O buriti e o patauá são duas palmeiras endêmicas da região Amazônica. As polpas destes frutos são tradicionalmente consumidas pela população local, mas ainda não ganharam os mercados nacional e internacional. A composição nutricional em ácidos graxos e tocoferol foi determinada com metodologias analíticas modernas de cromatografia gasosa (CG) e cromatografia líquida de alta eficiência (CLAE) baseadas nos padrões da AOCS (AMERICAN..., 2002) e AOAC (ASSOCIATION..., 1997), respectivamente. As duas polpas se mostraram bastante energéticas, com uma alta concentração em ácidos graxos, respectivamente 38,4% e 29,1% em massa seca (MS), em proteínas, 7,8% e 7,4% MS e em fibras dietéticas, 46% e 44,7%. A polpa de buriti pode ser considerada uma ótima fonte de vitamina E devido ao seu alto teor de tocoferol (1169 µg.g-1 MS). O perfil de ácidos graxos encontrados para a polpa de patauá foi muito semelhante ao de azeite de oliva.

This paper appears in order to promote a discussion on the use and ways of working with the land. For this, we present a scenario of conflict initiated in Pontal do Parananema, São Paulo, Brazil, between the peasantry and the agrohidronegócio. The Pontal is a territory marked by agrarian and land conflicts, originated by the illegal occupation of land by the squatters, the decimation / expropriation of indigenous, and deforestation and environmental devastation. This conflict is represented today by the sugarcane agro-industrial capital companies on one side, and the other peasants. The expansion occurs agrohidronegócio strongly from 2005, due mainly to the change in the energy matrix of the country and state incentives with strong momentum in the production of flex-fuel vehicles. Rural agrarian reform settlements, made possible by the state under pressure from social movements, are spatialized in 16 municipalities with a total of 112 settlements, occupying an area of 139. 682 hectares, seating 5. 892 families. These families have seen their possibilities of social reproduction increasingly suppressed by the advance of sugarcane agrohidronegócio in the region, which suffocates the living spaces and work of these peasants. Front of it, agroecology is an alternative for these workers to ensure their reproductive possibilities. Agroecology also arises as a means of confronting agribusiness model, adding elements to the environment, such as the eradication of the use of pesticides and considering the dynamics of nature to promote agriculture, and social order, contributing food sovereignty and the production of healthy food and diversity to the population...

OBJETIVO: Conhecer as representações sociais dos profissionais das equipes de saúde da família sobre o fazer teórico-prático do nutricionista. A pesquisa foi realizada em Unidades de Saúde da Família de um município do estado de São Paulo. MÉTODOS: Foi utilizada a metodologia qualitativa, tendo como sujeitos 27 profissionais, eleitos por critério intencional. A coleta de dados foi realizada por meio de entrevistas semiestruturadas. Para a interpretação dos dados, utilizou-se a análise categorial temática, apropriando-se da Teoria das Representações Sociais. RESULTADOS: Como resultados, emergiram quatro temas: Nutricionista na Estratégia de Saúde da Família, Abordagem de questões alimentares pelos profissionais da equipe de saúde da família, Educação nutricional e Problematizando a ausência do nutricionista na equipe de saúde da família. As principais representações obtidas com relação ao nutricionista foram relacionadas à prescrição de dietas, além de revelarem um conhecimento mais amplo sobre as funções e atribuições desse profissional. Não houve dúvidas sobre a importância da educação nutricional na promoção de práticas alimentares saudáveis, apesar de os sujeitos terem demonstrado uma visão superficial e pouco abalizada teoricamente sobre o tema. CONCLUSÃO: A ausência do nutricionista na equipe de saúde da família foi atribuída a fatores como o baixo reconhecimento social, a desvalorização profissional, o pouco tempo de existência da profissão, o desconhecimento do núcleo de competência do nutricionista e a manutenção do modelo médico hegemônico. Concluiu-se pela necessidade de mais estudos que problematizem a inserção do nutricionista em equipes de saúde da família.

