I t was hypothesized that the freeze/thaw cycles endured by icewine grapes would change their chemical composition, resulting in unique chemical fingerprint and sensory properties, and would be affected by harvest date (HD) and crop level (CL). The objectives were: 1) to identify odour-active compounds using gas chromatographic and sensory analysis; 2) to determine the effect of CL and HD on these compounds; 3) to determine the icewine sensory profiles; 4) to correlate analytical and sensory results for an overall icewine profile. CharmAnalysis™ determined the Top 15 odour-potent compounds in Vidal and Riesling icewine and table wines; 24 and 23 compounds, respectively. The majority of the compounds had the highest concentrations in the icewines compared to table wines. These compounds were used as the foundation for assessing differences in icewine chemical profiles from different HD and CL. Vidal and Riesling icewine were made from grapes picked at different HD; HI : 19 December; H2: 29 December; H3: 18 January; H4: 11 February (Vidal only). HI wines differed from H3 and H4 wines in both Vidal and Riesling for aroma compounds and sensory profiles. - Three·CL [control (fully cropped), cluster thin at fruit set to one basal cluster/shoot (TFS), and cluster thin at veraison to one basal cluster/shoot (TV)] were evaluated for Riesling and Vidal cultivars over two seasons. Vidal icewines had the highest concentration of aroma compounds in the control and TV icewines in 2003 and in TFS icewines in 2004. In Riesling, most aroma compounds had the highest concentration in the TV icewines and the lowest concentration in the TFS wine for both years. The thinned treatments were associated with almost all of the sensory attributes in both cultivars, both years. HD and CL affected the chemical variables, aroma compounds and sensory properties of Vidal and Riesling icewines and freeze/thaw events changed their sensory profile. The most odour-potent compounds were p-damascenone, cis-rose oxide, 1- octen-3-ol, 4-vinylguaiacol, ethyl octanoate, and ethyl hexanoate. The role of Pdamascenone as a marker compound for icewine requires further investigation. This research provides a strong foundation for the understanding the odour-active volatiles and sensory profiles important to icewine.

Cette recherche consiste en un examen du rôle du festival dans une communauté linguistique en contexte minoritaire confrontée à des enjeux spécifiques tels que l’assimilation, l’exogamie, la diglossie, l’inégal accès aux services dans sa langue, de même que l’accès limité aux produits culturels de son groupe linguistique. Le cas des festivals francophones en milieu minoritaire sert à interroger concrètement et empiriquement les possibilités, les conditions, les limites et les contraintes de cette forme particulière d’événement en tant que vecteur de la vitalité culturelle d’une communauté minoritaire. Le festival est aussi exploré en lien aux grandes finalités de développement culturel et de démocratie culturelle, soit des mécanismes culturels à la source des politiques culturelles modernes, ainsi qu’en lien à son rôle aux niveaux de l’affirmation et de la consolidation identitaires. Une étude de cas multiples a été menée afin de comparer et d’analyser trois festivals francophones en milieu minoritaire ontarien qui sont mis sur pied dans différentes régions, et ont des objectifs à la fois similaires et différenciés : 1) La Nuit sur l’étang (Sudbury) ; 2) le Festival franco-ontarien (Ottawa) ; et 3) le Festival du Loup (Lafontaine-Penetanguishene). En focalisant sur chaque cas étudié, nous sommes en mesure de donner une vue d’ensemble du phénomène « festival » dans un tel contexte. Cette recherche présente, par le biais de sources documentaires, d’observations sur le terrain et d’entretiens auprès des organisateurs, des festivaliers et des artistes de ces événements, les perceptions qu’en ont et l’utilisation qu’en font ces différentes catégories d’acteurs impliqués. Elle fait plus précisément état de la contribution du festival au niveau des mécanismes culturels proposés ci-dessus. En outre, elle permet de déterminer si les acteurs directement impliqués dans ce type d’événement le perçoivent comme un enjeu important pour la francité. Bref, l’ensemble des contributions qu’apportent les festivals francophones en Ontario montrent en quoi ces événements agissent comme des vecteurs de la vitalité culturelle d’une communauté minoritaire.

