Red pepper is rich in vitamin C and other phytochemicals and can be consumed as a dehydrated product. The evaluation of the best drying conditions can ensure a better quality product. This study aimed to investigate the effect of air temperature (55, 65, and 75 ºC) on drying kinetics of red peppers and on vitamin C, total phenolic content, and color of dried pepper as compared to the fresh product. Dehydration was carried out in a forced convection oven. Drying kinetics was determined by periodic weighting until constant weight. The moisture content of the fresh pepper was approximately 86%. The drying curves were fitted to three different models available in the literature. The Page model showed the best fit for this process. Analysis of variance revealed that the air drying temperature significantly influenced (p < 0.05) the quality parameters (vitamin C content, total phenolic content, and color) of the dried pepper as compared to the fresh pepper. After drying, the vitamin C retention increased with reduced air-drying temperature. In general, products dried at lower temperatures exhibited better quality due to reduced losses of bioactive compounds.

Considering the extensive use of hot peppers and spicy sauces in the Mexican cuisine, in the present paper, three widely consumed Mexican condiments (mole sauce, achiote, and pasilla hot pepper) were analyzed for their total phenols, flavonoids and proanthocyanidins, antioxidant activity, and protective effect against lipid oxidation in chopped pork meat. All samples were extracted first with methanol and then with acetone, and the extracts were compared. Pasilla pepper showed the highest phenolic and flavonoid content in both solvents, followed by mole and achiote. Achiote showed the highest proanthocyanidin concentration. All samples showed high antioxidant activity, and good correlations with phenolic compounds and flavonoids, while no correlation was observed in the case of condensed tannins. Mole sauce methanolic extract showed the highest inhibition of pork meat oxidation, followed by pasilla pepper, and finally achiote paste extracts. These results suggest that these condiments are useful to prevent meat lipid oxidation during storage.

Chemical composition and nutritive value of hot pepper seeds (Capsicum annuum) grown in Northeast Region of China were investigated. The proximate analysis showed that moisture, ash, crude fat, crude protein and total dietary fiber contents were 4.48, 4.94, 23.65, 21.29 and 38.76 g/100 g, respectively. The main amino acids were glutamic acid and aspartic acid (above 2 g/100 g), followed by histidine, phenylalanine, lysine, arginine, cysteine, leucine, tryptophan, serine, glycine, methionine, threonine and tyrosine (0.8-2 g/100 g). The contents of proline, alanine, valine and isoleucine were less than 0.8 g/100 g. The fatty acid profile showed that linoleic acid, palmitic acid, oleic acid, stearic acid and linolenic acid (above 0.55 g/100 g) as the most abundant fatty acids followed lauric acid, arachidic acid, gondoic acid and behenic acid (0.03-0.15 g/100 g). Analyses of mineral content indicated that the most abundant mineral was potassium, followed by magnesium, calcium, iron, zinc, sodium and manganese. The nutritional composition of hot pepper seeds suggested that they could be regarded as good sources of food ingredients and as new sources of edible oils.

The objective in this study was to verify the efficiency of different procedures for evaluating the physiological potential of bell pepper seed and identify its relationship with germination at different temperatures and with seedling emergence. Five seed lots each of the Reinger and Sentinel hybrids were used. Seed physiological potential was evaluated by germination, saturated salt accelerated aging (48 h/41 °C), seedling emergence (percentage and speed), and tetrazolium tests (preconditioning at 45 °C/3 h and seed staining at 45 °C/2 h). Germination (percentage and speed) on a thermogradient table at 15 °C, 18 °C, 21 °C, 25 °C and 30 °C was also evaluated the saturated salt accelerated aging and tetrazolium tests are suitable for access the physiological potential of bell pepper seeds. It was also confirmed that vigorous seed lots perform better when exposed to different temperatures during germination.

Eight root-knot nematode forms are known to occur in Brazil, namely Meloidogyne exigua, M. incognita, M. j. javanica, M. j. bauruensis, M. inornata, M. hapla, M. arenaria arenaria and M. coffeicola. After presenting a historical resume of the root-knot disease, as well as observations on symptoms, distribution and spread, and life history of the nematodes, a study of the morphological characters used in identification of species is made, a key for separating the forms referred to above being also prepared. As no information on host plants of the coffee root-knot nematode (M. exigua) was available, a few tests were performed, as an attempt to infect several plant species. Pepper (Capsicum annuun) was the only plant attacked by M. exigua, having failed all attempts to infect nine other plants, including tomato var. Rutgers. M. exigua incited formation of galls on roots of cucumber, but no adult female was found in the tissue. In a final chapter dealing with control, a review of all methods available is presented.