This essay aims to discuss the acquisition of food by the National School Feeding Program in light of its current legal framework with a view to promote healthy and culturally sound eating habits that help to improve the health of Brazilian school children and promote local development. The study presents an analysis of the current legislation of the National School Feeding Program, evidencing its intention to influence the Brazilian feeding system and the food pattern of its population using school meals, highlighting the gaps that challenge the achievement of major changes in the execution of the program. From this analysis and based on the high and growing consumption of ultra-processed foods in Brazil, and considering the disadvantages of these foods when compared with minimally-processed or fresh foods, a proposal is developed to guide the construction of a list of foods that is consistent with the current legal framework of the Program and its objectives. It is argued that the prevalence of minimally-processed or fresh foods in school meals can be a strategy to rescue the healthy-food heritage and strengthen local development if promoting family farming.

The clinical decision to control risk factors for cardiovascular disease (CVD) in the elderly takes the followings into consideration: (1) the elderly life expectancy; (2) the elderly biological age and functional capacity; (3) the role of cardiovascular disease in the elderly group; (4) the prevalence of risk factors in the elderly; and (5) The effectiveness of treatment of risk factors in the elderly. A large number of studies showed the efficacy of secondary and primary prevention of dyslipidemia in the elderly. However, the only trial that included patients over 80 years was the Heart Protection Study (HPS). Statins are considered the first line therapy for lowering low-density lipoprotein cholesterol (LDL-C). Because lifestyle changes are very difficult to achieve, doctors in general tend to prescribe many drugs to control cardiovascular risk factors. However, healthy food consumption remains a cornerstone in primary and secondary cardiovascular prevention and should be implemented by everyone.

BACKGROUND: Orthorexia nervosa (ON) is described as an obsessive pathological behavior characterized by a strong preoccupation with healthy eating and the avoidance of foods or ingredients considered unhealthy by the subject. Although it is still not officially recognized as an eating disorder, previous studies have discussed its frequency in some groups and a fifteen-question test (ORTO-15) was developed elsewhere to assess ON behavior. OBJECTIVE: The present study aimed to evaluate ON behavior in a sample of Brazilian dietitians after testing the psychometric properties of the Portuguese version of ORTO-15. METHODS: A total of 392 dietitians answered an online version of the test. The answers were analyzed regarding ON tendency, according with the scoring grid proposed by its authors. Exploratory factor analysis was performed and internal consistency was assessed. RESULTS: It was found that three questions of the test presented loadings lower than 0.5. The 12 remaining question formed 3 factors with internal consistency of -0.51, 0.63 and 0.47. The answers of the participants to these questions revealed a tendency to orthorexic behavior, mainly regarding aspects such as: making food choices conditioned by worry about health status, evaluating food rather from nutritional quality than from its taste, believing that consuming healthy food may improve appearance, discrediting the influence of mood on eating behavior and banning food choices considered by them as eating transgressions. CONCLUSION: There is no evidence of the validity and reliability of the ORTO-15 with the initial psychometric evaluation performed. Further analyses are needed. Nevertheless, it was possible to observe a high frequency of orthorexic behavior among the studied Brazilian dietitians. As far as healthy food is concerned, it cannot be categorized simply as "good" or "bad" since its effect on health depends mainly on the amount and method consumed. Today's recommendations include a diversified diet, a diet which targets energy-balance and provides all nutrients necessary. Living in an affluent society aggravates healthy choices because of a constantly available, large assortment of food items. In general, the way food is prepared these days has changed a lot: mainly, the energy content has constantly increased, while the fiber and natural micronutrient concentrations decreased. Food items with a high energy yield, containing a lot of fat and sugar, affects our energy balance, which may lead to diseases of affluence such as type 2 diabetes, cardiovascular diseases, and some kinds of tumors.

