The present study evaluated the effect of the use of natural antioxidants in different spent hens processed meat, the physical-chemical and sensory characteristics of product were analyzed. The experiment was conducted at the Technology Laboratory of Animal Products, Department of Technology - FCAV/Unesp - Campus of Jaboticabal. Forty-five laying hens with approximately 80 weeks of age were used, distributed in a completely randomized experimental design in a 4x4 factorial arrangement, 4 condiment types (control, rosemary, clove and oregano, and the last three natural antioxidants) and 4 storage times (0; 3; 6 and 9 days at 4°C), with sixteen treatments and tree repetitions. It were evaluated the characteristics of humidity, pH, color, cooking loss, shear force, TBARS number and sensory analyze. The averages were obtained by Tukey test 5% of significance. The results showed an interaction between the storage time and condiments types in all analyzed parameters. It was concluded that oregano use decreased the processed meat oxidation, also pleased the judges in sensory analysis. The lowest notes in sensory analysis were obtained with the treatment that contained clove.

O presente estudo investigou as atividades antioxidantes in vitro, ex vivo e in vivo dos extratos de folhas Passiflora alata e Passiflora edulis, plantas usadas na medicina popular e ricas em polifenóis, compostos com reconhecida atividade antioxidante. No modelo experimental in vitro, ambos os extratos demonstraram atividade antioxidante e proteção contra dano protéico induzido por glicose. Fatias de fígado de ratos foram utilizadas como modelo ex vivo. Tanto o extrato de P. alata quanto o extrato de P. edulis protegeram de forma significativa o dano protéico e a morte celular induzidos por FeSO4. Como a P. alata é uma droga oficial da Farmacopéia Brasileira, os efeitos antioxidantes deste extrato foram investigados in vivo. Ratos machos Wistar receberam tratamento intragástrico de extrato de folhas de P. alata (1 e 5 mg/kg), trolox (0,18 mg/kg) ou água (controle) durante 30 dias, seguido de uma dose de CCl4 (3 ml/kg, i.p.) no 30º dia. O dano hepático e os efeitos antioxidantes do pré-tratamento com extrato de P. alata foram avaliados em vários órgãos. Quando comparados ao grupo controle, os ratos pré-tratados com o extrato demonstraram dano hepático menor, evidenciado por um grau menor de necrose, níveis menores de lipoperoxidação e maior atividade das enzimas superóxido dismutase e catalase. Adicionalmente, níveis menores de lipoperoxidação cardíaca foram observados com o pré-tratamento de P. alata (5mg/kg). Os resultados obtidos neste estudo indicam que os extratos de Passiflora são fontes potenciais de antioxidantes naturais. Estudos adicionais investigando o papel de compostos isolados destes extratos em patologias humanas onde o estresse oxidativo está envolvido são necessários.

This study presents a literature review which shows the nutritional, medicinal and antioxidant importance of mushrooms. In this research, the main antioxidant compounds of mushrooms, such as phenolic acids, flavonoids and tocopherols, as well as their mechanisms of action were described. The main in vitro methods used for evaluation of the antioxidant activity of these compounds were approached. The influences from the solvent polarity and the kind of extraction in the acquisition of the antioxidant compounds were also discussed. It was possible to conclude that mushrooms are a source of carbohydrates, proteins and minerals, thus presenting nutritional properties. The functional and medicinal properties are attributed to glucans, besides being excellent sources of natural antioxidants. Regarding the extraction process, it was noticed that the solvent polarity used in the extraction process is determinant in the obtainment of antioxidant compounds.

