Background: Sulphites are widely used as a preservative and antioxidant additives in the food and pharmaceutical industries. Many types of biological and toxicological effects of sulphites in multiple organs of mammals have been shown in previous studies. Objective: The aim of this study was to investigate the effects of sodium metabisulfite (SMB) on testicular function and morphometric values of epididymis in adult male Wistar rats. Materials and Methods: A total of 32 rats were randomly divided into four groups. The experimental groups received SMB at doses of 10 mg/kg (S10), 100mg/kg (S100), and 260 mg/kg (S260) while an equal volume of normal saline was administered to the control group via gavage. The rats were anaesthetized after 28 days and the left testis with the head of epididimis was excised following abdominal incision for histological observation using hematoxylin and eosin staining. Serum samples were collected for assay of testosterone level. The initial epididymis was analyzed for motility, morphology, and the number of sperms. Result: The results of this study showed that normal morphology, count, and motility of sperms and testosterone level were decreased in the SMB treated groups. In comparison with the control group, SMB resulted in a lower total number of spermatogonia, primary spermatocyte, spermatids, and Leydig cells. Conclusion: It is suggested that SMB decreases the sperm production and has the potential to affect the fertility adversely in male rats.

Rutin is employed as antioxidant and to prevent the capillary fragility and, when incorporated in cosmetic emulsions, it must target the action site. In vitro cutaneous penetration studies through human skin is the ideal situation, however, there are difficulties to obtain and to maintain this tissue viability. Among the membrane models, shed snake skin presents itself as pure stratum corneum, providing barrier function similar to human and it is obtained without the animal sacrifice. The objectives of this research were the development and stability evaluation of a cosmetic emulsion containing rutin and propylene glycol (penetration enhancer) and the evaluation or rutin in vitro cutaneous penetration and retention from the emulsion, employing an alternative model biomembrane. Emulsion was developed with rutin and propylene glycol, both at 5.0% w/w. Active substance presented on the formulation was quantified by a validated spectrophotometric method at 361.0 nm. Rutin Rutin cutaneous penetration and retention was performed in vertical diffusion cells with shed snake skin of Crotalus durissus, as alternative model biomembrane, and distilled water and ethanol 99.5% (1:1), as receptor fluid. The experiment was conducted for six hours, at 37.0 +/- 0.5 degrees C with constant stirring of 300 rpm. Spectrophotometry at 410.0 nm, previously validated, determined the active substance after cutaneous penetration/ retention. Emulsion did not promote rutin cutaneous penetration through C. durissus skin, retaining 0.931 +/- 0.0391 mu g rutin/mg shed snake skin. The referred formulation was chemically stable for 30 days after stored at 25.0 +/- 2.0 degrees C, 5.0 +/- 0.5 degrees C and 45.0 +/- 0.5 degrees C. In conclusion, it has not been verified the active cutaneous penetration through the model biomembrane, but only its retention on the Crotalus durissus stratum corneum, condition considered stable for 30 days.

Currently, sulfites are employed on board to inhibit melanosis (blackspot) on crustaceans. However, when used in excess this chemical compound not only can cause adverse reactions in SO2-sensitive individuals, but also favors the decomposition of trimethylamine oxide (TMAO) into dimethylamine (DMA) and formaldehyde (FA), thus compromising the quality of the product, which can be observed mainly through the texture change of the meat after cooking. This study was conducted to verify the increase of the contents of DMA and FA by the excessive use of sodium metabisulfite in white shrimp (Penaeus schmitti). For laboratory trials, shrimp were beheaded, washed and immersed in a 2% sodium metabisulfite solution for 10 minutes. Specimens were stored either on ice and maintained for 48 hours in refrigeration, or stored in a freezer for 48 hours. Samples were collected at intervals of 0, 24 and 48 hours, and analyzed for residual SO2, TMAO, TMA, DMA and FA. The immersion of shrimp in a 2% sodium metabisulfite for 10 minutes favored the decomposition of TMAO which greatly increased the contents of DMA and FA. The FA and DMA measured in fresh shrimp was low. Moreover, the storage of shrimp tails on ice resulted in a significant reduction of the TMA, DMA, FA and residual SO2 contents compared to the specimens under frozen storage.

