O objetivo deste trabalho foi avaliar a influência dos sanificantes dicloroisocianurato de sódio (NaDCC), álcool etílico e hipoclorito de sódio sobre a qualidade de uva Itália, com base nas características físicas e químicas. Cachos de uva Itália colhidos em São Miguel Arcanjo (SP) foram selecionados por tamanho e qualidade, submetidos a tratamentos pós-colheita, por imersão, em solução de álcool etílico (15%), de dicloroisocianurato de sódio (200 ppm) e hipoclorito de sódio (200 ppm), por 3 segundos e 10 minutos, respectivamente, e mantidos sob condição ambiente (21,2 °C; 69,8% UR) por 9 dias. Avaliou-se a cada três dias, a porcentagem de perda de peso dos cachos, a taxa de degrana, a coloração, a firmeza, os teores de sólidos solúveis (SS) e de acidez titulável (AT), o ratio (SS/AT) e o pH das bagas. Nas condições do experimento, a maior perda de massa média diária foi encontrada no tratamento com hipoclorito de sódio (0,7333%/dia), seguido da testemunha (0,6163%/dia), do dicloro isocianurato de sódio (0,5837%/dia) e do álcool etílico (0,5623%/dia). As bagas sanificadas com dicloroisocianurato de sódio dihidratado mostraram-se mais escurecidas e amareladas. Não foram verificadas diferenças atribuíveis à sanificação em relação à firmeza, ao pH, aos teores de sólidos solúveis e de acidez titulável e ao ratio. De acordo com os resultados obtidos, concluiu-se que não há efeito do uso dos sanificantes dicloroisocianurato de sódio, álcool etílico e hipoclorito de sódio sobre as características físico-químicas de uva Itália.

A busca pela longevidade e a procura por alimentos mais saudáveis fizeram com que os consumidores se tornassem cada vez mais exigentes. Diante disso, procurou-se estabelecer o comportamento de compra dos consumidores de melão no Mercado Municipal de Piracicaba (SP) através do método de Desdobramento da Função Qualidade (QFD) e, com base nas respostas obtidas nos questionários aplicados, traçou-se o perfil dos consumidores, destacando-se suas preferências, costumes, reclamações e exigências. Verificou-se que é a mulher que realiza as compras do melão, com preferência pelo consumo na forma in natura. Encontrou-se insatisfação de 42,8% dos entrevistados quanto à qualidade do melão, sendo o sabor aguado a principal causa de descontentamento. Logo, a qualidade do melão não correspondia àquela indicada pelos consumidores (casca sem defeitos, coloração amarela característica da variedade, textura firme, suculento, de preço acessível, garantia de qualidade e gosto doce). Diante da insatisfação dos consumidores e considerando-se que o melão é consumido preferencialmente in natura, deve-se atentar para a preservação da sua aparência e qualidade sensorial. A opinião dos consumidores deve ser considerada na tentativa de identificar os pontos que devem ser melhorados dentro da cadeia de comercialização a fim de minimizar as perdas e promover a melhoria e a manutenção da qualidade do produto final.

O objetivo deste trabalho foi avaliar as alterações nos principais atributos sensoriais de abacaxis 'Pérola' em quatro estádios de maturação durante o armazenamento à temperatura ambiente. A cada dois dias avaliaram-se a aparência, o odor, o sabor e a textura de frutos de abacaxi 'Pérola' nos estádios de maturação, "verde", "pintado", "colorido" e "amarelo", adquiridos na CEAGESP (SP) e armazenados à temperatura ambiente (23,4 ± 1,7 °C; 70% UR), por 6 dias. O estádio de maturação afetou a qualidade sensorial do abacaxi. A qualidade sensorial foi afetada negativamente pelo estádio de maturação, atingindo maior grau de qualidade nos pontos "pintado" e "colorido".

