The function of lipids in human nutrition has been intensively debated in the last decade.This context reinforces the concern about controlling the trans fat ingestion, due to its negative implications on health. Interesterification provides an important alternative to modify the consistency of oils and fats without causing formation of trans isomers. This article reports research done towards production of zero trans fats by chemical interesterification, for different industrial purposes. Aspects related to the effect of trans fats on diet, their impact on health and modifications in Brazilian legislation are also covered.

In the present work, we provide some considerations about the role of scientific communication in Chemistry Education. Such considerations may subsidize the development of communication in scientific language by Chemistry students. These considerations are based on information collected during a participatory research for the production of didactic material about scientific communication. The meetings were audio recorded and the contents of the participants' speeches were divided into categories. The category analysis supported the elaboration of the considerations.

Preparation of the title compounds are described as an alternative nucleophilic aromatic substitution for practices in the graduate laboratory. The low toxicity and disponibility of the reagents make a suitable procedure approach to experiments regarding this aromatic reaction.

Propolis is mostly used as hydroalcoholic extract. Recently there has been a growing number of patents dealing with new solvents for preparing propolis extracts. This study aimed to prepare edible oil propolis extracts and compare their chemical composition and biological activity with ethanolic propolis extracts. ESI-MS and spectrophotometric methods were used for qualitative and quantitative analyses, respectively. Antibacterial activity was evaluated by diffusion in agar. Cytotoxicity was tested by MTT assay using tumor cell lines. The oil is able to extract bioactive compounds from propolis. Further studies are needed to improve extraction efficiency and to characterize the active components.

We describe the design and tests of a set-up mounted in a conventional double beam spectrophotometer, which allows the determination of optical density of samples confined in a long liquid core waveguide (LCW) capillary. Very long optical path length can be achieved with capillary cell, allowing measurements of samples with very low optical densities. The device uses a custom optical concentrator optically coupled to LCW (TEFLON® AF). Optical density measurements, carried out using a LCW of ~ 45 cm, were in accordance with the Beer-Lambert Law. Thus, it was possible to analyze quantitatively samples at concentrations 45 fold lower than that regularly used in spectrophotometric measurements.

This works proposes a homemade construction of a lead(II) ISE of solid membrane (Ag2S/PbS) to determine Pb2+ ions in potentiometric titrations, using damaged combined glass electrodes. This electrode can be constructed in teaching laboratories, using it as a learning tool related to the theoretical principle of ISE. The analytical curve obtained (y = 27.056x + 337.58; R = 0.996) was linear on the range of 1 x 10-5 to 1 mol L-1 and has presented a very close behavior of the Nernstian. The homemade ISE has presented a similar selectivity to the commercial electrodes, showing to be a good alternative to the experimental activities on teaching laboratories.

Human milk has characteristics of great importance for the newborn. Its composition shows all nutrients in quantity and quality needed, in addition to providing protection against infections and allergies and stimulating the immune system. Therefore, the composition of fatty acids and their distribution in the triacylglycerols are targets of studies on infant formula, and the triacylglycerols of human milk fat should serve as a model for the lipid components. This review aims to report studies of technology in lipids in order to produce structured lipids as substitutes of human milk fat.

Esterification reactions of glycerol with lauric acid in solvent free system were carried out using lipases from several sources. All lipases were immobilized on polysiloxane-polyvinyl alcohol particles by covalent binding with high activity recovered. Among the tested enzymes, the Candida antarctica lipase allowed to attain the highest molar conversion (76%), giving similar proportions of monolaurin, dilaurin and low amount of trilaurin. To further improve the process, the Response Surface Methodology (RSM) was used and optima temperature and molar ratio glycerol to lauric acid were found to be 45 ºC and 5:1, respectively. Under these conditions, 31.35% of monolaurin concentrations were attained and this result was in close agreement with the statistical model prediction.

The efficiency of XAD®-2 resin in sampling the pesticides α and β-endosulfan from air contaminated in the laboratory was evaluated. Sampling efficiency ranged from 87 to 108% for α-endosulfan and from 71 to 84% for β-endosulfan with relative standard deviation lower than 19%. The pesticides were not detected in the second section of the cartridge showing the good retention capacity of XAD®-2 for these analytes. Method quantification limits were 0.32 and 0.34 µg m-3 for α and β-endosulfan, respectively. These results suggest that the proposed method may be useful for evaluating occupational exposure to these compounds.

The chemist must master a number of abilities. These include a solid knowledge of theory and the capacity to devise theoretical problems. The chemist is also expected to solve problems. In order to improve these abilities, this work aimed to evaluate several tools, such as the use of contextualization, problem-based learning and the interdisciplinary approach. In the methodology developed, undergraduate students had to investigate and propose a hypothesis, suggesting how physical changes took place in inappropriately stored drugs. The interdisciplinary approach is achieved by connecting public interest, chemistry, biology and pharmacology concepts. The tools can improve these abilities required for a well-prepared chemist.

