A simple and effective method is suggested to improve the quality and shelf-life of commercial whole dried thelly prawns (Metapenaeus dobsoni). Treatment of whole prawns in 10% brine containing 0.1% citric acid for 20 min followed by drying in sun yield a product having good physical, chemical and organoleptic characteristics. Retardation of fungal incidence, reduction in total volatile nitrogen (TVBN) and improvement in flavour are some of the advantages of the treatment. The treated product has a shelf-life around 30 weeks compared to 20 weeks for untreated control and 7 weeks for commercial sample.

East African sun-dried fish infested by Dermestes maculatus were exposed to tropical sunlight at ambient temperature and analysed for insect mortality and weight losses. Solar treatment for 6 to 8 lo was highly effective for one layer of split sun-dried fish and 100% insect mortality was toted, while pest species were still present in the four layer batch. Weight losses between 1.2% and 10.2% were recorded, the top layer suffering the highest loss. The high surface temperature of 60°C caused fish to become brittle and quality losses occurred. A reduction in length of exposure/temperature is probably a presupposition for application of the method to local conditions.

East African sun-dried fish dipped for 4 seconds in different solutions of pyrethrum and piperonyl butoxide were analysed for insecticide residue limits. All analyses showed residues above the FAO/WHO MRL; exceeding factors of between 7.6 (22.9 ppm) and 1.6 (5.3 ppm) were found for pyrethrum while exceeding factors between 5.1 (102 ppm) and 1.7 (33.1 ppm) were common for piperonyl butoxide after 6 months storage at ambient temperature. All insecticide treated fish, regardless of dip concentration, were observed to be less susceptible to infestation by Dermestes maculatus than samples of untreated fish. No dry weight losses due to insect infestation were recorded, however moisture evaporation caused weight losses between 6 and 8% during the period. Further investigations showed that careful handling and a dip concentration more in accordance with FAO/WHO MRL than the commercial practice will reduce the cost of insecticides from K.sh. 0.72 to K.sh. 0.23 per kg pyrethrum treated fish.

Studies were conducted to assessment the quality of traditional and solar tunnel dried SIS products. The moisture content of the solar products ranged from 14.38 to 18.48% with the lowest in batashi and the highest value in tengra. The moisture content of the traditional products was in the range of 23.26 to 26.42%. The range of protein contents on moisture free basis was from 67.57 to 71.90% in solar dried fishes with highest value obtained in dhela and lowest value in batashi. These values were more or less similar to those of traditional dried SIS products which were in the range of 68.02 to 73.54% on dry weight basis. Lipid contents of solar dried SIS varied from 14.10 to 16.26% and on moisture free basis the in the range of 11.73 to 21.98 with highest value found in tengra and lowest in puti. These values were more or less similar to those found for traditional dried products on dry weight basis and ranged from were 12.37 to 22.43%. Maximum reconstitution of solar dried products was obtained at 80°C in all samples and was in the range of 65.26 to 70.51% where the percentage of reconstitution increases with the increase of socking time and reach maximum at the end of up to 60 min. The TVB-N content of solar dried fish is low compared with traditional one ranging from 20.30 to 28.40mg/100g and peroxide value in the range of 12. 54 to 19.20meq./kg oil. The TVB-N of traditionally dried products were in the range of 32.50 to 45.45mg/100g and PO values of the traditionally dried products were in the range of 30.00 to 36.00meq./kg oil. The bacterial load of the solar dried products was in the range of 4.0x10 super(3)/g to 3.6x10 super(5)CFU/g and of the traditionally dried products ranged from 1.45x10 super(5) to 2.52x10 super(6) CFU/g.