ABSTRACT Investigations into water potentials in the soil-plant system are of great relevance in environments with abiotic stresses, such as salinity and drought. An experiment was developed using bell pepper in a Neossolo Flúvico (Fluvent) irrigated with water of six levels of electrical conductivity (0, 1, 3, 5, 7 and 9 dS m-1) by using exclusively NaCl and by simulating the actual condition (using a mixture of salts). The treatments were arranged in a randomized block design, in a 6 × 2 factorial arrangement, with four replicates. Soil matric (Ψm) and osmotic (Ψo) potentials were determined 70 days after transplanting (DAT). Soil total potential was considered as the sum of Ψm and Ψo. Leaf water (obtained with the Scholander Chamber) and osmotic potentials were determined before sunrise (predawn) and at noon at 42 and 70 DAT. There were no significant differences between the salt sources used in the irrigation water for soil and plant water potentials. The supply of salts to the soil through irrigation water was the main factor responsible for the decrease in Ψo in the soil and in bell pepper leaves. The total potential of bell pepper at predawn reached values of -1.30 and -1.33 MPa at 42 and 70 DAT, respectively, when water of 9 dS m-1 was used in the irrigation. The total potential at noon reached -2.19 MPa. The soil subjected to the most saline treatment reached a water potential of -1.20 MPa at 70 DAT. There was no predawn equilibrium between the total water potentials of the soil and the plant, indicating that soil potential cannot be considered similar to that of the plant. The determination of the osmotic potential in the soil solution should not be neglected in saline soils, since it has strong influence on the calculation of the total potential.

The objective of this work was the biological and molecular characterization of a begomovirus detected in São Joaquim de Bicas, Minas Gerais, Brazil, named TGV-[Bi2], by determining its host range, complete nucleotide sequence and phylogenetic relationships with other begomoviruses. Biological characterization consisted of a host range study using either sap inoculation or particle bombardment as inoculation methods. The yellow spot virus can infect plants in Solanaceae and Amaranthaceae, including economically importat crops as sweet pepper, and weeds as Datura stramonium and Nicotiana silvestris. For the molecular characterization, the full-length genome (DNA-A and DNA-B) was amplified, cloned and completely sequenced. Sequence comparisons and phylogenetic analyses indicated that TGV-[Bi2] constitutes a novel begomovirus species named Tomato yellow spot virus (ToYSV), closely related to Sida mottle virus (SiMoV).

O objetivo deste trabalho foi avaliar a base genética da resistência de Lycopersicon hirsutum ao potyvírus Pepper yellow mosaic virus (PepYMV). Foram avaliadas 540 plantas, inclusive os parentais 'Santa Clara' (suscetível) e 'BGH 6902' (resistente), e as gerações F1, F2, RC1:1 e RC1:2, derivadas do cruzamento desses parentais. As plantas receberam inoculações mecanicamente, e a concentração viral de PepYMV em cada planta foi determinada por ELISA indireto. Foram realizadas as análises quantitativa e qualitativa. A primeira, baseada na concentração viral de cada planta, indicou herança oligogênica com herdabilidade de 99%. Os mesmos dados, quando analisados de forma qualitativa, indicaram herança governada por dois genes, com interação epistática dominante e recessiva. Entretanto, quando foi analisada a geração F2:3, oriunda da autofecundação de plantas F2 resistentes, a hipótese de dois genes foi descartada e a de um gene, com dominância completa entre os alelos, foi a que melhor se ajustou aos dados. A análise qualitativa, pela sintomatologia observada, demonstrou que a herança da resistência ao PepYMV é determinada por um gene recessivo, com ausência de dominância entre os seus alelos.

The objective of this work was to assess the effect of different coffee organic cultivation systems on chemical and biological soil characteristics, in different seasons of the year. The following systems were evaluated: coffee intercropped with one (CJ1), two (CJ2) or three (CJ3) pigeon pea (Cajanus cajan) alleys; coffee planted under full sun (CS); area planted with sweet pepper and snap bean in a conventional tillage system (AC); and secondary forest area (FFR). Row spacing in CJ1, CJ2, CJ3 and CS was 2.0x1.0, 2.8x1.0, 3.6x1.0, and 2.8x1.0 m, respectively. Soil samples were collected at 10-cm depth, during the four seasons of the year. The results were subjected to analysis of variance, principal component analysis, and redundancy analysis. There was an increase in edaphic macrofauna, soil basal respiration, and microbial quotient in the summer. Total macrofauna density was greater in CJ2 followed by CJ3, CS, CJ1, AC and FFR; Coleoptera, Formicidae, and Isoptera were the most abundant groups. There are no significant differences among the areas for soil basal respiration, and the metabolic quotient is higher in CJ1, CJ3, and FFR. Microbial biomass carbon and the contents of K, pH, Ca+Mg, and P show greater values in AC.

