El objetivo del presente trabajo es desarrollar el plan de empresa para Condimentos Natusazón en el ámbito de mercadeo, producción y calidad, organización y gestión, jurídico tributario y financiero. Natusazón es una fábrica de condimentos y especias naturales sin conservantes ni aditivos artificiales que centrará sus operaciones en el municipio de Barbosa ubicado en la provincia de Vélez en el departamento de Santander, la cual se encuentra compuesta por 20 municipios. Los productos se distribuirán en las plazas de mercado de los principales 12 municipios de la provincia, teniendo en cuenta que el 100% de estos cuenta con al menos una plaza de mercado y actualmente no hay ninguna empresa que distribuya productos similares y haga presencia en estos lugares. El tamaño de mercado para el rubro otros condimentos dentro del pocket share colombiano para el mes de junio de 2012 en el departamento de Santander fue de $3.389.902.790 lo cual equivale al 3% del total consumido mensual a nivel nacional, de los cuales Condimentos Natusazón quiere llegar a abarcar a lo largo de su actividad comercial cerca del 1% del tamaño de mercado, lo cual equivale a $33.899.027 mensuales. Por último, teniendo en cuenta algunos estudios realizados por el Centro de Innovación de Alimentos y la Cámara de Comercio sobre las tendencias de consumo en Colombia, así como la investigación realizada por el equipo emprendedor, se puede decir que Condimentos Natusazón tiene una potencial oportunidad de negocio en el mercado santandereano.

Filmes matriciais foram preparados com fármacos com diferentes solubilidades aquosas (tartarato de metoprolol, ibuprofeno e diclofenac Na) e diferentes polímeros (etilcelulose, Eudragit RS e Eudragit RL). Foram obtidas soluções sólidas (fármaco dissolvido) e dispersões sólidas (fármaco disperso). A libertação dos fármacos foi estudada em função do tipo de fármaco, doseamento, tipo e quantidade de aditivo e do tipo de polímero. A libertação dos fármacos não foi de acordo com a sua solubilidade aquosa, mas sim com o estado físico do fármaco na matriz. O incremento do conteúdo do fármaco na matriz aumentou a velocidade de libertação monotonicamente para a solução sólida. Em contraste, com a dispersão sólida, o aumento da dosagem de fármaco não originou quase nenhum efeito até 30 %, registando-se apenas, posteriormente, um acréscimo na sua velocidade. A inclusão de aditivos hidrofílicos aumentou principalmente a fase inicial do perfil de libertação do fármaco e não produziu efeito no plateau. Por outro lado, polietilenoglicol 1500 diminuiu a libertação de diclofenac Na devido ao aprisionamento do fármaco nos seus domínios. O efeito do tipo de polímero na libertação de ibuprofeno esteve relacionado com a partição do fármaco com o polímero. No caso do tartarato de metoprolol, a libertação foi muito mais rápida do da matriz de Eudragit RS do que de EC, devido à formação de uma mistura amorfa.

As tetraciclinas são compostos antibacterianos utilizados em bovinos de leite para tratamento de doenças infecciosas, como a mastite, mas também como aditivos em ração animal. O uso das tetraciclinas pode conduzir à presença de resíduos destes fármacos no leite, principalmente se não forem utilizados de acordo com as indicações, nem respeitado o período mínimo de eliminação dos antibióticos pelo leite. A presença de resíduos de antibióticos no leite interfere no processo industrial dos seus derivados, podendo inviabilizar a produção destes e, consequentemente, causar igualmente prejuízos económicos, como por exemplo, pela inibição de fermentos lácticos que são culturas de microorganismos utilizados na produção de iogurtes, queijos e outros produtos lácteos. Os resíduos de antibióticos no leite de consumo podem representar riscos à saúde humana, podendo causar reacções alérgicas em indivíduos sensíveis ou ter um efeito adverso na flora intestinal humana, prejudicando a sua acção protectora local, além de propiciar a selecção de populações bacterianas resistentes.(Denobile & Nascimento, 2004)

This review article addresses recent advances in the analysis of foods and food components by capillary electrophoresis (CE). CE has found application to a number of important areas of food analysis, including quantitative chemical analysis of food additives, biochemical analysis of protein composition, and others. The speed, resolution and simplicity of CE, combined with low operating costs, make the technique an attractive option for the development of improved methods of food analysis for the new millennium.

A rapid capillary electrophoresis method was developed simultaneously to determine artificial sweeteners, preservatives and colours used as additives in carbonated soft drinks. Resolution between all additives occurring together in soft drinks was successfully achieved within a 15-min run-time by employing the micellar electrokinetic chromatography mode with a 20 mM carbonate buffer at pH 9.5 as the aqueous phase and 62 mM sodium dodecyl sulfate as the micellar phase. By using a diode-array detector to monitor the UV-visible range (190-600 nm), the identity of sample components, suggested by migration time, could be confirmed by spectral matching relative to standards.

