Com o desenvolvimento da espécie humana, a sociedade humana passou demandar quantidades cada vez maiores de diversos elementos naturais, principalmente a água. Por estar presente em uma pequena quantidade no planeta (3%), com relação a toda hidrosfera, as águas disponíveis para consumo humano (Ex: Mananciais) são as que mais sofrem com a ação antrópica. A degradação destes recursos se dá por fatores como: poluição, desperdício e falta de políticas públicas sobre conservação dos recursos hídricos. Buscando a implementação de estratégias para a melhor gestão dos recursos hídricos, a utilização de águas pluviais como fonte hídrica alternativa, ganha importância diante desse cenário. Além de uma fonte hídrica de fácil acesso em muitas regiões (com média anual de precipitação em 1589 mm na região da Tijuca Alerta Rio, 2013), estudos demonstram que sua qualidade permite sua utilização em atividades não potáveis, resultando na economia de águas que são tratadas e destinadas para consumo humano. Visando colaborar com as questões expostas anteriormente, a presente dissertação de mestrado buscou avaliar a qualidade das águas de chuva em uma determinada região e os fatores que possam interferir na qualidade das águas pluviais, como: tipo de material da superfície de captação, proximidade a focos de poluição atmosférica e período de estiagem antecedente ao evento pluviométrico. Para tal tarefa, foi instalado um sistema de captação de águas pluviais no Instituto de Aplicação Fernando Rodrigues da Silveira, localizado no bairro do Rio Comprido, região norte da cidade do Rio de Janeiro. Os parâmetros físico-químicos para qualidade da água pH, turbidez, temperatura, oxigênio dissolvido, sólidos totais dissolvidos, potencial de oxi-redução e condutividade foram analisados com o auxílio da sonda multiparâmetro. Ao correlacionar a presença de sólidos na água de chuva com os períodos de estiagem, verificou-se que quanto maior o período de seca, maior a quantidade de sólidos nas amostras. Com relação aos marcos regulatórios (Portaria 2914/2011, MS; Padrões de potabilidade, OMS; CONAMA 357 e NBR 15.527) , os resultados para estes parâmetros ficaram de acordo com os limites exigidos pelas mesmas, exceto o pH. Com a análise dos resultados, recomenda-se estudos para determinar quais fatores podem estar interferindo na acidificação das águas coletadas no estudo.

Corrosion inhibitors in solution are utilized to minimize processes from corrosion in steel. Of the present dissertation was evaluated the efficiency by inhibition from the surfactant saponified coconut oil (OCS) in the carbon steel 1020 through in linear polarization electrochemistry technique, well as, studied the process from adsorption through from the isotherms from Langmuir, Frumkin and Temkin. The corrosion current was determined through in Tafel extrapolation from the curves in the polarization, and then, was calculated the efficiency in the inhibitor to each concentration and temperature. Were studied four concentrations (12,5 ppm, 25 ppm, 50 ppm, and 75 ppm) in the inhibitor OCS and one in the NaCl salt (10.000 ppm) in six temperatures (301 K, 308 K, 313 K, 318 K, 323 K, and 328 K) in triplicate. By the results obtained observed that the technique applied can evaluated with rapidity and efficiency corrosion inhibitors. In relation to the isotherms, the than best appropriated was the in Langmuir and in the concentrations studied, the that obtained the best efficiency was the concentration of 75 ppm

The aim of the present study was to carry out the physical, chemical and nutritional analyses of the alternative substrates formulated from wood and agroindustrial residues of the Amazon for Pleurotus ostreatus (Jacq.:Fr.) Kummer cultivation. The determination of C, N, pH, humidity, soluble solids, protein, fat, total fiber ash, carbohydrates (total and available) and energy were carried out. The substrates were formulated from sawdust of Simarouba amara Aubl. (marupa), Ochroma piramidale Cav. ex. Lam. (pau de balsa) and from the stein of Bactris gasipaes Kunth (pupunheira palm tree), and from Saccharum officinarum L. (sugar cane bagasse). The results demonstrated that the nutritional composition of the substrate is variable and the improvement of the quality of the spent substrate (energy and protein increment) promoted by the metabolism of the fungus during the cultivation, contributed for a more nutritive substrate than the initial one, which could be used as a compost for Agaricus sp. cultivation, as organic fertilizer and for bioremediation for contaminated soils.