Jusqu’à la fin du vingtième siècle, les études sur le cinéma iranien ont tendance à aborder ce cinéma par rapport à la Révolution islamique de 1979, c’est-à-dire à le diviser en deux époques, prérévolutionnaire et postrévolutionnaire. Cette recherche s’inscrit dans une pensée récente qui étudie l’émergence de ce cinéma national en tant que cheminement continu et dominé par des politiques culturelles contradictoires et ambiguës. Dans cette étude, nous ferons au premier chapitre un survol de l’histoire du cinéma iranien, avec un intérêt particulier pour la culture des festivals. Il s’agira de décrypter les enjeux politiques et culturels qui dirigent les décisions du gouvernement et des professionnels de l’industrie. Le deuxième chapitre proposera un questionnement sur la notion de cinéma national, et appliquera cette notion au cinéma iranien. Une attention particulière sera portée à la Fondation du cinéma Farabi, une institution clé dans la promotion du cinéma national et dans l’émergence des films iraniens dans les festivals de films internationaux. Finalement, le troisième chapitre présentera le rôle des festivals dans l’industrie cinématographique ainsi qu’une analyse de l’évolution des films iraniens présentés au Festival des films du monde de Montréal afin de démontrer l’influence des politiques culturelles iraniennes floues sur la présence des films iraniens dans les festivals occidentaux.

Yacon (Smallanthus sonchifolius [Poepp. & Endl.] H. Robinson) is an under-exploited native root crop of the Andes, which stores oligofructans (fructo-oligosaccharides, FOS) as its main component of dry matter (DM). FOS are of increasing economic interest because of their low caloric value in human diets and bifidogenic benefits on colon health. Two on-farm experiments were conducted to: (i) determine the effect of shaded, short-term storage at 1990 and 2930 m a.s.l. in the Andean highlands; and (ii) address the effects of a traditional sunlight exposure (‘sunning’) on the carbohydrate composition in the DM of tuberous yacon roots. After a 6-day shade storage FOS concentrations were smaller at the lower (36–48% of DM) than at the higher altitude (39–58% of DM). After 12 days FOS concentrations were nearly equal at both sites (27–39% of DM). The concentration of free sugars (fructose, glucose, sucrose) increased accordingly from 29–34 to 48–52%. During the 6-day sunning experiment FOS concentrations decreased from 50–62 to 29–44% and free sugars increased from 29–34 to 45–51%. The results indicate that partial hydrolysis of oligofructans starts shortly after harvest. Storage in highland environments should wherever possible exploit the cooler temperatures at higher altitudes. Sunning of yacon’s tuberous roots effectively reduces much of the roots’ water content, in this experiment 40%, and thus allows energy to be saved if yacon is processed into dehydrated products.

Estos proyectos van dirigidos a alumnos de primer y segundo curso del primer ciclo de secundaria obligatoria. Sus objetivos intentan que el alumno ponga en práctica las cuatro destrezas básicas (entender, hablar, leer y escribir) y, sobre todo, que comunique y se comunique aunque sea con pobreza lingüística. Se persigue también que el alumno reflexione sobre las similitudes y diferencias entre su propia cultura y la lengua objeto de su aprendizaje y profundice en ambas. Como material complementario estos proyectos pueden ser utilizados por profesores que usan libro de texto. La duración de cada proyecto es de una media de 7 sesiones, dejando la ampliación o reducción de los mismos a los criterios de necesidad de cada profesor y grupo de trabajo.

