Apesar das diversas ações governamentais nas questões relacionadas a alimentação, a insegurança alimentar faz parte da realidade brasileira. Esta pode ocorrer em diversos níveis: primeiramente a preocupação com a oferta de alimentos e a qualidade dos mesmos, em seguida, redução da qualidade e quantidade de alimentos entre os adultos e por fim em um nível mais elevado, a redução ocorre entre as crianças, até mesmo a fome, quando não há nada para comer no domicilio. É direito de todos terem acesso a alimentos seguros e nutritivos, desta forma a alimentação e nutrição é uma condição para proteção da saúde. Trata-se de um estudo seccional, com 273 trabalhadores de sete restaurantes localizados no município do Rio de Janeiro. A avaliação da insegurança alimentar foi realizada utilizando a Escala Brasileira de Insegurança Alimentar (EBIA) classificando a população em segurança alimentar e insegurança alimentar. As análises foram desenvolvidas aplicando-se o teste qui quadrado ou o teste exato de Fisher quando apropriado (p<0,20) e a regressão logística foi efetuada considerando três blocos de variáveis: socioeconômicas, laborais e de saúde. A prevalência de insegurança alimentar foi de 53,7%. A maioria da população estudada era do sexo masculino (57,9%), eram negros ou pardos (81,7%), com nove anos de escolaridade (57,1%), casados (58,2%), com filhos (70,1%), possuíam moradia própria (73,6%), eram ASGs ou copeiras (54,6%), quanto ao tempo gasto do deslocamento de casa para o trabalho, 67,6% dispendem mais de 40 minutos neste trajeto. As variáveis: escolaridade (OR-2,39; IC-95% 1,38 - 4,16), opinião sobre a falta de condições financeiras para manter alimentação saudável (OR-2,24; IC-95% 1,25 4,00), tempo de trabalho em cozinhas <29 meses (OR-2,72; IC-95% 1,44 5,16) e opinião da composição e regularidade da alimentação (OR- 2,01; IC-95% 1,12 3,57) associaram-se significativamente com a insegurança alimentar. Estes trabalhadores mesmo inseridos em um equipamento destinado a ofertar alimentação de qualidade, não tem a percepção da garantia ao acesso de forma satisfatória aos alimentos tanto quantitativamente como qualitativamente.

This survey has to general objective to evaluate the Food Safety Policy implemented by Restaurantes Populares do Rio Grande do Norte. The survey is qualitative of type exploratory and descriptive. The interviews were intended to analyze the four axes of the Food Safety: access, food quality, production and marketing of food and organizational arrangement. The form was used to check the quality of nutrition and sanitary-hygienic food served. We used two types of forms: a spreadsheet with the weekly menu and the portions served to verify that the meals serve the nutritional needs proposed by the program; and the check-list of ANVISA to verify the sanitary-hygienic conditions in each unit. Through the survey data and analyses made observe that the access category have some problems such as lack of registration, lack of advertising of Restaurants and wastage of public resources, making policy that should be of included in a policy of exclusion. In the nutritional aspect there is neglect on the daily nutritional goal, because it is not accomplished nutritional analysis of menu offered, the nutritionists do not know what should be the nutritional value of meals served; in the hygienic-health aspect trough the problems identified is concludes that there is no guarantee of food quality hygienic-sanitary, committing the program as a Food Safety Program. About the production and marketing of food is observed some problems as: the goal of sale of meals is not achieved in full, the purchase of genres does not stimulate the local economy, nor generates jobs and income, and inefficient performance of the MEIOS's supervision. In the analysis of organizational arrangement is concluded that the partnerships are beneficial, despite some negative points, therefore, are these partnerships the problems of non-compliance, as both the MEIOS and Nutriti of important criteria established in the partnership. Therefore, it is understood that the Programa Restaurantes Populares in its original formulation is proposed to be a food safety policy, but has some problems that impossible to meet its goal, making it unprofitable like Food Safety Policy

