Charqui meats were prepared in laboratory conditions in order to carry out experiments to observe the possibility of development of enterotoxigenic Staphylococcus aureus and Clostridium bottilinum proteolytic type B spores and their toxins. Results demonstrated that the harsh processing conditions, high salt concentration, relative high temperature, a, values, inhibited the growth of both bacteria. Under our experimental conditions, S. aureus would survive throughout the sequence of salting steps i.e. brine followed by rock salting and the sunshine drying step. However, at final a(w) value of 0.70-0.75 would create conditions to inhibit its development. The other experiment revealed that C. botulinum spores germination also was impaired because of these low a(w) values. Under these conditions, charqui meats revealed to be safe products in relation to toxins from both enterotoxigenic S. aureus and C. botulinum. (C) 2003 Elsevier B.V. Ltd. All rights reserved.

Jerked beef, a derivative of charqui meat, is a cured, salted and dried meat product. The presence of halotolerant bacteria, where Staphylococcus spp. (84.2%) were the predominant species, would act eventually as starter cultures and was followed throughout processing. Jerked beef prepared separately with exogenous S. carnosus and S. xylosus as starter cultures resulted in high proteolysis. Samples prepared with S. xylosus had the highest proteolysis and were preferred by the sensory panel. This research has suggested that jerked beef (and thus charqui meat) prepared under these conditions is a fermented meat product. (C) 2002 Elsevier B.V. Ltd. All rights reserved.

Charqui meat is a tropical intermediate meat product formulated using hurdle technology, a concept described by Leistner (1,2). Salt, sodium nitrite, dehydration, and packaging are hurdles sequentially applied to inhibit deteriorating microorganisms with the possibility of selecting desirable microbiota. This would characterize charqui and its derivatives as fermented meat products. This paper reviews biochemical, physico-chemical, and ultrastructural changes that occur during processing of charquis.

Este proyecto cuenta con el financiamiento del sistema INCO de la Unión Europea e incluye 5 contrapartes europeas, y Bolivia y Perú como contrapartes americanos. Consta de cuatro paquetes: producto, mercado, difusión y coordinación. En el primer paquete se desarrollan fundamentalmente los aspectos relacionados con la carne fresca y los productos cárnicos tanto tradicionales como nuevos a desarrollar. Se realizan faenas protocolizadas y espontáneas comparando animales con distintos tratamientos nutricionales de edades entre 19-21 meses. Se realizan análisis de calidad de carne y paneles de degustación. Los productos tradicionales como el charqui se evalúan en su forma tradicional y se implementan sistemas mejorados como desecadores solares. Los chacinados no son tradicionales en el altiplano por eso se realizan en La Pampa con la idea de transferir la tecnología desarrollada. La evaluación de calidad de la carne incluye técnicas de evaluación del animal en pié como la conservación morfológica y la ecografía para predecir calidad de res en el animal vivo. Estas observaciones se corroboran a la faena donde se realiza toda la batería de evaluaciones de calidad de la res.

The process of salting and drying in the sun is used to preserve meat since the beginning of civilization. There is evidence that this preservation technique has arisen in Egypt, between 4,000 and 5,000 years ago. In our country, according to literature, was the first industrial product that gave the appearance of beef jerky, beef being produced, where about 70% to 75% of the muscle is composed of water, where it will be around 45% as a final product, according to the law in his article RIISPOA No. 432 provides that the jerky should contain no more than this amount of moisture in the muscular portion, or more than 15% of total ash with tolerance of up to 5% variation . Besides this parameter, proteins, lipids, ash, and minerals were analyzed in samples before and after the manufacturing process to know the content of these nutrients. Jerked beef - JB - é um produto cárneo curado, salgado e seco ao sol, derivado de um típico produto cárneo brasileiro - o charque. Ambos carecem de estudos que orientem seu aprimoramento. Staphylococcus spp. têm sido reportado como o gênero predominante na microbiota do produto, o que evidencia o risco de desenvolvimento de linhagens enterotoxigênicas de S. aureus. Foram empregadas duas linhagens inócuas de estafilococos na elaboração de JB, a fim de avaliar sua influência sobre o desenvolvimento de S. aureus por mecanismo competitivo ou pela produção de bacteriocinas. Os resultados demonstraram que ambas inibiram o desenvolvimento do patógeno tanto in vitro como durante o processamento do produto. Não se observou produção de compostos inibitórios pelas linhagens iniciadoras, ficando a explicação para a inibição observada restrita ao mecanismo competitivo. Este trabalho permitiu demonstrar a possibilidade de aumentar a segurança e padronização de JB pelo emprego de culturas bacterianas selecionadas.

Fish and mammal bones from the coastal site of Cerro Azul, Peru shed light on economic specialization just before the Inca conquest of A.D. 1470. The site devoted itself to procuring anchovies and sardines in quantity for shipment to agricultural communities. These small fish were dried, stored, and eventually transported inland via caravans of pack llamas. Cerro Azul itself did not raise llamas but obtained charqui (or dried meat) as well as occasional whole adult animals from the caravans. Guinea pigs were locally raised. Some 20 species of larger fish were caught by using nets; the more prestigious varieties of these show up mainly in residential compounds occupied by elite families.
