A industrialização de frutas permite que os consumidores usufruam seus benefícios funcionais; porém, na maioria das vezes, o processamento produz resíduos industriais que normalmente não são aproveitados. Desta forma, o bagaço do mirtilo é um subproduto da fermentação que geralmente é desprezado na natureza, originando poluição ambiental. Este trabalho objetivou a caracterização físico-química, a determinação da atividade antioxidante, antocianinas e polifenóis do fruto de mirtilo, bagaço de mirtilo proveniente da produção de bebidas fermentadas e da farinha obtida deste bagaço, bem como as propriedades funcionais tecnológicas e a estabilidade microbiológica destas farinhas. As farinhas do fruto e do bagaço foram obtidas a partir da desidratação em estufa a 60 ºC, por 36 h, e moídos em micromoinho refrigerado a 4 ºC. As características físico-químicas foram verificadas a partir das análises de umidade, proteína, lipídeos, cinzas, acidez, pH e sólidos solúveis. A atividade antioxidante foi determinada pelo método DPPH, e os polifenóis totais, pelo método de Folin-Ciocalteu. Os resultados demonstram que tanto o mirtilo quanto o bagaço possuem elevado conteúdo de água. O mirtilo apresentou 61,67 mg/100 g em antocianinas, 431,43 mg EAG/100 g em polifenóis e 3,83 mg/mL de atividade antioxidante, enquanto o bagaço obteve 57,32 mg/100 g; 297,20 mg EAG/100 g; 5,61 mg/mL, respectivamente. As farinhas apresentaram estabilidade microbiológica durante o armazenamento e propriedades funcionais tecnológicas adequadas, possibilitando a geração de novos produtos. Portanto, o aproveitamento de resíduos industriais de mirtilo fermentado apresenta vantagens de agregar valor e minimizar o impacto no meio ambiente.

RESUMOA semente da munguba (Pachira aquatica Aubl.) contém amêndoas que exibem um conteúdo excelente de óleo e um percentualsignificativo em proteínas. Propositou-se determinar algumas propriedades funcionais das proteínas de amêndoas damunguba com o objetivo de instituir sua utilização na indústria de alimentos. O teor lipídico foi de 46,62%, o proteico de 13,75% e na forma de torta apresentou um índice de 28,27% de proteínas. Obtiveram-se doisisolados proteicos, o IP 2,0 e o IP 10,0, decorrentes de duas condições de pH (2,0 e 10,0). Na obtenção dos isolados proteicos, os índices em proteínas extraídas foram de 38,52% para o IP 2,0 e 82,06% para o IP 10,0. Os índices de proteínas recuperadas através da precipitação isoelétrica foram de 23,35% para o IP 2,0 e de 70,94%para o IP 10,0, em pH 5,0. As propriedades funcionais exibiram solubilidade mínima em pH 5,0, no pontoisoelétrico (pI), sendo mais elevada em pH ácido e alcalino do pI. As melhores capacidades de absorçãode água e de óleo exibidas foram para o IP 10,0. As propriedades emulsificantes foram dependentes do pH para os dois isolados, e o IP 10,0 indicou melhores resultados. As propriedades funcionais estudadas permitem o emprego dos isolados proteicos em produtos alimentícios que requerem alta solubilidade, tais como os produtos de panificação, massas em geral, sopas desidratadas e molhos, produtos que exigem desempenho na absorção do óleo, como as carnes simuladas, e em produtos que requerem poderes emulsificantes.

O câncer de mama é um dos mais prevalentes nas mulheres. A mamografia é um excelente método com impacto comprovado na redução da mortalidade pelo câncer de mama. Porém, não é um método perfeito, apresentando alguns pontos fracos, principalmente no rastreamento de mulheres com mamas densas, estadiamento e avaliação de tratamento. A ressonância magnética mamária mostrou a necessidade e importância da avaliação funcional mamária. Descrevemos dois métodos de avaliação funcional mamária e demonstramos nossa experiência com a mamografia digital com contraste e com a imagem molecular mamária realizada em gama-câmara específica. Estes dois métodos já estão disponíveis em nosso meio e apresentam resultados promissores na detecção de lesões mamográficas ocultas, confirmação de lesões suspeitas e redução de biópsias desnecessárias, podendo assim melhorar o estudo mamário, principalmente nos pontos falhos da mamografia.

Seeds Citrus oils (C. sinensis, C. limon and C. reticulata) extraction with hexane in a soxhlet apparatus and through supercritical fluid (CO2) were done. Besides triglycerides, the oils obtained with hexane comprised volatile compounds such as terpenes and fatty alcohols, esters, and aldehydes. However, the oils obtained by extraction with supercritical fluid presented only triglycerides. These results indicate that the extraction using supercritical fluid presents better selectivity. The activity of the oils on the development of the ant symbiotic fungus, Leucoagaricus gongylophorus, showed week activity and the topic insecticide assay showed better activity for the tangerine seed oil.