Este estudo teve por objetivo investigar a relação trabalho / saúde em trabalhadores de cozinhas industriais, focalizando o aspecto socioeconômico e outras dimensões da vida social (estresse no trabalho e eventos de vida produtores de estresse), incluindo-se morbidade (obesidade, doenças crônicas e transtornos mentais comuns), condição laboral (incômodos ambientais e acidentes de trabalho) e comportamentos relacionados à saúde (consumo alimentar, tabagismo e álcool). Utilizando dados coletados nos nove Restaurantes Populares do Estado do Rio de Janeiro, apresentam-se três artigos. O primeiro descreve a população de estudo, considerando três grupos ocupacionais: Administrativos, Cozinheiros e Copeiros, e os Auxiliares de Serviços Gerais. O segundo artigo investiga a associação entre as características psicossociais e o impedimento laboral por motivos de saúde, considerando uma análise hierarquizada e, finalmente, o terceiro artigo discute a certificação da reprodutibilidade, na população de estudo, do questionário sueco da versão para o português do Demand-Control Questionnaire (DCQ), utilizado para avaliar estresse no ambiente de trabalho. Os homens representaram 62,7% do total de trabalhadores. A idade média dos funcionários foi de 35,1 anos, (DP=10,3). A renda familiar líquida foi de até dois salários mínimos para 60% dos trabalhadores. Obteve-se para o tempo de trabalho em cozinhas, uma média de 59,8 meses, tendo variado de um mínimo de 2 meses e máximo de 30 anos. A prevalência de doenças que tinham diagnóstico médico foi de 15,0% para Doença Osteomusculares Relacionadas ao Trabalho (DORT); 14,3% para Hipertensão Arterial Sistêmica; 12,7% para Gastrite; e, 2,1% para Diabete Mellitus tipo II. O acidente de trabalho corte foi relatado por 20,2% dos trabalhadores, seguido de contusão com 16,0%. A prevalência de acidentes de trabalho foi mais expressiva entre os ASG. A prevalência de impedimento laboral por motivos de saúde foi de 10,8%. Os modelos resultantes das análises multivariadas de associação entre impedimentos das atividades laborais e as variáveis que permaneceram no modelo final após o ajustes das variáveis indicaram que aqueles que referiram estado geral de saúde regular e ruim tiveram uma razão de prevalência de três para impedimento das atividades laborais comparados aos de muito bom e bom estado geral de saúde (RP: 3,59; IC:1,44-8,97). Os trabalhadores que exerciam suas atividades nos restaurante localizados na área 2 (Bangu, Central do Brasil, Maracanã e Niterói) apresentaram RP:2,38; IC:1,15-4,91) para ausências no trabalho quando comparados aos da área 1 (Barra Mansa, Campos, Itaboraí, Duque de Caxias e Nova Iguaçu). A confiabilidade da escala do DCQ, teste-reteste, produziu um Coeficiente de Correlação Intraclasse para as dimensões: demanda psicológica, controle do trabalho e apoio social no trabalho de 0,70, 0,68 e 0,80, respectivamente, sendo considerados bom. Este estudo reforça a importância dos aspectos psicossociais na ocorrência do impedimento por motivos de saúde e contribui para o conhecimento dessas relações. Sugere-se realizar estudos com desenho longitudinal, que permitam aprofundar o conhecimento sobre os determinantes psicossociais do trabalho e o absenteísmo.

