This study aimed to produce beer, using different botanical origins of honeys (orange, eucalyptus and wild), as malt adjuncts, and their Physical-chemical and sensorial characterizations. The production was made with malt, water, hops and honey. All musts were adjusted to 12 Brix, and the concentration of honey in the formulation was 45% (based on the extract), except for the control (0%). The physical and chemical analysis were performed on malt (extract content), honey (pH, free acidity, lactonic acidity, total acidity, color, turbidity, extract content, moisture content, reducing sugar, total reducing sugar and sucrose) in wort (content extract, pH, color, turbidity, fermentability ,bitterness and total acidity) and beer apparent extract, apparent fermentability, real extract, real fermentability, alcohol content, pH, total acidity, total foam, foam density , bitterness, carbon dioxide, color and turbidity). Sensory analysis was performed by nine-points hedonic scale testing. The attributes evaluated were appearance, aroma, flavor and overall. The results were submitted to ANOVA and means compared by Tukey testing at a 5% of probability. Beer with honey as adjuncts’ had high fermentability and low content of fat, compared to the pure malt beer. The addition of honey as an adjunct did not affect the majority of the physical-chemical parameters, except for turbidity, whereas beer with honey showed the highest value for this feature, in addition, it has also presented their biterness differences the values for beer with honey were lower. The different types of honeys did not affect the acceptability of beer, however, the beer with honey showed greater acceptance between beer with malt and honey

New patterns from replaceable sources have been searched by scientific community to ethanol produce. The seed of avocado has thereabout 20% of starch. The starch hydrolysis results fermentable sugars by Saccharomyces cerevisiae, and the ethanol is the major product of fermentation. The starch can be hydrolysed by acids, basis and enzymes. Previous studies showed that enzymatic hydrolysis can produce 26,01 liter of ethanol per ton of seed. At the present work, we analyzed the chemistry hydrolysis efficiency before the enzymatic hydrolysis and the use of dormant seed consequence. The Brix rate variation at each stage was evaluated and the ethanol concentration was determined with gas chromatograph technique. The chemistry hydrolysis with subsequent enzymatic hydrolysis was effective, producing until 61,8 L.ton-1. The use of dormant seeds wasn’t significative to raise the Brix rate. Sweet sorghum is a potential complementary crop for ethanol production in Brazil, United States and India. Since, phenols are playing inhibitory role in the process of ethanol production from extracted juice from sweet sorghum stalks, it's removal from juice is necessary for better ethanol yield. The aim of this research was to evaluate the use of magnesium oxide and calcium hydroxide as coagulant agents in different pH levels in the juice treatment. The experiment was arranged in a split-plot statistical design. Main treatments corresponded to the different coagulants and secondary treatments were the pH levels (6.0 and 7.0). Analysis of coagulant volume, juice pH, settling rate and sludge volume were performed during the decantation process. Clarified juice was analyzed as Brix, pH, ashes, phenolic compounds and starch. The use of magnesium oxide resulted in lower sludge volume, phenolic compounds and ashes. The use of calcium hydroxide decreased starch content, whereas clarification at pH 7.0 promoted higher sludge volume. Treating juice with magnesium oxide improved decantation dynamics of the process and clarified juice quality.

The objective of this study was to assess families and highlight the superior progenies of sugarcane originating from 38 biparental crosses for the following attributes: tons of cane per hectare (TCH), tons of biomass per hectare (TBIOH), brix (% cane juice), fiber content, purity, pol and total recoverable sugar (TRS). The data were analyzed by mixed model REML / BLUP in the REML (Restricted Maximum Likelihood) allowed us to estimate genetic parameters and BLUP (best linear unbiased prediction) to predict the additive and genotypic values. The best family for the attributes TCH and TBIOH was 41, whose parents are cultivars IACSP022019 x CTC9. In individual selection for TCH, the plant number 3 of Block 2, the crossing 78, showed the best results. To TBIOH the plant number 33, Block 1, family 41, showed the best results. Families 40, 41, 43, 68, 69, 79, 91, 92 and 147, were higher for the variables brix, pol, purity, and ATR, where as 85 families, 147, 148, 149, 161, 163, 177, 178, 179, and 183 were higher for fiber. The family 147 whose parents are IACSP042286 x IACSP963055, showed three progenies ranked among the top ten for both brix, and for fiber, which identifies the combination as a potential source of progenies for bioenergy production.

The objective of this study was to evaluate the effects of sugarcane juice treatment using Moringa oleifera leaf and seeds extracts on ethanolic fermentation. The experiment was arranged in a split plot statistical design, with four replications. Main treatments were three sedimentation agents (synthetic polyelectrolyte, moringa leaf and seed extracts) and control while the secondary treatments were two sugarcane varieties (RB867515 and CTC4). Extracted sugarcane juice was clarified by simple defecation with pH adjusted to 6.0. The flocculating agents were added in a decanter before the limed juice. After then, the juice was standardized to 16° Brix at pH 4.5, and musts were inoculated with yeast Saccharomyces cerevisiae strain, FT858. At the end of the fermentation process, wines were recovered by centrifugation. In all experimental stages, extracted juice, clarified juice and wine were chemically and technologically characterized. The use of moringa leaf and seed extracts as sedimentation adjuvants did not increase the sedimentation speed of impurities. However, there was a high sludge compaction, which was essential for maintenance of yeast and bud population at the beginning of fermentation, and yeast budding rate in the end. The use of different sedimentation agents as adjuvants in juice treatment did not affect wine quality and ethanol yield.
