The effects of boiling, frying, and roasting methods on nutrients and properties some of marine fishes were studies. AOAC official methods were used for the analyses of the samples. Frying reduced the protein content of Nemipterus japonicas, while roasting reduced the protein content of Carangoides malabaricus and Saurida undosquamis. Fresh and fried C. malabaricus had 71.2% and 57.05% protein content, respectively, while N. japonicas had 57.39% and 47.51%, respectively. The highest oil content in C.malabaricus was 16.80%, followed by N.japonicus 12.80%; while the lowest oil content in S.undosquamis was 5.88%. N.japonicusis protein content reduced with frying. Some cooking methods used in the processing can have an effect on of fish nutrient composition. The texture of fried and boiled fish fillets significantly differ from that of the roasted fillets (p<0.05).

In this study, the influence of the addition of antioxidants in vivo on the fatty acid composition of the flesh of a freshwater fish known as pacu (Piaractus mesopotamicus) is verified. Four groups (one being the control group) of juvenile pacu were cultured on isocaloric and isoproteic diets. The lipid source was soybean oil and diets were added with either 100 ppm of alpha-tocopheryl acetate, or 100 ppm of BHT or 1.4 g of rosemary extract (Herbalox(R))/kg diet. The fatty acid composition of the lipids of the different groups was determined before and after irradiation at 2 and 3 kGy, respectively, for the evaluation of the protective effects of the different antioxidants. Similarly, thiobarbituric acid reactive substances (TBARS) were determined from irradiated and nonirradiated samples. The results showed that the use of antioxidants altered the fatty acid composition of the fillets. TEARS and irradiation confirmed their important role in protecting against lipid oxidation. Among all the antioxidants used, tocopherol was the most efficient, as shown by the highest percentage of polyunsaturated fatty acids (PUFA), by the lowest values of TEARS and by the analyses of the individual fatty acid levels at different irradiation doses. The objective of this study was to investigate the fatty acid composition of Pimedolus maculatus fillets of fish fed with different diets. The fish were submitted to an adaptation period (over 30 days) and fed only a control diet (diet I). After this period, the fish were divided into two groups: one group received a diet enriched with flaxseed oil (diet II), and the other received a diet enriched with conjugated linoleic acid (CLA) (diet III). Subsequent collections were undertaken after 25 and 50 days. Compared to the control samples, fish fed diet II showed an increase in concentrations of total fatty acid omega-3 (n-3) in the fillets, with an improvement ratio of n-6/n-3. The incorporation of CLA into fish fed diet III was successful. Supplementing the diet of Pimedolus maculatus with CLA and flaxseed oil led to improvements in nutritional quality and fatty acid profile of the fish fillets.

The objective of this study was to evaluate the incorporation of conjugated linoleic acid and α-linolenic acid in fillets of pacu fish raised in net cages and fed diets enriched with these acids. The fish were fed for 49 days, and at the end of this period the fatty acid content in the fillets was determined by gas chromatography. Concentrations of α-linolenic acid, eicosapentaenoic acid, and the total omega-3 (n-3) fatty acid in the fillets increased, improving the n-6/n-3 ratio. In addition, the incorporation of conjugated linoleic acid in the fish fillets proved well established. This study showed that the use of diets enriched with conjugated linoleic acid and α-linolenic acid results in the incorporation of these acids in the of pacu fish fillets, improving their nutritional quality.

For increasing, the fish consumption in Brazil, is necessary offer products, with quality control to guarantee food safety to the consumers. The Medium Tiete river region is the largest producer of Nile tilapia (Oreochromus niloticus) from catching in the Sao Paulo state and, thus, the aim of this research was to evaluate the physical-chemical parameters (protein, moisture, lipid, ash and freshness (non-protein nitrogen, total volatile base nitrogen -TVB-N and pH) in fish fillets - Anhembi, Botucatu and Igaracu do Tiete. The data was examined further using random blocks design and submitted to test of variance analysis and Tukey Test for comparison of means. The data showed significant difference (5%) amont the places, for the centesimal composition and freshness, being found the following medium values: misture (77.9 to 81.69 g/100g), protein (13.72 to 18.25 g/100g), lipids (0.6 to 1.9 g/100g), ash (0.6 to 1.0g), NNP(61.6 to 78.0 mg/100g), pH (6.2 to 6.4) and TVB-N (5.0 to 10.5 mg/100g). The values found in the physical-chemical and freshness analysis are in according with brazilian's legislation, the processing of fish in the places studied are-irregular and cannot guarantee food safety to the consumers and the quality of the product.