Studies on the quality assessments of three traditional, rotary and solar tunnel dried SIS products were conducted. Organoleptic quality of traditional dried SIS products available in the markets was poor compared to those produced in rotary and solar tunnel dryer. Reconstitution of samples were in the range of 54.26% to 75.24%, 69.37% to 83.73% and 55.08% to 80.24% when soaked at 80°C for traditional, rotary and solar tunnel dried products, respectively. The percentage of reconstitution increased with the increase of soaking time and the uptake of water was maximum after 60 min of soaking. The moisture contents of traditional, rotary and solar tunnel dried products were in the range of 26.02% to 27.33%, 16.23% to 22.84% and 13.71% to 19.30%, respectively. The protein contents were in the range of 60.78% to 72.59%, 62.17% to 76.27% and 61.11% to 76.00%, respectively; lipid contents were in the range of 12.26% to 22.60%, 14.00% to 24.71% and 13.92% to 22.39%, respectively and ash contents in the range of 15.11% to 16.59%, 8.32% to 13.51% and 8.71% to 16.45%, respectively on dry matter basis. The TVB-N content of rotary and solar tunnel dried products was low compared to traditional one ranging from 10.64 to 17.52 mg/100g and 14.34 to 15.68 mg/100g, respectively whereas the TVB-N content of traditional samples was in the range of 15.46 to 20.36 mg/100g. The bacterial load of traditional, rotary and solar tunnel dried products were in the range of 1.43x10 super(8) CFU/g to 2.89 x10 super(80 CFU/g, 1.91x10 super(8) CFU/g to 2.84x10 super(8) CFU/g and 1.95x10 super(8) CFU/g to 2.59x10 super(8) CFU/g, respectively. The results of the study indicated that dried fish products from rotary dryer and solar tunnel dryer were found to be of better quality in nutritional and food quality aspects than those of traditional dried products.

A study was conducted on the shelf-life of rotary and solar tunnel dried SIS products under different packaging and storage conditions. Organoleptically dried products were found in good condition after a storage period of 60 days in ambient and chilled conditions. The moisture content, TVB-N value and bacterial load slightly increased during 60 days of storage in ambient and chilled conditions. The changes in moisture content and bacterial load were faster in ambient temperature than in chilled storage condition whereas changes in TVB-N value was higher in chilled condition than in ambient temperature. The initial moisture content was in the range of 13.71% to 22.84%. After 60 days of storage in ambient and chilled condition the moisture content of dried products was in the range of 15.09% to 25.11% and 14.49% to 25.01%, respectively. The initial TVB-N value was in the range of 10.64 to 17.52 mg/100g and after 60 days of storage in ambient and chilled condition, TVB-N value was in the range of 29.00 to 34.82 mg/100g and 31.41 to 39.11 mg/100g, respectively. The initial bacterial load was in the range of 1.91x10 super(8) to 2.84x10 super(8) and after 60 days of storage in ambient and chilled condition, the bacterial load was in the range of 6.2x10 super(8) to 1.8x10 super(9) and 5.75x10 super(7) to 5.05x10 super(8) CFU/g, respectively. The results of the present study indicated that it is necessary to store high quality dried products in sealed packed in chilled condition to ensure good quality up to a certain period of time.

Studies were conducted on the organoleptic, biochemical and bacteriological aspects of three dried fish products produced from two different model of low cost solar tunnel dryer. The overall quality of the products obtained from both dryers was excellent. Sixty minutes soaking showed the maximum water reconstitution of the products with values between 66.82 to 75.28% and 71.98 to 78.09% in dryer 1 & 2 respectively. The highest reconstitution was obtained from Silver Jew fish (75.28-78.09%) and lowest from Bombay duck (66.86-71.98%) from both dryers. The average moisture, protein, lipid and ash content of the dried products were 11.8-15.0%, 57.32-68.49%, 6.08-8.62% and 12.25-14.88% respectively in fish in dryer 1 and dryer 2. The TVB-N values were in the range of 24.3 to 30.9 in dryer 1 and 22.1 to 28.2 mg/100 g samples in dryer 2. The highest values were obtained from Bombay duck and lowest value in Silver Jew fish in both dryers. The peroxide values varied from 14.1 to 16.9% in dryer 1 and 13.3 to 16.4% in dryer 2. The highest peroxide value was obtained from Ribbon fish and lowest from Silver Jew fish. Total bacterial load varied in the range of 6.6x10⁴— 8.6x10⁴ CFU/g in dryer 1 and 2.54x10⁴ to 4.9x10⁴ CFU/g in dryer 2. The highest value was obtained from Ribbon fish and lowest from Silver Jew fish.

