The determination of acetic acid in vinegar adulterated sample using simultaneous potentiometric and condutometric titrations was used as an example of integrated experiment in instrumental analysis. An Excel® spreadsheet, which allows the entry of simultaneous data and the construction of the superimposed experimental curves (condutometric, potentiometric, first and second derivative potentiometric curve and, distribution diagrama of the acetic species as function of pH), was used as powerful tool to discuss the fundamental concepts involved in each technique and choose the best of them to quantify, without mutual interference, H3CCOOH and HCl in vinegar adulterated sample.

A infecção acidental humana pelo Angiostrongylus costaricensis ocorre com elevada prevalência em certas áreas do Brasil meridional, eventualmente se manifestando como doença abdominal severa. Profilaxia é importante, pois não hã tratamento medicamentoso. Um dos modos de transmissão é a ingestão de frutas e vegetais contaminados com a mucosidade de moluscos infectados, os hospedeiros intermediários deste parasita. Larvas de terceiro estágio obtidas do ciclo mantido em laboratório foram incubadas a 5°C por 12 horas, em vinagre, solução saturada de cloreto de sódio e hipocloríto de sódio a 1,5%. A viabilidade das lamas tratadas foi testada através da inoculação em camundongos albinos. Os percentuais de larvas que estabeleceram infecção foram: 0% com hipocloríto de sódio, 1,8% com salmora e 2,4% com vinagre. Em conclusão, todas as substâncias - de baixo custo e disponíveis nas áreas endêmicas - reduziram à população de lamas viáveis e podem ser úteis na descontaminação de alimentos para profilaxia da angiostrongilose abdominal.

Vinegar is a food product that has a great market potential and beneficial health properties. Each type of vinegar has its taste, since the transformation of alcoholic into acetic acid preserves the raw materials fragrancesand other organic acids can be formed. This study produced and characterized vinegars from ginger and cassava starch. The raw materials were first hydrolyzed by an enzymatic process, thenthey suffered an alcoholic fermentation,and finally an acetic fermentation by the Orleans process. The ash quantity, total acidity in acetic acid, dry extract, and alcohol content of the final product were analyzed based on the current vinegars legislation.The results showed that it is possible to obtain vinegars with good quality from ginger and cassava starch.