O objetivo neste trabalho foi avaliar o desempenho de pacus (Piaractus mesopotamicus) criados em tanques-rede e alimentados com dietas contendo níveis de proteína bruta (PB) e energia digestível (ED). Foram utilizados 3.960 peixes com 293,38 ± 5,67 g de peso inicial, distribuídos em 18 tanques-rede de 5 m³, com 220 peixes por unidade experimental (44 peixes/m³), em esquema fatorial 3 × 2, composto de três níveis de proteína bruta (25, 30 e 35%) e dois de energia digestível (3.250 e 3.500 kcal/kg). O arraçoamento foi realizado quatro vezes ao dia (às 9 h, 11h30min, 14 h e 17 h) até a saciedade aparente dos animais. Não foram observadas diferenças no ganho de peso, na taxa de sobrevivência, na conversão alimentar aparente nem na taxa de crescimento específico. No entanto, houve diferença na deposição de gordura visceral, que foi maior nos animais alimentados com as rações de maior nível energético. Também não foi observada influência dos níveis de proteína e energia da dieta nos teores de umidade, proteína bruta, matéria mineral e lipídio dos filés. Rações contendo 25% de proteína bruta e 3.250 kcal/kg de energia digestível promovem melhores resultados de desempenho.

A cor da superfície dos alimentos é o primeiro parâmetro de qualidade avaliado pelos consumidores, e é critico para a aceitação do produto, então a medição adequada da cor é uma importante ferramenta. Nesta pesquisa avaliou-se a variação da cor em corvina (Micropogonias furnieri) armazenada em gelo durante 16 dias; os parâmetros de luminosidade (L*), valor cromático a*, valor cromático b*, variação total da cor (ΔE) e croma (C*) foram obtidos por sistema de visão computacional, e por colorímetro Konica Minolta CR-400. O frescor da corvina baseada nas mudanças da cor das brânquias foi avaliado utilizando um sistema de visão computacional. Também se modelou a oxidação da mioglobina em files de burriquete (Pogonias cromis), utilizando os parâmetros de vermelho (valor a* e R). Para registrar as mudanças da cor durante 57,6 h utilizou-se um sistema de visão computacional, a análise química realizou-se determinando a concentração de metamioglobina (%). Na avaliação da cor de corvina armazenada em gelo, o sistema de visão computacional mostrou diferenças significativas para L*, a*, ΔE e C*, enquanto que o colorímetro mostrou diferenças significativas para L* e ΔE, o único parâmetro que não apresentou diferenças entre instrumentos foi ΔE durante a avaliação da corvina armazenada em gelo. O coeficiente de correlação entre os parâmetros da cor (L*, a* e b*) das brânquias da corvina armazenada em gelo pelo tempo de armazenamento foi de 0,9747. O sistema de visão computacional registrou as mudanças da cor em filés de burriquete e se modelaram as mudanças utilizando um modelo exponencial. O sistema de visão computacional mostrou ser mais sensível às mudanças da cor durante a avaliação da cor na corvina armazenada em gelo. É possível prognosticar o tempo de armazenamento da corvina em gelo em função da mudança da cor das brânquias. Assim, foi possível modelar a variação da mioglobina em filés de burriquete utilizando sistemas de visão computacional para registrar ditas mudanças. Os sistemas de visão computacional têm grande capacidade para registrar as mudanças da cor e é possível utiliza-los para avaliar os alimentos em função da cor.

The aim of this thesis is to explore the possible influence of the food matrix on food quality attributes. Using nuclear magnetic resonance techniques, the matrix-dependent properties of different foods were studied and some useful indices were defined to classify food products based on the matrix behaviour when responding to processing phenomena. Correlations were found between fish freshness indices, assessed by certain geometric parameters linked to the morphology of the animal, i.e. a macroscopic structure, and the degradation of the product structure. The same foodomics approach was also applied to explore the protective effect of modified atmospheres on the stability of fish fillets, which are typically susceptible to oxidation of the polyunsaturated fatty acids incorporated in the meat matrix. Here, freshness is assessed by evaluating the time-dependent change in the fish metabolome, providing an established freshness index, and its relationship to lipid oxidation. In vitro digestion studies, focusing on food products with different matrixes, alone and in combination with other meal components (e.g. seasoning), were conducted to investigate possible interactions between enzymes and food, modulated by matrix structure, which influence digestibility. The interaction between water and the gelatinous matrix of the food, consisting of a network of protein gels incorporating fat droplets, was also studied by means of nuclear magnetic relaxometry, in order to create a prediction tool for the correct classification of authentic and counterfeit food products protected by a quality label. This is one of the first applications of an NMR method focusing on the supramolecular structure of the matrix, rather than the chemical composition, to assess food authenticity. The effect of innovative processing technologies, such as PEF applied to fruit products, has been assessed by magnetic resonance imaging, exploiting information associated with the rehydration kinetics exerted by a modified food structure.

The aims of this research were to determine the effect of different conditions of the marination stage on the salt and acid uptake, immersion time, and sensorial characteristics during the marinating process of anchovy (Engraulis anchoita). Different solution:fish ratios and the agitation effect during this stage were analyzed. The ratios used were: 0.77:1, 3:1 and 10:1 (with and without agitation). An increase of marinating solution:fish ratio causes a higher speed of acid and salt penetration The product obtained with the 10:1 ratio had a dry and fibrous texture and a slightly salty taste. Salt concentration was statistically significantly lower (p < 0.01) in the samples with agitation. Agitation did not influence the acid uptake, and the salt penetration speed decreased, but rancidity was detected in this product. The ratio 3:1 decreases the marinating time without damaging sensory attributes and can be used in the fish marinating process.