The aim of this study is to evaluate the effi ciency of oregano, sage, moringa and rosemary as natural antioxidants and propyl gallate as artifi cial antioxidant used in “stuffed food” made with CMS of tilapia (minced fi sh) and stored frozen for 120 days. Protein, fat, moisture and ashes determination, microbiological analysis and sensory evaluations were conducted in the beginning and the end of storage period. TBARS, BNVT, pH and psychrotrophic microorganism count were determined periodically. The antioxidants interfered in pH (6.17 and 6.55) and TBARS values during 120 days under freezing (-18o C). The lowest TBA values were found for oregano (0.158 mg de MDA. kg-1) and sage (0.186 mg de MDA.kg-1). The stuffed food made with CMS of tilapia, without antioxidant, had the most oxidation, and sage and moringa were not good source of antioxidant. BNVT values (11.41 – 12.35 mgN.100g-1) were not altered. The lowest pH value was found for the product with sage (6.20), but similar to the moringa and propyl gallate, while oregano and rosemary showed the highest values (6.63 and 6.29), at 5 days of storage. Microbiological analyses were in accordance with Brazilian legislation. Sensory evaluation indicated that the panelists preferred the formulations made with oregano and propyl gallate. The results showed that it is feasible to elaborate stuffed food made with CMS of tilapia as an alternative for the fi shery´s consumption, and sage was the most effi cient natural antioxidant among those tested in this study.

Jerked beef, an industrial meat product obtained from beef with the addition of sodium chloride and curing salts and subjected to a maturing and drying process is a typical Brazilian product which has been gradually discovered by the consumer. The replacement of synthetic antioxidants by natural substances with antioxidant potential due to possible side effects discovered by lab tests, consumer health, is being implemented by the meat industry. This study aimed to evaluate the lipid oxidation of jerked beef throughout the storage period by replacing the sodium nitrite by natural extracts of propolis and Yerba Mate. For jerked beef processing brisket was used as raw material processed in 6 different formulations: formulation 1 (control - in nature), formulation 2 (sodium nitrite - NO), formulation 3 (Yerba Mate - EM), formulation 4 (propolis extract - PRO), formulation 5 (sodium nitrite + Yerba Mate - MS + NO), formulation 6 (propolis extract + sodium nitrite - PRO + NO). The raw material was subjected to wet salting, dry salting (tombos), drying at 25°C, packaging and storage in BOD 25°C. Samples of each formulation were taken every 7 days for analysis of lipid oxidation by the TBARS method. In all formulations, were carried out analysis of chemical composition at time zero and sixty days of storage. The water activity analysis and color (L *, a *, b *) was monitored at time zero, thirty and sixty days of storage. The Salmonella spp count, Coliform bacteria, Termotolerant coliforms and coagulase positive staphylococci were taken at time zero and sixty days. The activity of natural antioxidants evaluated shows the decline of lipid oxidation up to 2.5 times compared with the product in natura and presented values with no significant differences between treatments NO and EM, confirming the potential in minimize lipid oxidation of Jerked beef throughout the 60 days of storage. The results also showed that yerba mate has a higher antioxidant capacity compared to the propolis except the PRO + NO formulation. When associated with yerba mate with sodium nitrate, TBARS values become close to values obtained only for the control samples with the addition of sodium nitrite. The proximal composition of the formulations remained within the standards required in the IN nº22/2000 for jerked beef. Samples that differ significantly at 5% are directly related to the established type of formulation. The count of microorganisms was within the standards of the DRC nº12/2001 required for matured meat products. The intensity of the red (a*) decreased with storage time and increase the intensity of yellow (b*) indicates a darkening of the product despite L* also have been increased. These results suggest that yerba mate is a good alternative to meat industry in reducing healing addition salts when associated with another antioxidant.

In recent years, the search for a environmentally friendly products has increased. One of the major challenges has been the demand for biodegradable materials that can replace plastic. If a few decades ago, plastic replaced, for example, the ivory in billiard balls, and in other products, saving the lives of thousands elephants, nowadays a replacement for that plastic is being searched, to prevent the change of the environmental conditions, essential to life in harmonly with the fauna and flora that the human specie has, in recent years, destroyed. Plastic is a petroleum derivate, whose price has been growing exponentially, mainly due to the fact of beind a cheap material and also to enable the production of products that are essential to modern life. Therefore, the petrochemical era is going to come to an end and a new environmentally sustainable era, based on biodegradable materials from renewable sources, will follow. The change to green routes only will be possible with the support of the major companies, and the implementation of drastic governmental law. Poly(lactic acid), PLA, is produced from the lactose present in the corn or sugarcane and has been intensively studied in recent years because if some limitants properties required its extrusion are overcome, it has the potential to replace the traditional polymers. PLA have high brittleness, low toughness and low tensile elongation. In this work, natural antioxidant (alpha-tocopherol) and synthetics antioxidants (BHT ant TBHQ) were added to the PLA with the aim not only to improve their flexibility, but also to create an active packaging to extend the shelf life of the foods and improve the organoleptic properties by preventing food losses. The impact of the addition of antioxidants into the PLA films, in its mechanical, thermal and barrier properties were studied by FTIR, DSC, SEM, AFM, DMA, TGA, QCM and time-lag techniques.

