Em Portugal, as tradições culinárias e gastronómicas são muito diversificadas. No Algarve, os ingredientes da culinária são muito variados, incluem os produtos da horta, do quintal, da agricultura industrial, da capoeira, da pecuária, da mariscagem e da pesca. Estes produtos variados são consumidos em natureza, cozinhados em fresco ou processados por métodos de conservação, que tanto podem ser a aplicação atual de práticas milenares, como acontece no fumeiro tradicional como constituir verdadeiras inovações da tecnologia alimentar.

El presente artículo estudia la cartografía de Cacela en el sur de Portugal con el propósito de interpretar su transformación a través del tiempo, considerando la arquitectura, el urbanismo y el paisaje de forma integrada. La lectura de esa transformación se lleva de la mano de las principales cartas de Cacela que coinciden con el inicio del siglo XVII, la aproximación al final del Antiguo Régimen y la transición del siglo XIX al XX, asociando cada uno de estos tiempos a un modo particular de representación. La interpretación de las diferentes cartas está organizada, en términos me- todológicos, a partir del recurso a fuentes escritas de la época, culminando con la elaboración de un dibujo final que contiene la representación del espacio edificado y del paisaje de Cacela a mediados del siglo pasado. Este trabajo se inscribe en una investigación más amplia sobre las aglomeraciones urbanas de pequeña dimensión en las diver- sas subunidades geográficas del sur de Portugal, comprendiendo el paisaje, la morfología urbana y el levantamiento integral de todo el núcleo edificado.

Com a publicação do Decreto-Lei n.º 232/2007, de 15 de Junho, a Avaliação Ambiental Estratégica (AAE) tornou-se um procedimento técnico de carácter obrigatório em Portugal. Pretende-se com este trabalho abordar esta temática com o objectivo de verificar a melhor hipótese de traçado para a ligação ferroviária de alta velocidade Faro-Huelva, através da comparação de dois métodos de avaliação. A área em estudo pertence Sotavento Algarvio, abrangendo os concelhos de Faro, Olhão, S. B. de Alportel, Tavira, Alcoutim, Castro Marim e Vila Real de Santo António. A metodologia utilizada será a sobreposição de mapas (com recurso a Sistemas de Informação Geográfica) e as matrizes de Leoplod, metodologias mais aplicadas a estudos de Avaliação Ambiental para o sector dos Transportes. A utilização destas metodologias permitirá averiguar qual a mais consistente para estes estudos de caso, facultando a informação de maior relevo aos decisores e às entidades. Verificou-se que a criação de uma linha ferroviária de Alta Velocidade no Algarve é possível, tendo em atenção os factores ambientais, de forma a minimizar o seu impacte. Pela análise matricial, os principais impactes negativos derivados deste projecto são maioritariamente decorrentes da fase de construção, e associam-se à ocupação e compactação dos solos de forma irrevogável, afectando zonas edificadas e zonas agrícolas e florestais, ocupação de solos REN e RAN, Zonas de Especial Conservação. Os positivos decorrem essencialmente da fase de exploração, associados às vantagens da utilização deste meio de transporte, como é o caso do desenvolvimento económico da região e do país, encurtando a distância e o tempo entre a Algarve e Espanha, com ligação a toda a Europa.

First described more that 150 years ago, the systematics of the genera Geomalacus and Letourneuxia (Arionidae, Gastropoda, Pulmonata) is still challenging. The taxonomic classification of arionid species is based on extremely labile characters such as body size or color that depends both on diet and environment, as well as age. Moreover, there is little information on the genetic diversity and population structure of the Iberian slugs that could provide extra clues to disentangle their problematic classification. The present work uses different analytical tools such as habitat suitability (Ecological Niche Modeling - ENM), cytogenetic analysis and phylogeography to establish the geographical distribution and evolutionary history of these pulmonate slugs. The potential distribution of the four Geomalacus species was modeled using ENM, which allowed the identification of new locations for G. malagensis, including a first report in Portugal. Also, it was predicted a much wider distribution for G. malagensis and G. oliveirae than previously known. Classical cytogenetic analyses were assayed with reproductive and a novel use of somatic tissues (mouth and tentacles) returning the number of chromosomes for the four Geomalacus species and L. numidica (n = 31, 2n = 62) and the respective karyotypes. G. malagensis and L. numidica present similar chromosome morphologies and karyotypic formulae, being more similar to each other than the Geomalacus among themselves. We further reconstructed the phylogeny of the genera Geomalacus and Letourneuxia using partial sequences of the mitochondrial cytochrome oxidase subunit I (COI) and the nuclear ribosomal small subunit (18S rRNA), and applied an independent evolutionary rate method, the indicator vectors correlation, to evaluate the existence of cryptic diversity within species. The five nominal species of Geomalacus and Letourneuxia comprise 14 well-supported cryptic lineages. Letourneuxia numidica was retrieved as a sister group of G. malagensis. G. oliveirae is paraphyletic with respect to G. anguiformis. According to our dating estimates, the most recent common ancestor of Geomalacus dates back to the Middle Miocene (end of the Serravallian stage). The major lineage splitting events within Geomalacus occurred during the dry periods of the Zanclean stage (5.3-3.6 million years) and some lineages were confined to more humid mountain areas of the Iberian Peninsula, which lead to a highly geographically structured mitochondrial genetic diversity. The major findings of this are the following: (1) provides updated species distribution maps for the Iberian Geomalacus expanding the known geographic distribution of the concerned species, (2) unravels the cryptic diversity within the genera Geomalacus and Letourneuxia, (3) Geomalacus oliveirae is paraphyletic with G. anguiformis and (4) Letourneuxia numidica is sister group of G. malagensis.

