The present work has as objective the knowledge of the process of drying of the cephalothorax of shrimp to give support the industry to make possible the use of this byproduct. In this sense, the process conditions in this tray dryer and spouted bed were analyzed. With these results, it was projected and constructs a dryer with specific characteristics for the drying of the cephalothorax. The desorption isotherms were obtained by the dynamic method in the temperatures of 20, 35 and 50º C and in the interval of 10-90% of relative humidity. It was observed that the product in form of powder can be conserved with larger stability for lower relative humidity to 40%. The curves of drying of the dryer of fixed bed were adjusted for the models: single exponential, biparametric exponential and Page. The model biparametric exponential more adequately described all the drying conditions studied. The tests carry out in spouted bed showed high drying rate for the material in the paste form in beds active dynamicly-fluid, provely the necessity of a feeding in shorter intervals of time to increase the thermal efficiency of the process. The projected dryer, be considered the obtained results, it was a rotary dryer with inert bed, feed co-current, discharge in cyclone to take place the separation gas-solid, and feed carry out in intervals of 2 minutes. The optimization of the equipment projected it was accomplished used the complete factorial experimental design 24, this had as independent variables temperature velocity of the air, feed flow rate and encapsulated concentration (albumin), as variables answers the thermal efficiency, the moisture content of obtained powder, total time of test and the efficiency of production of powder in several points of processing. The results showed that the rotary dryer with inert bed can present, also, good results if applied industrially

The waste in the industries of escargot processing is very big. This is composed basically of escargot meat out of the commercialization patterns and the visceras. In this context, there is a need to take advantage to the use of these sub-products. A possibility should be drying them and transforming them in a certain form to be reused. Than, the present work has the objective of studying the reutilization of the sub-products of the escargot industrialization for by means of drying process. The samples were transformed in pastes, through a domestic processor for approximately 1 minute and compacted in trays of aluminum without perforations with three different heights (5 mm, 10 mm and 15 mm). The drying was accomplished in a tray dryer with air circulation and transverse flow at a speed of 0,2 m/s and three temperature levels (70°C, 80°C and 90ºC). A drying kinetics study was accomplished for the obtained curves and for the heat and mass transfer coefficients using experimental procedures based in an experimental planning of 22 factorial type. Microbiological and physiochemical analysis were also accomplished for the in nature and the dehydrated sub-products. In the drying process, it was observed the great importance of the external resistances to the mass transfer and heat in the period of constant tax influenced by the temperature. The evaporation taxes indicated a mixed control of the mass transfer for the case of the thickest layers. As already expected, the drying constant behavior was influenced by the temperature and thickness of the medium, increasing and decreasing. The statistical analysis of the results, in agreement with the factorial planning 22, showed that the fissures, the shrinking of the transfer area and the formation of a crust on the surface might have contributed to the differences between the practical results and the linear model proposed. The temperature and the thickness influenced significantly in the answers of the studied variables: evaporation tax and drying constant. They were obtained significant statistical models and predictive ones for evaporation tax for the meat as well as for the visceras

Green bean is considered as one of most traditional Brazilian Northeast dishes. Green beans drying preliminary experiments show that combine processes, fixed-bed/spouted bed, resulted in dehydrated beans with uniform humidity and the recovery of the beans properties after their rehydration. From this assays was defined an initial humidity suited for the spouted bed process. A fixed-bed pre-drying process until a level of 40% humidity gave the best results. The spouted bed characteristic hydrodynamic curves were presented for different beans loads, where changes in the respective beans physical properties were evidenced during the fluidynamic assay, due simultaneous drying process. One 22 factorial experimental design was carried out with three repetition in the central point, considering as entry variables: drying air velocity and temperature. The response variables were the beans brakeage, water fraction evaporated during 20 and 50 minutes of drying and the humidity ratio. They are presented still the modeling of the drying of the green beans in fine layer in the drier of tray and the modeling of the shrinking of the beans of the drying processes fixed-bed and spouted bed

Actually, Brazil is one of the larger fruit producer worldwide, with most of its production being consumed in nature way or either as juice or pulp. It is important to highlig ht in the fruit productive chain there are a lot lose due mainly to climate reasons, as well as storage, transportation, season, market, etc. It is known that in the pulp and fruit processing industy a yield of 50% (in mass) is usually obtained, with the other part discarded as waste. However, since most this waste has a high nutrient content it can be used to generate added - value products. In this case, drying plays an important role as an alternative process in order to improve these wastes generated by the fruit industry. However, despite the advantage of using this technique in order to improve such wastes, issues as a higher power demand as well as the thermal efficiency limitation should be addressed. Therefore, the control of the main variables in t his drying process is quite important in order to obtain operational conditions to produce a final product with the target specification as well as with a lower power cost. M athematical models can be applied to this process as a tool in order to optimize t he best conditions. The main aim of this work was to evaluate the drying behaviour of a guava industrial pulp waste using a batch system with a convective - tray dryer both experimentally and using mathematical modeling. In the experimental study , the dryin g carried out using a group of trays as well as the power consume were assayed as response to the effects of operational conditions (temperature, drying air flow rate and solid mass). Obtained results allowed observing the most significant variables in the process. On the other hand, the phenomenological mathematical model was validated and allowed to follow the moisture profile as well as the temperature in the solid and gas phases in every tray. Simulation results showed the most favorable procedure to o btain the minimum processing time as well as the lower power demand.

