméticos diversos, alguns dos quais perigosos para a saúde, sendo este um dos pontos a abordar nesta tese. Os cosméticos serão abordados como um bem de luxo num país que vivia em extrema pobreza. Serão abordados outros pontos como a importância de produtos cosméticos estrangeiros e efectuar-se-á uma comparação entre um cosmético actual e um do século XIX. A Farmácia em Portugal sofreu profundas alterações no século XIX. A botica deu lugar à farmácia e a produção de medicamentos que anteriormente era feita artesanalmente, passou a ser feita industrialmente. A extinção das ordens religiosas em Portugal em 1834 foi crucial para o desenvolvimento das farmácias. O encerramento das farmácias dos mosteiros originou uma maior viabilização e abrangência territorial dos estabelecimentos privados. Este foi o momento na história da farmácia em Portugal que levou à formação do associativismo. O avanço da produção científica e da literatura técnico profissional que se verificava por toda a Europa também se repercutiu em Portugal. Como exemplo da Literatura Farmacêutica Portuguesa neste século temos a publicação do Codigo Pharmaceutico lusitano. Com o surgimento da era industrial e consequente aumento dos bens produzidos, aperfeiçoou-se a técnica publicitária que deixou de ser unicamente informativa para ser mais persuasiva e agressiva levando o consumidor a comprar. Com esta tese de mestrado tenta-se demonstrar o impacto da revolução industrial no Farmacêutico em Portugal e avaliar a sua resposta às necessidades de mercado. O profissional de saúde deverá apreender rapidamente conhecimento de modo a não perder a sua identidade.

En el artículo se presentan y analizan algunos de los principales elementos que han hecho parte del imaginario sobre la frontera. Dentro de este imaginario, señala el autor, se inscriben por lo menos tres tópicos que circulan y se resignifican: se trata de zonas en las que impera el desorden y cuyo referente es jurídico, son regiones en donde la democracia está poco consolidada y su referente es político, y son án1bitos en donde es posible que reditúe la guerra y el referente es militar. Estos tópicos fueron la base a partir de la cual se entendió y describió la zona de frontera por parte de algunos intelectuales a finales de los años 80, llegando a convertir de esta forma, a la frontera, en depositaria de inseguridad. De acuerdo con el autor, el manejo de este tipo de discurso no ha permitido realizar un análisis real de la situación de las sociedades de frontera y se tiende a caer en lugares comunes propios de este discurso.

This paper investigates the extent to which office activity contributes to travel-related CO2 emission. Using ‘end-user’ figures[1], travel accounts for 32% of UK CO2 emission (Commission for Integrated Transport, 2007) and commuting and business travel accounts for a fifth of transport-related CO2 emissions, equating to 6.4% of total UK emissions (Building Research Establishment, 2000). Figures from the Department for Transport (2006) report that 70% of commuting trips were made by car, accounting for 73% of all commuting miles travelled. In assessing the environmental performance of an office building, the paper questions whether commuting and business travel-related CO2 emission is being properly assessed. For example, are office buildings in locations that are easily accessible by public transport being sufficiently rewarded? The de facto method for assessing the environmental performance of office buildings in the UK is the Building Research Establishment’s Environmental Assessment Method (BREEAM). Using data for Bristol, this paper examines firstly whether BREEAM places sufficient weight on travel-related CO2 emission in comparison with building operation-related CO2 emission, and secondly whether the methodology for assigning credits for travel-related CO2 emission efficiency is capable of discerning intra-urban differences in location such as city centre and out-of-town. The results show that, despite CO2 emission per worker from building operation and travel being comparable, there is a substantial difference in the credit-weighting allocated to each. Under the current version of BREEAM for offices, only a maximum of 4% of the available credits can be awarded for ensuring the office location is environmentally sustainable. The results also show that all locations within the established city centre of Bristol will receive maximum BREEAM credits. Given the parameters of the test there is little to distinguish one city centre location from another and out of town only one office location receives any credits. It would appear from these results that the assessment method is not able to discern subtle differences in the sustainability of office locations

Objective: To identify and assess healthy eating policies at national level which have been evaluated in terms of their impact on awareness of healthy eating, food consumption, health outcome or cost/benefit. Design: Review of policy documents and their evaluations when available. Setting: European Member States. Subjects: One hundred and twenty-one policy documents revised, 107 retained. Results: Of the 107 selected interventions, twenty-two had been evaluated for their impact on awareness or knowledge and twenty-seven for their impact on consumption. Furthermore sixteen interventions provided an evaluation of health impact, while three actions specifically measured any cost/benefit ratio. The indicators used in these evaluations were in most cases not comparable. Evaluation was more often found for public information campaigns, regulation of meals at schools/canteens and nutrition education programmes. Conclusions: The study highlights the need not only to develop harmonized and verifiable procedures but also indicators for measuring effectiveness and success and for comparing between interventions and countries. EU policies are recommended to provide a set of indicators that may be measured consistently and regularly in all countries. Furthermore, public information campaigns should be accompanied by other interventions, as evaluations may show an impact on awareness and intention, but rarely on consumption patterns and health outcome.

