The aim of this study was to evaluate whether yerba maté alcoholic extracts at very low concentrations (0.01 and 0.1%), prevent/retard lipid peroxidation in beef hamburgers without impairing sensory acceptability. For this TBARs and hexanal levels, fatty acid profile and cholesterol oxides were evaluated as oxidation parameters in beef hamburgers during 90 days' storage. The addition of 0.01% yerba maté ethanolic extracts proved inefficient in restraining the lipid peroxidation while the addition of 0.1% resulted in efficient antioxidant activity. Sensory evaluation of hamburger containing 0.1% yerba maté ethanolic extracts showed good acceptability. Yerba maté ethanolic extracts could entirely or partially replace the phenolic synthetic antioxidants in beef hamburgers only when used at above legally allowed concentrations for antioxidant additives (0.01%).

Die kontinuierliche UV-Messung mit der Tauchsonde in verschiedenen Messstationen des Hamburger Wassergütemessnetzes ist ein Indikator zur Bestimmung vieler organischer Kohlenstoffbelastungen eines Fließgewässers. Aus der fortlaufenden Datenerfassung ergibt sich ein deutliches Indiz auf Unstimmigkeiten in der Gewässerchemie. Diese Unstimmigkeit kann anthropogene oder natürliche Ursachen haben. Die Motivation dieser Arbeit liegt darin, einen geeigneten Analyten zu finden. Dieser soll in verschiedenen Konzentrationen an der UV-Sonde in den Messstationen vermessen werden und einen funktionalen Zusammenhang herstellen. Neben den Versuchsmessungen liegt der Schwerpunkt der Arbeit in der Anwendung verschiedener Berechnungsmodelle, um ausgewählte Substanzen miteinander zu vergleichen und eine mathematische Funktionalität zu beweisen.

We propose two types of extensions to Hamburger’s theorems on the Dirichlet series with functional equation like the one of the Riemann zeta function, under weaker hypotheses. This builds upon the dictionary betweeen the moderate meromorphic functions with functional equation and the tempered distributions with extended S-support condition.

The objective of this study was to assess the potential utilization of ostrich meat trimming in hamburger preparation, as well as its physicochemical and sensory characterization. Using ostrich meat trimmings from the legs and neck, four different formulations were prepared with varied amounts of bacon and textured soybean protein. Physical analysis of yield, shrinkage percentage, and water retention capacity and chemical analysis of proximate composition, cholesterol levels, and calories were performed. The formulations underwent sensory analysis by 52 potential ostrich meat consumers, who evaluated tenderness, juiciness, flavor, and purchase intent. The formulations containing textured soybean protein showed the highest yield, lowest shrinkage percentage, and highest water retention capacity. Lipid content varied from 0.58 to 4.99%; protein from 17.08 to 21.37%; ash from 3.00 to 3.62%; moisture from 73.87 to 76.27%; cholesterol from 22.54 to 32.11 mg.100 g-1; and calorie from 87.22 to 163.42 kcal.100 g-1. All formulations showed low cholesterol and calorie levels, even that containing 10% bacon and 3.5% textured soybean protein, which achieved the best scores and acceptance by the panelists.
