The growing interest in environmental protection has led to the development of emerging biotechnologies for environmental remediation also introducing the biorefinery concept. This work mainly aimed to evaluate the applicability of innovative biotechnologies for environmental remediation and bioenergy production, throught fermentative processes. The investigated biotechnologies for waste and wastewater treatment and for the valorisation of specific feedstocks and energy recovery, were mainly focused on four research lines. 1. Biotechnology for textile wastewater treatment and water reuse that involving anaerobic and aerobic processes in combination with membrane technologies. Combinations of different treatments were also implemented for water reuse in a textile company. 2. Biotechnology for the treatment of solid waste and leachate in landfill and for biogas production. Landfill operated as Bioreactor with recirculation of the generated leachate was proposed for organic matter biostabilisation and for ammonia removal from leachate by favouring the Anammox process. 3. An innovative two-stage anaerobic process for effective codigestion of waste from the dairy industry, as cheese whey and dairy manure, was studied by combining conventional fermentative processes with a simplified system design for enhancing biomethanisation. 4) The valorisation of the glycerol waste as surplus by-product of the biodiesel industry was investigated via microbial conversion to value-added chemicals, as 1,3-propanediol. The investigated fermentative processes have been successfully implemented and reached high yields of the produced bio-chemical. The studied biotechnological systems proved to be feasible for environmental remediation and bioenergy and chemicals production.

Characteristics of modern food demand force retailers to acquire more information about product process along the food supply chain to ensure that product are in accordance with consumer preference. Therefore, the product process involves more information flows between buyer and supplier which requires collaborative efforts. These changes translate into several studies on the inter-organizational relationship in agri-food systems. Studies on inter-organizational relationships have been conducted in various academic disciplines, including sociology, psychology, law, economics, marketing, management, and combination of these. Inter-organizational relationships is an interaction between organizations which involved firms horizontally, as well as, vertically. In this study we deal with vertical, buyer-seller relationship which are sometimes referred to chain relationships. We define vertical business relationship in the agriculture-food based sector as “agri-food chain relationships”. The focus is on sustainable inter-organizational relationships in a way that they can be scientifically investigated. We study characteristics which ensure that a relationship is long-lasting and rewarding for all involved parties in the sardinian dairy. We test the theoretical model using structural equation modeling. The results suggest that the most important determinant for the relationships is technology and the price isn’t significant for the relationship governance.

Una delle realtà economiche più importanti della Sardegna è la produzione di Pecorino Romano DOP. Il contesto nel quale è nato e si è sviluppato ingloba molte delle precondizioni che favoriscono la nascita di un distretto. Il principale obiettivo di questo studio è verificare se il comparto lattiero caseario della Sardegna, focalizzato nella produzione di Pecorino Romano DOP, può creare un effetto distretto. Ciò potrebbe suggerire l'esistenza dello stesso distretto anche se atipico. Per verificare questa ipotesi, in primo luogo è stata esaminata l'efficienza produttiva delle imprese trasformatrici di Pecorino Romano utilizzando il metodo della Frontiera stocastica di produzione. Successivamente sono state cercate le cause delle differenze. Lo studio mostra che i livelli di efficienza osservati sono quasi interamente attribuibili agli input di produzione utilizzati, in particolare al latte. Risulta chiaro che il sistema delle cooperative funziona e che tali aziende ottengono sistematicamente margini di efficienza migliori rispetto alle non cooperative. Le variabili analizzate non permettono di concludere che esiste un "effetto distretto".

This research work is aimed at the valorization of two types of pomace deriving from the extra virgin olive oil mechanical extraction process, such as olive pomace and a new by-product named “paté”, in the livestock sector as important sources of antioxidants and unsaturated fatty acids. In the first research the suitability of dried stoned olive pomace as a dietary supplement for dairy buffaloes was evaluated. The effectiveness of this utilization in modifying fatty acid composition and improving the oxidative stability of buffalo milk and mozzarella cheese have been proven by means of the analysis of qualitative and quantitative parameters. In the second research the use of paté as a new by-product in dietary feed supplementation for dairy ewes, already fed with a source of unsaturated fatty acids such as extruded linseed, was studied in order to assess the effect of this combination on the dairy products obtained. The characterization of paté as a new by-product was also carried out, studying the optimal conditions of its stabilization and preservation at the same time. The main results, common to both researches, have been the detection and the characterization of hydrophilic phenols in the milk. The analytical detection of hydroxytyrosol and tyrosol in the ewes’ milk fed with the paté and hydroxytyrosol in buffalo fed with pomace showed for the first time the presence in the milk of hydroxytyrosol, which is one of the most important bioactive compounds of the oil industry products; the transfer of these antioxidants and the proven improvement of the quality of milk fat could positively interact in the prevention of some human cardiovascular diseases and some tumours, increasing in this manner the quality of dairy products, also improving their shelf-life. These results also provide important information on the bioavailability of these phenolic compounds.