A Spirulina apresenta propriedades antioxidantes o que favorece seu uso como alimento funcional, fato que tem motivado a sua comercialização para a formulação de alimentos diversos e com finalidades terapêuticas. A secagem ganha importância durante produção de Spirulina, uma vez que a umidade necessária, para garantir que não ocorra degradação da biomassa desidratada durante o armazenamento, é alcançada através do conhecimento dos parâmetros que caracterizam a operação. Neste estudo foi utilizada a secagem com bomba de calor, um método alternativo, pois viabiliza a operação com temperaturas inferiores as tradicionalmente utilizadas, além de seu funcionamento ser independente das condições meteorológicas do ambiente. O trabalho experimental da secagem de Spirulina sp. foi iniciado com um estudo comparativo entre a secagem com bomba de calor (SBC) e a secagem tradicional (ST). O efeito dos diferentes métodos utilizados sob a amostra foi comparado em relação à cinética da operação e as características da microalga desidratada (cor, ficocianina, compostos fenólicos totais e atividade antioxidante total). As temperaturas do ar foram de 50 e 60ºC e a umidade absoluta da SBC foi dez vezes inferior a utilizada durante a ST. Os parâmetros que caracterizam a secagem foram influenciados pela temperatura do ar, bem como, pela baixa umidade absoluta na SBC. Os valores do tempo total da SBC foram 40% inferiores aos encontrados para a secagem ST, em ambas as temperaturas do ar. A maior preservação das características da Spirulina foi obtida na SBC e temperatura do ar de 50°C, e nesta condição os valores foram 14% (ficocianina), 60% (compostos fenólicos) e 10% (atividade antioxidante) superiores aos encontrados na mesma condição para a ST. Isto evidencia que o método de secagem é determinante na qualidade do produto desidratado. Posteriormente, foi realizado o estudo da cinética da SBC, bem como a otimização da operação de secagem e a reidratação das amostras desidratadas nas diferentes condições de secagem. O estudo foi realizado através de um planejamento fatorial 32, tendo como fatores de estudo a temperatura do ar (30, 40 e 50ºC) e a espessura da bandeja (1, 3 e 5 mm). As respostas utilizadas foram ficocianina, compostos fenólicos, atividade antioxidante total e cor da microalga desidratadas. Também foram realizadas a microscopia eletrônica de varredura (MEV) e as curvas termogravimétricas (DSC) das amostras desidratadas. A secagem apresentou um curto período de taxa constante, delimitado pela umidade crítica, sendo que, seus valores foram influenciados apenas pela temperatura do ar de secagem. O modelo Logarítmico forneceu elevados valores de R2ajust e os menores valores de soma dos erros quadráticos (SSE) e de critério informativo de Akaike (AIC). Os valores das energias de ativação para as espessuras de 1, 3 e 5 mm, foram na faixa de 20-23 kJ mol-1. A condição de operação mais adequada, para a secagem de Spirulina sp. com bomba de calor, foi obtida na temperatura do ar de 50°C e espessura da bandeja de 5 mm, com valores de ficocianina, compostos fenólicos, atividade antioxidante total e diferença de cor de 19,60 mg g-1, 1508 µgEAG g-1, 52,6% e 5,71, respectivamente. Os termogramas (DSC) evidenciaram que em 50 ºC e espessura de 5 mm, o produto apresentou maior estabilidade térmica. As amostras de Spirulina sp. desidratadas apresentaram estrutura morfológica (MEV), aparentemente, rígida e heterogênea, e os seus percentuais de reidratação corresponderam a 85-91% da umidade da microalga in natura.

