Milk from different animals can be used for dairy production. Yoghurt is a popular fermented milk product and considered to be one of the greatest importance in terms of consumer acceptance and consumption. The present research deals with the production of strawberry set-type yoghurt by mixing goat and buffalo s milk and it has the objective of taking advantage of the intrinsic characteristics of each milk to produce a final product with desirable attributes. It was conducted by analyzing five experimental groups with different proportions of goat and buffalo s milk: C 100% goat s milk; 7C3B - 70% goat s milk and 30% buffalo s milk, 5C5B - 50% goat s milk and 50% buffalo s milk, 3C7B 30% goat s milk and 70% buffalo s milk; B - 100% buffalo s milk. Each group was evaluated for total solids content and the acidification profile was monitored every 30 minutes by pH analysis. The yoghurt samples were analyzed for physical-chemical (pH, acidity, protein, fat, total and reducing sugars, ash and total solids), rheological (syneresis and viscosity) and sensory characteristics (appearance, odor, consistency and flavour). Samples with higher percentual of bubaline milk reached Vm faster, but the time necessary for pH 4.6 (Te) were similar between groups. Statistical differences (p<0.05) were observed for fat and total solids content of yoghurt, with superior values for groups higher proportions of buffalo s milk. The parameters of behavior reached by the model of Ostwald of Waale pointed yoghurt samples as non-Newtonian and pseudoplastic fluids. Yoghurt made only with goat s milk (C) had higher values (p<0.05) for syneresis, which can be explained by its fragile coagulum. Additionally, this group also had the lowest sensory scores for the attributes consistence and taste, while bubaline yoghurt (B) obtained the best acceptance indexes for all of the appraised parameters

Através da mistura e interesterificação de óleos e gorduras podem ser obtidos lipídios estruturados, que são compostos que apresentam características físicas, químicas e nutricionais diferentes das dos lipídios que lhes deram origem. Esses novos compostos podem apresentar capacidade de reduzir o risco de doenças, sendo então chamados de "alimentos funcionais". O objetivo deste estudo foi avaliar as propriedades físicas de lipídios estruturados obtidos por interesterificação química a partir de misturas de gordura do leite e óleo de milho. Foram preparadas quatro misturas, nas proporções de 80:20, 60:40, 40:60 e 20:80 de gordura do leite e óleo de milho, respectivamente. As amostras foram submetidas à interesterificação química com catalisador metóxido de sódio. As misturas e os lipídios estruturados obtidos foram avaliados quanto à consistência, conteúdo de gordura sólida e composição em ácidos graxos. Foram obtidos lipídios estruturados contendo teores de até 22% de ácido linoléico pela adição de até 40% de óleo de milho à gordura do leite, que originalmente possuía apenas cerca de 2% deste ácido graxo. A consistência e o conteúdo de gordura sólida foram dependentes da gordura do leite e da interação desta com o óleo de milho. Os coeficientes relativos às interações entre os componentes das misturas foram negativos, demonstrando efeito antagônico, característico de interações eutéticas entre gorduras. Os resultados mostraram relação linear significativa entre o conteúdo de gordura sólida e a consistência das amostras.

The soursop (A. muricata) is a fruit rich in minerals especially the potassium content. The commercialization of soursop in natura and processed has increased greatly in recent years. Drying fruit pulp in order to obtain the powdered pulp has been studied, seeking alternatives to ensure the quality of dehydrated products at a low cost of production. The high concentration of sugars reducing present in fruits causes problems of agglomeration and retention during fruit pulp drying in spouted bed dryers. On the other hand in relation to drying of milk and fruit pulp with added milk in spouted bed, promising results are reported in the literature. Based on these results was studied in this work drying of the pulp soursop with added milk in spouted bed with inert particles. The tests were based on a 24 factorial design were evaluated for the effects of milk concentration (30 to 50% m/m), drying air temperature (70 to 90 °C), intermittency time (10 to 14 min), and ratio of air velocity in relation to the minimum spout (1.2 to 1.5) on the rate of production, of powder moisture, yield, rate of drying and thermal efficiency of the process. There were physical and chemical analysis of mixtures, of powders and of mixtures reconstituted by rehydration powders. Were adjusted statistical models of first order to data the rate of production, yield and thermal efficiency, that were statistically significant and predictive. An efficiency greater than 40% under the conditions of 50% milk mixture, at 70 ° C the drying air temperature and 1.5 for the ratio between the air velocity and the minimum spout has been reached. The intermittency time showed no significant effect on the analyzed variables. The final product had moisture in the range of 4.18% to 9.99% and water activity between 0.274 to 0.375. The mixtures reconstituted by rehydration powders maintained the same characteristics of natural blends.

