El trabajo que se desarrolla a continuación persigue un doble objetivo: por una parte, realizar una primera aproximación a los cambios que se han producido en la dieta de la población de México en los últimos 50 años. Unos cambios que se desarrollan en el contexto de la denominada transición nutricional, y que, como tendremos ocasión de constatar, adoptan en países en desarrollo como México unas características que no se ajustan totalmente al modelo de transición que en su momento determinaron las transformaciones experimentadas por los países de la Europa noroccidental. En segundo lugar, evaluar y analizar el proceso paralelo de progresiva pérdida de la soberanía alimentaria y de globalización de la dieta experimentada por México. Desde los años 1960 la dieta de las poblaciones centroamericanas se ha transformado de forma espectacular. En el marco de la llamada transición nutricional se ha producido un aumento del consumo de energía y nutrientes, a la vez que se ha modificado su procedencia tanto en lo que concierne a los productos como al lugar donde han sido producidos y la forma en que han sido procesados previamente. En concreto, se constata la reducción del consumo y aportación nutritiva de algunos integrantes tradicionales de la dieta, como los frijoles, en beneficio de otros productos vegetales como la patata, y especialmente de productos de origen animal como la carne de pollo, la leche o los huevos. Destacar la creciente importación directa e indirecta de alimentos básicos, como el maíz, componente importante de la dieta humana y de la alimentación de la creciente cabaña ganadera donde se destinan gran parte de las disponibilidades. Finalmente se analiza el impulso que desde la perspectiva de la oferta alimentaria disponible suponen en este proceso las medidas liberalizadoras que siguen a la crisis de la deuda externa de 1982 y la entrada en vigor del NAFTA en 1994.

Nuestro estudio se centra en el sector de alimentación ecológica en Barcelona comparándolo con el resto de España, Europa y Estados Unidos. El objetivo del trabajo es conocer como está el sector actualmente y su posible evolución, como también analizar los problemas y proponer las posibles soluciones.Con el fin de entender la situación actual del sector en Barcelona nos hemos basado en la realización de dos tipos de encuestas, una a los consumidores potenciales y otra a los ecológicos.Los principales resultados obtenidos han sido que tanto el conocimiento como la demanda están muy alejados del resto de Europa y Estados Unidos. Por otra parte, eldiferencial de precios entre un producto ecológico respecto a uno convencional es muyelevado. A pesar de todo ello, llegaremos a la conclusión de que este sector tiene buenasperspectivas futuras y un buen potencial de crecimiento.Les invitamos a que se aventuren a entender cuales son sus principales problemas y soluciones, así como los motivos por los cuales creemos que su evolución será favorable.

The aim of this work was the use of NIR technology by direct application of a fiber optic probe on back fat to analyze the fatty acid composition of CLA fed boars and gilts. 265 animals were fed 3 different diets and the fatty acid profile of back fat from Gluteus medius was analyzed using gas chromatography and FT-NIR. Spectra were acquired using a Bruker Optics Matrix-F duplex spectrometer equipped with a fiber optic probe (IN-268-2). Oleic and stearic fatty acids were predicted accurately; myristic, vaccenic and linoleic fatty acids were predicted with lower accuracy, while palmitic and α-linolenic fatty acids were poorly predicted. The relative percentage of fatty acids and NIR spectra showed differences in fatty acid composition of back fat from pigs fed CLA which increased the relative percentage of SFA and PUFA while MUFA decreased. Results suggest that a NIR fiber optic probe can be used to predict total saturated and unsaturated fatty acid composition, as well as the percentage of stearic and oleic. NIR showed potential as a rapid and easily implemented method to discriminate carcasses from animals fed different diets.

