A feedlot trial was conducted to determine the effect of dietary vitamin A concentration and roasted soybean (SB) inclusion on carcass characteristics, adipose tissue cellularity, and muscle fatty acid composition. Angus-crossbred steers (n = 168; 295 +/- 1.8 kg) were allotted to 24 pens (7 steers each). Four treatments, in a 2 x 2 factorial arrangement, were investigated: no supplemental vitamin A, no roasted soybeans (NANS); no vitamin A, roasted SB (20% of the diet on a DM basis; NASB); with supplemental (2,700 IU/kg) vitamin A, no roasted SB (WANS); and with supplemental vitamin A, roasted SB (WASB). Diets included high moisture corn, 5% corn silage, 10 to 20% supplement, and 20% roasted SB in the SB treatments on a DM basis. The calculated vitamin A concentration in the basal diet was < 1,300 IU/kg of DM. Blood samples (2 steers/pen) were collected for serum vitamin A determination. Steers were slaughtered after 168 d on feed. Carcass characteristics and LM composition were determined. Fatty acid composition of LM was analyzed, and adipose cellularity in the i.m. and s.c. depots was determined. No vitamin A x SB interactions were detected (P > 0.10) for cattle performance, carcass composition, or muscle fatty acid composition. Low vitamin A diets (NA) did not affect (P > 0.05) ADG, DMI, or G:F. Quality grade tended (P = 0.07) to be greater in NA steers. Marbling scores and the percentage of carcasses grading > or = Choice(-) were 10% greater for NA steers, although these trends were not significant (P = 0.11 and 0.13, respectively). Backfat thickness and yield grade were not affected (P > 0.26) by vitamin A supplementation. Composition of the LM was not affected (P > 0.15) by vitamin A or SB supplementation. Serum retinol at slaughter was 44% lower (P < 0.01) for steers fed NA than for steers supplemented with vitamin A (23.0 vs. 41.1 microg/dL). A vitamin A x SB interaction occurred (P < 0.05) for adipose cellularity in the i.m. depot; when no SB was fed, vitamin A supplementation decreased cell density and increased cell size. However, when SB was fed, vitamin A supplementation did not affect adipose cellularity. Adipose cellularity at the s.c. depot was not affected (P > 0.18) by vitamin A or SB treatments. Fatty acid profile of the LM was not affected by vitamin A (P > 0.05), but SB increased (P < 0.05) PUFA (7.88 vs. 4.30 g/100 g). It was concluded that feeding NA tended to increase marbling without affecting back-fat and yield grade. It appeared that NA induced hyperplasia in the i.m. but not in the s.c. fat depot.

To determine the effect of duration of dietary vitamin A restriction on site of fat deposition in growing cattle, 60 Holstein steers (BW = 218.4 ± 6.55 kg) were fed a diet based on high-moisture corn with 2,200 IU supplemental vitamin A/kg DM (C) or no supplemental vitamin A for a long (243 d; LR) or short (131 d; SR) restriction prior to harvest at 243 d. The SR steers were fed the C diet for the first 112 d. Steers were penned individually and fed for ad libitum intake. Jugular vein blood samples for serum retinol analysis were collected on d 1, 112, and 243. Carcass samples were collected for composition analysis. Subcutaneous fat samples were collected for fatty acid composition. Fat samples from the i.m. and s.c. depot were collected to measure adipocyte size and density. Feedlot performance (ADG, DMI, and G:F) was not affected (P > 0.05) by vitamin A restriction. On d 243, the i.m. fat content of the LM was 33% greater (P < 0.05) for LR than for SR and C steers (5.6 vs. 3.9 and 4.2% ether extract, respectively). Depth of back fat and KPH percentage were not affected (P = 0.44 and 0.80, respectively) by vitamin A restriction. Carcass weight, composition of edible carcass, and yield grade were similar among treatments (P > 0.10). Liver retinol (LR = 6.1, SR = 6.5, and C = 44.7 µg/g; P < 0.01) was reduced in LR and SR vs. C steers. On d 243, LR and SR steers had similar serum retinol concentrations, and these were lower (P < 0.01) than those of C steers (LR = 21.2, SR = 25.2, and C = 36.9 µg/dL). Intramuscular adipose cellularity (adipocyte/mm2 and mean adipocyte diameter) on d 112 and d 243 was not affected (P > 0.10) by vitamin A restriction. Restricting vitamin A intake for 243 d increased i.m fat percentage without affecting s.c. or visceral fat deposition, feedlot performance, or carcass weight. Restricting vitamin A intake for 131 d at the end of the finishing period appears to be insufficient to affect the site of fat deposition in Holstein steers.