Na análise de leite por espectrometria de emissão ótica com plasma induzido (ICP-OES) o produto comercial CFA-C, constituído por aminas terciárias, vêm sendo usado com sucesso como diluente em fase única. Devido ao custo do produto e possibilidades de contaminação durante o armazenamento, decidiu-se desenvolver um outro reagente de propriedades equivalentes ao referido produto. Testes qualitativos mostraram que o produto não contém ácido bórico nem EDTA. Em uma titulação potenciométrica de uma solução aquosa 10% v/v CFA-C com HCl obtiveram-se dois picos potenciométricos e deduziu-se que 90% do ácido foi consumido para neutralização da amina livre e 10% foi gasto para protonar um ânion de ácido fraco usado para formar um tampão de razão molar 10:1, do tipo R3N/R3NH+. Em uma simulação desse reagente preparou-se uma solução 6,06 mol L-1 de monoetanolamina (MEA) e 0,20 mol L-1 ácido cítrico, triprótico, para formar um tampão do mesmo tipo, 10:1, baseado na propriedade do íon citrato em complexar Ca(II). Outro tampão citrato mais diluído (1,52 mol L-1) foi preparado usando trishidroximetilaminometano (TRIS), que é uma amina menos solúvel. Essas misturas foram caracterizadas por análise potenciométrica e termoanalítica. O comportamento desses novos tampões amina/citrato foi adequado e comparável ao produto comercial.

O soro de leite bovino é um subproduto da fabricação do queijo ou da caseína, existente na forma ácida ou doce. Constituído basicamente de água, proteínas, lactose e minerais, quando concentrado, implica na obtenção de vários ingredientes protéicos de alta funcionalidade e valor nutricional. Entretanto, a concentração do soro tem sido realizada apenas ao soro doce, sendo o soro ácido, devido às suas características, geralmente tratado como resíduo. Neste contexto, este artigo apresenta os resultados obtidos com a introdução de produto de soro ácido de leite na formulação de sorvete, em sistema modelo, verificando a percepção dos provadores para diferentes percentuais de substituição do leite desnatado. As amostras de sorvete foram preparadas com composição de mistura: 2,5% de gordura látea, 18,3% de sacarose, 2,3% de gema de ovo em pó e 0,3% de estabilizante-emulsificante e essência de baunilha. O sorvete padrão (P) foi formulado com 10,09% de leite desnatado em pó. Quatro outras misturas foram preparadas com o produto de soro ácido em pó (SAP), substituindo o leite desnatado, em níveis 100, 80, 60 e 30%. A avaliação do efeito provocado no sorvete, devido à substituição do leite desnatado por SAP, foi efetuada por ensaio sensorial direcionado à percepção do gosto doce. Não houve diferença estatisticamente significativa (p<0,5) entre as amostras quanto ao gosto doce avaliado. Houve boa aceitação dos provadores nos níveis de 60 e 30% em substituição.

A finalidade do estudo foi avaliar o comportamento de cristalização de misturas binárias de gordura do leite e óleo de girassol em diversas proporções, bem como de seus correspondentes lipídios estruturados obtidos por interesterificação química. Foram usados conteúdo de gordura sólida, consistência, ponto de amolecimento e microscopia sob luz polarizada para avaliar as misturas antes e após a interesterificação. A adição de óleo de girassol e a interesterificação modificaram a cristalização da gordura do leite, pelos efeitos de diluição e rearranjo dos triacilgliceróis. Arquivos de vídeo em formato WMV foram compilados para estudar a cristalização a 20 ºC. Os vídeos tornaram possível a observação da estrutura cristalina formada e representaram uma ferramenta de grande importância para a pesquisa de cristalização de óleos e gorduras.