O cérebro é altamente dependente de um fluxo sanguíneo contínuo para suprimento de oxigênio e glicose, e por esta razão, eventos isquêmicos resultam em grande degeneração celular. O resveratrol é um antioxidante natural encontrado nas uvas e no vinho tinto que possui efeitos antitumoral e antiinflamatório, bem como propriedades cardioprotetoras. Neste trabalho, nós avaliamos o efeito neuroprotetor do resveratrol em um modelo in vitro de isquemia cerebral. Além disso, nós investigamos se este efeito estava correlacionado com as vias de sinalização da fosfoinositol3-quinase (PI3-k) e da proteína quinase ativada por mitógenos (mitogen-activated protein kinase-MAPK), ambas envolvidas na regulação da proliferação e sobrevivência celular. Para isto, nós usamos cultura organotípica de hipocampo exposta à privação de oxigênio e glicose (POG) como modelo de isquemia cerebral. A morte celular foi quantificada pela medida da incorporação de iodeto de propídeo (IP), um marcador de células mortas. Nas culturas expostas à POG na presença do veículo, aproximadamente 46% do hipocampo foi marcado com IP, indicando uma alta porcentagem de morte celular. Quando as culturas foram tratadas com resveratrol 10, 25 e 50µM, a morte celular foi reduzida para 22, 20 e 13%, respectivamente. Para elucidar o mecanismo pelo qual o resveratrol exerce seu efeito neuroprotetor nós investigamos a via PI3-k usando o inibidor LY294002 (5µM) e a via MAPK usando o inibidor PD98059 (20µM). A neuroproteção mediada pelo resveratrol (50µM) foi prevenida pelo LY294002, mas não pelo PD98059. A análise por immunoblotting revelou que o resveratrol 50µM induziu a fosforilação/ativação da Akt, a fosforilação/inativação da glicogênio sintase quinase-3β (GSK-3β) 1, 6 e 24 h após a POG e a fosforilação/ativação da quinase regulada por sinais extracelulares (extracellular signal-regulated kinase-1 and -2-ERK1/2) 6 e 24 h após a POG. Juntos, o aumento da fosforilação da Akt e GSK-3β induzida pelo resveratrol após a POG e o efeito da inibição da PI3-k pelo LY294002 levando a diminuição da neuroproteção mediada pelo resveratrol, sugerem que a via PI3-k/Akt, associada à GSK-3β , estão envolvidas no mecanismo pelo qual o resveratrol protege as culturas organotípicas da morte celular.

Por razões econômicas e de proteção à saúde, pesquisas têm sido dirigidas para ampliar a estabilidade dos óleos vegetais. Existe uma tendência para a adição de antioxidantes naturais, em particular, um crescente interesse em ervas e especiarias. Desta forma, os objetivos deste trabalho foram avaliar o potencial antioxidante das oleorresinas de orégano, manjericão e tomilho e seu comportamento ao serem aplicadas ao óleo de soja em diferentes concentrações. Numa primeira etapa foi determinada a atividade antioxidante pelo sistema β-caroteno/ácido linoleico e a quantificação de compostos fenólicos totais. Posteriormente, foram adicionadas ao óleo de soja diferentes concentrações das oleorresinas (500 a 3000 mg.kg-1) e analisado seu potencial antioxidante por meio da estabilidade oxidativa utilizando o Rancimat. A concentração de 3000 mg.kg-1das oleorresinas de orégano e tomilho foi a que apresentou melhor estabilidade oxidativa ao óleo de soja, o que as tornam alternativa natural na conservação de óleos vegetais.