One cubic centimetre potato cubes were blanched, sulfited, dried initially for between 40 and 80 min in air at 90 degreesC in a cabinet drier, puffed in a high temperature fluidised bed and then dried for up to 180 min in a cabinet drier. The final moisture content was 0.05 dwb. The resulting product was optimised using response surface methodology, in terms of volume and colour (L-*, a(*) and b(*) values) of the dry product, as well as rehydration ratio and texture of the rehydrated product. The operating conditions resulting in the optimised product were found to be blanching for 6 min in water at 100 degreesC, dipping in 400 ppm sodium metabisulfite solution for 10 min, initially drying for 40 min and puffing in air at 200 degreesC for 40 s, followed by final drying to a moisture content of 0.05 dwb. Polifenoloxidase (PPO, EC 1.14.18.1) extraída de folhas de Mentha arvensis foi isolada por precipitação com (NH4)2SO4 e diálise extensiva. Seu pH e temperatura ótimos variaram com o substrato. A PPO apresentou atividade com vários difenóis. Valores de Km foram 0,825; 0,928 e 7,41 mM para ácido caféico, 4-metilcatecol e catecol, respectivamente. Na inativação térmica, 50% da enzima foi inativada após 60 e 15 segundos a 70 e 75ºC, respectivamente. A medida de atividade residual mostrou um efeito estabilizante de sacarose a várias temperaturas e uma energia de ativação (Ea) para inativação aumentando com a concentração de sacarose de 0 a 40% (p/p). Valores de energias de ativação de 78,13; 80,37; 82,79 and 81,00 kJ/Mol foram encontradas para 0, 15, 30 e 40% de sacarose, respectivamente. A PPO foi inibida pelos ácidos ascórbico, benzóico, cinamico, ferulico, p-cumárico, protocatéquico, além de metabisulfito de sódio, resorcinol e pirogalol. Os valores de Ki mostram que o ácido ascórbico foi o mais efetivo inibidor. O tipo de inibição foi determinado para cada inibidor.

Neste trabalho foi realizada a caracterização mecânica e microestrutural de um aço microligado com estrutura multifásica. Foi aplicado tratamento térmico pré-determinado, objetivando a formação de uma microestrutura multifásica no material. Na caracterização microestrutural foram utilizados ataques químicos à base de metabissulfito de sódio e ácido pícrico, enquanto a caracterização mecânica foi realizada através de ensaios de tração. Os resultados demonstram o elevado potencial dos aços multifásicos em aplicações que necessitem de valores superiores de resistência e ductilidade, pois tanto para temperatura isotérmica de 400ºC quanto para 350ºC houve um ganho no limite de resistência à tração ficando em torno de 786MPa e 773MPa respectivamente, representando um aumento de 15,5% e 13,6% com relação ao material fornecido.

Existe uma demanda, na região semiárida produtora de uvas no Submédio São Francisco, por medidas sustentáveis de controle de doenças pós-colheita, uma vez que o modelo atual de revestimento de caixas com polietileno de alta densidade, associado ao metabissulfito de sódio, não tem se mostrado eficiente no controle dos fungos que ocorrem na região. O objetivo desse trabalho foi estudar um controle da podridão por Aspergillus em uvas 'Thompson Seedless' por meio da modificação da atmosfera, pelo envolvimento de caixas de uva em bolsões de poliamida. Comparou-se o bolsão de poliamida (PA) ao de polietileno alta densidade (PEAD), comumente usado na região, combinados ou não com o metabissulfito de sódio (SO2). Frutos provenientes de propriedade comercial, após serem selecionados e desinfestados foram feridos com alfinete entomológico e inoculados com uma suspensão de Aspergillus niger na concentração de 10(6) conídios.mL-¹ e submetidos à câmara úmida por 24 horas. em seguida as caixas de uva foram colocadas em bolsões específicos de acordo com o tratamento e armazenadas em câmara fria à temperatura de 2 ºC e umidade relativa de 75%, durante 40 dias. A partir do 12º dia de armazenagem foram feitas avaliações semanais da incidência da doença e de variáveis físico-químicas: perda de massa, sólidos solúveis totais (SST), pH, acidez titulável (AT), ratio (SST/AT); peroxidase (POD) e medição das concentrações de CO2 e O2 até o 40º dia. O delineamento experimental utilizado foi inteiramente ao acaso em parcelas subdivididas com cinco repetições. O revestimento de caixas de uva em bolsões de poliamida, mesmo sem o uso de metabissulfito de sódio, apresenta-se como uma alternativa viável na manutenção da qualidade pós-colheita de uva Thompson Seddless, bem como na redução de podridão causada por A. Niger. A enzima peroxidase pode ter atuado no processo de manutenção de qualidade da fruta, contribuindo para uma redução dos níveis da doença em uvas.

The 4340 are classified as ultra-high strength steels used by the aviation industry and aerospace applications such as aircraft landing gear and several structural applications, usually in quenched and tempered condition. In this situation occurs reduction of toughness, which encourages the study of multiphasic and bainitic structures, in order to maintain strength without loss of toughness. In this study, ferritic-pearlitic structure was compared to bainitic and martensitic structure, identified by the reagents Nital, LePera and Sodium Metabisulfite. Sliding wear tests of the type pin-on-disk were realized and the results related to the microstructure of these materials and also to their hardnesses. It is noted that these different microstructures had very similar behavior, concluding that all three tested pairs can be used according to the request level.

This study aims to characterize the microstructure of the complex phase steel (CP). Using the conventional and colored metallographic analysis with 3% Nital etchant, sodium metabisulfite 10% and LePera. Techniques were applied in this work of optical microscopy, using, besides the lighting in bright field, dark field illumination of the reverse contrast in bright field illumination, the method of polarized light, which generates colorful contrast, providing a complementary identification phases present in the microstructure, and the system by differential interference contrast (DIC). The results obtained by metallography CP indicates that the steel has a microstructure composed of ferrite, retained austenite, bainite and martensite and precipitates arranged in a refined and complex morphology. Besides bright field illumination others' optical microscopy's techniques such as dark field illumination were applied.