Os grãos de cereais são suscetíveis ao ataque de insetos e micro-organismos durante o armazenamento. Pesquisas demonstram a viabilidade da utilização da tecnologia de irradiação gama para a conservação de grãos de cereais e seus produtos. O objetivo do trabalho foi verificar o efeito de diferentes doses da radiação gama (3; 4,5; 6 kGy) em farinha de trigo e fubá e nos seus atributos sensoriais e físico-químicos. As amostras foram irradiadas em irradiador comercial modelo PR1 da CBN, com atividade de 1.200.000 Ci e a taxa de dose de 7 kGy/hora. A irradiação não afetou a qualidade oxidativa das farinhas durante o seu tempo de armazenamento definido dentro do período de validade usual de mercado, no entanto a qualidade sensorial foi afetada negativamente em todos os tratamentos, assim como as suas propriedades viscoelásticas. Sob as condições do experimento, se pode concluir que a irradiação pode ser uma alternativa para conservação de farinhas.

Este estudo teve como objetivo traçar o perfil sensorial ao longo do período de armazenamento e determinar a aceitação global de melões amarelos minimamente processados (submetidos a tratamentos químicos) e os impactos desse processamento sobre a aceitação do produto pelo consumidor. Frutos selecionados, lavados e sanificados foram minimamente processados em forma de cubos, divididos em quatro lotes que constaram de: testemunha, tratados com solução de cloreto de cálcio (1%), tratados com ácido ascórbico (1%) e revestidos com alginato de sódio (1%). Esses cubos foram acondicionados em bandejas de tereftalato de polietileno (PET) com tampa e armazenados a 5 ± 1 ºC e 73 ± 5% UR por um período de 8 dias. No 1º, 3º, 5º e 8º dias após o processamento, os melões foram avaliados sensorialmente, utilizando a Análise Descritiva Quantitativa (ADQ), por uma equipe de 8 provadores treinados. O teste de aceitação pelo consumidor foi conduzido em laboratório, com 50 provadores não treinados, utilizando as escalas: hedônica e de intenção de compra; além da frequência de consumo. A ADQ mostrou que os tratamentos testados não apresentaram efeito no prolongamento da vida útil dos melões amarelos minimamente processados. Os descritores que mais traduziram a qualidade do fruto submetido aos tratamentos químicos testados foram: aparência de fresco e brilhante; odor de fresco e característico; sabor ácido, salgado, amargo, fresco, característico, adstringente, aguado e estranho. O teste com os consumidores indicou que os melões tratados com cloreto de cálcio e com ácido ascórbico foram os mais aceitos pelos provadores e revelou que não houve diferença quanto à intenção de compra.

Pisciculture is an economic activity that is steadily growing in the state of Parana, Brazil, and Nile tilapia (Oreochromis niloticus) is one of the widely cultivated species in this state. Tilapia is not only a very nutritious food, but also an important indicator of environmental contamination. This study aimed to verify contamination by cadmium, copper and lead in tilapia fillets, and to compare the found values to international legislations. Were collected 135 samples of tilapia fillets, between July 2006 and May 2007, in three fish stores located in regions west and north of Paraná State. Samples of tilapia fillet were analyzed in relation to the presence of cadmiun, lead and copper, using atomic absorption spectrophotometry. Lead has not been detected in the analyses. Cadmium has been detected in three samples, on concentrations of 0.012 µg.g-1, 0.011 µg.g-1 and 0.014 µg.g-1. Copper has been detected in all fillets, and the average concentration of each cold storage plant was of 0.122 µg.g-1, 0.106 µg.g-1 and 0.153 µg.g-1. The concentrations found in this study are within the limits allowed by both the European and the Australian legislations.

This work reports the use of experimental design for the assessment of the effects of process parameters on the production of fish nuggets in an industrial scale environment. The effect of independent factors on the physicochemical and microbiological parameters was investigated through a full 24 experimental design. The studied factors included the temperature of fish fillet and pulp in the mixer, the temperature of the added fat, the temperature of water and the ratio of protein extraction time to emulsion time. The physicochemical analyses showed that the higher temperature of the pulp and fillet of fish, the lower the protein in the final product. Microbiological analyses revealed that the counting of Staphylococcus coagulase positive, total and thermo-tolerant coliforms were in accordance with the current legislation.

