La presente tesis doctoral pretende ampliar conocimientos de los sistemas de producción y tecnología asociada del cerdo Ibérico. Los trabajos de campo fueron llevados a cabo en el CIA ‘El Dehesón del Encinar’ (Oropesa, Toledo, España) con cerdos Ibéricos de la estirpe Torbiscal. En los dos primeros experimentos, utilizando dos grupos de cerdos, se estudió el efecto de la restricción de la alimentación en premontanera sobre las características de la canal y sobre la composición de la grasa al sacrificio de los cerdos posteriormente cebados en montanera. Los animales restringidos en premontanera crecieron significativamente menos que los no restringidos durante dicho periodo, y manifestaron un crecimiento compensatorio durante la montanera. Este crecimiento compensatorio no fue suficiente, y los animales restringidos llegaron con pesos significativamente inferiores al sacrificio, aunque esto no supuso diferencias para las características de la canal entre ambos grupos de animales. También al sacrificio, los animales restringidos durante la premontanera tuvieron concentraciones significativamente diferentes de ácidos grasos, sobre todo en la capa interna de la grasa subcutánea y en la fracción de lípidos polares de la grasa intramuscular; asimismo, tuvieron mayores concentraciones de tocoferoles en el músculo Longissimus dorsi. En un tercer experimento, utilizando cuatro grupos de animales, se estudió el efecto del tiempo de estancia de los cerdos en montanera exclusiva sobre las características de la canal y de la grasa al sacrificio. La duración de la montanera afectó significativamente al crecimiento, a los pesos y porcentajes de los productos del despiece y al perfil de ácidos grasos de la grasa subcutánea. Los animales cebados con pienso en confinamiento tuvieron mayor crecimiento, mejor calidad de la canal, y peor calidad de grasa que los otros tres grupos de animales que se acabaron en montanera exclusiva durante 46, 83 y 111 días. En el último experimento se evaluó si la impedancia bioeléctrica es un método adecuado para realizar un estudio tisular de los jamones de cerdos Ibéricos, aspecto especialmente relevante para la industria. La impedancia bioeléctrica resultó ser un método no invasivo adecuado, que puede ser aplicado para predecir la composición tisular de los jamones, aunque se necesitan más ensayos antes de llevar este método a la práctica cotidiana de la industria. ABSTRACT This Thesis aims to expand knowledge on production systems and technology associated to Iberian pigs. Fieldwork was conducted in the CIA ‘El Dehesón del Encinar’ (Oropesa, Toledo, Spain) with Iberian pigs Torbiscal line. In first two experiments, using two groups of pigs, the effect of feed restriction during the period previous to free-range fattening on growth and carcass characteristics in Iberian pigs finished under free-range conditions was studied. The pigs fed low feeding levels during the period previous to free-range finishing period, had significantly lower growth than those feed with a high level during that period, and showed a compensatory growth during free-range period. However, this compensatory growth was not enough to reach the same weight than the animals fed with a high level, and the slaughter weights were significantly different, although no differences were observed for the carcass characteristics between both groups of pigs. At slaughter, animals fed low feeding levels during the period previous to free-range finishing period, had significantly different fatty acid proportions, especially in the inner backfat layer and in polar lipids fraction of the intramuscular fat; also, the tocopherol concentration found in Longissimus dorsi muscle from pigs fed low feeding levels was higher than those fed high feeding levels. In a third experiment, using four groups of animals, the effect of duration under freerange exclusive conditions on carcass and fat characteristics at slaughter was studied. The growth, weights and percentages of carcass cuts, and fatty acid profile of the backfat were significantly affected by the duration under free-range exclusively conditions. The animals fed in confinement with concentrate diets during the whole fattening period had high growth, better carcass quality and worse fat quality than the other three groups of animals fed under free-range exclusive conditions during 46, 83 and 111 days. In the last experiment, it assessed whether the bioelectrical impedance is a suitable method for perform a tissue study of Iberian pig hams, particularly important aspect for industry. The bioelectrical impedance has proved to be a non-invasive suitable method, which can be applied to predict the tissues composition of the hams, but more trials are needed before carrying this method to everyday practice in the industry.