The evaluation of public policies that promote Food Security and Nutrition (FSN) it s a multidisciplinary activity extremely relevant to the effectiveness of actions to legitimize the Human Right to Adequate Food (HRAF). This study aimed at assessing the effectiveness of the unit project Natal-RN Café do Trabalhador in promoting SAN to its users. The theoretical framework is based on the public and political and on the dimensions of the concept of FSN (quantity and quality-regularity). Through a qualitative approach, methodologically this was the work of an evaluation of efficiency of the unit Natal-RN of Café do Trabalhador project in light of the assumptions of the concept of SAN. Data collection was conducted through retrospective archival research in official documents of the project, semi-structured interviews with managers involved in its implementation (representative of the Secretary of State for Employment, Housing and Care of RN SETHAS and third party), socioeconomic questionnaire applied to the users of the unit, check the amount, regularity and quality of meals offered for 15 days (menu routine) using the descriptive form menu and form filling type checklist for verification of compliance with good practices . Methods of analysis, we used content analysis, descriptive statistics and compared to previously established parameters for the project. As categories of analysis were defined organizational arrangement, access, user, food quantity-regularity and food quality. The results show that, it was found in the category arrangement that will implement the project dismissed technical criteria for choosing the districts and the quantitative distribution of meals for each location. It was found that the valuation of the shares of the company outsources technical SETHA has not been performed. We observed in the access category, the unit has a strategic location, but lack of space in the refectory. The main obstacle to economic access for users is the lack of a register for the beneficiaries. In the category of users, it was identified that the clientele of the project it is predominantly men, with more than 51 years, low education, earning wages less 1 obtained through informal employment, which they move up through the unit transport collective, go to all days of operation due primarily to price. About the meals category quantity-regularity of food showed that the menu serves 95% of the desired needs, and that holidays and weekends are periods of disrupting the regularity of supply of meals. Regarding the category of food quality, it was found that the nutritional aspect on the menu are food sources rich in sodium, nitrates and low in fiber. In the aspect of hygiene and sanitation are the main limitations related to waste management, lack of exposure controls of food prepared and inadequacies of the physical structure. The results showed that in general and the institutional arrangement of the organs attached to the project should establish a systematic evaluation project is to establish as a promoter of and FSN overcome these obstacles

A recente evolução das doenças crônicas não transmissíveis (DCNT), possivelmente associadas às mudanças de hábitos alimentares, tem sido um desafio para a promoção da alimentação saudável em vários países, inclusive no Brasil, onde o sódio tem sido o foco de atenção, pela possibilidade da redução da sua elevada ingestão ser uma das medidas com melhor custo benefício para saúde pública. É necessário conhecer o conteúdo de sódio e de componentes específicos, relacionados às DCNT nos alimentos comercializados no país, para orientar o consumidor na seleção adequada dos alimentos e mesmo para modificar sua composição; no entanto, nas bases de dados, o conteúdo desse mineral está presente em um número reduzido de alimentos. O objetivo da presente pesquisa foi a elaboração de uma base de dados de alimentos processados com componentes específicos associados às DCNT, dando ênfase ao sódio, e avaliar o uso dessa base de dados para estimar a sua ingestão. Informações nutricionais de rótulos e de websites de indústrias de alimentos foram coletadas para inclusão na base de dados, elaborada de acordo com as diretrizes do International collaborative project to compare and monitor the nutritional composition of processed foods, coordenado pelo The George Institute for Global Health (Austrália). A avaliação da variação do conteúdo de sódio foi realizada para alguns alimentos processados presentes na base de dados, considerando os de maior consumo nacional. O conteúdo de sódio em refeições de restaurantes populares de São Paulo foi analisado por espectrofotometria de absorção atômica de chama e estimado pela base de dados elaborada para comparação. Na base de dados estão incluídas informações de 2.319 alimentos distribuídos em 14 grupos. Foi observada grande variação no conteúdo de sódio entre diferentes tipos de pães de forma industrializados, de salsichas, de linguiças, de queijos e iogurtes. O conteúdo de sódio analisado nas refeições (base integral) variou de 215,9 mg a 427,9 mg por 100 kcal, enquanto que o conteúdo de sódio estimado variou de 204,2 mg a 486,8 mg por 100 kcal (418 kJ). A análise do coeficiente de correlação entre valores analíticos e estimados do conteúdo de sódio em refeições mostrou forte correlação entre esses dados para dois restaurantes (r=0,703 e 0,897) e moderada correlação para outros dois (r=0,513 e 0,622) dos cinco restaurantes estudados, indicando que através da base de dados elaborada é possível obter uma estimativa da ingestão de sódio. A importância de se conhecer o conteúdo de sódio de refeições e/ou alimentos está na possibilidade de uso dessas informações para orientar a redução do sal empregado no preparo da refeição, e ampliar para o consumidor informações que permitam identificar alternativas para redução do consumo de sal.