La evolución de peso en los períodos de lactación y transición de 583 lechones fue estudiada mediante un análisis estadístico, evaluando el efecto de la suplementación con ácidos grasos de cadena media (AGCM) en lechones con poco peso al nacimiento. 188 de los 375 lechones que nacieron con un peso al nacimiento (PN) &1250 g recibieron 3mL de AGCM cada 24 h durante los primeros 3 días de vida; su peso medio al destete (día 28) fue inferior respecto al grupo control (lechones no suplementados) (-114,17 g). No obstante, 106 de los 180 lechones nacidos con un PN &1000 g fueron suplementados, y su peso medio al destete y a finales de transición (día 63) fue superior respecto al grupo control (destete: +315,16 g; día 63: +775,47 g). Finalmente, los lechones suplementados con PN&800 g tuvieron los peores resultados: su diferencia de peso medio al destete fue de -177,58 g respecto al grupo control. Por lo tanto, en esta prueba fueron estudiados los lechones con un PN entre 800 y 999 g porque el grupo suplementado al destete tuvo una diferencia de peso medio considerable respecto al grupo control:+511,58 g. Asimismo, considerando una probabilidad de error inferior a 0,05, no hubieron diferencias significativas en las diferentes categorías de PN analizadas. De todas maneras, es importante destacar el alto grado de significación en la suplementación con AGCM en lechones con PN entre 800 y 999g (P=0,059). Por otra parte, el PN del grupo suplementado con PN&1000 g fue inferior que el del grupo no suplementado con PN&1000 g; esta diferencia de PN fue significativa (P=0,004) y como consecuencia el grado de significación en la suplementación con AGCM en lechones con PN entre 800 y 999 g fue inferior al esperado. Además, en esta prueba se incluyeron algunos resultados generales y también un análisis simple de supervivencia, aunque no era el objetivo principal

We analysed and compared the diet of Audouin´s gulls Larus audouinii between their two largest breeding sites in the world: the Ebro Delta and the Chafarinas Islands (western Mediterranean). These two localities showed marked differences in the features of the commercial fishing fleet: in the Ebro Delta area a large fishing fleet produced large amounts of discards, while in the Chafarinas the fleet discarded smaller amounts of fish and marine invertebrates, due to the smaller number of vessels. It is also likely that the percentage of discards from total catches is also lower around the Chafarinas than at the Ebro Delta. We distinguished two types of fishing to compare diet compositions: diurnal (only trawling activity) and diurnal and nocturnal (trawling and purse-seine activity, respectively). We also differentiated regurgitates from young nestlings (up to 20 days old) and from older nestlings or adult birds. At the two localities, fish was the main food of Audouin´s gulls, with epipelagic prey (mainly clupeoids) being more important when both diurnal and nocturnal fisheries were operating. This confirms that epipelagic prey either caught actively by the gulls or linked to fisheries was particularly important in the feeding habits of Audouin´s gulls. Nevertheless, differences between the two colonies appear mainly when only trawlers operated: while at the Ebro Delta gulls showed higher consumption of benthic-mesopelagic prey (probably linked to a higher trawler discard availability), gulls from the Chafarinas Islands consumed higher biomass of epipelagic prey probably caught actively at night. When both fleets operated around the two colonies, the average biomass of prey in a regurgitate of younger chicks was significantly higher at the Ebro Delta than at Chafarinas, and the opposite trend was recorded for older nestlings and adults. Niche width was broader in Chafarinas than in the Ebro Delta for both age classes and for any fishing fleet schedule, suggesting again that the exploitation of discards was higher at the Ebro Delta than at the Chafarinas, where gulls showed a more varied diet. Despite the fact that availability of discards was probably higher at the Ebro Delta than at Chafarinas, the per capita availability was not so different at both localities due to the increasing seabird community population at the Ebro Delta, which ca. doubled that at Chafarinas in the last decade.

The developments in enteral feeding for Crohn's disease in the past decade are critically reviewed. The advent of amino acid based chemically defined elemental diets signalled the end of 'total bowel rest' in the management of these patients. Subsequently, controlled clinical trials showed that elemental diets were as effective as corticosteroids in inducing clinical remission in patients with acute exacerbations of Crohn's disease. The later use of peptide based elemental diets, in Crohn's disease produced somewhat conflicting results. The initial uncontrolled studies suggest that polymeric whole protein diets might also be effective in the management of acute exacerbations of the disease, casting in turn doubts concerning the role of dietary antigens in the pathogenesis of Crohn's disease. Results of controlled studies comparing the use of elemental and polymeric diets as primary therapy in Crohn's disease have, however, also produced conflicting results. L'obesitat es una malaltia mal coneguda queafecta un nombre creixent de persones arreu del mon. L'increment de la incidencia de l'obesitat en alguns paisos s'ha atribu 'it a un increment del consurn de determinats aliments i, sobretot, de les disponibilitats energetiques, malgrat haver-se produit durant els ultims anys un descens significatiu en el consum energetic, en disminuir la ingestio de greixos i de sucre. Aquesta contradiccio es explicada per alguns com una consequencia del sedentarisme, per d'altres per la incidencia de gens que regulen l'obesitat i encara uns altres I'atribueixen a causes desconegudes complementades per tots aquests factors. Sigui com sigui, la morbiditat Iligada a I'obesitat es considerable i tambe ho es la mortalitat addicional que genera.

