The applicability of a portable NIR spectrometer for estimating the °Brix content of grapes by non-destructive measurement has been analysed in field. The NIR spectrometer AOTF-NIR Luminar 5030, from Brimrose, was used. The spectrometer worked with a spectral range from 1100 to 2300 nm. A total of 600 samples of Cabernet Sauvignon grapes, belonging to two vintages, were measured in a non-destructive way. The specific objective of this research is to analyse the influence of the statistical treatment of the spectra information in the development of °Brix estimation models. Different data pretreatments have been tested before applying multivariate analysis techniques to generate estimation models. The calibration using PLS regression applied to spectra data pretreated with the MSC method (multiplicative scatter correction) has been the procedure with better results. Considering the models developed with data corresponding to the first campaign, errors near to 1.35 °Brix for calibration (SEC = 1.36) and, about 1.50 °Brix for validation (SECV = 1.52) were obtained. The coefficients of determination were R2 = 0.78 for the calibration, and R2 = 0.77 for the validation. In addition, the great variability in the data of the °Brix content for the tested plots was analysed. The variation of °Brix on the plots was up to 4 °Brix, for all varieties. This deviation was always superior to the calculated errors in the generated models. Therefore, the generated models can be considered to be valid for its application in field. Models were validated with data corresponding to the second campaign. In this sense, the validation results were worse than those obtained in the first campaign. It is possible to conclude in the need to realize an adjustment of the spectrometer for each season, and to develop specific predictive models for every vineyard.

Near infrared spectroscopy (NIRS) can be used for the on-line, non-invasive assessment of fruit for eating quality attributes such as total soluble solids (TSS). The robustness of multivariate calibration models, based on NIRS in a partial transmittance optical geometry, for the assessment of TSS of intact rockmelons (Cucumis melo) was assessed. The mesocarp TSS was highest around the fruit equator and increased towards the seed cavity. Inner mesocarp TSS levels decreased towards both the proximal and distal ends of the fruit, but more so towards the proximal end. The equatorial region of the fruit was chosen as representative of the fruit for near infrared assessment of TSS. The spectral window for model development was optimised at 695-1045 nm, and the data pre-treatment procedure was optimised to second-derivative absorbance without scatter correction. The 'global' modified partial least squares (MPLS) regression modelling procedure of WINISI (ver. 1.04) was found to be superior with respect to root mean squared error of prediction (RMSEP) and bias for model predictions of TSS across seasons, compared with the 'local' MPLS regression procedure. Updating of the model with samples selected randomly from the independent validation population demonstrated improvement in both RMSEP and bias with addition of approximately 15 samples.

The soluble solids content of intact fruit can be measured non-invasively by near infrared spectroscopy, allowing “sweetness” grading of individual fruit. However, little information is available in the literature with respect to the robustness of such calibrations. We developed calibrations based on a restricted wavelength range (700–1100 nm), suitable for use with low-cost silicon detector systems, using a stepwise multiple linear regression routine. Calibrations for total soluble solids (°Brix) in intact pineapple fruit were not transferable between summer and winter growing seasons. A combined calibration (data of three harvest dates) validated reasonably well against a population set drawn from all harvest dates (r2 = 0.72, SEP = 1.84 °Brix). Calibrations for Brix in melon were transferable between two of the three varieties examined. However, a lack of robustness of calibration was indicated by poor validation within populations of fruit harvested at different times. Further work is planned to investigate the robustness of calibration across varieties, growing districts and seasons.

Ctra. San Vicente. Finca Santa Engracia. 06071 Badajoz, Spain. Worldwide the consumption of fruit and vegetables is increasing due to the dietary guidelines recommended by nutritionist. Because of their high content on phenols, vitamins, mineral and antioxidants, berry fruits are consumed not only in fresh forms but also as processed and derivative products such as juices, yogurts, jellies and dried fruits. As a high consumed red fruit, sweet cherry has been the focus on some studies, mainly regarding bioactive compounds content. “Sweetheart” cherries from São Julião region (Alentejo, Portugal) from two different production campaigns were kept in different storage conditions in order to evaluate both the environmental and storage effect on some physical-chemical properties and phenolics. Cold conditions - Cold (1 ºC, 95% RH) and modified atmosphere - MA (1 ºC, 95% RH with micro-perforated bags of Pplus®, Sidlaw Packaging, Bristol, UK) were tested. In order to establish the appropriate storage conditions, individual phenolic acids and physical-chemical properties were analysed during two consecutive years. Results show a general decrease on phenolic compounds content between cherries from both years. It is also observed that MA conditions do not affect significantly both phenolics and physical-chemical parameters when compared with Cold conditions. Additionally, it is observed similar behaviour on Cold and MA sweet cherries regarding its pH, total soluble solids content (TSS), titratable acidity (TA) and colour and individual phenols during storage time. Concluding, these results show, as expected, changes between cultivars which may be correlated with the environmental conditions on different years. Este trabalho foi conduzido para verificar o efeito do tamanho do corte, 2,5 x 2,5cm (corte 1) e 2,5 x 5,0cm (corte 2), e da temperatura de armazenamento (3, 6 e 9ºC), na velocidade da modificação da atmosfera ambiente e nas características químicas de mamões do grupo `Formosa' minimamente processados e embalados em copos plásticos (500ml). A concentração de CO2 no interior destes copos aumentou 2 a 3 vezes, durante as primeiras 6 horas após o corte, para depois diminuir e se estabilizar. Esta concentração aumentou com o aumento da temperatura de armazenamento. A umidade dos pedaços diminuiu consideravelmente nos dois primeiros dias, e a temperatura que melhor conservou a umidade foi a de 6ºC. A acidez total titulável foi menor no corte 2, com as maiores reduções a 6 e 9oC. Os teores de sólidos solúveis totais não variaram entre os tratamentos, e os cuidados higiênicos adotados durante o processamento permitiram a obtenção de produtos com baixa contagem microbiana, 10³UFC.g-1 nos pedaços armazenados a 9ºC após sete dias, e com boa manutenção da qualidade sensorial das mesmas. Estes resultados permitem indicar o mamão `Formosa' para a produção de produtos minimamente processados, na forma de pedaços, com conservação refrigerada (3 e 6ºC ) por um período de 7 dias.