La presente Tesis está orientada al análisis de la supervisión multidistribuida de tres procesos agroalimentarios: el secado solar, el transporte refrigerado y la fermentación de café, a través de la información obtenida de diferentes dispositivos de adquisición de datos, que incorporan sensores, así como el desarrollo de metodologías de análisis de series temporales, modelos y herramientas de control de procesos para la ayuda a la toma de decisiones en las operaciones de estos entornos. En esta tesis se han utilizado: tarjetas RFID (TemTrip®) con sistema de comunicación por radiofrecuencia y sensor de temperatura; el registrador (i-Button®), con sensor integrado de temperatura y humedad relativa y un tercer prototipo empresarial, módulo de comunicación inalámbrico Nlaza, que integra un sensor de temperatura y humedad relativa Sensirion®. Estos dispositivos se han empleado en la conformación de redes multidistribuidas de sensores para la supervisión de: A) Transportes de producto hortofrutícola realizados en condiciones comerciales reales, que son: dos transportes terrestre de producto de IV gama desde Murcia a Madrid; transporte multimodal (barco-barco) de limones desde Montevideo (Uruguay) a Cartagena (España) y transporte multimodal (barco-camión) desde Montevideo (Uruguay) a Verona (Italia). B) dos fermentaciones de café realizadas en Popayán (Colombia) en un beneficiadero. Estas redes han permitido registrar la dinámica espacio-temporal de temperaturas y humedad relativa de los procesos estudiados. En estos procesos de transporte refrigerado y fermentación la aplicación de herramientas de visualización de datos y análisis de conglomerados, han permitido identificar grupos de sensores que presentan patrones análogos de sus series temporales, caracterizando así zonas con dinámicas similares y significativamente diferentes del resto y permitiendo definir redes de sensores de menor densidad cubriendo las diferentes zonas identificadas. Las metodologías de análisis complejo de las series espacio-temporales (modelos psicrométricos, espacio de fases bidimensional e interpolaciones espaciales) permitieron la cuantificación de la variabilidad del proceso supervisado tanto desde el punto de vista dinámico como espacial así como la identificación de eventos. Constituyendo así herramientas adicionales de ayuda a la toma de decisiones en el control de los procesos. Siendo especialmente novedosa la aplicación de la representación bidimensional de los espacios de fases en el estudio de las series espacio-temporales de variables ambientales en aplicaciones agroalimentarias, aproximación que no se había realizado hasta el momento. En esta tesis también se ha querido mostrar el potencial de un sistema de control basado en el conocimiento experto como es el sistema de lógica difusa. Se han desarrollado en primer lugar, los modelos de estimación del contenido en humedad y las reglas semánticas que dirigen el proceso de control, el mejor modelo se ha seleccionado mediante un ensayo de secado realizado sobre bolas de hidrogel como modelo alimentario y finalmente el modelo se ha validado mediante un ensayo en el que se deshidrataban láminas de zanahoria. Los resultados sugirieron que el sistema de control desarrollado, es capaz de hacer frente a dificultades como las variaciones de temperatura día y noche, consiguiendo un producto con buenas características de calidad comparables a las conseguidas sin aplicar ningún control sobre la operación y disminuyendo así el consumo energético en un 98% con respecto al mismo proceso sin control. La instrumentación y las metodologías de análisis de datos implementadas en esta Tesis se han mostrado suficientemente versátiles y transversales para ser aplicadas a diversos procesos agroalimentarios en los que la temperatura y la humedad relativa sean criterios de control en dichos procesos, teniendo una aplicabilidad directa en el sector industrial ABSTRACT This thesis is focused on the analysis of multi-distributed supervision of three agri-food processes: solar drying, refrigerated transport and coffee fermentation, through the information obtained from different data acquisition devices with incorporated sensors, as well as the development of methodologies for analyzing temporary series, models and tools to control processes in order to help in the decision making in the operations within these environments. For this thesis the following has been used: RFID tags (TemTrip®) with a Radiofrequency ID communication system and a temperature sensor; the recorder (i-Button®), with an integrated temperature and relative humidity and a third corporate prototype, a wireless communication module Nlaza, which has an integrated temperature and relative humidity sensor, Sensirion®. These devices have been used in creating three multi-distributed networks of sensors for monitoring: A) Transport of fruits and vegetables made in real commercial conditions, which are: two land trips of IV range products from Murcia to Madrid; multimodal transport (ship - ship) of lemons from Montevideo (Uruguay) to Cartagena (Spain) and multimodal transport (ship - truck) from Montevideo (Uruguay) to Verona (Italy). B) Two coffee fermentations made in Popayan (Colombia) in a coffee processing plant. These networks have allowed recording the time space dynamics of temperatures and relative humidity of the processed under study. Within these refrigerated transport and fermentation processes, the application of data display and cluster analysis tools have allowed identifying sensor groups showing analogical patterns of their temporary series; thus, featuring areas with similar and significantly different dynamics from the others and enabling the definition of lower density sensor networks covering the different identified areas. The complex analysis methodologies of the time space series (psychrometric models, bi-dimensional phase space and spatial interpolation) allowed quantifying the process variability of the supervised process both from the dynamic and spatial points of view; as well as the identification of events. Thus, building additional tools to aid decision-making on process control brought the innovative application of the bi-dimensional representation of phase spaces in the study of time-space series of environmental variables in agri-food applications, an approach that had not been taken before. This thesis also wanted to show the potential of a control system based on specialized knowledge such as the fuzzy logic system. Firstly, moisture content estimation models and semantic rules directing the control process have been developed, the best model has been selected by an drying assay performed on hydrogel beads as food model; and finally the model has been validated through an assay in which carrot sheets were dehydrated. The results suggested that the control system developed is able to cope with difficulties such as changes in temperature daytime and nighttime, getting a product with good quality features comparable to those features achieved without applying any control over the operation and thus decreasing consumption energy by 98% compared to the same uncontrolled process. Instrumentation and data analysis methodologies implemented in this thesis have proved sufficiently versatile and cross-cutting to apply to several agri-food processes in which the temperature and relative humidity are the control criteria in those processes, having a direct effect on the industry sector.

