In this paper, pre-gelling starch was used to consolidate alumina-dense ceramic suspensions. The colloidal processing of the ceramic was prepared with alumina and commercial potato starch, and slips were prepared with 55 vol% of solids and 0.5 wt.% of starch. This small amount of starch was possible because of a previous pre-gelling starch treatment, resulting in more homogeneous suspensions and particles smaller than starch granules. Additionally, Sucrose was also used as a dispersion aid. After sintering, the samples were analysed according to their mechanical properties. These processes produced ceramics with a 93% relative density, 325 MPa flexural strength, and a Weibull module whose value wits m = 10, maintaining the capacity of this process to produce complex geometric shaped ceramics. Cyclodextrin glycosyltransferase (EC 2.4.1.19) is an enzyme that produces cyclodextrins from starch via an intramolecular transglycosylation reaction. An alkalophilic Bacillus strain, isolated from cassava peels, was identified as Bacillus licheniformis. CGTase production by this strain was better when potato starch was used as carbon source, followed by cassava starch and amylopectin. Glucose and amylose, on the other hand, acted as synthesis repressors. When the cultivation was supplemented with sodium ions and had the pH adjusted between 6.0 and 9.0, the microorganism maintained the growth and enzyme production capacity. This data is interesting because it contradicts the concept that alkalophilic microorganisms do not grow in this pH range. After ultrafiltration-centrifugation, one protein of 85.2 kDa with CGTase activity was isolated. This protein was identified in plates with starch and phenolphthalein. Determination of the optimum temperature showed higher activities at 25 degrees C and 55 degrees C, indicating the possible presence of more than one CGTase in the culture filtrate. Km and Vmax values were 1.77 mg/mL and 0.0263 U/mg protein, respectively, using potato starch as substrate.

A hidrólise enzimática do amido pode fornecer informações importantes sobre sua estrutura granular. Amidos de mandioca, batata-doce, mandioquinha-salsa e batata foram hidrolisados por α-amilase bacteriana a 37 °C durante 48 horas, e algumas propriedades físico-químicas dos resíduos da hidrólise foram determinadas. O amido de mandioca foi o mais suscetível à enzima com 20,9% de hidrólise, enquanto o amido de batata foi o mais resistente com 5,9%. O tamanho médio dos grânulos variou de 10,8 a 23,4 μm para os amidos de mandioquinha-salsa e batata, respectivamente. Amidos de mandioca e batata-doce apresentaram um padrão de difração de raio-X tipo A, enquanto os amidos de mandioquinha-salsa e batata mostraram padrão tipo B. Todos os amidos nativos mostraram superfície granular lisa e, após hidrólise, os amidos de mandioca, batata-doce e mandioquinha-salsa mostraram alguns grânulos bastante degradados, enquanto o amido de batata apresentou sutil sinal de degradação. O teor de amilose dos amidos diminuiu com a hidrólise para os amidos de mandioca, batata-doce e mandioquinha-salsa, permanecendo inalterado para o amido de batata. Como esperado, a viscosidade intrínseca e as propriedades de pasta diminuíram para todos os amidos hidrolisados. Não houve diferença significativa entre as propriedades térmicas dos amidos nativos e hidrolisados. Estes resultados sugeriram que a hidrólise ocorreu nas áreas cristalinas e amorfas dos grânulos. O padrão de difração do tipo B e o grande tamanho dos grânulos do amido de batata podem ter contribuído para a maior resistência deste amido à hidrólise.

Cyclodextrins ( CDs) are cyclic oligasaccharides composed by D- glucose monomers joined by alpha- 1,4-D glicosidic linkages. The main types of CDs are alpha-,beta-and gamma-CDs consisting of cycles of six, seven, and eight glucose monomers, respectively. Their ability to form inclusion complexes is the most important characteristic, allowing their wide industrial application. The physical property of the CD-complexed compound can be altered to improve stability, volatility, solubility, or bio-availability. The cyclomaltodextrin glucanotransferase ( CGTase, EC 2.4.1.19) is an enzyme capable of converting starch into CD molecules. In this work, the CGTase produced by Bacillus clausii strain E16 was used to produce CD from maltodextrin and different starches ( commercial soluble starch, corn, cassava, sweet potato, and waxy corn starches) as substrates. It was observed that the substrate sources influence the kind of CD obtained and that this CGTase displays a beta- CGTase action, presenting a better conversion of soluble starch at 1.0%, of which 80% was converted in CDs. The ratio of total CD produced was 0: 0.89: 0.11 for alpha/beta/gamma. It was also observed that root and tuber starches were more accessible to CGTase action than seed starch under the studied conditions.

A indústria de amido vem crescendo e se aperfeiçoando nos últimos anos, levando à necessidade de produtos com características específicas que atendam as exigências do mercado, o que possibilita o processamento de matérias-primas amiláceas ainda pouco exploradas. O trabalho teve como objetivo analisar o processamento industrial de fécula de mandioca e batata doce. Através da análise da composição da raiz, fécula e bagaço, bem como do balanço de massa dos processos, objetivou-se estabelecer a eficiência de uma planta industrial de processamento de mandioca, para a obtenção de fécula de batata doce. Os resultados demonstraram que a fécula de batata doce obtida está dentro dos limites da legislação brasileira e que parte do amido não foi extraído no processamento, sendo gerado um bagaço com 79,94 % de amido e com composição semelhante ao gerado no processamento de mandioca que contém em média 80 % de amido. A comparação dos balanços de massa demonstrou uma menor eficiência da planta no processamento da batata doce (18,3% de rendimento), quando comparado com o de mandioca (25,5% de rendimento) com umidade de 13,75 % e 12,3 %, respectivamente, na fécula. A retenção de amido no bagaço indicou deficiência no processo industrial de extração independentemente da matéria-prima.

The evolution of the food sector has increased interest in the identification of new starches with distinct properties. Curcuma longa and Curcuma zedoaria rhizomes, which are already used in industry to obtain food coloring and pharmaceutical products, may become commercially interesting as starch raw materials. This work aimed to characterize the starch of two Curcuma species. The results revealed that the rhizomes of two species showed low dry matter and high starch contents. The amylose contents of the starches (22% C. longa and 21% C. zedoaria) were similar to potato starch. The results of microscopic analysis showed flat triangular shape and the size was 20-30 mum for two starches. The final viscosity of C longa was high (740 RVU) and the pasting temperature was 81 degreesC. In C. zedoaria the final viscosity was 427 RVU and the pasting temperature was 78 degreesC. The project aims to develop ceramic compounds with gradients of the mechanical properties, using the molding technique with commercial starches. To understand the process of interaction between starch and ceramic powders, the proposed methodology involves viscometry tests (up to 200 °C). Viscometric assays were carried out with slurries of alumina, titania and aluminum titanate with potato starch, cassava and corn. The specimens were tested for dilatometry, thermomechanical, thermal shock, mechanical and characterization by SEM. The ceramic powders and starches were analyzed using the optical microscope to measure the size of these. It was made of th kinetics of starch gelatinization and titania with the cornstarch in theoptical microscope to observe how the grains of starch behaved in welling
