In his discourse - The Chef In Society: Origins And Development - Marcel R. Escoffier, Graduate Student, School of Hospitality Management at Florida International University, initially offers: “The role of the modern professional chef has its origins in ancient Greece. The author traces that history and looks at the evolution of the executive chef as a manager and administrator.” “Chefs, as tradespersons, can trace their origins to ancient Greece,” the author offers with citation. “Most were slaves…” he also informs you. Even at that low estate in life, the chef was master of the slaves and servants who were at close hand in the environment in which they worked. “In Athens, a cook was the master of all the household slaves…” says Escoffier. As Athenian influence wanes and Roman civilization picks-up the torch, chefs maintain and increase their status as important tradesmen in society. “Here the first professional societies of cooks were formed, almost a hierarchy,” Escoffier again cites the information. “It was in Rome that cooks established their first academy: Colleqium Coquorum,” he further reports. Chefs, again, increase their significance during the following Italian Renaissance as the scope of their influence widens. “…it is an historical fact that the marriage of Henry IV and Catherine de Medici introduced France to the culinary wonders of the Italian Renaissance,” Escoffier enlightens you. “Certainly the professional chef in France became more sophisticated and more highly regarded by society after the introduction of the Italian cooking concepts.” The author wants you to know that by this time cookbooks are already making important inroads and contributing to the history of cooking above and beyond their obvious informational status. Outside of the apparent European influences in cooking, Escoffier also ephemerally mentions the development of Chinese and Indian chefs. “It is interesting to note that the Chinese, held by at least one theory as the progenitors of most of the culinary heritage, never developed a high esteem for the position of chef,” Escoffier maintains the historical tack. “It was not until the middle 18th Century that the first professional chef went public. Until that time, only the great houses of the nobility could afford to maintain a chef,” Escoffier notes. This private-to-public transition, in conjunction with culinary writing are benchmarks for the profession. Chefs now establish authority and eminence. The remainder of the article devotes itself to the development of the professional chef; especially the melding of two seminal figures in the culinary arts, Cesar Ritz and August Escoffier. The works of Frederick Taylor are also highlighted.

Tourism is the worlds largest employer, accounting for 10% of jobs worldwide (WTO, 1999). There are over 30,000 protected areas around the world, covering about 10% of the land surface(IUCN, 2002). Protected area management is moving towards a more integrated form of management, which recognises the social and economic needs of the worlds finest areas and seeks to provide long term income streams and support social cohesion through active but sustainable use of resources. Ecotourism - 'responsible travel to natural areas that conserves the environment and improves the well- being of local people' (The Ecotourism Society, 1991) - is often cited as a panacea for incorporating the principles of sustainable development in protected area management. However, few examples exist worldwide to substantiate this claim. In reality, ecotourism struggles to provide social and economic empowerment locally and fails to secure proper protection of the local and global environment. Current analysis of ecotourism provides a useful checklist of interconnected principles for more successful initiatives, but no overall framework of analysis or theory. This paper argues that applying common property theory to the application of ecotourism can help to establish more rigorous, multi-layered analysis that identifies the institutional demands of community based ecotourism (CBE). The paper draws on existing literature on ecotourism and several new case studies from developed and developing countries around the world. It focuses on the governance of CBE initiatives, particularly the interaction between local stakeholders and government and the role that third party non-governmental organisations can play in brokering appropriate institutional arrangements. The paper concludes by offering future research directions."

Harmless bacteria inhabiting inner plant tissues are termed endophytes. Population fluctuations in the endophytic bacterium Pantoea agglomerans associated with two species of field cultured citrus plants were monitored over a two-year period. The results demonstrated that populations of P. agglomerans fluctuated in Citrus reticulata but not C. sinensis. A cryptic plasmid pPA3.0 (2.9 kb) was identified in 35 out of 44 endophytic isolates of P. agglomerans and was subsequently sequenced. The origins of replication were identified and nine out of 18 open reading frames (ORFs) revealed homology with described proteins. Notably, two ORFs were related to cellular transport systems and plasmid maintenance. Plasmid pPA3.0 was cloned and the gfp gene inserted to generate the pPAGFP vector. The vector was introduced into P. agglomerans isolates and revealed stability was dependent on the isolate genotype, ninety-percent stability values were reached after 60 hours of bacterial cultivation in most evaluated isolates. In order to definitively establish P. agglomerans as an endophyte, the non-transformed bacterium was reintroduced into in vitro cultivated seedlings and the density of inner tissue colonization in inoculated plants was estimated by bacterium re-isolation, while the tissue niches preferred by the bacterium were investigated by scanning electronic microscopy (SEM). Cells from P. agglomerans (strain ARB18) at similar densities were re-isolated from roots, stems and leaves and colonization of parenchyma and xylem tissues were observed. Data suggested that P. agglomerans is a ubiquitous citrus endophyte harboring cryptic plasmids. These characteristics suggest the potential to use the bacterium as a vehicle to introduce new genes in host plants via endophytic bacterial transformation.