O objetivo deste trabalho foi avaliar, por meio de simulação econômica, a viabilidade de aquisição de um silo-secador, para pequenas propriedades rurais, tendo como referências as opções de terceirizar o processo de secagem/armazenagem ou a comercialização do milho úmido. em virtude da alta diversificação encontrada nas pequenas propriedades rurais, a simulação foi realizada considerando-se diferentes tamanhos de áreas exploradas com milho (10; 20; 30 e 40 ha), níveis de produtividade (3.900; 4.500 e 5.100 kg ha-1) e preços por saca de milho (R$ 13,03; R$ 19,69 e R$ 34,29), no Estado de São Paulo. Comparando as rentabilidades obtidas, notou-se a superioridade da receita líquida na aquisição do silo secador nas áreas de produção de 20 ha com produtividade de 4.500 e 5.100 kg ha-1, 30 ha e 40 ha nos vários níveis de produtividade (3.900; 4.500 e 5.100 kg ha-1) sempre que o preço de mercado da saca de milho cobriu os custos anuais do sistema. A terceirização da secagem/armazenagem apresentou-se como a melhor alternativa nas áreas de 10 ha (todas as produtividades) e 20 ha (produtividade de 3.900 kg ha-1). A comercialização do produto úmido nunca se constituiu na opção mais rentável.

The scarcity of farmland, reducing the supply of irrigation water and lack of technologies for conservation, makes the globalized world facing serious difficulties in the production of food for its population. The most viable outlet for this dilemma is the dissemination of technologies, economically viable and available to the whole population, for dehydration of perishable foods produced. This paper presents a solar dryer of direct exposure to the production of dried fruit, made from recycled polyethylene drum of 200 liters, used for storing water or trash. The drum was sectioned in half in its longitudinal axis and has its halves together forming a trough-like structure. It describes the processes of construction and assembly of solar dryer proposed, whose main characteristic its low cost, and was designed for use by people with low income, for processing fruits widely available in our region (mango, banana, guava, cashew, pineapple, tomato and others) in dried fruit and flour, contributing significantly to increase the life of these foods. The nuts and flours can be used for own consumption and for marketing jobs and income generation. Tests were conducted to diagnose the feasibility of using solar dryer for the various types of tropical fruits. Were also compared parameters such as drying times and thermal efficiency obtained with the prototype found in the specialized literature in food dehydration. The drying times in the dryer were obtained competitive with those obtained in other models of dryers LMHES developed

It´s been motivating motivated by the current rulers as an energy solution the use of the biodiesel as source of energy, that doesn't damage the environment and promotes the development of the areas where the base plant are grown. The process of production of the biodiesel, starting from the castor oil plant and its derivers, generates a known product as castor oil plant pie that has been used as fertilizer. Once disintoxicated, it can serve as animal ration, because it contains high content of proteins, presenting larger joined value. The disintoxication process, can be obtained through the process of drying the pie with the construction and use of models of dryers capable to elevate the temperature of the castor oil plant pie to approximately 60ºC.In this temperature the product tends to eliminate the ricina, with the aid of an aqueous solution of hydroxide of calcium, or still reach higher temperatures to make the disintoxication without a chemical treatment. It was made a bibliographical research about known processes of disintoxication of the castor oil plant pie from the autoclave use to the drying direct exposure to the sun. Starting from the state of the art and identification of the object, it was chosen solar dryers to eliminate the ricina. It was applied two types of solar dryers: the one of solar direct exposure, and the one with concentrador. The castor oil plant pie was separated in samples, with measurement of its initial mass, codified and placed in the dryers. The results were presented in graphs and tables forms, with the values of temperatures noticed. It was noticed the variations of temperature and the relationships analyzed related with the ricina content eliminated from the pie. The analysis of the ricina content was accomplished by Embrapa - Campina Grande, by eletroforese method. The analysis of the result of considering the content of ricina of the samples. It was observed that, we obtained lower rate of ricina in samples that had larger drying time and average value temperature above 60ºC. Comparing with the ones submitted to higher temperatures and in a shorter period of time. It was possible to evaluate the efficiency of the dryers in the desintoxication process of the samples, as well as the type of more appropriate dryer for the drying pie process. Finally, it was concluded that the solar dryer with concentrador presents higher values temperatures than the direct exposure one. So, it´s being more opportune applied in the castor oil plant pie drying process. However, more than one hour for drying time is needed

This work deals with the kinetics assay of Cajá (Spondias mombin L.) bagasse drying by an experimental design using a tray dryer. In order to add-value to this product a kinetic study has been carried out. A central composite experimental design has been carried out to evaluate the influence of the operational variables: input air temperature (55; 65 e 75ºC); the drying air velocity (3.2; 4.6 e 6.0 m/s) and the fixed bed thickness (0.8; 1.2 e 1.6 cm) and as response variable the the moisture content (dry basis). The results showed that the diffusional Fick model fitted quite well the experimental data. The best condition found has been input air temperature of 75ºC, drying air velocity of 6.0 m/s as well as fixed bed thickness of 0.8 cm. The experimental design assay showed that the main effects as well as the second ones were significant at 95% confindance level. The best operational condition according to statistical planning was 75 oC input air temperature, 6.0 m.s-1 drying air velocity and 0.8 cm fixed bed thickness. In this case, the equilibrium moisture content (1.3% dry basis) occured at 220 minutes