Symphonia globulifera Linn. f., popularmente comumente conhecida como anani, citada em relatos de utilização popular em diferentes países, como Camarões, e em várias regiões do Brasil, principalmente na Amazônia, no tratamento de inflamações na pele, tônico geral e laxante para mulheres grávidas, além de sua seiva/látex ser empregada contra reumatismo e tumores. Embora alguns trabalhos tenham descrito o perfil fitoquímico de S. globulifera, não existem estudos, até o presente, avaliando as propriedades botânicas, químicas (análise térmica) e farmacêutica (spray dryer) desta planta. Assim, foram utilizadas metodologias clássicas contidas em farmacopéias e métodos analíticos mais modernos. Os resultados obtidos para a caracterização botânica são: as células epidérmicas de ambas as faces da folha são heterodimensionais. O complexo estomático é do tipo anomocítico encontrado apenas na face abaxial. O pecíolo apresenta-se plano-convexo revestido por células quadrangulares e espessa cutinização. A caracterização do pó são: a análise granulométrica classifica-o como sendo grosso. Na perda por dessecação foi de 9%; no teor de cinzas totais foi de 4,3%; com a análise térmica foi possível verificar em TG entre 31 a 100°C a primeira perda de massa de 7,8%, em DTA a 64°C um evento endotérmico e em DSC a 84°C um evento endotérmico de 169 J/g; o perfil espectroscópico na região do IV sugere a presença de compostos fenólicos. Enquanto os resultados para a tintura e extrato liofilizado são: densidade aparente de 0,97%g/mL; pH de 6; percentual de resíduo seco de 9%; na prospecção química verificou-se a presença de saponinas, açúcares redutores e fenóis e taninos para o extrato e algumas frações; na análise térmica em TG foi encontrado uma perda de massa de 6,55% entre 28 a 100°C, em DSC somente um evento exotérmico a 169°C; o perfil espectroscópico na região do IV apresentou bandas de absorção forte características de alcoóis e fenóis. No processo de secagem, os excipientes que apresentaram os melhores resultados foram aerosil 40% e celulose microcristalina mais aerosil na proporção de 35:5. O extrato apresentou características antioxidantes. A matéria-prima vegetal também foi ii testada quanto a sua atividade antimicrobiana e antifúngica, fornecendo resultados positivos para algumas cepas testadas e apresentado atividade bactericida para frações acetato de etila e hexânica. O extrato e a fração hexânica apresentaram atividade fungistática,Todos esses resultados contribuem para futuros estudos com essa planta, aumentando assim seu valor agregado.

Fruit processing for beverage production purposes is a way of adding value to the raw material and of raising the farmer s income by increasing the demand. Thus the objective of this work was the production of fermented West Indian cherry beverages and their physicochemical and sensory evaluation. The beverages were produced based on the Brazilian legislation for fermented fruit beverages and wine. The fermented beverages were produced from West Indian cherry pulp (pulper) and juice (press) and sweetened with sugar to obtain three types of beverage: dry, semidry and sweet. The beverages were submitted to the following physicochemical analyses: pH, alcohol, reducing sugars, total reducing sugars, total acidity, volatile acidity, fixed acidity, dry extract, reduced dry extract, alcohol to reduced dry extract ratio, free sulphur dioxide, total sulphur dioxide and turbidity. In the sensory analysis, the beverages were assessed using a 9-point hedonic scale, evaluating the attributes of appearance, odour, flavour and overall assessment. The chemical and sensory results were submitted to an analysis of variance and the means compared using Tukey s test (5%). Both the raw materials (pulp and juice) and the different sugar concentrations (dry, semidry and sweet) interfered in the sensory and physicochemical parameters of the fermented West Indian cherry beverages, the tasters showing preference for the sweetened beverages.

The aim of this study was to produce and physicochemically characterize beer elaborated with honey. Beer production assays were carried out with nine treatments, the combination of three concentrations of the original extract (11, 13 and 15 ºBrix) with three percentages of honey in the wort formulation (0, 20 and 40%). The experiment was completely randomized with two replicates, giving a total of eighteen trials. Mashing was carried out by infusion and the honey was added during the boiling step. After clarification, the extract content was corrected with water and the wort then inoculated with bottom-fermenting yeast. Fermentation was at 10 ºC. The beer was bottled manually and stored in a freezer at a temperature of 0 ºC for 15 days, for maturation. The beers were analyzed for their alcohol content, true extract, apparent extract, colour, bitterness, turbidity, pH, total acidity, carbon dioxide, foam density and total foam. The results of the physicochemical analysis were subjected to an analysis of variance, and the means compared by Tukey's test at 5% probability. All beers were considered to be pale. The presence of honey in the formulation enhanced carbonation, foam density and total foam, but the beers were less bitter and less acid.