This paper considers the various complex changes that occur to nitrogen (N) containing compounds in forages through the processes of ensiling, rumen degradation and microbial synthesis, post-ruminal digestion and absorption and synthesis into milk protein. Particular emphasis is placed on reviewing recent data on the efficiency of utilisation of N-containing compounds in silages by rumen microbes, since low efficiency here is believed to be a major cause of large N losses to the environment on some silage-based diets. Data are reviewed which show that although rumen degradation of N compounds in silage is rapid and extensive, up to 10% of the soluble N can escape the rumen by being associated with the liquid phase. There is now firm evidence that the composition of the amino acids (AAs) absorbed is heavily dependent on the process of ensiling and that witting or use of certain silage additives conserve the initial amino acid profile of the forage. This provides an opportunity to manipulate the amino acid supply to better match demand thus potentially enhancing utilisation. This review confirms that utilisation of the N fractions in grass and legume silages in particular, is poor and the efficiency of microbial protein synthesis (EMPS) is consistently higher on maize silage-based diets. It is concluded that the way in which grass and legume silages in particular are produced and used in the future needs a radical rethink. New research needs to be aimed at enhancing the utilisation of N in the rumen through a better understanding of N/carbohydrate relationships and the ability of forages to supply degraded carbohydrate. Also more emphasis is needed on understanding of the potentially different role of the different N fractions that exist in silages. (C) 2004 Elsevier B.V. All rights reserved.

The synthesis of new Cu-VOx nanotubes has been achieved by exchanging a Cu(II) salt against the protonated template in the parent dodecylamine-VOx nanotubes. The intercalation of Cu(II) species induces some significant morphological and structural changes within the material, but the tubular shape is still well preserved. Controlled thermolysis under nitrogen of the Cu(II) species initially dispersed within the multiwalls induces the growth and sintering of copper nanoparticles, which are formed without destroying the tubular morphology of the host carrier. Many different reagents and methodologies have been utilised for the modification of synthetic and biological macromolecular systems. In addition, an area of intense research at present is the construction of hybrid biosynthetic polymers, comprised of biologically active species immobilised or complexed with synthetic polymers. One of the most useful and widely applicable techniques available for functionalisation of macromolecular systems involves indiscriminate carbene insertion processes. The highly reactive and non-specific nature of carbenes has enabled a multitude of macromolecular structures to be functionalised without the need for specialised reagents or additives. The use of diazirines as stable carbene precursors has increased dramatically over the past twenty years and these reagents are fast becoming the most popular photophors for photoaffinity labelling and biological applications in which covalent modification of macromolecular structures is the basis to understanding structure-activity relationships. This review reports the synthesis and application of a diverse range of diazirines in macromolecular systems.

It is generally thought that catalysts produced by incipient wetness impregnation (IW) are very poor for low temperature CO oxidation, and that it is necessary to use methods such as deposition-precipitation (DP) to make high activity materials. The former is true, indeed such IW catalysts are poor, and we present reactor data, XPS and TEM analysis which show that this is due to the very negative effect of the chloride anion involved in the preparation, which results in poisoning and excessive sintering of the Au particles. With the DP method, the chloride is largely removed during the preparation and so poisoning and sintering are avoided. However, we show here that, contrary to previous considerations, high activity catalysts can indeed be prepared by the incipient wetness method, if care is taken to remove the chloride ion during the process. This is achieved by using the double impregnation method (DIM). In this a double impregnation of chloroauric acid and a base are made to precipitate out gold hydroxide within the pores of the catalyst, followed by limited washing. This results in a much more active catalyst, which is active for CO oxidation at ambient temperature. The results for DIM and DP are compared, and it is proposed that the DIM method may represent an environmentally and economically more favorable route to high activity gold catalyst production. Synthesis of well-defined nanoparticles has been intensively pursued not only for their fundamental scientific interest, but also for many technological applications. One important development of the nanomaterial is in the area of chemical catalysis. We have now developed a new aqueous-based method for the synthesis of silica encapsulated noble metal nanoparticles in controlled dimensions. Thus, colloid stable silica encapsulated similar to 5 nm platinum nanoparticle is synthesized by a multi-step method. The thickness of the silica coating could be controlled using a different amount of silica precursor. These particles supported on a high surface area alumina are also demonstrated to display a superior hydrogenation activity and stability against metal sintering after thermal activation.

Self-assembly of monodisperse, silica-encapsulated, face-centered tetragonal FePt nanoparticles forms closely packed 2D arrays (see figure). Placing monodisperse FePt nanoparticles in silica nanocapsules allows the transition from a disordered face-centered cubic phase to a ferromagnetic crystalline face-centered tetragonal structure at elevated temperature without severe sintering. These materials are potential candidates for the generation of ultrahigh-density magnetic recording media.