Alestes baremoze (Joannis, 1835), locally known as Angara in Uganda, is native to fresh water systems in Africa, thriving well in both lacustrine and riverine conditions. It is part of the routine diets of families in northern Uganda, South Sudan, the Sudan and the Democratic Republic of Congo. The objective of this study was to determine the proximate composition and mineral contents of A. baremoze fillets according to fish size. The mineral contents of A. baremoze from Lake Albert were analysed using standard procedures. The fish samples were categorised into three size-groups; <1 kg (880–990g), 1-1.5 kg and 1.6-2.5 kg. On wet weight basis, there were no significant differences (p>0.05) in crude protein and ash content among the different fish sizes. However, there were significant differences (p<0.05) in crude fat, carbohydrate, gross energy and vitamin A. Crude fat (0.35%), carbohydrate (0.37%) and gross energy (597.6 Kcal/100 g) were significantly higher in medium sized fish (1 to 1.5 kg) compared with the larger fish category. Vitamin A contents of different fish sizes ranged from 55.1 to75.3 μg RAE/100g. The contents of magnesium and iron were highest in sizes <1 kg (5.34 mg/100 g) and (3.58 mg/100 g), respectively. It was observed that potassium content (339.33 mg/100 g) and calcium (29.75 mg/100 g) were significantly higher (p<0.05) in fish >1.5 kg. These findings suggest that taste, freshness and other related external appearances should not be the only factors to be considered in making choice for marketing and consumption of Alestes baremoze.

Minimally processed refrigerated ready-to-eat fishes may offer health risk of severe infection to susceptible individuals due to contamination by the psychrotolerant bacterium L monocytogenes. In this work, inhibition of L monocytogenes by a plant extract and lactic acid bacteria (IAB) was studied in model fish systems kept at 5 degrees C for 35 days. For that, fillets of tropical fish ""surubim"" (Pseudoplatystoma sp.) and hydroalcoholic extract of the plant Lippia sidoides Cham. (""alecrim pimenta"") were used. Fish peptone broth (FPB), ""surubim"" broth and ""surubim"" homogenate were inoculated with combinations of L monocytogenes and bacteriocin-producing Carnobacterium maltaromaticum (C2 and A9b(+)) and non bacteriocin-producing C. maltaromaticum (A9b(-)), in the presence or absence of extract of ""alecrim pimenta"" (EAP). In all model systems, monocultures of L monocytogenes and carnobacteria reached final populations >= 10(8) CFU/ml after 35 days, except for L monocytogenes in ""surubim"" homogenate (10(4) CFU/ml). In FPB, EAP alone and combined with cultures of LAB inhibited L monocytogenes but carnobacteria without EAP were only weakly antilisterial. In ""surubim"" broth, EAP alone did not prevent L monocytogenes growth but cultures of carnobacteria combined or not with EAP inhibited L monocytogenes, with more pronounced effect being observed for C maltaromaticum C2, which produced bacteriocin. In ""surubim"" homogenate, EAP alone and combined with cultures of C. maltaromaticum A9b(-) and A9b(+) were strongly inhibitory to L monocytogenes, while C maltaromaticum C2 with EAP caused transient inhibition of L monocytogenes. No significant inhibition of L monocytogenes was observed for carnobacteria in ""surubim"" homogenate without EAP. In conclusion, it was observed that the use of EAP and cultures of carnobacteria have potential to inhibit L monocytogenes in fish systems and the applications should be carefully studied, considering the influence of food matrix. The purpose of research was to investigate the bacterial ecology of tilapia (Oreochromis niloticus) fresh fillets and some factors that can influence its microbial quality. Samples of fish cultivation water (n = 20), tilapia tegument and gut (n = 20) and fresh fillets (n = 20) were collected in an experimental tilapia aquaculture located in the city of Lavras, Minas Gerais, Brazil. Staphylococcus spp., Aeromonas spp., Enterococcus spp. and Enterobacteriaceae were quantified using selective plating. For the enumeration of Pseudomonas spp., the most probable number technique (MPN) was utilized. Bacterial colonies (n = 198) were identified by Gram strain and biochemical tests. Aeromonas spp., Pseudomonas spp., Enterococcus spp. and Enterobacteriaceae were found in the cultivation water (water from a fishpond cultivation), tegument, gut, and fresh fillets. Staphylococcus spp. was not isolated in the cultivation water. Salmonella spp. was not detected. The count variable of 10 to 10³ CFU or MPN.(g or mL)-1. Associated to freshwater tilapia fillet processing, there is a large variety of microorganisms related to foodborne illnesses and fish products deterioration.