A low cost solar drier was constructed using locally available materials. The size of the drier was 20x3.6x3 having drying capacity of 80 kg of SIS (w/w). Optimization of moisture content was observed for mola, dhela, chapila, chanda and puti at temperature ranges between 40-45°C and 50-55°C in solar tunnel drier. There was little or no change in moisture content at temperature below 40°C during the first 3 hours. Then the moisture content declined gradually with the increase of drying period. On the other hand, at temperature between 50-55°C, moisture content started to decline after 2 hours of drying. The moisture content of the sample reached at about 16% after 26 hours of sun drying at 40-45°C and 20 hours at 50-55°C. The optimum temperature for producing high quality dried products was 45-50°C in solar tunnel drier. The temperature and relative humidity outside and inside the dryers (with fish) at various locations were recorded from 8.00am to 4.00pm. The normal atmospheric ambient temperature was recorded in the range of 25-37°C from at 8:00am to 4:00pm. During the same period the atmospheric relative humidity recorded was in the range of 30-58%. On the other hand, the maximum temperature inside the dryers was recorded in the range of 28-65°C. The lowest temperature recorded was 28°C in the morning and at 13.00pm the highest temperature 65°C was recorded. The maximum relative humidity 58% found in the afternoon and minimum of 28% at noon. There was inverse relationship between temperature intensity of sunshine and humidity which decreased as sunshine increased. In total, it took around 26 hours of drying to reduce the moisture level to about 16%.

Proximate composition, PH, total aerabic counts, coliform counts, appearance and taste of dried Lake Tanganyika sardine (Limnothrissa miodon and Stolothrissa tanganicae) sampled at Lusaka markets were analysed for the period July 1969 to February 1970. Water content for the dried sardine varied between 7 and l4% and oil content between 8 and 14% according to season. Flavour of the cooked sardine was scored as good to fair, which discredits the common belief that is poor in quality. Cooked fish scores correlated poorly to the oil content and bacterial counts of the dried fish.

This paper reports the results of a retail price survey at Lusaka markets on split, smoked, dried bream (Tilapia spp.) in 1968-69 and dried Lake Tanganyika sardines (Limnothrissa miodon and Stolothrissa tanangicae) in 1969-70. During the survey periods the average prices of these products maintained a level 70% to 130% higher than those fixed by the Government. Price fluctuations in relation to season, size and quality of the products were discussed. The prices were affected by season and size of the products but not by quality in terms of appearance and smell of the non-cooked products.

A critical examination of the market quality of split, dried and smoked bream (Tilapia spp.) was chemically, bacteriologically and organoleptically conducted for the period of August 1968 to January 1969. The aim of this survey was to obtain basic information for the development of national quality standards for the commodity. Relationships of cooked meat score to pH, fish size, appearance and smell score, and water content wcre significantly correlated and responsive. Therefore, these parameters were proposed to be used as indices for the quality standards of the products.