This study was undertaken in the framework of a larger European project dealing with the characterization of fat co- and by-products from the food chain, available for feed uses. In this study, we compare the effects, on the fatty acid (FA) and tocol composition of chicken and rabbit tissues, of the addition to feeds of a palm fatty acid distillate, very low in trans fatty acids (TFA), and two levels of the corresponding hydrogenated by-product, containing intermediate and high levels of TFA. Thus, the experimental design included three treatments, formulated for each species, containing the three levels of TFA defined above. Obviously, due to the use of hydrogenated fats, the levels of saturated fatty acids (SFA) show clear differences between the three dietary treatments. The results show that diets high in TFA (76 g/kg fat) compared with those low in TFA (4.4 g/kg fat) led to a lower content of tocopherols and tocotrienols in tissues, although these differences were not always statistically significant, and show a different pattern for rabbit and chicken. The TFA content in meat, liver and plasma increased from low-to-high TFA feeds in both chicken and rabbit. However, the transfer ratios from feed were not proportional to the TFA levels in feeds, reflecting certain differences according to the animal species. Moreover, feeds containing fats higher in TFA induced significant changes in tissue SFA, monounsaturated fatty acids and polyunsaturated fatty acids composition, but different patterns can be described for chicken and rabbit and for each type of tissue.

The addition of some fat co- and by-products to feeds is usual nowadays; however, the regulations of their use are not always clear and vary between countries. For instance, the use of recycled cooking oils is not allowed in the European Union, but they are used in other countries. However, oils recovered from industrial frying processes could show satisfactory quality for this purpose. Here we studied the effects of including oils recovered from the frying industry in rabbit and chicken feeds (at 30 and 60 g/kg, respectively) on the fatty acid (FA) and tocol (tocopherol + tocotrienol) compositon of meat, liver and plasma, and on their oxidative stability. Three dietary treatments (replicated eight times) were compared: fresh non-used oil (LOX); oil discarded from the frying industry, having a high content of secondary oxidation compounds (HOX); and an intermediate level (MOX) obtained by mixing 50 : 50 of LOX and HOX. The FA composition of oil diets and tissues was assessed by GC, their tocol content by HPLC, the thiobarbituric acid value was used to assess tissue oxidation status, and the ferrous oxidation-xylenol orange method was used to assess the susceptibility of tissues to oxidation. Our results indicate that FA composition of rabbit and chicken meat, liver and plasma was scarcely altered by the addition of recovered frying oils to feed. Differences were encountered in the FA composition between species, which might be attributed mainly to differences in the FA digestion, absorption and metabolism between species, and to some physiological dietary factors (i.e. coprophagy in rabbits that involves fermentation with FA structure modification). The α-tocopherol (αT) content of tissues was reduced in response to the lower αT content in the recovered frying oil. Differences in the content of other tocols were encountered between chickens and rabbits, which might be attributable to the different tocol composition of their feeds, as well as to species differences in the digestion and metabolism of tocols. Tissue oxidation and susceptibility to oxidation were in general low and were not greatly affected by the degree of oxidation of the oil added to the feeds. The relative content of polyunsaturated fatty acids/αT in these types of samples would explain the differences observed between species in the susceptibility of each tissue to oxidation. According to our results, oils recovered from the frying industry could be useful for feed uses.

El present treball analitza les restes de fauna procedents de la UE 3006 de l'església de Santa Margarida (s. VIII d.C.). El conjunt és compost majoritàriament per deixalles alimentàries de macromamífers, aus i mol·luscs. La ponderació del nombre de restes, l'anàlisi de la representació anatòmica i l'estudi de les traces d'origen antròpic han permés establir la composició de la cabana ramadera al jaciment i els patrons de gestió dels animals amb fins alimentaris (corba de mortalitat i patró d'especejament dels animals). El conjunt dóna testimoni de l'alimentació d'origen càrnic del baix clergat a finals de l'Antiguitat tardana.