El presente trabajo de grado se ubica desde la perspectiva sociocultural, en la l?nea de investigaci?n diversidad cultural y ense?anza de las ciencias, en la cual la ense?anza juega un papel importante para propiciar espacios de encuentro dial?gico entre el conocimiento cient?fico (en nuestro caso qu?mica, biolog?a y f?sica) y el conocimiento ancestral (comunidad Nasa). Avanzar hacia un dialogo de saberes es fundamental en esta propuesta, puesto que tradicionalmente los conocimientos cient?ficos se consideran universales, lo que los hace sobrevalorados al ser ense?ados e impuestos sobre otro tipo de saberes como por ejemplo los ancestrales, lo que determina una forma de aculturaci?n1 que promueve la p?rdida de identidad (lenguaje, alimentaci?n, vestuario, salud y saberes ancestrales) y fomenta la dependencia hacia la cultura occidental (verdad, objetividad y universalidad). La anterior preocupaci?n nos permite avanzar en el estudio sobre la ense?anza de las ciencias en la Instituci?n Educativa Agropecuaria Ind?gena Quint?n Lame (I.E.A.I.Q.L) de la comunidad Nasa, ubicada en el resguardo ind?gena de Tacuey?, Municipio de Torib?o (Cauca) para identificar las dificultades de apropiaci?n del conocimiento y propiciar un dialogo de saberes que involucre el conocimiento ancestral. En nuestro caso hemos escogido el vinagre como referencia para cruzar dicho dialogo en el aula, puesto que por una parte se identific? que ?ste suele ser utilizado en la comunidad para la elaboraci?n de alimentos, remedios y productos caseros, entre otros, pero tambi?n desde la ense?anza de las ciencias naturales para identificar sus propiedades, caracter?sticas y reacciones como derivado del alcohol. Es importante resaltar que el saber cient?fico se vuelve significativo cuando trasciende su valor de verdad y les brinda herramientas tanto al maestro como al estudiante para comprender y analizar las necesidades del contexto social y cultural, permitiendo proponer alternativas de soluci?n frente situaciones de la vida cotidiana. Para lograr esto, es necesario comprender la cultura como una forma de vida, que contiene m?ltiples dimensiones e instituciones sociales que pueden ser tratadas como sistema. Desde esta mirada, el saber es entendido como un sistema cultural como lo dice Elkana, Y. (1983), de all? que podemos considerar que la ciencia es un sistema cultural que debe nutrirse o complementarse con el saber ancestral de las comunidades ind?genas para la ense?anza de la misma. Para esta investigaci?n se hizo relevante el siguiente interrogante ?C?mo promover un di?logo de saberes entre el conocimiento ancestral de la comunidad Nasa y el conocimiento cient?fico, en torno a la elaboraci?n y usos del vinagre para la ense?anza de las Ciencias Naturales? En la b?squeda de una soluci?n al problema anterior, se enfatiza en una metodolog?a de car?cter cualitativo con elementos etnogr?ficos, para hacer un reconocimiento del contexto educativo y cultural de la comunidad Nasa y caracterizar el problema educativo que se plantea, mediante la sistematizaci?n de entrevistas realizadas a comuneros del resguardo, a la rectora de la I.E.A.I.Q.L, el dise?o y la aplicaci?n de encuestas a algunos estudiantes de la instituci?n educativa en menci?n. En el an?lisis de la informaci?n obtenida, se pone en evidencia la p?rdida de identidad cultural en la comunidad Nasa desde la ense?anza que tradicionalmente se imparte en dicha instituci?n; en cuanto a saberes propios que hacen referencia la elaboraci?n y usos del vinagre, situaci?n que refleja claramente procesos de aculturaci?n en los que la escuela y sus m?todos de ense?anza han jugado y juegan un papel trascendental. Los resultados encontrados se sistematizan y se realiza un paralelo para asociar el conocimiento de la comunidad Nasa y de las ciencias naturales (qu?mica, biolog?a, f?sica), creando puentes dial?gicos, que los explicamos con detalle en el desarrollo de la tesis, en torno a los procesos de elaboraci?n y usos del vinagre. As? mismo se pretende aportar elementos de reflexi?n para futuras propuestas de ense?anza de las ciencias naturales donde se aborden aspectos fundamentales desde la qu?mica, la biolog?a y la f?sica. En conclusi?n, es importante que los ni?os y ni?as aprendan a reconocer e interpretar la cultura como un hibrido: la ancestral y la cient?fica, pues esta es la manera de construir resistencia, de persistir y pervivir dentro de un mundo "globalizado" que desconoce las diferencias, que no acepta la importancia de los saberes propios de las culturas minoritarias, donde siempre se ha ense?ado y se ense?a el conocimiento cient?fico como hegem?nico y universal, situaci?n que cada d?a aleja m?s al hombre de una relaci?n arm?nica con su entorno. De ah? la necesidad de entablar relaciones dial?gicas entre el conocimiento cient?fico y el conocimiento ancestral.

Background: In pathological situations, such as acute myocardial infarction, disorders of motility of the proximal gut can trigger symptoms like nausea and vomiting. Acute myocardial infarction delays gastric emptying (GE) of liquid in rats. Objective: Investigate the involvement of the vagus nerve, α 1-adrenoceptors, central nervous system GABAB receptors and also participation of paraventricular nucleus (PVN) of the hypothalamus in GE and gastric compliance (GC) in infarcted rats. Methods: Wistar rats, N = 8-15 in each group, were divided as INF group and sham (SH) group and subdivided. The infarction was performed through ligation of the left anterior descending coronary artery. GC was estimated with pressure-volume curves. Vagotomy was performed by sectioning the dorsal and ventral branches. To verify the action of GABAB receptors, baclofen was injected via icv (intracerebroventricular). Intravenous prazosin was used to produce chemical sympathectomy. The lesion in the PVN of the hypothalamus was performed using a 1mA/10s electrical current and GE was determined by measuring the percentage of gastric retention (% GR) of a saline meal. Results: No significant differences were observed regarding GC between groups; vagotomy significantly reduced % GR in INF group; icv treatment with baclofen significantly reduced %GR. GABAB receptors were not conclusively involved in delaying GE; intravenous treatment with prazosin significantly reduced GR% in INF group. PVN lesion abolished the effect of myocardial infarction on GE. Conclusion: Gastric emptying of liquids induced through acute myocardial infarction in rats showed the involvement of the vagus nerve, alpha1- adrenergic receptors and PVN.Fundamento: Distúrbios da motilidade do intestino proximal no infarto agudo do miocárdio podem desencadear sintomas digestivos como náuseas e vômitos. O infarto do miocárdio ocasiona retardo do esvaziamento gástrico (EG) de líquido em ratos. Objetivo: Investigar se existe a influência do nervo vago (VGX), adrenoreceptores α-1, receptores GABAB do sistema nervoso central e participação do núcleo paraventricular (NPV) do hipotálamo no esvaziamento gástrico (EG) e complacência gástrica (CG) em ratos infartados. Métodos: Ratos Wistar (n = 8-15) foram divididos em: grupo infarto (INF), sham (SH) e subdivididos. O infarto foi realizado por ligadura da artéria coronária descendente anterior. A complacência gástrica foi estimada com curvas pressão-volume. Realizada vagotomia por secção dos ramos dorsal e ventral. Para verificar a ação dos receptores GABAB foi injetado baclofeno por via intra ventrículo-cerebral. Simpatectomia química foi realizada com prazosina intravenosa (iv), e na lesão do núcleo paraventricular do hipotálamo foi utilizada corrente elétrica de 1mA/10s, com esvaziamento gástrico determinado por medição da retenção gástrica (% RG) de uma refeição salina. Resultados: Não houve diferença significativa na CG. A vagotomia (VGX) reduziu significativamente a %RG; no grupo INF, o tratamento intra ventrículo-cerebral (ivc) com baclofeno reduziu significativamente a % RG; não houve conclusivamente envolvimento dos receptores GABAB em retardar o EG; o tratamento intravenoso com prazosina reduziu significativamente a %RG no grupo INF. A lesão do NPV aboliu o efeito do infarto do miocárdio no EG. Conclusão: O nervo vago, receptores α-adrenérgicos e núcleo paraventricular estão envolvidos no retardo do esvaziamento gástrico no infarto agudo do miocárdio em ratos.

