The objective of this work was to evaluate the relationship between phenolic compounds and alcoholic fermentation efficiency. The yield of sugarcanebyproducts (glycerol, acidity, and biomass) was determined in a continuous process at SaoManoel Sugarcane Mill, (Sao Paulo, Brazil) during the 2011/2012 harvest period. The Saccharomyces cerevisiae strain used as inoculum was the CAT-1. During the harvest, the endogenous yeast outcompeted the selected strain, hence eliminating it from the process. This research consists of a case of study on the ethanol production facility. FolinCiocauteau and methylene blue method was used to assess phenolic compounds. The efficiencyof the byproducts generated during the fermentation processwas calculated. Statistics analyses were carried out using Pearson correlation and its significance, by thet-test. We concluded that the phenolic compounds within the must could not be correlated to the byproducts’fermentation efficiency calculated during a continuous fermentation process.

The aim of this work was to compare the efficiency of conventional antibiotics in relation to hop-based antimicrobials, in industrial-scale bioethanol production. The comparison was made by calculating the lactic acid bacteria population reduction in two consecutive fermentation cycles. To conduct the experiment, it was used five treatments (three conventional antibiotics: Kamoran WP, Corstan and Alcapen 1030, and two hop-based antimicrobials: BetaBio and IsoStab). The samples were collected in the fermentation vat. In order to quantify the initial lactic acid bacteria population, a sample was collected at the end of the fermentation process (wine) before the treatment with antibiotics or antimicrobials, and to determine the final population, another sample was collected at the end of the fermentation process (wine) after the treatment with antibiotics or antimicrobials. The experiment was completely randomized and the statistical analysis was performed through analysis of variance (ANOVA) for data processed using the equation y’ = . After the data transformation, the Levene's test was applied to verify data adherence to normal distribution, and the averages were compared through Tukey’s test at 5% probability. The results showed that the hop-based antimicrobials (IsoStab and BetaBio) can be used to substitute the conventional antibiotics (Kamoran, Alcapen and Corstan), since there was no statistical difference between the treatments.

The aim of this study was to produce mix beverages of grape juice and soybean hydrosoluble extract (SHE) in laboratory scale. The raw materials were soybean (variety BRS 213), grape (species Vitis labrusca, variety Niagara Rosada), citric pectin, water and sugar. The mix beverage was produced with different proportions of SHE and grape juice (1:1; 1:1.5 and 1:2; respectively; m/m) and different soluble solids concentrations (10, 12 and 14 °Brix) obtained by adding granulated sugar (sucrose). Soybean hydrosoluble extract, grape juice and mix beverages were chemically analyzed (humidity, ash, protein, lipids, carbohydrate, reducing sugars, total reducing sugars, sucrose, titratable acidity and pH). The mix beverages were sensorial analyzed through the acceptance test (hedonic scale). The results of chemically analyzed were expressed as mean and standard deviation and the results of sensorial analyzed were submitted to variance analysis and the means were compared using the Tukey test at 5% of probability. The pH of mix beverages was lower than 3.9, without addition of acidulants. Sugar addition to mix beverages (10; 12 and 14ºBrix) increased the levels of soluble solids, total reducing sugar and carbohydrates, but it did not interfere in the reducing sugar concentration. The increased proportion of grape juice in mix beverages allowed observing the elevation of titratable acidity and reducing sugars levels, as well as the pH reduction. The increase of grape juice in mix beverage did not interfere in the acceptance of mix beverages. The more sweetened beverages were preferred by the sensory panel.

A antissepsia cirúrgica das mãos visa à prevenção de infecções do sítio cirúrgico, importante causa de morbimortalidade pós-operatória e aumento dos custos hospitalares. Este estudo teve como objetivo comparar a eficácia de preparações alcoólicas com os produtos tradicionais na antissepsia cirúrgica das mãos por meio de uma revisão sistemática da literatura. Foram considerados estudos primários ou secundários, tendo como desfecho a contagem microbiana das mãos ou taxas de infecções do sítio cirúrgico. A busca foi realizada no Portal BVS, PubMed, Ask e MEDLINE. Foram selecionados 25 estudos (2 revisões sistemáticas, 19 experimentais e 4 de coorte). As preparações alcoólicas tiveram uma redução microbiana igual e/ou maior aos produtos tradicionais em 17 estudos e inferior em 4; as taxas de infecções do sítio cirúrgico foram similares. Portanto, existem evidências científicas que suportam a segurança das preparações alcoólicas para antissepsia cirúrgica das mãos.

Aunque todo el mundo comprende la importancia de comer frutas y hortalizas, hay una gran cantidad de personas que consumen muy poca cantidad de vegetales en su dieta. Por lo que consumir frutas y hortalizas o una mezcla de éstos en forma de jugo es una buena alternativa. En el año 2012, el Ministerio de Salud de la Argentina emitió un informe en el que menciona que sólo el 4,8% de la población consume 5 porciones diarias compuestas por frutas y hortalizas. Desde INTI Mendoza, se viene trabajando desde hace varios años en la capacitación y divulgación para dar valor agregado a frutas y hortalizas de la región. Una de las formas ha sido transformar las materias primas en jugos, pulpas o néctares, por lo que se consideró conveniente ensayar, desarrollar y transferir una bebida sin alcohol, tomando como base néctares de fruta combinados con hortalizas. Las materias primas que se utilizaron fueron: durazno, tomate y zanahoria, elegidas por ser productos de gran accesibilidad en la región y que por la experiencia del Laboratorio de I+D se estimaba que combinados podían dar lugar a un producto sensorialmente adecuado y de muy buenas propiedades nutricionales. El producto fue ensayado a nivel de laboratorio donde se realizaron todos los ajustes de adecuación de las materias primas, formulación, y desarrollo de un procedimiento de elaboración. Una vez resuelta la prueba a nivel de laboratorio, se cumplió con uno de los objetivos más importantes que fue la transferencia del desarrollo a un emprendimiento productivo de pequeña escala, en el cual se procesaron las frutas y hortalizas y se obtuvieron muestras del néctar mixto para realizar los análisis físico-químicos, microbiológicos y nutricionales. Además el producto fue sometido a una prueba de medición del grado de satisfacción (test hedónico), con 85 jueces no entrenados. Los resultados obtenidos demuestran que el sabor del producto fue aceptado en un alto porcentaje por los consumidores encuestados, pero se debe realizar un ajuste tecnológico para mejorar el aspecto, de tal forma de obtener un producto de granulometría más fina y de mayor homogeneidad, lo que creemos aumentaría los porcentajes de aceptabilidad en cuanto a las características de color y olor, variables que están directamente ligadas con este proceso.