El presente proyecto está centrado en tres crisis vitales del desarrollo humano: la identidad, la generatividad y la integridad del yo (Erikson, 1961). Se indagará la relación existente entre estos momentos del desarrollo psicosocial con las vicisitudes y crisis sociales y políticas que atraviesan el desarrollo personal. El sentido de lo político, la participación comunitaria y social se pondrán en tensión con la historia de acontecimientos que le sucedieron a las personas a lo largo de su vida y se plasman en las narrativas vitales.La tarea de actualizar las identificaciones tempranas, fundirse en un proyecto personal, de pareja, social y laboral implica la consolidación de la identidad y prepara a las personas para la etapa más fructífera de la adultez: la intimidad y la generatividad. Esta tarea implica involucrarse en la guía de otras generaciones más jóvenes a la vez que se sostiene el cuidado personal y el propio desarrollo y expansión del self.Sin embargo, existen dificultades en el desarrollo adulto que, sin conformarse en patologías, obturan la expresión de estos componentes egosintónicos y se manifiestan otros componentes egodistónicos o debilidades del yo. Asimismo, crisis sociales y eventos históricos significativos atraviesan la vida de las personas marcando sus metas de desarrollo y transformando el sentido de sí mismos y el significado de ser en el mundo con otros. Las expresiones personales y familiares de la generatividad tienen diferentes manifestaciones que se expresan en el campo social, comunitario y político y en el ejercicio de distintos roles sociales (voluntariado, participación política, inclusión en organizaciones comunitario, liderazgo de instituciones sociales, gremiales, partidarias o religiosas). En cualquier caso interesa conocer y determinar qué factores del desarrollo temprano y adulto establecen diferentes niveles de compromiso, interés e involucramiento. Los objetivos se centran en determinar los componentes de la generatividad y sus expresiones agénticas y comunitarias. Se utilizará un abordaje combinado de metodología cuantitativa y cualitativa. Se desarrollará una escala de generatividad aportando las evidencias de confiabilidad y validez requeridos en el desarrollo psicométrico. Posteriormente se administrará una entrevista pautada semidirigida, que permita valorar cualitativamente las diferencias centrales en las historias de vida entre sujetos con diferentes niveles de generatividad y grupos u organizaciones específicamente vinculadas al cuidado de los otros (derechos humanos, organizaciones comunitarias y ONG's vinculados al desarrollo infantil y cuidado de la vejez). De esta forma se valorará el impacto de crisis vitales y familiares, tanto como adversidades sociales y políticas (violencia, represión) en la generatividad, la madurez en adultez y la participación social y comunitaria.Se espera, así, identificar los aspectos egosintónicos comunes que son esenciales para desarrollar y consolidar fortalezas, secuencias de sentido, de redención y plenitud vital y compromiso político y comunitario a pesar de las adversidades en poblaciones diversas. La contrastación de las narrativas vitales permitirá elucidar qué potencialidades y recursos psicológico se ponen en juego, no sólo para la recuperación tras la adversidad (factores resilientes), sino para el desarrollo de una madurez comprometida con causas sociales y humanitarias que de forma reparatoria, restauran una porción de la realidad en la que se sufrió la injusticia y la crueldad, no ya para sí mismos sino para el resto de la sociedad.

Les techniques utilisant la chaise vide ou le dialogue sur deux chaises sont des moyens qui permettent le déploiement de techniques expérientielles dans différentes formes de psychothérapie. Cet article vise à retracer l'origine de ces techniques dans les courants Gestalt et centré sur la personne, pour ensuite présenter quelques développements actuels au sein des thérapies expérientielles au sens large. Les techniques présentées sont classées selon leur finalité primordiale, à savoir : leur utilisation dans le but de clarifier et de construire du sens et leur utilisation dans le but de modifier des déterminants internes du problème. Les techniques suivantes sont brièvement présentées, illustrées par des vignettes cliniques et discutées : élaboration du conflit interne ; élaboration de l'auto-interruption ; élaboration d'un conflit avec une personne significative ; dialogue d'apaisement ; éléments cognitifs du jeu de rôle avec une seule personne ; éléments affectifs du jeu de rôle avec une seule personne. Nous discutons les travaux de recherche mettant en évidence l'efficacité et l'effectivité de ces techniques et terminons par des réflexions au sujet de l'indication différentielle de ces techniques, avec une réflexion au sujet des perspectives cliniques et de recherche. © 2013 Publié par Elsevier Masson SAS pour la Société française de psychologie.