Background: Subclinical hypothyroidism (SCH) has been associated with atherosclerosis, but the abnormalities in plasma lipids that can contribute to atherogenesis are not prominent. The aim of this study was to test the hypothesis that patients with normocholesterolemic, normotriglyceridemic SCH display abnormalities in plasma lipid metabolism not detected in routine laboratory tests including abnormalities in the intravascular metabolism of triglyceride-rich lipoproteins, lipid transfers to high-density lipoprotein (HDL), and paraoxonase 1 activity. The impact of levothyroxine (LT4) treatment and euthyroidism in these parameters was also tested. Methods: The study included 12 SCH women and 10 matched controls. Plasma kinetics of an artificial triglyceride-rich emulsion labeled with radioactive triglycerides and cholesteryl esters as well as in vitro transfer of four lipids from an artificial donor nanoemulsion to HDL were determined at baseline in both groups and after 4 months of euthyroidism in the SCH group. Results: Fractional clearance rates of triglycerides (SCH 0.035 +/- 0.016 min(-1), controls 0.029 +/- 0.013 min(-1), p=0.336) and cholesteryl esters (SCH 0.009 +/- 0.007 min(-1), controls 0.009 +/- 0.009 min(-1), p=0.906) were equal in SCH and controls and were unchanged by LT4 treatment and euthyroidism in patients with SCH, suggesting that lipolysis and remnant removal of triglyceride-rich lipoproteins were normal. Transfer of triglycerides to HDL (SCH 3.6 +/- 0.48%, controls 4.7 +/- 0.63%, p=0.001) and phospholipids (SCH 16.2 +/- 3.58%, controls 21.2 +/- 3.32%, p=0.004) was reduced when compared with controls. After LT4 treatment, transfers increased and achieved normal values. Transfer of free and esterified cholesterol to HDL, HDL particle size, and paraoxonase 1 activity were similar to controls and were unchanged by treatment. Conclusions: Although intravascular metabolism of triglyceride-rich lipoproteins was normal, patients with SCH showed abnormalities in HDL metabolism that were reversed by LT4 treatment and achievement of euthyroidism.