A ampliação da oferta de tangerinas tanto no mercado interno como no externo é limitada pela grande quantidade de sementes nos frutos das principais cultivares, danos na casca resultante de doenças e pela pequena produção nas épocas mais quentes do ano. O presente trabalho teve como objetivo caracterizar a qualidade dos frutos e a época de maturação de 46 tangerinas e híbridos em condições de campo na Estação Experimental de Citricultura de Bebedouro (EECB), Bebedouro-SP. As variedades de tangerinas e híbridos (tangores e tangelos) foram introduzidas de bancos de germoplasma da Itália, Portugal, Espanha e França, e a pesquisa desenvolveu-se durante os anos agrícolas de 2001/2002 e 2002/2003. Foram avaliadas características externas de qualidade, como altura e diâmetro dos frutos, massa dos frutos, facilidade em descascar com a mão e características internas como: número de sementes, teor de sólidos solúveis totais, acidez total titulável, rendimento em suco, ratio e rendimento em polpa. Duas cultivares apresentaram frutos de boa qualidade e época de maturação precoce, podendo ser disponibilizadas no mercado, num período de escassez deste tipo de citros, e serem alternativas à tangerina-'Cravo'. Quatro cultivares que apresentaram boa qualidade e maturação mediana poderão ser alternativas à 'Poncã'.

A pitaya (Hylocereus undatus) é uma cactácea propagada vegetativamente, o que resulta em pequena ou nula variabilidade nos plantios comerciais. Devido a diversos estudos mostrarem que a espécie é auto ou parcialmente incompatível, realizou-se este trabalho com o intuito de verificar a eficiência de polinização da pitaya autofecundada e utilizando-se de pólen de H. polyrhizus e Selenicereus setaceus, além da influência da época do ano e da coloração da cobertura da tela plástica na qualidade dos frutos. O experimento foi realizado na Área de Fruticultura da Faculdade de Ciências Agrárias e Veterinárias - UNESP, Campus de Jaboticabal, num delineamento experimental inteiramente casualizado, em esquema fatorial 3 X 2 X 2 (três espécies doadoras de pólen X duas colorações de cobertura de sombrite, branca e preta, com 50% de sombreamento X duas épocas do ano), com quatro repetições para cada espécie doadora de pólen, em cada uma das coberturas. As flores foram emasculadas em duas épocas (março e abril) e polinizadas manualmente. As variáveis avaliadas foram porcentagem de pegamento dos frutos, características físicas e químicas dos frutos (comprimento e diâmetro, massas total, de polpa e de casca, % de polpa, espessura da casca, pH, teor de sólidos solúveis (ºBrix), teor de vitamina C, acidez titulável, índice de maturação - ST/AT) e dias da antese até a colheita. Não houve frutificação nas flores autopolinizadas, enquanto as polinizadas com pólen de H. polyrhizus e S. setaceus obtiveram 100% de pegamento. Pode-se concluir que há necessidade de interplantio de plantas de H. undatus (clone avaliado) com H. polyrhizus ou S. setaceus para a ocorrência de frutificação, sendo que a utilização de H. polyrhizus como doadora de pólen proporciona a obtenção de frutos com maior massa e menor acidez. As condições climáticas ocorridas durante o desenvolvimento dos frutos, nas épocas estudadas, afetaram a qualidade dos frutos.