En el presente trabajo se ha analizado la situación actual de los hábitos de alimentación en los snack de media mañana en la población ESO y Bachillerato y los motivos de esta situación. También se ha estudiado la labor de los centros educativos y de los profesores respecto a la educación alimenticia de los estudiantes. Se ha realizado un estudio en dos centros escolares de la Comunidad de Madrid a los alumnos de ESO y Bachillerato, el Colegio Castilla de Torrejón de la Calzada y el IES Manuel Elkin Patarroyo, de las tendencias nutricionales durante los recreos. Se han obtenido hábitos y conductas alimenticias inadecuadas, por lo que se han propuesto varias aplicaciones educativas para emplear dentro del aula. Los centros educativos necesitan fomentar políticas acerca de educación nutricional que forme a los adolescentes en futuros adultos con hábitos de vida saludables. ABSTRACT The study analyzes the current situation of the eating habits in the mid-morning snack in adolescents at school population and the reasons for this situation. Regarding the type that eating students have, the work of schools regarding nutritional education is also studied. The study was conducted in two schools in the Comunidad de Madrid for ESO and Bachillerato students, (Colegio Castilla from Torrejón de la Calzada and IES Manuel Elkin Patarroyo from Parla), about nutritional trends during playground. The results showed inadequate eating habits and behaviors so it has proposed various educational proposals for use in the classroom. The schools need to promote policies on nutrition education that teach teenagers in future adults with healthy living habits

Las organizaciones en la actualidad están sometidas permanentemente a cambios acelerados, obligándolas a incrementar su flexibilidad y adaptabilidad para mantener su posición competitiva, sobrevivir a estas presiones lograr sus objetivos y ser más productivas. Por estas razones, la productividad del factor humano es fundamental, ya que son las personas las que realizan los procesos creativos que generan resultados en las organizaciones. Cuando las personas interactúan en la organización se generan unos procesos de carácter psicosocial que incide en el desempeño de individuos, grupos y organización y se denominan Factores grupales, porque son producto de la actuación de las personas en grupos de trabajo. Dichos factores tienen impacto en la productividad, por lo que resulta de interés el estudio de estas relaciones. Con el fin de analizar este impacto, se presenta relaciones Factores Grupales-Productividad, mediante un Modelo de Ecuaciones Estructurales (SEM), donde los Factores Grupales y la Productividad son constructos o variables latentes explicadas por variables observables o indicadores. El modelo planteado, es aceptado de acuerdo con los índices globales de ajuste y a las cargas factoriales de las variables del modelo resultante. Se corroboró que los factores grupales, tales como Cohesión, Conflicto, Consenso y Moral, inciden en la productividad.

A total of 106 potential duplicate cases involved 277 accessions were detected on the basis of passport data in the durum wheat collection maintained in the CRF-INIA. Similarity between accessions was measured by agro-morphological traits. The 90% of the agro-morphological duplication were verified with gliadin proteins, allowing identification of similar material with greater refinement than agro-morphological data. However, the results indicated not to decide for rationalisation only on the basis of molecular data.