Drought, pod yield, pre-harvest Aspergillus infection and aflatoxin contamination on peanut in Niger

Soil moisture and soil temperature affect pre-harvest infection with Aspergillus flavus and production of aflatoxin. The objectives of our field research in Niger, West Africa, were to: (i) examine the effects of sowing date and irrigation treatments on pod yield, infection with A. flavus and aflatoxin concentration; and (ii) to quantify relations between infection, aflatoxin concentration and soil moisture stress. Seed of an aflatoxin susceptible peanut cv. JL24 was sown at two to four different sowing dates under four irrigation treatments (rainfed and irrigation at 7, 14 and 21 days intervals) between 1991 and 1994, giving 40 different 'environments'. Average air and soil temperatures of 28-34 degrees C were favourable for aflatoxin contamination. CROPGRO-peanut model was used to simulate the occurrence of moisture stress. The model was able to simulate yields of peanut well over the 40 environments (r(2) = 0.67). In general, early sowing produced greater pod yields, as well as less infection and lower aflatoxin concentration. There were negative linear relations between infection (r(2) = 0.62) and the average simulated fraction of extractable soil water (FESW) between flowering and harvest, and between aflatoxin concentration (r(2) = 0.54) and FESW in the last 25 days of pod-filling. This field study confirms that infection and aflatoxin concentration in peanut can be related to the occurrence of soil moisture stress during pod-filling when soil temperatures are near optimal for A. flavus. These relations could form the basis of a decision-support system to predict the risk of aflatoxin contamination in peanuts in similar environments. (c) 2005 Elsevier B.V. All rights reserved.

A total of 133 samples (53 fermented unprocessed, 19 fermented processed. 62 urea-treated processed) of whole crop wheat (WCW) and 16 samples (five fermented unprocessed, six fermented processed, five urea-treated processed) of whole crop barley (WCB) were collected from commercial farms over two consecutive years (2003/2004 and 2004/2005). Disruption of the maize grains to increase starch availability was achieved at the point of harvest by processors fitted to the forage harvesters. All samples were subjected to laboratory analysis whilst 50 of the samples (24 front Year 1, 26 front Year 2 all WCW except four WCB in Year 2) were subjected to in vivo digestibility and energy value measurements using mature wether sheep. Urea-treated WCW had higher (P<0.05) pH, and dry matter (DM) and crude protein contents and lower concentrations of fermentation products than fermented WCW. Starch was generally lower in fermented, unprocessed WCW and no effect of crop maturity at harvest (as indicated by DM content) on starch concentrations was seen. Urea-treated WCW had higher (P<0.05) in vivo digestible organic matter contents in the DM (DOMD) in Year 1 although this was not recorded in Year 2. There was a close relationship between the digestibility values of organic matter and gross energy thus aiding the use of DOMD to predict metabolisable energy (ME) content. A wide range of ME values was observed (WCW. 8.7-11.8 MJ/kg DM; WCB 7.9-11.2 MJ/kg DM) with the overall ME/DOMD ratio (ME = 0.0156 DOMD) in line With Studies in other forages. There was no evidence that a separate ME/DOMD relationship was needed for WCB which is helpful for practical application. This ratio and other parameters were affected by year of harvest (P<0.05) highlighting the influence of environmental and Other undefined factors. The variability in the composition and nutritive value of WCW and WCB highlights the need for reliable and accurate evaluation methods to be available to assess the Value of these forages before they are included in diets for dairy cows. Tuber dormancy enables yams to survive in the ground during the dry season and post-harvest storage. Three clones of Dioscorea rotundata were harvested after five intervals and then stored in a cooler (20.6°C) or at ambient temperature (27.8°C). The time from harvest to sprouting was shorter as harvest was delayed. The period from sowing to sprouting for each clone was similar for tubers harvested from 140 days after planting, but tubers harvested earlier took longer to sprout. The cooler temperature delayed sprouting. Tubers of two clones sprouted after only 70 days of crop growth. If the dormancy period of these young tubers can be broken, the generation time of yam crop improvement programmes could be considerably reduced.