The African Technology Policy Studies Network (ATPS) is a multidisciplinary network of researchers, private sector actors, policymakers and civil society. ATPS has the vision to become the leading international centre of excellence and reference in science, technology and innovation (STI) systems research, training and capacity building, communication and sensitization, knowledge brokerage, policy advocacy and outreach in Africa. It has a Regional Secretariat in Nairobi Kenya, and operates through national chapters in 29 countries (including 27 in Africa and two Chapters in the United Kingdom and USA for Africans in the Diaspora) with an expansion plan to cover the entire continent by 2015. The ATPS Phase VI Strategic Plan aims to improve the understanding and functioning of STI processes and systems to strengthen the learning capacity, social responses, and governance of STI for addressing Africa's development challenges, with a specific focus on the Millennium Development Goals (MDGs). A team of external evaluators carried out a midterm review to assess the effectiveness and efficiency of the implementation of the Strategic Plan for the period January 1, 2009 to December 31, 2010. The evaluation methodology involved multiple quantitative and qualitative methods to assess the qualitative and quantitative inputs (human resources, financial resources, time, etc.) into ATPS activities (both thematic and facilitative) and their tangible and intangible outputs, outcomes and impacts. Methods included a questionnaire survey of ATPS members and stakeholders, key informant interviews, and focus group discussions (FGDs) with members in six countries. Effectiveness of Programmes Under all six strategic goals, very good progress has been made towards planned outputs and outcomes. This is evidenced by key performance indicators (KPIs) generated from desk review, ratings from the survey respondents, and the themes that run through the FGDs. Institutional and Programme Cost Effectiveness Institutional Effectiveness: assessment of institutional effectiveness suggests that adequate management frameworks are in place and are being used effectively and transparently. Also technical and financial accounting mechanisms are being followed in accordance with grant agreements and with global good practice. This is evidenced by KPIs generated from desk review. Programme Cost Effectiveness: assessment of cost-effectiveness of execution of programmes shows that organisational structure is efficient, delivering high quality, relevant research at relatively low cost by international standards. The evidence includes KPIs from desk review: administrative costs to programme cost ratio has fallen steadily, to around 10%; average size of research grants is modest, without compromising quality. There is high level of pro bono input by ATPS members. ATPS Programmes Strategic Evaluation ATPS research and STI related activities are indeed unique and well aligned with STI issues and needs facing Africa and globally. The multi-disciplinary and trans-boundary nature of the research activities are creating a unique group of research scientists. The ATPS approach to research and STI issues is paving the way for the so called Third Generation University (3GU). Understanding this unique positioning, an increasing number of international multilateral agencies are seeking partnership with ATPS. ATPS is seeing an increasing level of funding commitments by Donor Partners. Recommendations for ATPS Continued Growth and Effectiveness On-going reform of ATPS administrative structure to continue The on-going reforms that have taken place within the Board, Regional Secretariat, and at the National Chapter coordination levels are welcomed. Such reform should continue until fully functional corporate governance policy and practices are fully established and implemented across the ATPS governance structures. This will further strengthen ATPS to achieve the vision of being the leading STI policy brokerage organization in Africa. Although training in corporate governance has been carried out for all sectors of ATPS leadership structure in recent time, there is some evidence that these systems have not yet been fully implemented effectively within all the governance structures of the organization, especially at the Board and National chapter levels. Future training should emphasize practical application with exercises relevant to ATPS leadership structure from the Board to the National Chapter levels. Training on Transformational Leadership - Leading a Change Though a subject of intense debate amongst economists and social scientists, it is generally agreed that cultural mindsets and attitudes could enhance and/or hinder organizational progress. ATPS’s vision demands transformational leadership skills amongst its leaders from the Board members to the National Chapter Coordinators. To lead such a change, ATPS leaders must understand and avoid personal and cultural mindsets and value systems that hinder change, while embracing those that enhance it. It requires deliberate assessment of cultural, behavioural patterns that could hinder progress and the willingness to be recast into cultural and personal habits that make for progress. Improvement of relationship amongst the Board, Secretariat, and National Chapters A large number of ATPS members and stakeholders feel they do not have effective communications and/or access to Board, National Chapter Coordinators and Regional Secretariat activities. Effort should be made to improve the implementation of ATPS communication strategy to improve on information flows amongst the ATPS management and the members. The results of the survey and the FGDs suggest that progress has been made during the past two years in this direction, but more could be done to ensure effective flow of pertinent information to members following ATPS communications channels. Strategies for Increased Funding for National Chapters There is a big gap between the fundraising skills of the Regional Secretariat and those of the National Coordinators. In some cases, funds successfully raised by the Secretariat and disbursed to national chapters were not followed up with timely progress and financial reports by some national chapters. Adequate training in relevant skills required for effective interactions with STI key policy players should be conducted regularly for National Chapter coordinators and ATPS members. The ongoing training in grant writing should continue and be made continent-wide if funding permits. Funding of National Chapters should be strategic such that capacity in a specific area of research is built which, with time, will not only lead to a strong research capacity in that area, but also strengthen academic programmes. For example, a strong climate change programme is emerging at University of Nigeria Nsukka (UNN), with strong collaborations with Universities from neighbouring States. Strategies to Increase National Government buy-in and support for STI Translating STI research outcomes into policies requires a great deal of emotional intelligence, skills which are often lacking in the first and second generation universities. In the epoch of the science-based or 2GUs, governments were content with universities carrying out scientific research and providing scientific education. Now they desire to see universities as incubators of new science- or technology-based commercial activities, whether by existing firms or start-ups. Hence, governments demand that universities take an active and leading role in the exploitation of their knowledge and they are willing to make funds available to support such activities. Thus, for universities to gain the attention of national leadership they must become centres of excellence and explicit instruments of economic development in the knowledge-based economy. The universities must do this while working collaboratively with government departments, parastatals, and institutions and dedicated research establishments. ATPS should anticipate these shifting changes and devise programmes to assist both government and universities to relate effectively. New administrative structures in member organizations to sustain and manage the emerging STI multidisciplinary teams Second Generation universities (2GUs) tend to focus on pure science and often do not regard the application of their know-how as their task. In contrast, Third Generation Universities (3GUs) objectively stimulate techno-starters – students or academics – to pursue the exploitation or commercialisation of the knowledge they generate. They view this as being equal in importance to the objectives of scientific research and education. Administratively, research in the 2GU era was mainly monodisciplinary and departments were structured along disciplines. The emerging interdisciplinary scientific teams with focus on specific research areas functionally work against the current mono-disciplinary faculty-based, administrative structure of 2GUs. For interdisciplinary teams, the current faculty system is an obstacle. There is a need for new organisational forms for university management that can create responsibilities for the task of know-how exploitation. ATPS must anticipate this and begin to strategize solutions for their member institutions to transition to 3Gus administrative structure, otherwise ATPS growth will plateau, and progress achieved so far may be stunted.