O objetivo deste trabalho foi determinar a presença do alelo Pvr4, que confere resistência contra o PepYMV (Pepper yellow mosaic virus), em genótipos de pimentão comunmente encontrados no mercado brasileiro, com uso de um marcador molecular codominante tipo CAPS. A resistência ao PepYMV, nos genótipos CM-334-INRA, Myr-29 e em genótipos derivados do híbrido comercial Mônica-R, foi detectada como associada à banda de 444 pb, ligada ao alelo de resistência Pvr4. As plantas resistentes homozigotas (pvr4/pvr4) mostraram uma banda de 444 pb, as suscetíveis (Pvr4+/Pvr4+) uma banda de 458 pb e as resistentes heterozigotas (Pvr4+/Pvr4) mostraram as duas bandas. No entanto, no acesso resistente CM-334-UFV, nos híbridos Magali-R e Martha-R, assim como em populações derivadas desse acesso e desses híbridos, a resistência ao PepYMV não esteve associada ao marcador CAPS. O acesso CM-334-UFV ('Criollo de Morelos-334', de Viçosa, MG) distinguiu-se do CM-334-INRA ('Criollo de Morelos-334', da França); embora ambos os acessos tenham sido resistentes ao PepYMV, apenas em CM-334-INRA foi encontrada a associação da resistência com a banda de 444 pb.

The objective of this work was to determine the efficiency of the Papadakis method on the quality evaluation of experiments with multiple-harvest oleraceous crops, and on the estimate of the covariate and the ideal plot size. Data from nine uniformity trials (five with bean pod, two with zucchini, and two with sweet pepper) and from one experiment with treatments (with sweet pepper) were used. Through the uniformity trials, the best way to calculate the covariate was defined and the optimal plot size was calculated. In the experiment with treatments, analyses of variance and covariance were performed, in which the covariate was calculated by the Papadakis method, and experimental precision was evaluated based on four statistics. The use of analysis of covariance with the covariate obtained by the Papadakis method increases the quality of experiments with multiple-harvest oleraceous crops and allows the use of smaller plot sizes. The best covariate is the one that considers a neighboring plot of each side of the reference plot.

Chromium(III) at the ng L-1 level was extracted using partially silylated MCM-41 modified by a tetraazamacrocyclic compound (TAMC) and determined by inductively coupled plasma optical emision spectrometry (ICP OES). The extraction time and efficiency, pH and flow rate, type and minimum amount of stripping acid, and break- through volume were investigated. The method's enrichment factor and detection limit are 300 and 45.5 pg mL-1, respectively. The maximum capacity of the 10 mg of modified silylated MCM-41 was found to be 400.5±4.7 µg for Cr(III). The method was applied to the determination of Cr(III) and Cr(VI) in the wastewater of the chromium electroplating industry and in environmental and biological samples (black tea, hot and black pepper).

An analytical study based on extraction with methanol-water, immunoaffinity cleanup and separation, identification and quantification of aflatoxin B1 by thin-layer chromatography,in ground black and white pepper and oregano was carried out. Validation of the applied methodology was done through accuracy and precision studies. Recoveries of aflatoxin B1 and relative standard deviations, from spice samples spiked at levels from 4.86 to 97.70 µg/kg, were, respectively, higher than 72% and lower than 20%. Application to spice samples available in Minas Gerais state, purchased at popular markets, showed no contamination with aflatoxin B1.

In this study, controlled release formulations of Atrazine (ATZ) were synthesized by the sol-gel method and characterized by elemental, FTIR, SEM, BET and DSC analyses. The release kinetic of ATZ from the formulations in CaCl2 0.01 mol L-1 medium was monitored by UV/Vis spectroscopy. In all formulations, ATZ was physically dispersed on the Si-polymer, and the dispersion grade decreased with increasing amount of herbicide. The ATZ release kinetics was controlled mainly by dissolution, and the data could be fitted to the Korsmeyer - Pepper model. The ATZ as xerogel presents a lower affinity for soil than as granulated form.

Capsaicinoids (CAPS) are substances responsible for pungency in Capsicum. It is important to quantify these types of compounds owing to their broad application in food, pharmaceuticals, cosmetics and chemical weapons. In this work, we developed an indirect spectrophotometric method based on the colorimetric reaction between CAPS, Co(II) 3.10×10-5 mol L-1 and 4-(2-pyridylazo) resorcinol (PAR) 6.23×10-5 and, in cachaça:water 92:8v/v solutions, for quantification of total CAPS in Capsicum peppers. The product of the reaction is CoPAR2CAPS2 and its absorption in aquo-ethanolic solution at 510 nm is proportional to the total CAPS concentration from 0.60 to 17.94 mg L-1. The values of limit of detection and limit of quantification were 0.0004 and 0.001 mg of CAPS/g of pepper, respectively, with 4% relative standard deviation. The developed method yielded similar results to those obtained from high performance liquid chromatography, with 95% of confidence.