Adopting the perspective of human health risk assessment, an interdisciplinary research group has been investigating since 1998 the quality of mussels and oysters cultivated in coastal zones of Santa Catarina State. Evaluation of physico-chemical parameters considered relevant in measuring the degree of eutrophication showed values compatible with the dynamics of well balanced environmental systems. Concentrations of metallic and semi-metallic elements in seawater and bivalves were found to be similar to or lower than those found in Chile, Greenland and the USA. Further investigations focusing upon sediments will provide new and useful data for the management of sustainable mariculture strategies in Brazil.

Green chemistry ¾ defined as the design, development, and application of chemical processes and products to reduce or eliminate the use and generation of substances hazardous to human health and the environment. This article summarizes the 12 principles of green chemistry, describing how they have been applied to the academic, industrial and research activities around the world.

The present paper describes the chemical composition and biological activities of artichoke cultivated in Brazil. Our studies demonstrated that glycosyl flavonoids (cynaroside and scolymoside), are the major constituents, along with cynaropicrin, a sesquiterpene lactone, and the triterpene lupeol. Cynarin, which is the main compound described for artichoke, was detected in very low concentration. Hexanic fraction exhibited considerable cytotoxicity and diuretic activities.

Pilocarpus riedelianus was studied in order to obtain compounds with activity against fungi and bacteria. The dichloromethane extract, the most active one, was chromatographed yielding hexane and dichloromethane fractions. Six known sesquiterpenes, alpha-calacorene, beta-calacorene, gamma-calacorene, cadalene, sesquichamaenol and 1-hydroxy-1,3,5-bisabolatrien-10-one were identified in the hexane fractions. The identification of these compound was done by NMR and GC/MS analyses. The hexane fraction from the dichloromethane extract showed activity against several fungi and bacteria.

Given that innovation is fundamental for competitiveness, and that it is intrinsically linked to knowledge, it has become essential to foster effective interaction between the Brazilian productive sector and universities and R&D centers. This interface should be created by means of the model used in developed countries: Observatory of Industrial Activities and Trends in Science, Technology and Innovation. The present work describes its main functions, using examples of activities undertaken by the Chemical Industry Information System of the Federal University of Rio de Janeiro related to production systems of primary and high-tech industries, examining the diffusion of knowledge to decision-makers.

Acetylcholine esterase inhibitors are successfully used to treat the symptoms of Alzheimer's disease. Extracts of three Kalanchoe species (K. brasiliensis, K. pinnata and K. gastonis-bornieri) showed acetylcholine esterase inhibitory effects and a toxic effect on Aedes aegypti larvae. Here we describe the bioassay guided fractionation of extracts of the most active extracts (K. brasiliensis) which resulted in the isolation of an active mixture of three flavonoids: 8-methoxyquercetin, 3,7-di-O-rhamnopyranoside and 8-methoxykaempferol-3,7-di-O-rhamnopyranoside. On TLC these flavonoids showed an acetylcholine esterase inhibitory effect.

The 1,2,3-triazole, known since the end of 19th century, is a very widely used heterocyclic system present in many synthetic substances and commercial pharmaceutical compounds. In fact, 1,2,3-triazoles show several applications in many areas especially as medicines against many diseases like cancer, AIDS, Parkinson and Alzheimer. Nowadays there is a large variety of known methods to obtain these heterocyclic compounds comprising mainly three synthetic routes. Nevertheless, there is no article that gives an objective overview of the synthetic methods for obtaining these kinds of azoheterocycles. This paper presents a brief history of this class of compounds, and a synthetic discussion concerning the main synthetic methods for its preparation, such as cyclization through hydrazones, concerted cycloadditon [2+3] and pseudopericyclic cyclization - and some others of restricted application, but also important. Finally, this paper also provides a brief overview on pharmacological applications of some 1,2,3-triazoles.

Surfactin, a lipopeptide produced by strains of Bacillus subtilis, has been proved to be a suitable biosurfactant in several applications. For many years, it has been investigated mainly for oil recovery and environmental usage. Its chemical, technological and functional characteristics turn surfactin into an attractive compound for several utilizations. In this review we emphasize some aspects of surfactin as a new food ingredient and its potential pharmaceutical and health applications.

Fundamental aspects of the conception and applications of ecomaterials, in particular porous materials in the perspective of green chemistry are discussed in this paper. General recommendations for description and classification of porous materials are reviewed briefly. By way of illustration, some case studies of materials design and applications in pollution detection and remediation are described. It is shown here how different materials developed by our groups, such as porous glasses, ecomaterials from biomass and anionic clays were programmed to perform specific functions. A discussion of the present and future of ecomaterials in green chemistry is presented along with important key goals.

The present paper describes the phytochemical investigation and biological activities of the chloroform, ethyl acetate and methanol extracts of leaf decocts of M. truncata Reiss (Celastraceae). Our studies afforded two flavonoid glycosides, quercetin-3-O-rhamnopyranosyl-O-glucopyranosyl- O-rhamnopyranosyl-O-galactopyranoside (1) and kampferol-3-O-rhamnopyranosyl-O-glucopyranosyl- O-rhamnopyranosyl-O-galactopyranoside (2) from the methanolic extract and dulcitol (3) from the ethyl acetate extract. Ethyl acetate and methanol extracts exhibited considerable antiulcerogenic and analgesic activities. The results of the phytochemical studies suggest that the healing activity of methanol extracts can be related to the presence of glycosyl flavonoids.