Millets are major food and feed sources in the developing world especially in the semi-arid tropical regions of Africa and Asia. The most widely cultivated millets are pearl millet [Pennisetum glaucum (L.) R. Br.], finger millet [Eleusine coracana (L.) Gaertn], foxtail millet [Setaria italica (L.) P. Beauvois], Japanese barnyard millet [Echinochloa esculneta (A. Braun) H. Scholz], Indian Barnyard millet [Echinochloa frumetacea Link], kodo millet [Paspalum scrobiculatum L.], little millet [Panicum sumatrense Roth.ex.Roem. & Schult.], proso millet [Panicum miliaceum L.], tef [Eragrostis tef (Zucc.) Trotter] and fonio or acha [Digitaria exilis (Kippist) Stapf and D. iburua Stapf]. Millets are resilient to extreme environmental conditions especially to inadequate moisture and are rich in nutrients. Millets are also considered to be a healthy food, mainly due to the lack of gluten (a substance that causes coeliac disease) in their grain. Despite these agronomic, nutritional and health-related benefits, millets produce very low yield compared to major cereals such as wheat and rice. This extremely low productivity is related to the challenging environment in which they are extensively cultivated and to the little research investment in these crops. Recently, several national and international initiatives have begun to support the improvement of diverse millet types.

As schools are pressured to perform on academics and standardized examinations, schools are reluctant to dedicate increased time to physical activity. After-school exercise and health programs may provide an opportunity to engage in more physical activity without taking time away from coursework during the day. The current study is a secondary data analysis of data from a randomized trial of a 10-week after-school program (six schools, n = 903) that implemented an exercise component based on the CATCH physical activity component and health modules based on the culturally-tailored Bienestar health education program. Outcome variables included BMI and aerobic capacity, health knowledge and healthy food intentions as assessed through path analysis techniques. Both the baseline model (χ2 (df = 8) = 16.90, p = .031; RMSEA = .035 (90% CI of .010–.058), NNFI = 0.983 and the CFI = 0.995) and the model incorporating intervention participation proved to be a good fit to the data (χ2 (df = 10) = 11.59, p = .314. RMSEA = .013 (90% CI of .010–.039); NNFI = 0.996 and CFI = 0.999). Experimental group participation was not predictive of changes in health knowledge, intentions to eat healthy foods or changes in Body Mass Index, but it was associated with increased aerobic capacity, β = .067, p < .05. School characteristics including SES and Language proficiency proved to be significantly associated with changes in knowledge and physical indicators. Further effects of school level variables on intervention outcomes are recommended so that tailored interventions can be developed aimed at the specific characteristics of each participating school. ^

The study objectives were to (i) Describe the frequency and priority of family meals, (ii) Compare the family mealtime environment by gender and SES, (iii) Examine the association between family meals and weight status among adolescents living in New Delhi, India, (iv) Examine the association between family meals and eating patterns (healthy/unhealthy) among adolescent boys and girls living in New Delhi, India. Survey and anthropometric data were collected from 8th and 10th grade students (n=1818) from four Government (public) schools and four private schools who participated in the HRIDAY study. Chi-square tests were used to evaluate if the distributions of outcomes and exposure varied by gender and SES groups. Logistic regression models were used to obtain the association of weight status (underweight / normal weight Vs overweight / obese) with frequency of family meals as the main exposure. Overall the prevalence of obesity was more among the mid- high SES group and in boys. Over half of the participants had 7 or more family meals in the past week. There was no statistically significant association seen between family meals and weight status. Majority of the participants believed that eating healthy food and maintaining a healthy weight was important and eating at least one family meal was important. Majority of the participants who ate more than 3 or more family meals eat healthy food and also ate fast food. Intervention strategies should focus on the high risk group. Private schools are appropriate settings for interventions. Eating with families should be encouraged and future research should examine family meal patterns.^