The aim of this paper was to measure the total soluble solids content (°Brix), titrable total acidity (AT) and ratio in orange beverages, such as frozen concentrated juice, not from concentrate juice, nectar and soft drink and to compare them with their Quality and Identity Standards (PIQ) published by the Ministry of Agriculture, Livestock and Food Supply (MAPA) and Codex Alimentarius. Four orange frozen concentrated juices, twenty two juices, seven nectars and thirteen orange soft drinks were analyzed. All frozen concentrated orange juices were in agreement with Codex Alimentarius. The majority of not from concentrated orange juices and soft drinks was in accord to Brazilian legislation. The orange nectars could not be compared with the standards because they are not published by MAPA or Codex Alimentarius.

Mulberry (Morus nigra L.) is a fruit with a great potential for technological uses, which could be employed to manufacture of syrups, ice cream, candies, yoghurts, beverages, jam, etc. Only the leaf from mulberry trees is commercially used for silkworm feeding. This tree is cultivated on many agricultural environments such as small rural proprieties and settlements. Small farmers waste a great amount of their production for not knowing about mulberry technology. Thus, the objective of this work was to access extraction yield and physical-chemical properties of mulberry whole juice from ripe, green and a mixture of both by using press and depulper. Statistical analysis of results was carried by media and standard deviation calculations. 173 kg of mulberry were picked being 49.31% ripe and 50.68% green. Press delivered greater extraction yield of whole juice (80.50% to 81.60%) when compared to press (71.43% to 77.50%). Whole juice obtained from both equipments has shown the following values: soluble solids 7.45% - 12.11%, titrable acidity 0.45 – 1.23%, ratio 6.03 – 26.84, pH 3.69 – 4.35, total reducing sugar 4.05% – 9.96%, reducing sugar 3.95% - 9.15%, sucrose 0.00% - 0.04%, turbidity 221.25 NTU - >4,000 NTU. Whole juices obtained from both equipments has shown similar physical-chemical characteristics except turbidity. The authors concluded that press was the best extraction equipment due to its greater yield and whole juice quality regarding turbidity

Background: The use of all by-products of bovine slaughter is of high economic importance for the industries of products of animal origin. Among these products, fat has an important role, once fat rendering may generate several different products, such as protein material that may be used in the manufacture of meat products. However, in spite of the importance that the use of all by-products has for the economic balance of the industry, there are no reports on their use in Brazil, or studies that supply data on microbiological and physical-chemical local standards for this protein. Thus, the objective of this study was to evaluate microbiological and physical-chemical characteristics of protein material obtained from fat rendering, as well as to provide support for companies to use fat rendering to generate protein material, adding value to industrialized meat products.Materials, Methods & Results: The experimental production of edible protein obtained of fat rendering was conducted in slaughterhouse with supervision of the Brazilian Ministry of Agriculture, Livestock and Food Supply. Protein material was obtained in a continuous, humid heat system at high temperatures. Fat scraps containing protein were ground and cooked at high temperature (85 degrees C), and placed in a three phase decanter centrifuge. After centrifugation, protein material was ground again and packed. Samples were collected from 15 batches of protein material, and the following microbiological analyses were carried out: counts of aerobic mesophilic and psychrotrophic microorganisms, coliforms at 35 degrees C, Escherichia coli, sulfite-reducing Clostridium, and Staphylococcus aureus, besides presence or absence of Salmonella and Listeria monocytogens. The following physical-chemical analyses were also carried out: protein, total lipid, moisture, ash, carbohydrate, and energy content. Mean counts of mesophiles, psychrotrophs, and coliforms at 35 degrees C were 4.17; 3.69 and 1.87 (log CFU/g), respectively. Levels of protein, total lipids, moisture, ashes and carbohydrates were 27.50; 7.83; 63.88%; 0.24%; and 0.55%, respectively, and energy content was 182.63 kcal/100g.Discussion: Results of microbiological analyses demonstrated that, although low, the final product showed to be contaminated. Contamination that occurred during the second grinding procedure may be an explanation for these bacterial counts. Also, the temperature used for fat fusion was not enough to eliminate thermoduric microorganisms. However, even with the presence of indicator microorganisms in the samples, none was contaminated by E. coli, sulfite-reducing Clostridium, S. aureus, Salmonella or L. monocytogenes. Physical-chemical analyses showed that the product had adequate nutritional quality. Based on these results, it was possible to conclude that protein material obtained in fat rendering showed characteristics that enable the use of this product as raw material for processed meat products. Besides, the present study was the first one to present scientific results in relation to edible by-products obtained in fat rendering, supplying important information for slaughterhouses and meat-processing plants. The study also produced relevant data on the innocuousness of the product, which may be used to guide decision-making of health inspectors.
