During storage of Tilapia nilotica in refrigerated brine at 4°C, the whole (ungutted) fish had higher levels of free fatty acid and spoiled faster than the gutted fish. The shelf life of whole fish was 16 days and that of gutted 28 days; these values are, at least, as good as those reported for ice storage. Flavour of the cooked fish appeared to be the quahty-hm1tmg factor reducing the shelf-life of gutted tilapia to 28 days even though the raw gutted fish was judged acceptable, after 31 days retaining 65-70% freshness.

Studies to find out the suitability of tuna red meat for preparation of wafers have indicated that the red meat as such is not a good raw material for the production of wafers. The wafers obtained had poor organoleptic quality and characteristic tuna red meat flavour unacceptable to consumers. Attempts to prepare the wafers with the red meat mixed with the meat of barracuda in varying proportions showed that the mixture of red meat and barracuda meat in the ratio 1:3 gives a product having excellent physical properties and good swelling characteristics. The overall organoleptic quality of these wafers was very much comparable to the wafers produced from other quality fish. Increasing the proportion of red meat not only affects the overall appearance of the product but a1so imparts the red meat taste to the product.

Results of a preliminary study of the hexane extractable carbonyls from three fish and one shell fish are reported. Volatile carbonyls that can be isolated from oil sardine by distillation at different temperatures in air or nitrogen atmosphere were also studied. Carbonyls were converted to their 2:4 dinitro phenyl hydrozones. These were fractionated by column chromatography and the different fractions were analysed by capillary gas chromatography. The data show wide variations in the content of different carbonyls in different fishes. Carbonyls in distillates from muscle water homogenates of oil sardine showed some differences from the carbonyls extracted with hexane from the same fish. More data is necessary to correlate the carbonyls with the characteristic flavour of each fish.

A new canning procedure for squid mantles aimed at increasing the fill and retaining the sweet flavour of squids was evolved. In the new method, after blanching smaller mantles are inserted inside bigger ones to reduce voids and thus increase the fill to 56% and above as compared to 46% when packed as rings. In addition, spent blanching medium containing desirable flavour constituents of squid was modified and used as covering medium which increased the flavour of canned product.

The effects of preservatives like fat coated sorbic acid (FCSA) and glucono-deltalactone (D-lactone), both separately and in combination, on the shelf life of high temperature (115.6°C for 20 min) processed fish sausage, stored at three different temperatures namely, ambient (28±2° C), cooler storage (2±2°C) and refrigerator (10±2° C) were studied. Whereas the control (without preservative), FCSA, D-lactone and FCSA + D-lactone treated samples could be stored for 9, 11 and 13 days respectively at ambient temperature, those stored at lower temperatures were found to be in acceptable condition for 70 and 80 days respectively. Organoleptic evaluation of taste, flavour the products carried out by panelists revealed that FCSA and FCSA + D-lactone treated samples were unacceptable with regard to the taste, flavour and texture. However, the taste flavour and texture of the control and D-lactone treated samples were in acceptable condition.

Studies on the biochemical composition of crab meat from body and claw revealed marked differences in relation to flavour. Protein content is on the higher side in crabs (19.1 to 20.9%) with high percentage of free amino acids and phosphorus and less carbohydrate and fat. The variation in composition due to the presence of eggs in female crabs and the importance of claw liquor and its composition are reported.

Results of experiments conducted to work out a process for canning fresh water fish rohu (Labeo rohita) from culture sources are presented. In order to impart a proper firm texture to the meat cold blanching the skinless boneless meat in 15% brine containing 0.25% calcium chloride was found necessary. Increasing the concentration of calcium chloride beyond 0.25% resulted in impairing the quality of meat, the texture becoming more fibrous and the flavour being adversely affected. Other firming agents tried did not yield any beneficial effect. The meat so blanched yielded a good product when canned in natural style.

Fish muscle pieces and mince from sciaenids can be preserved for 72 and 48 h respectively at ambient temperature (34°C ± 4.5) in media containing 8% NaCl, 0.2% sodium benzoate and 0.5% potassium sorbate. Incorporation of 0.1% sodium bisulphite in this media slightly improved the texture and flavour of minced fish.

Silver pomfret (Pampus argenteus) was frozen in the fresh condition as well as after holding in ice for one, two and four days. Evaluation of changes in the quality of these samples during storage at -18°C has shown that shelf-life decreased sharply if the pre-freezing iced storage was more than one day. The shelf-life of one day iced, two day iced and four day iced frozen samples were 32, 20 and 16 weeks respectively. No correlation was observed between the peroxide value and the organoleptic detection of rancid flavour. Levels of free fatty acids were more in the samples frozen after storage in ice for one day than in all the other samples.

A simple and effective method is suggested to improve the quality and shelf-life of commercial whole dried thelly prawns (Metapenaeus dobsoni). Treatment of whole prawns in 10% brine containing 0.1% citric acid for 20 min followed by drying in sun yield a product having good physical, chemical and organoleptic characteristics. Retardation of fungal incidence, reduction in total volatile nitrogen (TVBN) and improvement in flavour are some of the advantages of the treatment. The treated product has a shelf-life around 30 weeks compared to 20 weeks for untreated control and 7 weeks for commercial sample.

Changes in the total as well as major individual carbonyls of oil sardine muscle during storage at room temperature for 24 h and in crushed ice up to 6 days are reported. Carbonyls extracted with hexane were converted to their 2:4 dinitrophenyl hydrazone (DNPH) derivatives and were separated into major classes by column chromatography on celite/magnesia. Individual carbonyls were then identified by capillary gas chromatography of these derivatives. Though absolute values for carbonyls exhibited wide variations depending upon the degree of freshness, the pattern of changes in the carbonyls during storage of fish under different conditions gave an insight into the influence of carbonyls on flavour. The significance of the findings is discussed.

Changes in the total as well as major individual carbonyls of oil sardine during steam cooking, oven drying, sun drying and freeze drying are presented. Carbonyls extracted with hexane were converted to their 2:4 dinitro phenyl hydrazone (DNPH) derivatives and were separated into major classes by column chromatography on celite/magnesia. Individual carbonyls were then identified by capillary gas chromatography of the DNPH derivatives. Dehydration and heating increase the carbonyl production from highly unsaturated fish lipids. The carbonyls produced react with other muscle constituents leading to complex changes. The influence of the mode of dehydration on these different aspects and their net effect on flavour are discussed.

Proximate composition, PH, total aerabic counts, coliform counts, appearance and taste of dried Lake Tanganyika sardine (Limnothrissa miodon and Stolothrissa tanganicae) sampled at Lusaka markets were analysed for the period July 1969 to February 1970. Water content for the dried sardine varied between 7 and l4% and oil content between 8 and 14% according to season. Flavour of the cooked sardine was scored as good to fair, which discredits the common belief that is poor in quality. Cooked fish scores correlated poorly to the oil content and bacterial counts of the dried fish.