The importance of teaching scientific communication skills in undergraduate chemistry courses is well recognized. This paper provides an overview of didactic activities in which students engage to improve these skills. The study was based on an extensive literature review performed on the Journal of Chemical Education and on the Journal of College Science Teaching, in the years spanning from 1991 to 2010, and on The Chemical Educator, from 1996 to 2010. The findings from the study provided an opportunity to expand the knowledge on the variety of methods and contents used to teach scientific communication skills in undergraduate chemistry education, as well as to deepen our understanding of the effects of different approaches to teaching on performance in practice.

Blogs and other technology tools are commonly used in our society. Although we are familiar with the use of technology for social interaction, its application in the classroom environment is still not fully appreciated by the teaching community as a useful learning tool. This paper sheds light on this use by presenting the analysis of the comments posted on a blog used by undergraduate chemistry students for a scientific communication undergraduate course. On the course, students used the blog to ask questions and discuss assignments. All the comments were monitored by the professor and her teaching assistant, who also posted their comments. We analyzed the content of these comments using the model proposed by Henri and adapted by McKenzie and Murphy. The results show a predominance of administrative comments, followed by course content comments. The findings also indicated that this tool complements classroom discussions, supports the participation of students who would otherwise not take part, and allows a continuous learning process for all the students. We concluded that the use of blogs improved the classroom experience and supported the instructional classroom activities.

O gênero Erigeron (Asteraceae), de plantas da vegetação espontânea, encontra-se amplamente disseminado nas regiões Sul e Sudeste do Brasil, sendo freqüentemente encontrado em lavouras perenes e anuais. Plantas de E. bonariensis com sintoma de mosaico, típico do induzido por vírus, foram coletadas no município de São Paulo e submetidas a análises ao microscópio eletrônico de transmissão, testes biológicos, sorológicos e moleculares. Em cortes ultrafinos do tecido foliar original, observaram-se inclusões tubulares e cata-ventos dispersos no citoplasma. Através de inoculação mecânica, somente Chenopodium amaranticolor, C. quinoa, Nicotiana benthamiana e N. clevelandii foram infetadas. Os resultados obtidos em ELISA foram negativos quando se utilizaram antissoros contra o Turnip mosaic vírus (TuMV) e diferentes estirpes do Potato virus Y (PVY), constatando-se relacionamento sorológico com o Lettuce mosaic virus (LMV). Com a utilização de oligonucleotídeos específicos para LMV amplificaram-se fragmentos esperados de aproximadamente 280 pb, que seqüênciados confirmaram a identidade do vírus. A ocorrência do LMV em E. bonariensis, gênero da mesma família botânica da alface (Lactuca sativa), é de grande importância, pois talvez possa atuar como reservatório para infecção de campos de produção de alface. Este é o primeiro relato, no Brasil, de vírus infetando Erigeron sp., o qual só havia sido reportado como hospedeira natural do Bidens mottle virus (BiMoV) e do Tomato spotted wilt virus (TSWV) nos Estados Unidos.

Este trabalho propõe o desenvolvimento de um procedimento analítico para a determinação em linha de estanho em soluções analíticas empregando a técnica de espectrometria de absorção atômica com nebulização térmica em tubo metálico aquecido na chama (TS-FF-AAS) como alternativa ao uso da chama de óxido nitroso-acetileno em espectrometria de absorção atômica, cujo comburente apresenta um custo elevado frente ao ar comprimido. Foram avaliados parâmetros para a otimização do sistema, tais como: vazão do carregador (ar), volume de amostra injetada e concentração do ácido (HCl). Foi construída curva analítica linear [A= -0,00163 + 0,00319 [Sn], (r= 0,9998)] no intervalo de 10 a 80 mg Sn L-1. O limite de detecção, o desvio padrão relativo (n=12) e a freqüência analítica foram: 1,7 mg L-1 Sn, £ 2,7% and 120 h-1 respectivamente. O sistema TS-FF-AAS é uma alternativa para a determinação de Sn.

O presente trabalho se orienta pela hipótese de que a reflexão sobre a linguagem e a crítica do fetichismo mercantil, de Guy Debord, são aspectos inseparáveis de um único e mesmo ponto de partida da crítica da "sociedade do espetáculo", centrado na crítica da linguagem e da forma-mercadoria. Debord se posiciona por uma transição, no que diz respeito ao horizonte da reflexão estética e social sobre a linguagem, do conceito de expressão ao de comunicação ou diálogo. Ele busca recolher e manter, ultrapassando-a, a natureza crítica da expressão não-comunicativa (e, por isso, refratária à "pseudocomunicação" da sociedade burguesa), tal como concebida e experienciada pela arte moderna e as vanguardas do início do século XX, formulando a perspectiva crítica social da comunicação direta.