The Brazil nut (Bertholletia excelsa) of the Amazon region is consumed worldwide. It is rich in both monounsaturated fatty acids and polyunsaturated fatty acids and is known for its high selenium content. This study tested the hypothesis whether the consumption of this nut could affect the plasma lipids and apolipoproteins and some functional properties of the antiatherogenic high-density lipoprotein (HDL). Fifteen normolipidemic subjects aged 27.3 +/- 3.9 years and with body mass index of 23.8 +/- 2.8 kg/m(2) consumed 45 g of Brazil nuts per day during a 15-day period. On days 0 and 15, blood was collected for biochemical analysis, determination of HDL particle size, paraoxonase 1 activity, and lipid transfer from a lipoprotein-like nanoparticle to the HDL fraction. Brazil nut ingestion did not alter HDL, low-density lipoprotein cholesterol, triacylglycerols, apolipoprotein A-1, or apolipoprotein B concentrations. HDL particle diameter and the activity of antioxidative paraoxonase 1, mostly found in the HDL fraction, Were also unaffected. Supplementation increased the reception of cholesteryl esters (P <.05) by the HDL yet did not alter the reception of phospholipids, free cholesterol, or triacylglycerols. As expected, plasma selenium was significantly increased. However, the consumption of Brazil nuts for short duration by normolipidemic subjects in comparable amounts to those tested for other nuts did not alter serum lipid profile. The only alteration in HDL function was the increase in cholesteryl ester transfer. This latter finding may be beneficial because it would improve the nonatherogenic reverse cholesterol transport pathway. (c) 2008 Elsevier Inc. All rights reserved.

Orange juice (OJ) is regularly consumed worldwide, but its effects on plasma lipids have rarely been explored. This study hypothesized that consumption of OJ concentrate would improve lipid levels and lipid metabolism, which are important in high-density lipoprotein (HDL) function in normolipidemic (NC) and hypercholesterolemic (HCH) subjects. Objective: Exercise training improves plasma lipid profile and diminishes risk of coronary heart disease. Previously, we showed that training increases LDL plasma clearance, as tested by an artificial LDL-like nanoemulsion method, presumably by increasing LDL receptor activity. In this study, we investigated whether training could also improve LDL clearance in hypercholesterolemic subjects (HCh) that are exposed to increased risk of cardiovascular events. Methods: Twenty sedentary HCh and 20 normolipidemic (NL) sedentary volunteers were divided into four groups: 12 HCh submitted to 4-month training program, 8 HCh with no exercise program, 12 NL submitted to 4-month training and 8 NL with no exercise program. An LDL-like nanoemulsion labeled with 14C-cholesteryl ester was injected intravenously into all subjects and plasma samples were collected during 24h after injection to determine the fractional clearance rate (FCR, in h-1) by compartmental analysis. The study was performed on the first and on the last day of the 4-month study period. Results: In both, trained HCh and NL groups, training increased nanoemulsion FCR by 36% (0.0443 +/- 0.0126; 0.0602 +/- 0.0187, p=0.0187 and 0.0503 +/- 0.0203; 0.0686 +/- 0.0216, p=0.0827, respectively). After training, LDL cholesterol diminished in both HCh and NL groups. In HCh, but not in NL group, LDL susceptibility to oxidation decreased, but oxidized LDL was unchanged. In both non-trained groups FCR was the same for the last and the 4-month previous evaluation. Conclusion: In HCh, exercise training increased the removal of LDL as tested by the nanoemulsion, and this probably accounted for decreased LDL cholesterol and diminished LDL susceptibility to oxidation. O extrato pirolenhoso vem sendo utilizado para diversos fins na agricultura, como a melhoria do desenvolvimento vegetativo, a fertilização orgânica, o condicionamento do do solo e a indução de enraizamento. Este trabalho teve como objetivo avaliar o efeito de diferentes doses de extrato pirolenhoso no cultivo da orquídea Cattleya loddigesii Lindl. Utilizaram-se plantas propagadas in vitro, as quais foram cultivadas em vasos com substrato composto de fibra de coco, casca de pinus e casca de arroz carbonizada (1:1:1 v/v/v). As regas foram realizadas manualmente duas vezes por semana, no outono e no inverno, e três vezes por semana, na primavera e no verão. Os tratamentos foram: 0,0 (controle), 0,1, 0,2, 0,3, 0,4, 0,5 e 0,6%, valores que correspondem a 0, 1, 2, 3, 4, 5 e 6 mL L-1 de extrato pirolenhoso, respectivamente, aplicados utilizando-se o produto diluído em água, no volume de 50 mL por vaso a cada 30 dias. Após 12 meses do início do experimento, foram avaliados altura da parte aérea, número de brotos, número de folhas, número de pseudobulbos, comprimento da maior raiz, número de raízes, comprimento da maior folha, massa fresca total, massa seca da parte aérea e pH do substrato. A análise química foliar foi realizada para os elementos cálcio, magnésio, fósforo, potássio e nitrogênio. Observou-se que a aplicação do extrato pirolenhoso foi eficaz no cultivo da espécie Cattleya loddigesii Lindl., sendo recomendada a dose de 0,6%.