This work studied the combined use of gliadins and SSRs to analyse inter- and intra-accession variability of the Spanish collection of cultivated einkorn (Triticum monococcum L. ssp. monococcum) maintained at the CRF-INIA. In general, gliadin loci presented higher discrimination power than SSRs, reflecting the high variability of the gliadins. The loci on chromosome 6A were the most polymorphic with similar PIC values for both marker systems, showing that these markers are very useful for genetic variability studies in wheat. The gliadin results indicated that the Spanish einkorn collection possessed high genetic diversity, being the differentiation large between varieties and small within them. Some associations between gliadin alleles and geographical and agro-morphological data were found. Agro-morphological relations were also observed in the clusters of the SSRs dendrogram. A high concordance was found between gliadins and SSRs for genotype identification. In addition, both systems provide complementary information to resolve the different cases of intra-accession variability not detected at the agro-morphological level, and to identify separately all the genotypes analysed. The combined use of both genetic markers is an excellent tool for genetic resource evaluation in addition to agro-morphological evaluation.

A subset of durum wheat Spanish landraces, previously evaluated for yield at low and high nitrogen (N) levels, was analysed for quality, protein content (P) and sodium dodecyl sulphate sedimentation (SDSS) test. The evaluation was carried out at the two N rates and in two years. The influence of prolamin alleles at the Glu-1, Glu-3, Glu-B2 and Gli-1 loci on quality parameters was also studied. The non significant Variety-by-Year or Variety-by-N interactions suggested that year and N affected all the varieties in a similar manner. Year and N effects were larger than variety effect for P, which increased with N. In contrast, variety genotype exhibited a stronger influence on SDSS test, which was not affected by year and fertilizer. Variety effects on P did not reflect the variety differences for SDSS test. A high positive influence of some prolamin alleles on quality parameters was detected, mainly for SDSS values. No correlation between yield and P was detected in the landraces adapted to low N. Based on the results of yield and quality evaluations, four landraces with high yield and high gluten strength were pre-selected for low N production.

Reducing duplication in ex-situ collections is complicated and requires good quality genetic markers. This study was conducted to assess the value of endosperm proteins and SSRs for validation of potential duplicates and monitoring intra-accession variability. Fifty durum wheat (Triticum turgidum ssp. durum) accessions grouped in 23 potential duplicates, and previously characterised for 30 agro-morphological traits, were analysed for gliadin and high molecular weight glutenin (HMWG) subunit alleles, total protein, and 24 SSRs, covering a wide genome area. Similarity and dissimilarity matrices were generated based on protein and SSRs alleles. For heterogeneous accessions at gliadins the percent pattern homology (PH) between gliadin patterns and the Nei’s coefficient of genetic identity (I) were computed. Eighteen duplicates identical for proteins showed none or less than 3 unshared SSRs alleles. For heterogeneous accessions PH and I values lower than 80 identified clearly off-types with more than 3 SSRs unshared. Only those biotypes differing in no more than one protein-coding locus were confirmed with SSRs. A good concordance among proteins, morphological traits, and SSR were detected. However, the discrepancy in similarity detected in some cases showed that it is advisable to evaluate redundancy through distinct approaches. The analysis in proteins together with SSRs data are very useful to identify duplicates, biotypes, close related genotypes, and contaminations

In this work gliadin proteins were used to analyse the genetic variability in a sample of the durum wheat Spanish collection conserved at the CRF-INIA. In total 38 different alleles were identified at the loci Gli-A1, Gli-A3, Gli-B5, Gli-B1, Gli-A2 and Gli-B2. All the gliadin loci were polymorphic, possessed large genetic diversity and small and large differentiation within and between varieties, respectively. The Gli-A2 and Gli-B2 loci were the most polymorphic, the most fixed within varieties and the most useful to distinguish among varieties. Alternatively, Gli-B1 locus presented the least genetic variability out of the four main loci Gli-A1, Gli-B1, Gli-A2 and Gli-B2. The Gli-B1 alleles coding for the gliadin γ-45, associated with good quality, had an accumulated frequency of 69.7%, showing that the Spanish germplasm could be a good source for breeding quality. The Spanish landraces studied showed new gliadin alleles not catalogued so far. These new alleles might be associated with specific Spanish environment factors. The large number of new alleles identified also indicates that durum wheat Spanish germplasm is rather unique.