On 15-16 January 2005, three offshore species of cetaceans (33 short-finned pilot whales, Globicephala macrorhynchus, one minke whale, Balaenoptera acutorostrata, and two dwarf sperm whales, Kogia sima) stranded alive on the beaches of North Carolina. The pilot whales stranded near Oregon Inlet, the minke whale in northern North Carolina, and the dwarf sperm whales near Cape Hatteras. Live strandings of three species in one weekend was unique in North Carolina and qualified as an Unusual Mortality Event. Gross necropsies were conducted on 16-17 January 2005 on 27 pilot whales, two dwarf sperm whales, and the minke whale. Samples were collected for clinical pathology, parasitology, gross pathology, histopathology, microbiology and serology. There was variation in the number of animals sampled for each collection type, however, due to carcasses washing off the beach or degradation in carcass condition during the course of the response. Comprehensive histologic examination was conducted on 16 pilot whales, both dwarf sperm whales, and the minke whale. Limited organ or only head tissue suites were obtained from nine pilot whales. Histologic examination of tissues began in February 2005 and concluded in December 2005 when final sampling was concluded. Neither the pilot whales nor dwarf sperm whales were emaciated although none had recently ingested prey in their stomachs. The minke whale was emaciated; it was likely a dependent calf that became separated from the female. Most serum biochemistry abnormalities appear to have resulted from the stranding and indicated deteriorating condition from being on land for an extended period. Three pilot whales had clinical evidence of pre-existing systemic inflammation, which was supported by histopathologic findings. Although gross and histologic lesions involving all organ systems were noted, consistent lesions were not observed across species. Verminous pterygoid sinusitis and healed fishery interactions were seen in pilot whales but neither of these changes were causes of debilitation or death. In three pilot whales and one dwarf sperm whale there was evidence of clinically significant disease in postcranial tissues which led to chronic debilitation. Cardiovascular disease was present in one pilot whale and one dwarf sperm whale; musculoskeletal disease and intra-abdominal granulomas were present in two pilot whales. These lesions were possible, but not definitive, causal factors in the stranding. Remaining lesions were incidental or post-stranding. The minke whale and three of five tested pilot whales had positive morbillivirus titers (≥1:8 with one at >1:256), but there was no histologic evidence of active viral infection. Parasites (nematodes, cestodes, and trematodes) were collected from 26 pilot whales and two dwarf sperm whales. Sites of collection included stomach, nasal/pterygoid, peribullar sinuses, blubber, and abdominal cavity. Parasite species, locations and loads were within normal limits for free-ranging cetaceans and were not considered causative for the stranding event. Gas emboli lesions which were considered consistent with or diagnostic of sonarassociated strandings of beaked whales or small cetaceans were not found in the whales stranded as part of UMESE0501Sp. Twenty-five heads were examined with nine specific anatomic locations of interest: extramandibular fat, intramandibular fat, auditory meatus, peribullar acoustic fat, peribullar soft tissue, peribullar sinus, pterygoid sinus, melon, and brain. The common finding in all examined heads was verminous pterygoid sinusitis. Intramandibular adipose tissue reddening, typically adjacent to the vascular plexus, was observed in some individuals and could represent localized hemorrhage resulting from vascular rete rupture, hypostatic congestion, or erythrocyte rupture during the freeze/thaw cycle. One cetacean had peracute to acute subdural hemorrhage that likely occurred from thrashing on the beach post-stranding, although its occurrence prior to stranding cannot be excluded. Information provided to NMFS by the U.S. Navy indicated routine tactical mid-frequency sonar operations from individual surface vessels over relatively short durations and small spatial scales within the area and time period investigated. No marine mammals were detected by marine mammal observers on operational vessels; standard operating procedure for surface naval vessels operating mid-frequency sonar is the use of trained visual lookouts using high-powered binoculars. Sound propagation modeling using information provided to NMFS indicated that acoustic conditions in the vicinity likely depended heavily on position of the receivers (e.g., range, bearing, depth) relative to that of the sources. Absent explicit information on the location of animals meant that it was not possible to estimate received acoustic exposures from active sonar transmissions. Nonetheless, the event was associated in time and space with naval activity using mid-frequency active sonar. It also had a number of features in common (e.g., the “atypical” distribution of strandings involving multiple offshore species, all stranding alive, and without evidence of common infectious or other disease process) with other sonar-related cetacean mass stranding events. Given that this event was the only stranding of offshore species to occur within a 2-3 day period in the region on record (i.e., a very rare event), and given the occurrence of the event simultaneously in time and space with a naval exercise using active sonar, the association between the naval sonar activity and the location and timing of the event could be a causal rather than a coincidental relationship. However, evidence supporting a definitive association is lacking, and, in particular, there are differences in operational/environmental characteristics between this event and previous events where sonar has apparently played a role in marine mammal strandings. This does not preclude behavorial avoidance of noise exposure. No harmful algal blooms were present along the Atlantic coast south of the Chesapeake Bay during the months prior to the event. Environmental conditions, including strong winds, changes in upwelling- to downwelling-favorable conditions, and gently sloping bathymetry, were consistent with conditions which have been correlated with other mass strandings. In summary, we did not find commonality in gross and histologic lesions that would indicate a single cause for this stranding event. Three pilot whales and one dwarf sperm whale had debilitating conditions identified that could have contributed to stranding, one pilot whale had a debilitating condition (subdural hemorrhage) that could have been present prior to or resulting from stranding. While the pilot and dwarf sperm whale strandings may have had a common cause, the minke whale stranding was probably just coincidental. On the basis of examination of physical evidence in the affected whales, however, we cannot definitively conclude that there was or was not a causal link between anthropogenic sonar activity or environmental conditions (or a combination of these factors) and the strandings. The German shrimp fisheries land different types of pro-duce. Besides cooked shrimp for human consumption small (undersized), raw shrimp (industrial shrimp) are landed regionally in the second half of each year for animal feedstuff purposes. They are dried in special plants and form sellable secession from sieving processes aboard shrimping vessels. Grading the cooked shrimp ashore gives the non-marketable fraction of too small shrimp, which is not meant for shelling. That fraction is produced all year alongside landings of shrimp and is used for feed-stuff as well. Both extra fractions are listed in the official statistics since 2000 for the first time. That year industrial shrimp made up 6 % of the total landings while the non-marketable, small cooked shrimp summed up to 7 %, respectively. Though being essential for specialised animal feeds they are commercially of very little value, making up to hardly 2 ‰ of the total turnover of the German shrimp fisheries.