We have demonstrated that cortical cell autografts might be a useful therapy in two monkey models of neurological disease: motor cortex lesion and Parkinson's disease. However, the origin of the useful transplanted cells obtained from cortical biopsies is not clear. In this report we describe the expression of doublecortin (DCX) in these cells based on reverse-transcription polymerase chain reaction (RT-PCR) and immunodetection in the adult primate cortex and cell cultures. The results showed that DCX-positive cells were present in the whole primate cerebral cortex and also expressed glial and/or neuronal markers such as glial fibrillary protein (GFAP) or neuronal nuclei (NeuN). We also demonstrated that only DCX/GFAP positive cells were able to proliferate and originate progenitor cells in vitro. We hypothesize that these DCX-positive cells in vivo have a role in cortical plasticity and brain reaction to injury. Moreover, in vitro these DCX-positive cells have the potential to reacquire progenitor characteristics that confirm their potential for brain repair.

It is well known that hospital malnutrition is a highly prevalent condition associated to increase morbidity and mortality as well as related healthcare costs. Although previous studies have already measured the prevalence and/or costs of hospital nutrition in our country, their local focus (at regional or even hospital level) make that the true prevalence and economic impact of hospital malnutrition for the National Health System remain unknown in Spain. The PREDyCES® (Prevalence of hospital malnutrition and associated costs in Spain) study was aimed to assess the prevalence of hospital malnutrition in Spain and to estimate related costs. Some aspects made this study unique: a) It was the first study in a representative sample of hospitals of Spain; b) different measures to assess hospital malnutrition (NRS2002, MNA as well as anthropometric and biochemical markers) where used both at admission and discharge and, c) the economic consequences of malnutrition where estimated using the perspective of the Spanish National Health System.

Le cartilage est un tissu conjonctif composé d’une seule sorte de cellule nommée chondrocytes. Ce tissu offre une fondation pour la formation des os. Les os longs se développent par l'ossification endochondral. Ce processus implique la coordination entre la prolifération, la différenciation et l'apoptose des chondrocytes, et résulte au remplacement du cartilage par l'os. Des anomalies au niveau du squelette et des défauts liés à l’âge tels que l’arthrose (OA) apparaissent lorsqu’il y a une perturbation dans l’équilibre du processus de développement. À ce jour, les mécanismes exacts contrôlant la fonction et le comportement des chondrocytes pendant la croissance et le développement du cartilage sont inconnus. Le récepteur activateur de la prolifération des peroxysomes (PPAR) gamma est un facteur de transcription impliqué dans l'homéostasie des lipides. Plus récemment, son implication a aussi été suggérée dans l'homéostasie osseuse. Cependant, le rôle de PPARγ in vivo dans la croissance et le développement du cartilage est inconnu. Donc, pour la première fois, cette étude examine le rôle spécifique de PPARγ in vivo dans la croissance et le développement du cartilage. Les souris utilisées pour l’étude avaient une délétion conditionnelle au cartilage du gène PPARγ. Ces dernières ont été générées en employant le système LoxP/Cre. Les analyses des souris ayant une délétion au PPARγ aux stades embryonnaire et adulte démontrent une réduction de la croissance des os longs, une diminution des dépôts de calcium dans l’os, de la densité osseuse et de la vascularisation, un délai dans l’ossification primaire et secondaire, une diminution cellulaire, une perte d’organisation colonnaire et une diminution des zones hypertrophiques, une désorganisation des plaques de croissance et des chondrocytes déformés. De plus, la prolifération et la différenciation des chondrocytes sont anormales. Les chondrocytes et les explants isolés du cartilage mutant démontrent une expression réduite du facteur de croissance endothélial vasculaire (VEGF)-A et des éléments de production de la matrice extracellulaire. Une augmentation de l’expression de la métalloprotéinase matricielle (MMP)-13 est aussi observée. Dans les souris âgées ayant une délétion au PPARγ, y est aussi noté des phénotypes qui ressemblent à ceux de l’OA tel que la dégradation du cartilage et l'inflammation de la membrane synoviale, ainsi qu’une augmentation de l’expression de MMP-13 et des néoépitopes générés par les MMPs. Nos résultats démontrent que le PPARγ est nécessaire pour le développement et l’homéostasie du squelette. PPARγ est un régulateur essentiel pour la physiologie du cartilage durant les stades de croissance, de développement et de vieillissement.