The aging process of alcoholic beverages is generally conducted in wood barrels made with species from Quercus sp. Due to the high cost and the lack of viability of commercial production of these trees in Brazil, there is demand for new alternatives to using other native species and the incorporation of new technologies that enable greater competitiveness of sugar cane spirit aged in Brazilian wood. The drying of wood, the thermal treatment applied to it, and manufacturing techniques are important tools in defining the sensory quality of alcoholic beverages after being placed in contact with the barrels. In the thermal treatment, several compounds are changed by the application of heat to the wood and various studies show the compounds are modified, different aromas are developed, there is change in color, and beverages achieve even more pleasant taste, when compared to non-treated woods. This study evaluated the existence of significant differences between hydro-alcoholic solutions of sugar cane spirits elaborated from different species of thermo-treated and non-treated wood in terms of aroma. An acceptance test was applied to evaluate the solutions preferred by tasters under specific test conditions.

The aim of this study was to evaluate the physicochemical properties of avocado pulp of four different varieties (Avocado, Guatemala, Dickinson, and Butter pear) and to identify which has the greatest potential for oil extraction. Fresh avocado pulp was characterized by moisture, protein, fat, ash, carbohydrates and energy contents were determined. The carotenoids and chlorophyll contents were determined by the organic solvent extraction method. The results showed significant differences in the composition of the fruit when varieties are compared. However, the striking feature in all varieties is high lipid content; Avocado and Dickinson are the most suitable varieties for oil extraction, taking into account moisture content and the levels of lipids in the pulp. Moreover, it could be said that the variety Dickinson is the most affected by the parameters evaluated in terms of overall quality. Chlorophyll and carotenoids, fat-soluble pigments, showed a negative correlation with respect to lipids since it could be related to its function in the fruit. The varieties Avocado and Dickinson are an alternative to oil extraction having great commercial potential to be exploited thus avoiding waste and increasing farmers income.

The acceptance of tung oil enriched diet and the incorporation of conjugated linolenic acid - CLnA into fillets of Genetically Improved Farmed Tilapia (GIFT) were investigated. The diet was well accepted, and after 10 days CLnA was incorporated into the fillets with a 1.02% content of total fatty acids (FA). In addition, biosynthesis of the conjugated linoleic acid isomers - CLA (0.31% of fillet total FA content) from CLnA, and the presence of alpha-linolenic acid - LNA (1.08% of fillet total FA content), eicosapentaenoic acid - EPA (2.85% of fillet total FA content) and docosahexaenoic acid - DHA (3.08% of fillet total FA content) were observed. Therefore, the consumption of this fish can increase the intake of different FA (CLnA, CLA, LNA, EPA and DHA), which play an important role in human metabolism.

Nile tilapia is one of the major fish species cultivated worldwide and in Brazil. The tilapia fillet yield is between 30-35%, thus around 70% of waste is generated. A portion of this waste can be used to obtain minced fish, and the resulting product can be used as meat raw material to prepare fish snacks. The aim of this study was to produce fish snacks containing different inclusion levels (20, 30, and 40%) of minced fish obtained from Nile tilapia processing waste and evaluate their physicochemical characteristics and sensory acceptance. Protein content, ash, water activity, and hardness increased with increasing inclusion of minced fish. The scores obtained in the sensory evaluation were: flavor acceptance (from 7.2 to 5.7), texture (from 7.4 to 5.3), overall acceptance (from 7.1 to 5.9), and willingness to purchase (from 4.0 to 3.1). This study demonstrates that the inclusion of 20 to 40% of minced fish of Nile tilapia in snacks is well accepted and improves their nutritional value without affecting the physicochemical properties.