We have studied 'food grade' sialyloligosaccharides (SOS) as anti-adhesive drugs or receptor analogues, since the terminal sialic acid residue has already been shown to contribute significantly to the adhesion and pathogenesis of the Vibrio cholerae toxin (Ctx). GM1-oligosaccharide (GM1-OS) was immobilized into a supporting POPC lipid bilayer onto a surface plasmon resonance (SPR) chip, and the interaction between uninhibited Ctx and GM1-OS-POPC was measured. SOS inhibited 94.7% of the Ctx binding to GM1-OS-POPC at 10 mg/mL. The SOS EC50 value of 5.521 mg/mL is high compared with 0.2811 mu g/mL (182.5 pM or 1.825 x 10(-10) M) for GM1-OS. The commercially available sialyloligosaccharide (SOS) mixture Sunsial E (R) is impure, containing one monosialylated and two disialylated oligosaccharides in the ratio 9.6%. 6.5% and 17.5%, respectively, and 66.4% protein. However, these inexpensive food-grade molecules are derived from egg yolk and could be used to fortify conventional food additives, by way of emulsifiers, sweeteners and/or preservatives. The work further supports our hypothesis that SOS could be a promising natural anti-adhesive glycomimetic against Ctx and prevent subsequent onset of disease. (C) 2009 Elsevier Ltd. Consumers increasingly demand convenience foods of the highest quality in terms of natural flavor and taste, and which are freedom additives and preservatives. This demand has triggered the need for the development of a number of nonthermal approaches to food processing, of which high-pressure technology has proven to be very valuable. A number of recent publications have demonstrated novel and diverse uses of this technology. Its novel features, which include destruction of microorganisms at room temperature or lower, have made the technology commerically attractive. Enzymes forming bacteria can be by the application of pressure-thermal combinations. This review aims to identify the opportunities and challenges associated with this technology. In addition to discussing the effects of high pressure on food components, this review covers the combined effects of high pressure processing with: gamma irradiation, alternating current, ultrasound, and carbon dioxide or anti-microbial treatment. Further, the applications of this technology in various sectors-fruits and vegetables, dairy and meat processing-have been dealt with extensively. The integration of high-pressure with other matured processing operations such as blanching, dehydration, osmotic dehydration, rehyrdration, frying, freezing/thawing and solid-liquid extraction has been shown to open up new processing options. The key challenges identified include: heat transfer problems and resulting non-uniformity in processing, obtaining reliable and reproducible data, for process validation, lack of detailed knowledge about the interaction between high pressure, and a number of food constituents, packaging and statutory issues.

A mixture of organic acids and lactulose for preventing or reducing colonization of the gut by Salmonella Typhimurium was evaluated in pigs. A total of 63 4-week-old commercial piglets were randomly distributed into three different experimental dietary groups: a plain diet without additives (PD) and the same diet supplemented with either 0.4% (w/v) formic acid and 0.4% lactic acid (w/v) (AC) or 1% (w/v) lactulose (LC). After 7 days of adaptation, two-thirds of the pigs (14 from each diet) were challenged with a 2-mL oral dose of 10(8) CFU/mL of Salmonella Typhimurium, leaving the remaining animals unchallenged (UC). After 4 and 10 days post-challenge, pigs were euthanized and the ileum and caecum content were aseptically sampled to (a) quantify lactic, formic, and short-chain fatty acids (SCFA), (b) quantify bacterial populations and Salmonella by fluorescence in situ hybridization and (c) qualitatively analyse bacterial populations through denaturing gradient gel electrophoresis (DGGE). Modification of fermentation products and counts of some of the bacterial groups analysed in the challenged pigs receiving the treatments AC and LC were minimal. Treatments only influenced the bacterial diversity after 10 days post-challenge, with AC generating a lower number of DGGE bands than UC(P < 0.05). Neither the inclusion of a mixture of 0.4% (w/v) formic and 0.4% (w/v) lactic acids nor of 1% (w/v) lactulose in the feed influenced numbers of Salmonella in the ileum and caecum of experimentally challenged pigs. Virgin olive oil is valued for its flavor, but unacceptable off-flavors may develop on storage in food products containing this oil due to oxidation. The oxidative stability of oil-in-water emulsions containing bovine serum albumin (BSA) and virgin olive oil phenolic compounds was studied. Four oil-in-water emulsions with and without BSA and phenols isolated from virgin olive oil were prepared. These model systems were stored at 60 degrees C to speed up lipid oxidation. Primary and secondary oxidation products were monitored every three days. Peroxide values and conjugated diene contents were determined as measures of the primary oxidation products. p-Anisidine values and volatile compounds were determined as measures of the secondary oxidation products. This latter determination was carried out by headspace solid-phase microextraction coupled with gas chromatography. Although olive oil phenolic compounds and BSA contributed some antioxidant activity when present as individual additives, the combination of BSA with phenols in an emulsion showed 58-127% synergy, depending on which analytical method was used in the calculation. The emulsion containing phenolic compounds and BSA showed a low level of deterioration after 45 days of storage at 60 degrees C.