This study evaluated the effect of eye muscle area (EMA), ossification, carcass weight, marbling and rib fat depth on the incidence of dark cutting (pH u > 5.7) using routinely collected Meat Standards Australia (MSA) data. Data was obtained from 204,072 carcasses at a Western Australian processor between 2002 and 2008. Binomial data of pH u compliance was analysed using a logit model in a Bayesian framework. Increasing eye muscle area from 40 to 80 cm 2, increased pH u compliance by around 14% (P < 0.001) in carcasses less than 350 kg. As carcass weight increased from 150 kg to 220 kg, compliance increased by 13% (P < 0.001) and younger cattle with lower ossification were also 7% more compliant (P < 0.001). As rib fat depth increased from 0 to 20 mm, pH u compliance increased by around 10% (P < 0.001) yet marbling had no effect on dark cutting. Increasing musculature and growth combined with good nutrition will minimise dark cutting beef in Australia.

The rise in demand by domestic and export markets for a high quality uniform beef carcase has led to more steers being finished in feedlots. However, the profitability of feedlotting is small and economic survival hinges on efficiency (Ryan 1990). Lack of published data prevents conclusions being drawn about the level of efficiency of Australian feedlotting operations but the few studies reported show considerable variation in liveweight performance and carcase characteristics such as fat depth and marbling (Baud et al.) 21st Biennial Conference. 8-12 July, University of Queensland, Brisbane.

A total of 2115 heifers from two tropical genotypes (1007 Brahman and 1108 Tropical Composite) raised in four locations in northern Australia were ovarian-scanned every 4-6 weeks to determine the age at the first-observed corpus luteum (CL) and this was used to de. ne the age at puberty for each heifer. Other traits recorded at each time of ovarian scanning were liveweight, fat depths and body condition score. Reproductive tract size was measured close to the start of the first joining period. Results showed significant effects of location and birth month on the age at first CL and associated puberty traits. Genotypes did not differ significantly for the age or weight at first CL; however, Brahman were fatter at first CL and had a small reproductive tract size compared with that of Tropical Composite. Genetic analyses estimated the age at first CL to be moderately to highly heritable for Brahman (0.57) and Tropical Composite (0.52). The associated traits were also moderately heritable, except for reproductive tract size in Brahmans (0.03) and for Tropical Composite, the presence of an observed CL on the scanning day closest to the start of joining (0.07). Genetic correlations among puberty traits were mostly moderate to high and generally larger in magnitude for Brahman than for Tropical Composite. Genetic correlations between the age at CL and heifer- and steer-production traits showed important genotype differences. For Tropical Composite, the age at CL was negatively correlated with the heifer growth rate in their first postweaning wet season (-0.40) and carcass marbling score (-0.49), but was positively correlated with carcass P8 fat depth (0.43). For Brahman, the age at CL was moderately negatively genetically correlated with heifer measures of bodyweight, fatness, body condition score and IGF-I, in both their first postweaning wet and second dry seasons, but was positively correlated with the dry-season growth rate. For Brahman, genetic correlations between the age at CL and steer traits showed possible antagonisms with feedlot residual feed intake (-0.60) and meat colour (0.73). Selection can be used to change the heifer age at puberty in both genotypes, with few major antagonisms with steer- and heifer- production traits.

