Adsorption of food dyes acid blue 9 and food yellow 3 onto chitosan was optimized. Chitosan was obtained from shrimp wastes and characterized.Afull factorial design was used to analyze the effects of pH, stirring rate and contact time in adsorption capacity. In the optimal conditions, adsorption kinetics was studied and the experimental data were fitted with three kinetic models. The produced chitosan showed good characteristics for dye adsorption. The optimal conditions were: pH 3, 150rpm and 60 min for acid blue 9 and pH 3, 50rpm and 60 min for food yellow 3. In these conditions, the adsorption capacities values were 210mgg−1 and 295mgg−1 for acid blue 9 and food yellow 3, respectively. The Elovich kinetic model was the best fit for experimental data and it showed the chemical nature of dyes adsorption onto chitosan.

O uso de corantes sintéticos na indústria de alimentos tem provocado transtornos à saúde humana e ao meio ambiente. A quitosana pode ser imobilizada em matrizes sólidas e aplicada na remoção de corantes em coluna de leito fixo. A análise da dinâmica de uma coluna de leito fixo é baseada na curva de ruptura, esta é dependente da geometria da coluna, das condições operacionais e dos dados de equilíbrio. Neste contexto, o objetivo deste trabalho foi estudar o recobrimento de esferas de vidro por quitosana e sua aplicação como adsorvente de corantes em coluna de leito fixo. No estudo do recobrimento avaliaram-se os efeitos da concentração de quitosana e dos métodos de cura. As esferas recobertas foram aplicadas em ensaios de adsorção estático e dinâmico. Inicialmente, avaliou-se o equilíbrio de adsorção através da construção de isotermas e ajuste de modelos, e após, avaliaram-se os efeitos do tipo de cura e do grau de desacetilação da quitosana. Em seguida, foram analisados os efeitos do tipo de corante e do pH, e o comportamento cinético da adsorção pela construção de curvas de ruptura e ajuste de modelos dinâmicos. A influência da altura do leito e da concentração inicial de corante sobre os parâmetros da adsorção em leito fixo foram analisados através da metodologia de superfície de resposta (MSR). Ao final, estudou-se a regeneração da coluna. Os resultados mostraram que os maiores percentuais de recobrimento foram obtidos pelos métodos físico e físico/químico, na concentração de quitosana de 0,5% (m/v). Nestas condições o percentual de recobrimento foi de 46%. Nas imagens da superfície das esferas (MEV) observou-se que as mesmas foram recobertas de forma homogênea pela quitosana. As isotermas de equilíbrio obtidas foram classificadas como do tipo V, sendo o modelo de Sips o mais adequado para representar os dados experimentais. As capacidades máximas de adsorção foram 337 mg g-1, 286 mg g-1 e 200 mg g-1 para os corantes amarelo tartrazina, amarelo crepúsculo e vermelho 40, respectivamente. A aplicação das esferas recobertas com quitosana em leito fixo mostrou-se mais adequada utilizando o método de cura físico/químico e quitosana com grau de desacetilação de 85%. A máxima capacidade de adsorção da coluna em função do corante e do pH variou de 13 a 108 mg g–1. Os modelos BDST (bed–depth–service–time), Thomas e Yoon–Nelson foram adequados para representar os dados experimentais. De acordo com a MSR, o melhor desempenho do leito foi com altura de 30 cm e concentração inicial de corante de 50 mg L-1. Nestas condições, obteve-se tempo de ruptura de 88 min, máxima capacidade da coluna de 108 mg g-1 e remoção de 86 %. Na regeneração da coluna observou-se que cerca de 75% da capacidade máxima da coluna foi mantida após cinco ciclos de adsorção–eluição. Diante do exposto, a coluna de leito fixo empacotada com esferas recobertas com quitosana mostrou-se promissora na remoção de corantes de soluções aquosas.

