Inspirés par la « méthode » artisanat intellectuel propose par le sociologue Wright Mills, notre étude porte sur la formation du champ de pratiques discursives et non discursives (Michel Foucault) de la nutrition sociale dans le contexte de la société brésilienne dans lequel s insère le champ de la santé. Le travail empirique s épuise sur une source de documents normatifs de ce champ et s oriente à vérifier et à comprendre comment le praticien de la nutrition émerge dans le scènario des pratiques de la santé au Brésil à partir du milieux du 20ème siècle, tout en construisant son « regime de vérité » fondé dans des processus biopolitiques du champ de la médecine sociale. Nous avons relié deux phénomènes: a) l émergeance du champ biomédical de la nutrition comme une instance biopolitique, en approchant cette formation à l'histoire de la médecine sociale, depuis ses débuts européens jusqu'au contexte brésilien ; b) les pratiques discursives et non discursives du champ de la nutrition lequel est compris dans le Sistema Único de Saúde (SUS - Système Unique de Santé) brésilien. La démarche de recherche comprend l'élaboration et analyse d'une archive composée de publications qui contiennent l'Histoire du praticien de la nutrition au Brésil et des publications officielles disponibles dans le site web « Política Nacional de Alimentação e Nutrição » (Politique Nationale d'Alimentation et de Nutrition) lesquelles sont considérées comme des guides d actions des praticiens de la nutrition sociale dans le Sistema Único de Saúde (SUS). Le concept de biopouvoir, décrit par Michel Foucault entre 1974 et 1979, et la notion de biopolitique, dans son sens réinterprété et mis à jour par Giorgio Agamben, Antônio Negri et Michael Hardt, ont fourni le support théorique de cette recherche

Cette étude propose de réaliser une lecture du chouriço, une confiture faite avec du sang, fabriquée et consommée dans tout le Seridó potiguar. Grace à l observation ethnographique réalisée entre 2003 et 2007, nous découvrons une économie domestique, une organisation sociale, des formes de sociabilité et de solidarité contruites autour de l élevage des porcs et des pratiques culinaires. Cette observation a aussi révélé un style alimentaire, des discours, des perceptions, des goûts et des comportements relatifs à la consommation de la confiture qui résultent, em grande partie, de la relation dynamique entre une norme idéalisée et des pratiques observées qui ont montré des tensions et des contradictions entre ce qui est dit et ce qui est fait. Avec l étude du chouriço, nous reálisons une lecture de la culture alimentaire; notre intention a été de problématiser l applicabilité des normes sociales et leur inscription dans la réalité. Ainsi, em faisant une analyse simbolique du chouriço, nous considérons ensemble les aspects sociaux et symboliques et nous décrivons comment les habitants du Seridó pensent leur alimentation en corrélation avec les pratiques alimentaires et les formes de sociabilité. L étude a révélé que les príncipes de confiance et d interconnaissance, fondés sur les liens sociaux, structurent les relations constituées autour de l élevage des porcs et de la production, de la distribution et de la consommation du chouriço. D un point de vue symbolique, le sang est central dans le style alimentaire: il apparaît comme une anti-nourriture et révèle des prohibitions et des transgressions. La contrastivité entre les pratiques et les discours est en relation directe avec la nature du chouriço, fait avec le sang du porc et considéré comme un dessert

The aim of this work is to analyse the tourism events and the performance of this segment from market as strategy in the combat of Natal's hotel seasonality, in the executives/managers's vision from this sector. Two searches were realized to turn available this study: Inicialy a bibliographic search involving the concepts associated with the tematic in question so that it arranges the embasament theoric-scientific and a survey from facts through the country search, where it was applicable in the establishments of work's population with the auxiliary from a formulary answered by a personal interview. The analyses techniques through facts were: estatistic descritive and Kolmogorov-smirnov test.Among the results found, it was verified that the main reasons alleged by the hotels to ingress in the segment from the events were the alinement from the competitive company, the diversification in the options in the sense of occupy the establishments during the period of low season and answer to the demand of market. Investigated the profile from the events occured in the Natal hotels referring to the port, public origin , kinds of events and frequency from their realizations, as well as , the capacity from these establishments to attend this segment.It was noticed that in spite of the hotels agree that the events are important estrategies to combat the seasonality, the establishments still suffer with the flutuation, what can be justified from the moment that it's considered that the events also behave from seasonal manner, having more concentration in certain periods from the year. It was evaluated that the main advantage noticed by the realization from the hotels's events is the utilization from alimentation and drinking services, surpassing the advantage from elevation of taxes occupation from the apartments

Alimentation is essential in life. Concerning omnivores, characterized by the necessity of a varied diet to satisfy their metabolic needs, it is extremely advantageous the assumption of new foods. However, the assumption of new unknown foods is, potentially dangerous, because of possible intoxications. In this sense, one of the most important behaviors related to reducing risks is the so called food neophobia, characterized by the rejection of new foods and/or an ingestion of very little amounts. The aim of the present study was to investigate if age, sex and socio-economical status were able to influence food neophobia. The neophobia has been described in a range of 3-6 years old children taken both from public and private schools within the city of Natal-RN. Four different type of ice-creams, each one characterized by a different flavor, have been utilized. Two flavors were known to the young and the remaining two flavor were new. We didn't find significant differences between the investigated variables. However, the exploitation of data from the survey conducted showed that the ease or not to accept new foods obtained, was correlated with the variables under the same guidelines observed in literature. Aspects related to the stimulus used probably eased the neophobic answer. Then, it is suggested that the food neophobia can be influenced by sex, age and socioeconomic factors of individuaIs. Neophobia tends to be more common in girls, with ages between three to four years old and with a low leveI socioeconomic. In this sense, given the importance of kid neophobic reaction to the development of dietary patterns of other life's stages, it is necessary to make further studies to better explain this phenomenon. Given the pivotal role of food neophobia to the development of alimentary habits within all ages of life, other studies will be necessary for a better comprehension of such phenomena. Intensive production of tilápias, in cages or net tanks, has been proposed as an alternative to increase fish production, that would generate income and offer animal protein in different tropical and subtropical countries. However, this system of production enriches the aquatic environment with nutrients, principally nitrogen and phosphor derived from the dejections of the metabolism of food and eventual food surpluses consumed by the fishes; the alimentation of the fishes in this production modality is dependent on fish food. The emission of these nutritions in levels above the limit that the system is capable metabolize can provoke a phenomenon called eutrofization, putting in risk the quality of water for public and for fish production activities. In this context the work had as a goal to evaluate the trófico state of the four reservoirs for intensive production of tilapias in net-tanks, in other words, he maximum fish production that the reservoirs are able to hold, keeping the desired quantity of nutrient concentrations in water for public use. The results of the four ecosystems in the Boqueirão de Parelhas reservoir showed that it s possible to have an intensive production of tilapias in net tanks, in this environment the annual average concentration of phosphor, was below the considered critical limits to deflagrate the process of eutrofization in semi-arid regions. The carrying capacity of the Boqueirão de Parelhas reservoir depends on the conversion of the feeding facts and phosphor content in the food but it should vary between 100 and 300 tons per year over a variation in the conversion feeding factor of 1,7 to 2,0:1 and a variation in the P in the food of 0,7 to 0,9%