Study 1: Schools provide a range of opportunities for youth to be active, however, over the past decade, these opportunities have been declining. Sports teams are a promising venue to promote physical activity yet limited research has examined the gender an ethnic differences in sport participation. The purpose of this study is to examine trends in sport participation from 1991-2009 among US high school students. Secondly, we examined the association between gender and ethnicity with sports over time. This serial cross-sectional study used surveillance data from the Youth Risk Behavior Survey, a probability based sample weighted to represent gender and race/ethnic subpopulations of US high school students. The findings of this paper reveal persistent gender and ethnic disparities for sports participation among US youth. Since sports teams may provide a substantial source of physical activity, greater efforts should be undertaken to increase the participation of girls, especially minorities, in sports teams. ^ Study 2: Sports team participation is congruent with teaching and supporting healthy eating, yet limited research has examined the association between sports participation and dietary behaviors. This study aims to determine the association between youth sports participation and dietary behaviors among elementary-aged children. Significant dose-response associations were observed between number of sports teams and consumption of most fruits and vegetables. The likelihood of eating fruit for boys increased with the number of sports teams (1 team: OR=1.89; 3 teams: OR=3.44, p<0.001) and the likelihood of consuming green vegetables for girls was higher with the number of sports teams (1 team: OR=1.50; 3 teams: OR=2.39; p<0.001). For boys, the odds of consuming fruit-flavored drinks was higher ( p=0.019) and the odds of drinking soda was lower (p=0.018) with participation in increasing number of sports teams whereas for girls, sports participation was positively associated with diet soda consumption (p=0.006). ^ Study 3: Parents and peers have been shown to have a strong influence over the physical activity, dietary, and sedentary behaviors of youth. Youth sports teams have the potential to offer physical activity, displace sedentary behaviors, and promote a healthy diet. The purpose of this study is to assess how peer and parental support for physical activity and healthy eating, coupled with sport participation, is associated obesity related risk factors including diet and sedentary behaviors. A secondary analysis of data from the School Physical Activity and Nutrition study, a state-representative survey, was conducted. Eighth (n=3,931) and 11th (n=2,785) grade students were categorized into four groups based upon the level of peer and parental support derived from a three item scale and their participation in sports (sports/high support, sports/low support, no sports/high support, no sports/low support). Linear models were conducted to determine the difference in means between these groups for the following outcome variables: previous day fruit and vegetable intake, scores for an unhealthy and healthy food index, and hours spent watching television, playing video games, and working on a computer. Eighth graders had significantly greater levels of parental support for healthy eating and physical activity compared to 11th grade. Both 8 th and 11th graders in the sport/high support for healthy eating from peers and parents scored significantly higher on the healthy food index than other groups. Eighth and 11th graders in the sport/high support for physical activity from peers participated in fewer hours of sedentary behaviors than any other group (p ≤ 0.032). Although it is thought that sport participation may offer opportunities to support a healthy diet and displace sedentary time by offering providing physical activity, our study found that parental and peer support for activity and healthy eating may further attenuate this association. Parents and peer support should be an important target when developing strategies to improve healthy diets and reduce sedentary time among youth, especially in the context of youth sports. La principal imagen del movimiento 15-M viene simbolizada por las acampadas en las plazas de numerosas ciudades españolas, es decir, su apariencia urbana. No obstante, el derecho a la alimentación sana, el consumo responsable, el acceso a la tierra, la conservación de ecosistemas agrarios y la despoblación del medio rural han sido algunas de las temáticas debatidas en el seno del movimiento. Ello demuestra una sustancial preocupación por la cuestión tanto ambiental como agraria, para las cuales se reclaman alternativas desde una perspectiva propiamente rural. Como se pretende hacer ver en este artículo, en el seno del movimiento 15-M las cuestiones urbanas y rurales son indisociables. Entre ellas destaca la reivindicación de la soberanía alimentaria y de la agroecología como horizontes de una transformación en la organización del territorio. En este artículo se sintetizan los aspectos de ruralidad del movimiento 15-M y sus reivindicaciones de carácter social, ambiental y territorial. De manera particular, se consideran las características propias de iniciativas incipientes que se están llevando a cabo en la provincia de Alicante, en el sureste del Estado español, así como de sus interrelaciones con movimientos rurales en el ámbito regional, nacional e internacional.