O objetivo do trabalho foi avaliar os possíveis efeitos fitotóxicos de herbicidas aplicados em pós-emergência, isolados e em misturas, na soja transgênica (cv. M-SOY 8008 RR) tolerante ao glyphosate e no controle de plântulas de Commelina benghalensis. Os experimentos foram desenvolvidos no período de janeiro a maio de 2006, em vasos, mantidos em condições de ambiente não controlado, no Departamento de Fitossanidade, UNESP, Campus de Jaboticabal (SP). Os tratamentos avaliados foram: glyphosate (1,20 kg ha-1 e.a.), chlorimuron-ethyl (0,02 kg ha-1), lactofen (0,18 kg ha-1), fomesafen (0,25 kg ha-1), flumioxazin (0,025 kg ha-1), imazethapyr (0,10 kg ha-1), chlorimuron-ethyl (0,01 kg ha-1) mais lactofen (0,096 kg ha-1), chlorimuron-ethyl (0,01 kg ha-1) mais fomesafen (0,125 kg ha-1), lactofen (0,096kg ha-1) mais fomesafen (0,125 kg ha-1), as misturas de glyphosate (0,60kgha-1) com chlorimuron-ethyl (0,01 kg ha-1), lactofen (0,096 kg ha-1), fomesafen (0,125 kg ha-1), flumioxazin (0,0125 kg ha-1), imazethapyr (0,05 kg ha-1) e uma testemunha sem aplicação de herbicida. No experimento com C. benghalensis, testou-se também a aplicação seqüencial de glyphosate (0,96 mais 0,72 kg ha-1 e.a.). A associação de ghyphosate a herbicidas utilizados em soja convencional ocasionou danos visuais às plantas de soja. em alguns casos, como nas misturas de glyphosate com lactofen e glyphosate com flumioxazin, os sintomas foram severos, com necroses e pontos cloróticos nas folhas. Mesmo assim, essa fitointoxicação não influenciou no desenvolvimento vegetativo e reprodutivo da soja. A mistura de glyphosate a outros herbicidas, assim como a sua aplicação seqüencial, não foram eficazes no controle de C. benghalensis, nas doses testadas e quando as plantas estavam no estádio de 4 a 6 folhas totalmente expandidas.

Drying of fruit pulps in spouted beds of inert particles has been indicated as a viable technique to produce fruit powders. Most of the processes employed to produce dried fruit pulps and juices, such as Foam Mat, encapsulation by co-crystallization and spray drying utilize adjuvant and additives (such as thickeners, coating materials, emulsifiers, acidulants, flavors and dyes), which is not always desirable. The fruit pulp composition exerts an important effect on the fruit powder production using a spouted bed. In the study by Medeiros (2001) it was concluded that lipids, starch and pectin contents play an important role on the process performance, enhancing the powder production; however, the drying of fruit pulps containing high content of reducing sugars (glucose and fructose) is practically unviable. This work has the objective of expanding the studies on drying of fruit pulps in spouted bed with aid of adjuvant (lipids, starch and pectin) aiming to enhance the dryer performance without jeopardizing the sensorial quality of the product. The optimum composition obtained by Medeiros (2001) was the basis for preparing the mixtures of pulps. The mixture formulations included pulps of mango (Mangifera indica), umbu (Spondias tuberosa) and red mombin (Spondia purpurea) with addition of cornstarch, pectin and lipids. Different products were used as lipids source: olive and Brazil nut oils, coconut milk, heavy milk, powder of palm fat and palm olein. First of all, experiments were conducted to define the best formulation of the fruit pulps mixture. This definition was based on the drying performance obtained for each mixture and on the sensorial characteristics of the dry powder. The mixture formulations were submitted to drying at fixed operating conditions of drying and atomizing air flow rate, load of inert particles, temperature and flow rate of the mixture. The best results were obtained with the compositions having powder of palm fat and palm olein in terms of the drying performance and sensorial analysis. Physical and physicochemical characteristics were determined for the dry powders obtained from the mixtures formulations. Solubility and reconstitution time as well as the properties of the product after reconstitution were also evaluated. According to these analyses, the powder from the mixtures formulations presented similar characteristics and compatible quality to those produced in other types of dryers. Considering that the palm olein is produced in Brazil and that it has been used in the food industry substituting the palm fat powder, further studies on drying performance were conducted with the composition that included the palm olein. A complete factorial design of experiments 23, with three repetitions at the central point was conducted to evaluate the effects of the air temperature, feeding flow rate and intermittence time on the responses related to the process performance (powder collection efficiency, material retained in the bed and angle of repose of the inert particles after the process) and to the product quality (mean moisture content, loss of vitamin C and solubility). Powder production was uniform for the majority of the experiments and the higher efficiency with lower retention in the bed (59.2% and 1.8g, respectively) were obtained for the air temperature of 80°C, mixture feed rate of 5ml/min in intervals of 10 min. The statistical analysis of the results showed that the process variables had individual or combined significant influences on the powder collection efficiency, material retention in the bed, powder moisture content and loss of vitamin C. At the experimental ranges of this work, the angle of repose and solubility were not influenced by the operating variables. From the results of the experimental design, statistical models were obtained for the powder moisture content and loss of vitamin C