The effect of coating Arbutus unedo fresh fruit with alginate-based edible coatings enriched with the essential oils compounds (EOC) eugenol (Eug) and citral (Cit) was studied. The minimum inhibitory concentrations (MIC) against the main postharvest pathogens were determined for Eug and Cit giving values of 0.10 and 0.15 (w/v), respectively. Twelve formulations of edible coatings were used: sodium alginate (AL) was tested at 1 and 2% (w/v) with incorporation of Eug and Cit at MIC and double MIC or their combination at MIC. Arbutus berries were dipped in those solutions for 2 min, and then stored at 0.5 degrees C. Control consisted of uncoated fruit. On days 0, 14 and 28, samples were taken to perform physicochemical and biochemical analysis [color CIE (L*, h degrees), firmness, soluble solids content (SSC), weight Loss, trolox equivalent antioxidant capacity (TEAC), microbial growth and taste panels]. Results showed that edible coatings of 1% AL were the best to maintain most quality attributes of the commodity through storage at 0.5 degrees C. The incorporation of Cit and Eug into the alginate edible coatings improved the coatings in most cases, AL 1% + Eug 0.20% and AL 1% + Cit 0.15% + Eug 0.10% being those that better preserved sensory and nutritional attributes and reduced microbial spoilage. Thus, these coatings may be useful for improving postharvest quality and storage life of fresh arbutus fruit. (C) 2014 Elsevier B.V. All rights reserved.

Arbutus unedo L. (strawberry tree) has a circum-Mediterranean distribution, being found in western, central and southern Europe, north-eastern Africa (excluding Egypt and Libya) and the Canary Islands and western Asia. Fruits of the strawberry tree are generally used for preparing alcoholic drinks (wines, liqueurs and brandies), jams, jellies and marmalades, and less frequently eaten as fresh fruit, despite their pleasing appearance. An overview of the chemical composition of different parts of the plant, strawberry tree honey and strawberry tree brandy will be presented. The biological properties of the different parts of A. unedo and strawberry tree honey will be also overviewed.

Total phenol, hydroxycinnamic acid derivatives, flavone/flavonol and flavanones/dihydroflavonol contents of hydro-alcoholic extracts, obtained by sonication, from the aerial parts of Artemisia campestris L., Anthemis arvensis L., Haloxylon scoparium Pomel, Juniperus phoenicea L., Arbutus unedo L., Cytisus monspessulanus L., Thymus algeriensis Boiss et Reut, Zizyphus lotus L (Desf.) collected in Djebel Amour (Sahara Atlas, Algeria) were quantified by spectrophotometric methods. The chemical composition of the essential oils obtained by hydrodistillation from Artemisia campestris L. and Juniperus phoenicea I aerial parts were also evaluated by gas chromatography (GC) and gas chromatography coupled to mass spectrometry (GC-MS). The antioxidant activity of the extracts and essential oils was assessed measuring the capacity for preventing lipid peroxidation using two lipidic substrates (egg yolk and liposomes), the capacity for scavenging DPPH, ABTS, superoxide anion radicals, hydroxyl radicals and peroxyl radicals. Anti-inflammatory activity was assessed by measuring the capacity for inhibiting lipoxygenase. Reducing power and chelating capacity were also assayed. The results showed different amounts of total phenols depending on the method used: A. campestris extract had the highest levels of total phenols when the measurement was made at lambda = 280 nm, whereas H. scoparium and A. unedo extracts showed the highest levels of total phenols with Folin-Ciocalteau. C. monspessulanus had the highest levels of flavones/flavonols and flavanones/dihydroflavonols. The essential oils of A. campestris and J. phoenicea were mainly constituted by alpha-pinene, beta-pinene and sabinene; and a-pinene, respectively. The methods used for assaying the capacity for preventing lipid peroxidation revealed to be inadequate for extracts due to the great interferences detected. The essential oils were more active than the generality of extracts for scavenging peroxyl radicals and for inhibiting lipoxygenase, whereas A. unedo extract was the most active for scavenging ABTS, DPPH, superoxide anion radicals and it also had the best reducing capacity. In a general way, the great majority of the antioxidant activities correlated well with the phenol content although such correlation was not so clear with the flavonoid content. The book "Dimensions of Mediterranean diet" develops the reflection around the Mediterranean Diet concept - Intangible Cultural Heritage, which took place by initiative of the University of Algarve, during the first cycle of Seminars on Mediterranean Diet, in 2013. Starting with the multiplicity of this concept, the authors follow exploring the reality of this way of life (between the sky and the earth), which is the result of an age-old training process, integrates a habit of eating well in a healthy life practice and is a vehicle for future sustainability. The images accompanying the text portray this Mediterranean identity, straight from Algarve current realities.