Objetivou-se avaliar as características físicas, químicas e sensoriais da carne de búfalos abatidos em diferentes períodos de confinamento. Foram utilizados 20 bubalinos da raça Murrah, castrados, descornados, com idade média inicial de 15 meses, abatidos aos 75, 100, 125 ou 150 dias de confinamento. Após o abate, as carcaças foram identificadas e resfriadas por 24 horas. Durante a desossa, foram colhidas amostras do contrafilé entre a 10ª e 11ª costelas para análise das características sensoriais e das perdas por cocção; entre a 11ª e 12ª costelas para avaliação da composição centesimal, do valor calórico, do pH e do índice de fragmentação miofibrilar (IFM); e entre a 12ª e 13ª costelas para a avaliação do escore de marmorização e da força de cisalhamento. A composição centesimal, o pH, a força de cisalhamento, o valor calórico, as perdas por cocção e o IFM não diferiram estatisticamente entre os períodos de confinamento. O grau de marmorização diferiu entre as idades de abate, uma vez os animais abatidos aos 75 dias de confinamento apresentaram escore de 1,25; os abatidos aos 100 e 125 dias, escore 2; e aqueles abatidos aos 150 dias de confinamento, escore 2,2. em todos os períodos de confinamento, a carne bubalina foi classificada como macia (média 3,94 kgf) e apresentou com características que não diferiram pelo painel sensorial entre os 75 e 150 dias de confinamento. O abate de bubalinos aos 75 e 150 dias de confinamento não influencia as características sensoriais sabor, aroma e cor da carne bubalina.

Objetivou-se, com este estudo, verificar as diferenças nas características da carcaça, assim como nos parâmetros qualitativos da carne de novilhos jovens alimentados com dietas contendo silagem de grão úmido de milho ou sorgo. Foram utilizados dois tratamentos experimentais, nos quais a dieta total possuía como ingrediente energético principal a silagem de grão úmido de milho (TMU) ou a silagem de grão úmido de sorgo (TSU). Trinta e seis novilhos inteiros F1 Red Angus ´ Nelore com 8 meses de idade e peso médio inicial de 240 kg foram alimentados durante 172 dias e abatidos em seguida. O experimento foi conduzido em um delineamento inteiramente casualizado. Houve similaridade para o ganho de peso diário, ganho de peso total e peso final de abate. Não foi verificada diferença para o rendimento de carcaça, assim como para os rendimentos de dianteiro, traseiro e ponta de agulha. Os tratamentos TMU e TSU não afetaram os escores para cor, conformação e acabamento de gordura da carcaça. Marmorização, área de olho-de-lombo, espessura de gordura subcutânea e gordura perirenal, assim como as avaliações químicas da carne (proteína bruta e lipídios totais), também não diferiram entre os tratamentos. As dietas experimentais não afetaram a maciez da carne, assim como as perdas físicas no processo de cozimento (gotejamento e evaporação). Concluiu-se que a substituição integral da silagem de grão úmido de milho pela silagem de grão úmido de sorgo não alterou as características qualitativas e quantitativas da carcaça de bovinos jovens em confinamento.

Oitenta e seis machos jovens, não-castrados, divididos em quatro grupos raciais - Nelore (n=20), Canchim (n=17), ½ Canchim ×Nelore (CN) (n=25) e ¾ Canchim ×Nelore (TQ) (n=24) - foram pesados a cada 28 dias para avaliação de ganho de peso (kg/dia), ingestão de matéria seca (kg/dia) e conversão alimentar. Ao atingirem peso de abate médio de 450 kg e espessura de gordura subcutânea superior a 4 mm, os animais foram abatidos para avaliação do peso e do rendimento de carcaça e de cortes comerciais do traseiro, área de olho-de-lombo, espessura de gordura subcutânea (mm), marmorização, força de cisalhamento, extrato etéreo (%) e perdas por cocção. O grupo Nelore apresentou-se adequado ao sistema de produção proposto, revelando desempenho similar ao dos animais CN quanto ao ganho de peso (1,18 e 1,29 kg para Nelore e CN, respectivamente) e conversão alimentar (6,90 e 7,04 para Nelore e CN, respectivamente). A ingestão de matéria seca (kg/dia) diferiu entre os grupos raciais (11,82; 9,39; 8,90 e 8,31 para Canchim, TQ, CN e Nelore, respectivamente). O peso da carcaça (kg) dos Canchim (291,14) foi maior e diferiu dos outros grupos (250,74; 246,64 e 244,18 para TQ, CN e Nelore, respectivamente). Apesar de o rendimento de carcaça ter sido maior no grupo Nelore (58,75%), os animais desse grupo apresentaram menor rendimento de cortes nobres que de traseiro, com diferença para o contrafilé (10,22; 11,55; 11,64 e 11,18 para Nelore, Canchim, TQ e CN, respectivamente). Os valores de força de cisalhamento comprovam que o abate de animais jovens garante carne macia, independentemente do grupo genético estudado.