Abstract This paper presents the partial results of an ongoing research project which investigates ethnographically community (photo)journalism media initiatives, in Rio de Janeiro, Brazil. The Viva Rio and Observatorio de Favelas (NGOs) run projects that provide favela residents with skills to take, edit and print their own (photo) journalism contents that enables community-based framing and documentation of favela live, personalities and issues. Three months of fieldwork related to these projects in Rio's favelas generated remarkable theoretical issues that represent the community photographers' attempt to establish counter news values by shifting the focus from poverty, shortages, violence and criminality to images of the ordinary life which included the myriad events that occurs in the day of the favelas. Resumo Este artigo apresenta os resultados parciais de uma pesquisa em andamento que, a partir do método etnográfico, investiga os projetos de comunicação comunitária, jornalismo e fotojornalismo, no Rio de Janeiro, Brasil. As organizações não-governamentais (ONGs) Viva Rio e Observatório de Favela apoiam projetos que objetivam tornar moradores de favelas capazes de produzir, editar e publicar as suas próprias narrativas sobre personagens e questões do cotidiano de suas comunidades. O trabalho de campo sobre estes projetos, realizado durante três meses nas favelas do Rio de Janeiro, forneceu questões teóricas relevantes que representam o esforço dos fotógrafos populares para estabelecer contra valores-notícia transferindo o foco da pobreza, escassez, violência e criminalidade para imagens do cotidiano que inclui uma miríade de eventos que acontecem no dia-a-dia das favelas.

Resumo: Esse artigo apresenta os resultados parciais de uma pesquisa em andamento que, a partir do método etnográfico, investiga os projetos de comunicação comunitária, jornalismo e fotojornalismo desenvolvidos por duas organizações não-governamentais na cidade do Rio de Janeiro. O trabalho de campo, realizado durante três meses nas favelas cariocas, forneceu questões teóricas relevantes para os estudos do jornalismo, destacando-se as problematizações sobre a noção de valores-notícia. Voltados para a produção de narrativas centradas no cotidiano das comunidades, os fotojornalistas populares consideram fundamental discutir os valores-notícia formulados pela grande imprensa e propor “contra-valores”.

El trabajo comienza con una introducción al mercado de restaurantes de comida rápida, en la que se analizará la situación actual y se definirán diversos conceptos, como imagen y posicionamiento, que serán importantes para comprender mejor este estudio. A continuación, se plantearán los objetivos y subobjetivos del trabajo y se describirá la metodología utilizada. En este trabajo se analizarán las percepciones sobre siete restaurantes de comida rápida: McDonald’s, Burger King, Domino’s Pizza, Döner Kebab, Subway, Nordsee y KFC. Después de explicar el proceso de obtención de los datos y detallar los problemas surgidos al realizar el trabajo de campo, se analizarán los datos recogidos. En primer lugar, a través del análisis de la varianza hemos podido comprobar que existen diferencias significativas entre los restaurantes de comida rápida en cuanto a cómo son percibidos. A continuación, mediante el análisis cluster hemos agrupado en distintos grupos a los restaurantes similares. Asimismo, se ha realizado un análisis de componentes principales para describir el posicionamiento de los restaurantes estudiados. Por último, una vez tratados los datos obtenidos en los cuestionarios, se procederá a analizar la apertura de un restaurante de comida rápida que ofrezca comida mediterránea, planteando su estrategia de marketing. En este sentido, se define el posicionamiento de la nueva marca y las características del público objetivo. También se detallan diversas acciones del marketing mix (políticas de producto, precio, distribución y comunicación).