The effects of inclusion of pea hulls (PH) in the diet on growth performance, development of the gastrointestinal tract and nutrient retention were studied in broilers from 1 to 18d of age. There were a control diet based on low fibre ingredients (69.3 total dietary fibre (16.1g crude fibre/kg)) and three additional diets that resulted from the dilution of the basal diet with 25, 50 and 75g PH/kg (81.2, 93.2, and 105.1g total dietary fibre/kg diet, respectively). Each treatment was replicated six times and the experimental unit was a cage with 12 chicks. Growth performance, development of the gastrointestinal tract and the coefficients of total tract apparent retention (CTTAR) of nutrients were recorded at 6, 12 and 18d of age. In addition, jejunal morphology was measured at 12 and 18d and the coefficients of apparent ileal digestibility (CAID) of nutrients at 18d of age. Pea hulls inclusion affected all the parameters studied. The inclusion of 25 and 50g PH/kg diet improved growth performance as compared to the control diet. The relative weight (g/kg body weight) of proventriculus (P≤0.01), gizzard (P≤0.001) and ceca (P≤0.05) increased linearly as the level of PH in the diet increased. The inclusion of PH affected quadratically (P≤0.01) villus height:crypt depth ratio with the highest value shown at 25g PH/kg. In general, the CTTAR and CAID of nutrients increased linearly and quadratically (P≤0.05) with increasing levels of PH, showing maximum values with PH level between 25 and 50g/kg diet. We conclude that the size of the digestive organs increases with increasing levels of PH in the diet. In general, the best performance and nutrient digestibility values were observed with levels of PH within the range of 25 and 50g/kg. Therefore, young broilers have a requirement for a minimum amount of dietary fibre. When pea hulls are used as a source of fibre, the level of total dietary fibre required for optimal performance is within the range of 81.2–93.2g/kg diet (25.6–35.0g crude fibre/kg diet). An excess of total dietary fibre (above 93.2g/kg diet) might reduce nutrient digestibility and growth performance to values similar to those observed with the control diet.

Incorporation of fiber in cereals may lead to quality issues, thus decreasing consumer acceptance. This is partially due to deterioration of the microstructure, one of the primary quality attributes of cereals. The objective of this study was to better understand the mechanisms by which dietary fibers affect the quality of cereal products during extrusioncooking. The study quantified the effect of amount and type of fiber and whole grain on (i) texture, (ii) structure, and (iii) rehydration properties of extruded cereals. New innovative methods were applied and combined with traditional techniques to characterize both the structure and the rehydration properties. Extruded cereals were produced using a starch-based recipe (whole and wheat flours) and two sources of fibers (oat bran concentrate and wheat bran). The oat and wheat bran levels used in this study were 0, 10, and 20%. The different mixtures were extruded in a pilot twinscrew extruder BC21 (Clextral) and then sugar coated after drying. Mechanical properties of extruded cereals were investigated by compression test. The cellular structure was observed by X-ray tomography. The quality of coating (thickness, homogeneity) was analyzed by optical coherence tomography. The rehydration properties of such cereals in milk were evaluated by magnetic resonance imaging and optical coherence tomography. This work revealed that structure assessment of extruded cereals may lead to a better understanding of the effect of fiber addition on texture and rehydration properties. The application of innovative methods, such as optical coherence tomography and magnetic resonance imaging, was found to be useful to quantify the structural properties.

Cereals microstructure is one of the primary quality attributes of cereals. Cereals rehydration and milk diffusion depends on such microstructure and thus, the crispiness and the texture, which will make it more palatable for the final consumer. Magnetic Resonance Imaging (MRI) is a very powerful topographic tool since acquisition parameter leads to a wide possibility for identifying textures, structures and liquids mobility. It is suited for non-invasive imaging of water and fats. Rehydration and diffusion cereals processes were measured by MRI at different times and using two different kinds of milk, varying their fat level. Several images were obtained. A combination of textural analysis (based on the analysis of histograms) and segmentation methods (in order to understand the rehydration level of each variety of cereals) were performed. According to the rehydration level, no advisable clustering behavior was found. Nevertheless, some differences were noticeable between the coating, the type of milk and the variety of cereals

The aim of this work was to determine the nutritive value of palm kernel meal (PKM) in diets for growing rabbits. In Experiment 1, 20 New Zealand × Californian growing rabbits 50 d-old were used to determine energy, crude protein, fibre and fat digestibility of PKM. The nutritive value was estimated by the difference method using a basal diet and another diet made by substituting 200 g/kg of basal diet with PKM. Energy, crude protein, ether extract and neutral detergent fibre of PKM digestibilities were, respectively, 0.549 (±0.056, SE), 0.541 (±0.069), 0.850 (±0.048) and 0.430 (±0.101), and the digestible energy concentration was 10.9 MJ/kg (±1.03) DM. In Experiment 2, 412 rabbits were allocated at random to the two experimental diets to measure growing performance. Inclusion of 200 g PKM/kg in the diet did not affect feed or digestible energy intake but decreased slightly (by around 5%) average daily gain (P = 0.003) and feed efficiency (P < 0.001). Neither mortality nor Clostridium perfringens counts in soft faeces were affected by type of diet. Palm kernel meal can be considered a palatable source of fibre, protein and fat for rabbits and can substitute significant amounts of other fibrous ingredients in the diet without adverse effects on growth performance.