For 10 years the Institute for Fishing Technology, Hamburg (IFH) has been carrying out experiments in the brown shrimp fishery with beam trawls aiming at a reduction of unwanted bycatches. When the tests were transferred to commercial fishery conditions the personnel effort and costs increased markedly. It became e.g. necessary to install a deep-freeze chain to make it possible to evaluate more samples in the laboratory. This again required to increase the number of technicians for measuring the fish and shrimp samples, but also made it necessary to perform this work in the most rational and time-saving way by applying modern electronic aids. Though all samples still have to be sorted by species and have to be weighed and measured the introduction of electronic aids, however, like electronic measuring board and computer-aided image processing system, all weight and length data are immediately and digitally recorded after processing. They are transferred via a network to a server PC which stores them into a purpose-designed database. This article describes the applicationof two electronic systems: the measuring board (FM 100, Fa. SCANTROL), iniated by a project in the Norwegian Institute for Fishing Technology, and a computer-aided image processing system, focussing on measuring shrimps in their naturally flexed shape, also developed in the Institute for Fishing Technology in close collaboration with the University of Duisburg. These electronic recording systems allow the consistent and reproducible record of data independent of the changing day-to-day personal form of the staff operating them. With the help of these systems the number of measurements the laboratory could be maximized to 250 000 per year. This made it possible to evaluate, in 1999, 525 catch samples from 75 commercial hauls taken during 15 days at sea. The time gain in measuring the samples is about one third of the time previously needed (i.e. one hour per sample). An additional advantage is the immediate availability of the digitally stored data which enables rapid analyses of all finished subexperiments. Both systems are applied today in several institutes of the Federal Research Centre. The image processing system is now the standard measuring method in an international research project.

A method to estimate the sand content in mussel products is described. It is based on the § 35 method for measuring the hydrochloric acid-insoluble portion of tomato purée, modified by freeze-drying of the sample during the preparation. By increasing of the volume of the sample it is also possible to minimise the standard deviation and the coefficient of variation.