The countries and territories of the Pacific Islands face many challenges in building the three main pillars of food security: availability, access and appropriate use of nutritious food. These challenges arise from factors including rapid population growth and urbanization, shortages of arable land for farming and the availability of cheap, low-quality foods. As a result, many are now highly dependent on imported food, and the incidence of non-communicable diseases in the region is among the highest in the world. This report summarizes: 1) the projected effects of climate change on agriculture, fisheries and aquaculture in the Pacific region; 2) adaptations and supporting policies needed to reduce risks to food production; 3) gaps in knowledge that must be filled in order to implement the adaptations effectively; 4) recommendations to fill these knowledge gaps.

The effect of salinity (0, 10 & 20‰, water temperature 28 ± 1°C) and food ration (3 and 4.5% bw/day) on food consumption and growth of Nile tilapia, Oreochromis niloticus (10.77 ± 0.21g) were investigated. Individual food consumption was measured using X-radiography technique. Salinities (0, 10 & 20‰) did not have significant effect on the growth rate of groups of Nile tilapia fed at different ration levels (3 & 4.5% bw/day). This study showed that the growth of all-male fish was significantly better than all-female fish for all three salinities and two rations. Salinities from 0 to 20‰ had no effect on growth performance of males or female fish. In the present study, it was evident that fish fed at 3% bw/day ration ate all the food offered and fish fed at 4.5% bw/day did not consumed all amounts. Also, growth performance did not significantly differ among fish fed at 3% bw/day ration level and reared at different salinities. Fish reared under higher salinities (20‰) and fed at higher ration (4.5% bw/day) level had skin lesions and injuries on their body. It was assumed that fish fed at higher ration under higher salinities (20‰) and maintained higher osmoregulatory costs together with osmotic stress may have a negative influence on the appetite of fish. Another possibility that may have affected the appetite could be the unionized ammonia levels that were high. The high-unionized ammonia levels combined with the osmotic stress may have been the cause, or have aided, development of skin lesions and injuries on the fish at higher salinities.

There is a rising demand for local food which traveled only short distances and is marketed directly by the producer. With growing importance of local food also the amount of literature in this field increased. Yet, literature is lacking to examine the challenges and burdens consumers face while trying to purchase local food. Evidence is shown that a gap exists between the intention of consumers who would like to purchase local food and their actual behavior. However, reasons for this gap are only discovered as byproducts of other research objectives. Consequently, this study investigates the specific reasons for the intention-behavior gap of consumers in the local food market. The study makes use of semi-structured face-to-face interviews with rural and urban respondents. The interviews are analyzed by qualitative content analysis based on Elo and Kyngäs (2008). Revealed key drivers for the intention-behavior gap are (1) the lack of awareness where to purchase local food products, (2) the limited reachability of local food producers, (3) the assortment of the local producer in regard to size and composition and (4) the lack in transparency of the prices of local food. Consequently, it is the producers turn to eliminate the revealed barriers by proactively bringing their products closer to the consumer.

A number of commonly encountered simple neural network types are discussed, with particular attention being paid to their applicability in automation and control when applied to food processing. In the first instance n-tuple networks are considered, these being particularly useful for high speed production checking operations. Subsequently backpropagation networks are discussed, these being useful both in a more familiar feedback control arrangement and also for such things as recipe prediction.

Objective: (i) To describe sub-Saharan African (SSA) post-migration food habits and eating patterns; and (ii) to examine how the food habits of SSA households in Victoria reflect post-migration acculturation.
Design: A cross-sectional survey using a snowball sampling technique. Data on food habits and eating patterns were obtained using semi-structured, face-to-face interviews from November 2001 to April 2002.
Subjects: A total of 139 households of demographically diverse recent migrants from across sub-Saharan Africa.
Setting: Melbourne metropolitan and Melbourne fringes.
Analysis: Data were summarised using descriptive statistics.
Results: SSA migrants and refugees indicated dietary acculturation characterised by three processes: substitution, supplementation and modification of recipes. They experienced difficulty locating their traditional foods, in particular, African vegetables (34.2%), unprocessed maize meal (29.1%), camel milk (23.1%) and maize grain (13.7%). The new foods adopted since arrival were pizza, breakfast cereals and fast foods, but also included new fruits and vegetables. Takeaway food such as Pizza Hut or McDonalds featured prominently in the SSA post-migration diet. Reasons for eating out were favourite food (48.3%), routine family outing (38.3%), special occasion (33.3%) and no time to cook (25%). A significant change in meal pattern was the inclusion of breakfast, although 21% reported skipping breakfast.
Conclusion: Many of the observed dietary changes were not consistent with good health and may predispose this population to rapid weight gain and chronic disease. Rapid modernisation and the Anglo-Australian culture interact in a complex way with traditional eating and socialisation practices of SSA migrants. Understanding these forces can allow effective health promotion and community development strategies to be developed for the future health of SSA migrants and their communities.

