Food industry is focused on the development of novel functional foods containing health promoting natural ingredients. Natural antioxidants present important health benefits like the prevention of several diseases related to oxidative stress [1,2]. Foeniculum vulgare Mill. (fennel) is a source of those compounds with proved antioxidant potential [3]. Herein, after evaluation of 2,2-diphenyl-1-picrylhydrazyl (DPPH) scavenging activity and reducing power of fennel (provided by Américo Duarte Paixão Lda.) decoction, we propose its incorporation into cottage cheese (produced by Queijos Casa Matias Lda.). Three groups of cottage cheese samples were prepared: control; samples with fennel decoction (incorporated at EC25 value=0.35 mg/mL, previously determined by DPPH assay); and samples with fennel powder (incorporated at 1.75 mg/mL, considering the decoction yield=20%). The samples were submitted to an evaluation of DPPH scavenging activity and reducing power immediately after the incorporations, and after 7 and 14 days of storage, at 4 ºC. The incorporation of fennel improved the antioxidant activity of cottage cheese. Samples incorporated with plant powder revealed higher antioxidant properties than samples incorporated with decoction, either in 0 or 7 days of storage. After 14 days, cottage cheese incorporated with fennel decoction gave the highest DPPH scavenging activity (46.72±0.09 mg/mL). A decrease in the antioxidant potential of the cottage cheese with fennel was observed along the shelf life. Nevertheless, it is important to highlight that the samples still display antioxidant properties. The present study aimed to characterize the extracts prepared from Pimpinella anisum L. (anise) and Coriandrum sativum L. (coriander) (Apiaceae plants) seeds in terms of phenolic composition, and to correlate the obtained profiles with the antioxidant activity. Anise gave the highest abundance in phenolic compounds (42.09± 0.11 mg/g extract), mainly flavonoids (28.08±0.17 mg/g extract) and phenolic acids (14.01±0.06 mg/g extract), and also the highest antioxidant potential, measured by the ability to inhibit lipid peroxidation and β-carotene bleaching, the reducing power and the free radical scavenging activity. Apigenin and luteolin derivatives, as also caffeoylquinic acid derivatives seem to be directly related with the higher in vitro antioxidant potential of the anise extract. In contrast, the lower antioxidant potential of coriander seems to be due to its lower abundance in phenolic compounds (2.24±0.01 mg/g extract). Further studies are necessary to evaluate the in vivo antioxidant potential of the tested extracts, but the in vitro experiments already performed highlight them as potential health promoters.

The severity and frequency of opportunistic fungal infections still growing, concomitantly to the increasing rates of antimicrobial drug’s resistance. Natural matrices have been used over years due to its multitude of health benefits, including antifungal potential. Thus, the present work aims to evaluate the anti-Candida potential of the phenolic extract and individual phenolic compounds of Glycyrrhiza glabra L. (licorice), by disc diffusion assay, followed by determination of the minimal inhibitory concentration (MIC) and minimal fungicidal concentration (MFC) for both planktonic cells and biofilms. Licorice extract evidenced inhibitory potential against the nineteen tested Candida strains, but no pronounced effect was observed by testing the most abundant individual phenolic compounds. Candida tropicalis strains were the most sensible, followed by Candida glabrata, Candida parapsilosis and, then, Candida albicans. Lower MIC and MFC values were achieved to C. glabrata and C. tropicalis, which confirms its susceptibility to licorice extract; however, for C. tropicalis strains a higher variability was observed. Anti-biofilm potential was also achieved, being most evident in some C. glabrata and C. tropicalis strains. In general, a twice concentration of the MIC was necessary for planktonic cells to obtain a similar potential to that one observed for biofilms. Thus, an upcoming approach for new antifungal agents, more effective and safer than the current ones, is stablished; notwithstanding, further studies are necessary in order to understand its mechanism of action, as also to assess kinetic parameters.

Antitumor, antimicrobial and antioxidant activities of basil were studied, along with its characterization in phenolic compounds, organic acids and soluble sugars. The results placed basil as a valuable candidate for functionalization and conservation of food products, maintaining their nutritional properties, while increasing their shelf life and potential health effects. The basil leaves were then incorporated in "Serra da Estrela Cheese", either in its dehydrated form or as a decoction. The cheeses were then subject to a nutritional evaluation, being characterized for their fatty acids, minerals and CIE color parameters. To assess the combined effects of plant incorporation and storage time, a 2-way ANOVA was used to process the results, further analysed through a linear discriminant analysis. Overall, basil leaves provided antioxidant activity to the cheeses, reduced the moisture, and preserved the unsaturated fatty acids and proteins. Comparing both incorporation types, the decoctions had a higher functionalizing and conservative effect.

La presente Tesis Doctoral es una contribución al conocimiento y la investigación sobre el uso de áridos reciclados y cenizas de fondo procedentes de la combustión de biomasa para su uso en ingeniería civil. El interés en el uso de áridos reciclados procedentes de residuos de construcción y demolición (RCD) están en continuo crecimiento debido a su potencial frente a diversos usos, entre ellos como material tratado con cemento para capas estructurales de carretera. Por otro lado, la producción de energía eléctrica a partir de centrales termoeléctricas que emplean biomasa como combustible, origina principalmente dos residuos: Cenizas de fondo (CF) formadas por el material total o parcialmente quemado y cenizas volantes (CV), partículas arrastradas por la corriente de gases al exterior de la cámara de combustión. En el desarrollo de este trabajo, se evaluó en una primera etapa, el comportamiento físico, químico y mecánico de diferentes mezclas de materiales granulares reciclados tratados con cemento, con diferentes contenidos de sulfato y de esta manera poder establecer protocolos de aplicación en la fabricación de suelocemento. Posteriormente, se analizo la viabilidad técnica de las cenizas de fondo de biomasa de varias plantas de energía andaluzas y de esta manera, evaluar su potencial uso en obras de infraestructura civil. Se determinó que las cenizas de fondo biomasa poseen propiedades aceptables para ser utilizados como un material de relleno en el núcleo de terraplenes de carreteras de más de 5 m en altura sin medidas de precaución adicionales. Por último, se estudio la posibilidad de incorporar, en proporciones determinadas, cenizas de fondo de biomasa en diferentes mezclas con árido natural y árido reciclado para su uso en ingeniería civil, concretamente como suelocemento para base y subbase de carreteras. El análisis de las propiedades mecánicas fue muy positivo. Las características físicas, químicas y mecánicas han sido estudiadas de acuerdo a la normativa vigente, y los parámetros han sido comparados con las especificaciones técnicas impuestas por la regulación española. La concepción del residuo como recurso para incorporarlo de nuevo al sistema productivo es un reto clave y una obligación y la principal motivación para el desarrollo de la presente Tesis Doctoral. Por ello, la correcta gestión de estos subproductos industriales, es esencial para evitar los impactos negativos sobre los ecosistemas, la biodiversidad y la salud humana, sin olvidar el beneficio económico que supone esta práctica.