The effects and influence of the Building Research Establishment’s Environmental Assessment Methods (BREEAM) on construction professionals are examined. Most discussions of building assessment methods focus on either the formal tool or the finished product. In contrast, BREEAM is analysed here as a social technology using Michel Foucault’s theory of governmentality. Interview data are used to explore the effect of BREEAM on visibilities, knowledge, techniques and professional identities. The analysis highlights a number of features of the BREEAM assessment process which generally go unremarked: professional and public understandings of the method, the deployment of different types of knowledge and their implication for the authority and legitimacy of the tool, and the effect of BREEAM on standard practice. The analysis finds that BREEAM’s primary effect is through its impact on standard practices. Other effects include the use of assessment methods to defend design decisions, its role in both operationalizing and obscuring the concept of green buildings, and the effect of tensions between project and method requirements for the authority of the tool. A reflection on assessment methods as neo-liberal tools and their adequacy for the promotion of sustainable construction suggests several limitations of lock-in that hinder variation and wider systemic change.

Academic and industrial literature concerning the energy consumption of commercial kitchens is scarce. Electricity consumption data were collected from distribution board current transformers in a sample of fourteen UK public house restaurants. This was set up to identify patterns of appliance use as well as to assess the total energy consumption of these establishments. The electricity consumption in the selected commercial kitchens was significantly higher than current literature estimates. On average, 63% of the premises electricity consumption was attributed to the catering activity. Key appliances that contributed to the samples average electricity consumption were identified as refrigeration (70 kwh, 41%), fryers (11 kwh, 13%), combi-ovens (35 kwh, 12%) bain maries (27 kwh, 9%) and grills (37kwh, 12%). Behavioral factors and poor maintenance were identified as major contributors to excessive electricity usage with potential savings of 70% and 45% respectively. Initiatives are required to influence operator behavior, such as the expansion of mandatory energy labeling, improved feedback information and the use of behavior change campaigns. Strict maintenance protocols and more appropriate sizing of refrigeration would be of great benefit to energy reduction.

Academic and industrial literature concerning the energy use of commercial kitchens is scarce. Electricity consumption data were collected from distribution board current transformers in a sample of fourteen UK public house-restaurants. This was set up to identify patterns of appliance use as well as to assess the total energy consumption of these establishments. The electricity consumption in the selected commercial kitchens was significantly higher than current literature estimates. On average, 63% of the premises’ electricity consumption was attributed to the catering activity. Key appliances that contributed to the samples average daily electricity consumption of the kitchen were identified as refrigeration (70 kWh, 41%), fryers (11 kWh, 13%), combination ovens (35 kWh, 12%), bain maries (27 kWh, 9%) and grills (37 kWh, 12%).