Os estudos de adsorção de corantes alimentícios de soluções aquosas geralmente estão voltados para a remoção de um corante específico, porém, as misturas binárias são mais realistas para simular efluentes industriais. A adsorção de corantes com quitosana é considerada uma tecnologia alternativa eco amigável, e quando a estrutura da quitosana é modificada quimicamente, resulta em um adsorvente mais adequado. A reticulação da quitosana com cianoguanidina apresenta vantagens, como melhoria na estabilidade em soluções ácidas e diminuição do custo do adsorvente. Nesta pesquisa, o objetivo do trabalho foi modificar a quitosana com cianoguanidina para remoção de corantes alimentícios em sistema aquoso binário. A fim de verificar o comportamento dos adsorventes na operação de adsorção, foram preparadas amostras de quitosana com diferentes graus de desacetilação (75%, 85% e 95%), e após, foram realizadas modificações destas amostras com cianoguanidina. Os adsorventes foram caracterizados e aplicados para a adsorção de azul indigotina e amarelo tatrazina em sistema aquoso binário e em sistema simples. O efeito do pH e do grau de desacetilação foram verificados para a remoção dos corantes por quitosana com e sem modificação em sistema simples e binário. Curvas de equilíbrio foram obtidas em diferentes temperaturas e o modelo estendido de Langmuir foi ajustado aos dados experimentais. O comportamento cinético foi avaliado através dos modelos pseudo-primeira ordem, pseudo-segunda ordem e Avrami. Os parâmetros termodinâmicos foram determinados e estudos de dessorção do adsorvente foram realizados. O pH mais adequado foi 3, e o melhor grau de desacetilação foi 95% para ambos os sistemas aquosos e adsorbatos. As capacidades de adsorção da quitosana sem e com modificação não apresentaram diferença significativa. O modelo de Langmuir estendido apresentou ajuste adequado às curvas de equilíbrio e as máximas capacidades de adsorção foram 595,3 e 680,0 mg g-1, obtidas à 25ºC, para o os corantes azul indigotina e amarelo tatrazina, respectivamente. O modelo de Avrami foi o que melhor se ajustou aos dados cinéticos de adsorção. A dessorção do adsorvente foi possível por dois ciclos, mantendo sua capacidade de adsorção em 209,7 mg g-1 no primeiro ciclo e 200,2 mg g-1 no segundo ciclo. A quitosana modificada com cianoguanidina apresentou-se como um adsorvente promissor para a remoção de corantes alimentícios em sistema binário.