A polpa de cajá tem sido exportada da região Nordeste para todo o Brasil, e uma das maneiras de conservá-la é processando-a e armazenado-a na forma congelada. Durante o processamento, existem dois fatores que favorecem a qualidade do produto a ser armazenado: a rapidez com que o produto é congelado e a adição de açúcar como forma de dificultar a ação microbiológica. Na linha de processo, algumas propriedades termofísicas, como o calor específico e a densidade, se alteram com as temperaturas negativas e com o teor de sólidos solúveis totais; dessa forma, para o dimensionamento adequado de máquinas e equipamentos, torna-se necessário conhecer essas propriedades, principalmente quando se operam equipamentos criogênicos, onde as temperaturas podem chegar a -196 ºC. Neste trabalho, determinaram-se a densidade e o calor específico da polpa do cajá com quatro diferentes níveis de sólidos solúveis totais (natural da polpa; 20; 40 e 60%) e temperaturas entre -196 ºC e -18 ºC. A densidade foi obtida pela razão entre a massa da polpa e o seu volume. O volume foi determinado pelo método do deslocamento de massa (água) e o calor específico por meio de balanço de calor entre a massa da polpa, a massa do cilindro que contém a polpa e a massa do gelo. Conclui-se que a densidade da polpa de cajá aumenta em função da redução da temperatura e do aumento do teor de sólidos solúveis totais de 9 para 60 °Brix e que o calor específico da polpa diminui com a diminuição de temperatura e aumenta com a concentração de sólidos solúveis totais.

Pressure drop and minimum fluidization velocity were experimentally studied in a vibro-fluidized bed of inert particles subjected to different vibration intensities during drying of guava pulp. Maltodextrin was added to the pulp in order to prevent stickiness between particles and the consequent bed collapse. Pulps were initially concentrated, resulting in pastes with different soluble solids content, and a constant fraction of maltodextrin was guaranteed in the final pulp samples. The pulp rheological behavior as affected by temperature and total soluble solids content, including maltodextrin, was evaluated and the effect of pulp apparent viscosity on pressure drop and minimum vibro-fluidization velocity were investigated. Two types of inert particles -3.6 mm glass beads and 3 mm Teflon cylinders were tested and, due to lower pressure drop presented by Teflon cylinders during operation of the dry vibro-fluidized bed, these particles were adopted for pulp drying process. Increasing pulp apparent viscosity caused a considerable increase in the vibro-fluidized bed pressure drop during pulp drying and, as a consequence resulted in a larger value of minimum vibro-fluidization velocity. on the other hand, the negative effect of increasing apparent viscosity could be attenuated by increasing the fluidized bed vibration intensity, which could prevent stickiness between particles. Objective: To characterize physically and chemically, non-sweetened orange juices and orange nectars sweetened with sucrose or sweet flavoring agents, with respect to their pH, titratable acidity (TA) and total soluble solids content (TSSC), as well as to evaluate the correlation of the latter property with the others. Method: Aliquots of three lots of two orange juices and two orange nectars containing sucrose and two containing sweet flavoring agents were evaluated. Mineral water was used as a control. The TSSC was determined using an Abbe refractometer. The pH was recorded using a digital pH meter, while TA was quantified by titrating samples of the beverages with 0.1 M NaOH until reaching pHs 5.5 and 7.0. Data were subjected to Pearson's correlation test, regression analysis, analysis of variance and Tukey's test (α=0.05). Results: TSSC values presented a strong correlation with TA, and these properties exhibited a quadratic relationship. Although the pH values were not dependent on the presence of sucrose or sweet flavoring agents, a significantly greater amount of base was necessary to reach pHs 5.5 and 7.0 in the beverages without sucrose or flavoring agents. Conclusion: Orange juices and nectars presented similar pH values, which was not associated with the presence of sucrose or sweet flavoring agents in the beverages. Higher TA values were obtained for the juice and lower for the nectars, regardless of containing sucrose or sweet flavoring agents. The increase of TSSC did not implicate in decrease of TA in the beverages.

Sweet sorghum figure as an alternative feedstock for ethanol production. The establishment of this culture in Brazilian production chain depends on the development of more productive and adapted cultivars. The aim of this study was to evaluate the general combining ability (GCA) of sweet sorghum lines and specific combining ability (SCA) of hybrid combinations as the agronomic and technological traits, and additionally to identify promising hybrid combinations for evaluation in advanced trials. Five restorer lines (R) and four male-sterile lines (A) were used in a partial cross diallel yielding 20 hybrids. The parental lines, hybrids and one check were evaluated in experiments carried out in a rectangular lattice design 5x6 with three replicates in two locations. The following traits were measured: flowering time, plant height, green mass yield, dry matter percentage, dry matter yield, juice extraction, total soluble solids content, sucrose content, purity, reducing sugars content, fiber content, sugars reducing total content, total recoverable sugars, hydrous ethanol, tons of per hectare, and ethanol production. There were differences between locations and genotypes for the traits. There was a significant effect of the genotype by environment interaction for most characters, except juice extraction, purity and reducing sugars content. There were a significant effect of GCA and SCA for most traits, indicating that additive and non-additive effects affect the phenotypic expression. Considering the effects of the GCA, the A line 201402B022-A, and R lines BRS 511, CMSXS643, and CMSXS646 were considered promising for exploration as parents in breeding programs of sweet sorghum in order to increase the ethanol production and the quality of the feedstock.The hybrids 201402B010-A x BRS 511, 201402B010-A x BRS 508, 201402B010-A x CMSXS646, 201402B022-A x BRS 511, 201402B022-A x CMSXS643, 201402B022-A x CMSXS646, 201402B022-A x CMSXS647 were the most promising for ethanol yield.