O controle do oídio da abobrinha é baseado no uso de fungicidas e devido aos problemas causados por esses produtos, há a necessidade de desenvolver produtos alternativos para seu controle. Dentre os produtos alternativos, o leite encontra-se entre os mais efetivos. Apesar de seu uso em escala crescente, não só no Brasil, mas em diversos países, não se conhece exatamente o seu mecanismo de ação. Assim, o presente estudo teve por objetivo avaliar o efeito de bactérias isoladas do filoplano de plantas de abobrinha pulverizadas com leite no controle do oídio. Os isolados foram testados quanto à eficiência em controlar a doença em plantas desenvolvidas em casa de vegetação com alto potencial de inóculo do patógeno. Os cinco isolados mais eficientes foram misturados 2 a 2, 3 a 3, 4 a 4 e 5 a 5. Além das misturas dos isolados bacterianos foram avaliados os tratamentos com fungicida, leite a 10% e água. A avaliação foi realizada semanalmente estimando a área foliar atacada pelo patógeno. Com os dados foi calculada a área abaixo da curva de progresso da doença para cada mistura, sendo que a mistura dos isolados 1 e 5, bem como a dos isolados 2 e 4 apresentaram severidade da doença próxima à do leite a 10%.

This work illustrates the modeling procedure for a solvent mixture using the simplex- centroid approach. The selected experiment was the optimization of the peak current observed in the direct determination of nickel by anodic stripping voltammetry (ASV) in a solvent mixture composed of N,N-dimethylformamide, ethanol and water. The text is presented in a tutorial way, showing in detail the several steps which must be followed in such a process. Since not all possible mixtures lead to a measurable instrumental response, pseudocomponents had to be used to rescale the experimental design. This also allows to show how to apply this tool, usually troublesome for non-specialists in mixture modeling procedures.

In Brazil the adoption of several models of cattle confinement leads to special conditions for management methods in dairy production, which can be improved by the use of technology that assures better herd management. Indexes relating environmental variables to production are applied for the prediction of milk production. The values of temperature and relative humidity, rain index, solar radiation and pasture soil temperature are generally considered potential stress agents for cows. The objective of this research was to develop an index for predicting milk production for high productivity Jersey milking cows lodged in semi confinement in tropical conditions. The experiment considered two treatments: A - the cows waited for 30 minutes prior to milking in a room with a shower associated to a fan; B - the cows did not have access to this room (control). Other than the waiting period, the cows had access to pasture. Differences in the effect of average production were not statistically significant. The analysis for studying the effect of the variables and designing the model led to a statistical model relating the variables milk production and rain index, as well as the maximum soil temperature of pasture, and milk production.

The difficulty in adapting European dairy cows breeds in Brazil affect considerably the milk production sector. Brazilian climatic conditions are not totally favorable and the development of new tecnologies is needed for the animals express their genetic potential, as well as their best feed conversion. An economical analysis of the applied investment in the free-stall climatization equipment in dairy housing, for estimating studies related to profit, possibility of return investment as well as time for this return is necessary. The objective of this research was to evaluate the influence of climatization investment in the milk production process and analyze the economical aspect of this investment. There were used 470 high productive dairy cows with genetic and morphologic homogeneous characteristics, and analyzed in two similar periods. Investment calculations were done using Excell®. The results were satisfactory and the invested capital was proved to return to the producer in a short term, 57 days.