Humans can be exposed to multiple chemicals at once from a variety of sources, and human risk assessment of multiple chemicals poses several challenges to scientists, risk assessors and risk managers. Ingestion of food is considered a major route of exposure to many contaminants, namely mycotoxins, especially for vulnerable population groups, as children. A lack of sufficient data regarding mycotoxins children risk assessment, could contribute to an inaccuracy of the estimated risk. Efforts must be undertaken to develop initiatives that promote a broad overview of multiple mycotoxins risk assessment. The present work, developed within the MYCOMIX project, aims to assess the risk associated to the exposure of Portuguese children (< 3 years old) to multiple mycotoxins through consumption of foods primarily marketed for this age group. A holistic approach was developed applying deterministic and probabilistic tools to the calculation of mycotoxin daily intake values, integrating children food consumption (3-days food diary), mycotoxins occurrence (HPLC-UV, HPLC-FD, LC-MS/MS and GC-MS), bioaccessibility (standardized in vitro digestion model) and toxicological data (in vitro evaluation of cytotoxicity, genotoxicity and intestinal impact). A case study concerning Portuguese children exposure to patulin (PAT) and ochratoxin A (OTA), two mycotoxins co-occurring in processed cereal-based foods (PCBF) marketed in Portugal, was developed. Main results showed that there is low concern from a public health point of view relatively to PAT and OTA Portuguese children exposure through consumption of PCBF, considering the estimated daily intakes of these two mycotoxins (worst case scenarios, 22.930 ng/kg bw/day and 0.402 ng/kg bw/day, for PAT and OTA, respectively), their bioaccessibility and toxicology results. However, the present case study only concerns the risk associated with the consumption of PCBF and child diet include several other foods. The present work underlines the need to adopt a holistic approach for multiple mycotoxins risk assessment integrating data from exposure, bioacessibility and toxicity domains in order to contribute to a more accurate risk assessment.

Aims: The older the youngsters are, the more important role hobbies and leisure time activities have in their life. That is why various activities organized by the non-profit organizations have an important role concerning the development of food habits of youngsters. This study has three main themes. The themes and their respective study questions are: 1. The youngsters' conceptions on healthy eating and food choice: What kind of food do youngsters consider as healthy? How do they see their own eating habits from this point of view? 2. The youngsters and the significance of everyday food-related information: How do the youngsters perceive the role of different actors and these actors' role regarding their own food habits and food choice? 3. The possibilities of the organizations that work with youngsters to improve their food habits: What kind of role do the non-profit organizations have on the youngsters' food habits and healthy food choice? Methods: This study comprises of two types of data. First, a quantitative internet-based survey (N=582) was used to collect data on the 9th graders conceptions and understandings. The data was analyzed with the SPSS-program. Means, cross-tabulations, Pearson´s correlations and t-test were calculated from the data. The qualitative data was collected using interviews. The respondents were 12 experts from non-profit organizations. The interviews were analyzed with the qualitative content analysis. Results and conclusions: The non-profit organizations studied have good possibilities to communicate with youngsters through their hobbies. As part of their activities these organizations are able to influence on health-promoting lifestyle and food habits of youngsters. In order to reach more youngsters, these organizations should actively act e.g. in virtual societies of youngsters. Youngsters will participate when activities are voluntary and exhilarating. From the point of food habits doing, learning and identifying are the most important factors to engage the young. Also the models of peers and adults are important. Non-profit organizations should offer youngsters activities but these organizations should also influence on society.

Obesity is associated with many chronic disease states, such as diabetes mellitus, coronary disease and certain cancers, including those of the breast and colon. There is a growing body of evidence that links phytochemicals with the inhibition of adipogenesis and protection against obesity. Mangoes (Mangifera indica L.) are tropical fruits that are rich in a diverse array of bioactive phytochemicals. In this study, methanol extracts of peel and flesh from three archetypal mango cultivars; Irwin, Nam Doc Mai and Kensington Pride, were assessed for their effects on a 3T3-L1 pre-adipocyte cell line model of adipogenesis. High content imaging was used to assess: lipid droplets per cell, lipid droplet area per cell, lipid droplet integrated intensity, nuclei count and nuclear area per cell. Mango flesh extracts from the three cultivars did not inhibit adipogenesis; peel extracts from both Irwin and Nam Doc Mai, however, did so with the Nam Doc Mai extract most potent at inhibiting adipogenesis. Peel extract from Kensington Pride promoted adipogenesis. The inhibition of adipogenesis by Irwin (100 mu g mL(-1)) and Nam Doc Mai peel extracts (50 and 100 mu g mL(-1)) was associated with an increase in the average nuclear area per cell; similar effects were seen with resveratrol, suggesting that these extracts may act through pathways similar to resveratrol. These results suggest that differences in the phytochemical composition between mango cultivars may influence their effectiveness in inhibiting adipogenesis, and points to mango fruit peel as a potential source of nutraceuticals.