Abstract The aim of this study was to determine chemical, nutritional and microbiological evaluation of whole or gutted meagre stored at 4 ± 1 oC. Whole ungutted (Group A), eviscerated (Group B), beheaded-eviscerated fish (Group C) and fillets (Group D) groups were created for this study. According to fatty acid analysis, it was determined that meagre is rich in PUFA content and the n3/n6 ratio is within the ideal limits. In all 4 groups, obtained from fillets values were the highest in general, quality parameters were found within acceptable limits. Psychrophilic and mesophilic aerobic bacteria counts exceeded the standards for fillet groups on 7th days of storage. According to microbiological analysis, ungutted, beheaded, eviscerated samples were not exceeded limit values on 9th day. In conclusion, whole or gutted (headed and eviscerated) storage of meagre is found to be more advantageous compared to fillets for storage at 4 ± 1 oC.

A 33-year old caucasian man was investigated for pain in the right flank, proteinuria, hemathuria and an elevated serum creatinine level. He also presented an abnormal ultrasonography, which revealed asymmetric kidneys. Through renal biopsy, the diagnosis of oligomeganephronia (OMN) was confirmed. OMN is a very rare form of renal hypoplasia, and late-onset in adulthood is even rarer. In the pediatric population, OMN leads to end-stage-renal-failure(ESRF) in a few years. This is the sixth case related in the literature of a late-onset OMN who have not yet developed ESRF.

Länsimaisen työn hinta luo jatkuvan paineen hitsauksen tuottavuuden parantamiseen. MIG/MAG-hitsauksen tuottavuutta voidaan parantaa tehostamalla hitsausprosessia, vähentämällä hitsien lukumäärää ja pienentämällä hitsiaineen tarvetta. Eri virtalähdevalmistajat tuovat markkinoille hitsausprosesseja hitsauksen tehostamiseen, joilla pystytään korvata vähemmän tuottavia hitsaustyövaiheita. Hitsien lukumäärän vähentäminen on rakenteen suunnitteluun liittyvä tekijä ja hitsiaineen tarpeen pienentäminen voidaan toteuttaa railogeometrian muutoksilla tai tuotteen sopivalla suunnittelulla. Diplomityössä on tutkittu 30 mm paksujen S355 rakenneteräsputkien hitsauksen tuottavuuden kasvattamista käyttäen nykyaikaisia modifioituja kaarihitsausprosesseja ja railotilavuutta pienentämällä. Työssä vertailtiin 30o ja 60o railokulmalla tehtyjä liitoksia. Railogeometrian muutoksen lisäksi diplomityössä vertailtiin eri menetelmien tehokkuutta putken pohjapalon hitsauksessa.

The need for reduced intrinsic weight of structures and vehicles in the transportation industry has made aluminium research of interest. Aluminium has properties that are favourable for structural engineering, including good strength-to-weight ratio, corrosion resistance and machinability. It can be easily recycled saving energy used in smelting as compared to steel. Its alloys can have ultimate tensile strength of up to 750 MPa, which is comparable to steel. Aluminium alloys are generally weldable, however welding of high strength alloys like the 7xxx series pose considerable challenges. This paper presents research on the weldability of high strength aluminium alloys, principally the 7xxx series. The weldability with various weld processes including MIG, TIG, and FSW, is discussed in addition to consideration of joint types, weld defects and recommendations for minimizing or preventing weld defects. Experimental research was carried out on 7025-T6 and AW-7020 alloys. Samples were welded, and weld cross sections utilized in weld metallurgy studies. Mechanical tests were carried out including hardness tests and tensile tests. In addition, testing was done for the presence of Al2O3 on exposed aluminium alloy. It was observed that at constant weld heat input using a pulsed MIG system, the welding speed had little or no effect on the weld hardness. However, the grain size increased as the filler wire feed rate, welding current and welding speed increased. High heat input resulted in lower hardness of the weld profile. Weld preheating was detrimental to AW- 7020 welds; however, artificial aging was beneficial. Acceptable welds were attained with pulsed MIG without the removal of the Al2O3 layer prior to welding. The Al2O3 oxide layer was found to have different compositions in different aluminium alloys. These findings contribute useful additional information to the knowledge base of aluminium welding. The application of the findings of this study in welding will help reduce weld cost and improve high strength aluminium structure productivity by removing the need for pre-weld cleaning. Better understanding of aluminium weld metallurgy equips weld engineers with information for better aluminium weld design.
