In the 1980s, the American meat industry began restructuring both its domestic production methods and the distribution of its processing facilities. Many meat and poultry processing facilities have since been relocated into small rural communities. The red meat industry was once highly-paid and unionized, but now work in both meat and poultry processing is a dangerous, low-paid manufacturing job, heavily reliant on immigrant workers who must turn to local social services to supplement their wages and benefits. In an attempt to discover the manner in which the social relations of a specific locale may be enmeshed with global production, this research explored perceptions of social power and alliances after a rural community became host to a foreign workforce employed by the local poultry processing plant. On-site semi-structured interviews were conducted with sixteen local residents, and a content analysis of the community newspaper was undertaken. ^ The research found that as new production relations were inserted into the community, the society continued to reproduce and social relations remained relatively unchanged. The community's cultural standards and social infrastructure dictate that residents are respectful of authority, extend Christian charity to those less fortunate, and are generally accepting of a community known for low wages, low taxation, and low standards of education. Hegemonic ideologies seem to dictate the goals and beneficiaries of social power, and residents are unable to name any power vectors even in the face of sustained community support of, for example, the company that introduced the immigrant labor into the community. While there are indications of displeasure with the influx of immigrants appearing in the newspaper and the interviews, there are tangible examples that the community was proactive in welcoming the immigrants into their community. Thus, given that the last time elements of the community united around an issue was in the mid-1970s and no other issue has evoked any type of tangible struggle since then, there is no indication that any social alliances will be formed in reaction to changes in the community wrought by the globalization of its economy. ^

Les progrès technologiques dans l’industrie de la viande ont des répercussions considérables sur les agents pathogènes de ces environnements. Parmi ceux-ci, Streptococcus suis occupe une place prédominante dans l’industrie porcine. En effet, S. suis, colonisateur naturel des voies respiratoires et digestives du porc, peut infecter son hôte en provoquant des méningites, septicémies, endocardites, arthrites ou pneumonies. De surcroît, S. suis peut également infecter l’humain en provoquant majoritairement des méningites et septicémies, et a notamment été la cause de deux épidémies en Chine en 1998 et 2005. La pathogenèse des infections à S. suis demeure partiellement connue à l’heure actuelle, rendant difficile le contrôle des infections. Il est par conséquent essentiel de caractériser les facteurs de virulence chez S. suis puisqu’ils pourraient représenter des cibles d’intérêt pour des applications préventives ou thérapeutiques. Ce projet de doctorat consiste donc en la caractérisation fonctionnelle de facteurs de virulence chez S. suis. Dans un premier temps, la capacité de S. suis à moduler son potentiel pro-inflammatoire en présence de concentrations sous-inhibitrices d’amoxicilline a été mise en évidence. Dans un second temps, la caractérisation plus avancée de la hyaluronate lyase de S. suis a permis de démontrer que son activité ne contribue pas à la virulence de la bactérie étant donné son absence au sein de souches les plus virulentes, mais que les interactions avec l’acide hyaluronique pourraient moduler la virulence de S. suis. Par la suite, l’étude fonctionnelle d’une DNase de S. suis a permis de démontrer son implication comme facteur de virulence et suggère son intérêt dans le développement de vaccins. Finalement, le dernier objectif du projet a permis la mise en évidence de la production de microvésicules fortement immunogéniques par S. suis. La présence de facteurs de virulence dans leur contenu protéique représente un élément encourageant dans le développement de vaccins contre l’agent pathogène. Ce projet a donc permis d’élargir les connaissances sur le potentiel néfaste de l’utilisation des antibiotiques à faible concentration dans l’industrie porcine, sur le rôle des activités hyaluronate lyase et DNase dans la virulence de S. suis, et de découvrir un nouveau mécanisme impliqué dans la virulence de la bactérie par le biais des microvésicules.

Jerked beef, an industrial meat product obtained from beef with the addition of sodium chloride and curing salts and subjected to a maturing and drying process is a typical Brazilian product which has been gradually discovered by the consumer. The replacement of synthetic antioxidants by natural substances with antioxidant potential due to possible side effects discovered by lab tests, consumer health, is being implemented by the meat industry. This study aimed to evaluate the lipid oxidation of jerked beef throughout the storage period by replacing the sodium nitrite by natural extracts of propolis and Yerba Mate. For jerked beef processing brisket was used as raw material processed in 6 different formulations: formulation 1 (control - in nature), formulation 2 (sodium nitrite - NO), formulation 3 (Yerba Mate - EM), formulation 4 (propolis extract - PRO), formulation 5 (sodium nitrite + Yerba Mate - MS + NO), formulation 6 (propolis extract + sodium nitrite - PRO + NO). The raw material was subjected to wet salting, dry salting (tombos), drying at 25°C, packaging and storage in BOD 25°C. Samples of each formulation were taken every 7 days for analysis of lipid oxidation by the TBARS method. In all formulations, were carried out analysis of chemical composition at time zero and sixty days of storage. The water activity analysis and color (L *, a *, b *) was monitored at time zero, thirty and sixty days of storage. The Salmonella spp count, Coliform bacteria, Termotolerant coliforms and coagulase positive staphylococci were taken at time zero and sixty days. The activity of natural antioxidants evaluated shows the decline of lipid oxidation up to 2.5 times compared with the product in natura and presented values with no significant differences between treatments NO and EM, confirming the potential in minimize lipid oxidation of Jerked beef throughout the 60 days of storage. The results also showed that yerba mate has a higher antioxidant capacity compared to the propolis except the PRO + NO formulation. When associated with yerba mate with sodium nitrate, TBARS values become close to values obtained only for the control samples with the addition of sodium nitrite. The proximal composition of the formulations remained within the standards required in the IN nº22/2000 for jerked beef. Samples that differ significantly at 5% are directly related to the established type of formulation. The count of microorganisms was within the standards of the DRC nº12/2001 required for matured meat products. The intensity of the red (a*) decreased with storage time and increase the intensity of yellow (b*) indicates a darkening of the product despite L* also have been increased. These results suggest that yerba mate is a good alternative to meat industry in reducing healing addition salts when associated with another antioxidant.

A indústria de aves brasileira destaca-se economicamente, onde um total de 12,3 milhões de toneladas foi produzido no país em 2013. Esta produção em larga escala gera considerável volume de subprodutos, chegando até 35% da ave viva. Tais resíduos são convertidos, por processos tradicionais, em produtos de baixo valor comercial, como por exemplo, farinhas. O processo de variação de pH constitui um importante processo alternativo de obtenção de proteínas com melhores características funcionais e nutricionais. Estudar as variáveis do processo, efetuando aumento dimensional, é fundamental para aplicação das tecnologias desenvolvidas no laboratório e posterior definição final de processos industriais. A produção de isolados proteicos seria uma tecnologia atraente no aproveitamento de subprodutos da indústria de frango, convertendo-os em uma ótima fonte proteica, agregando valor ao produto obtido. Este trabalho teve por objetivo produzir isolados proteicos em diferentes escalas, utilizando subprodutos não comestíveis da indústria de frango. Foi estudada a solubilização das proteínas da matéria-prima (MP) para definir pHs de solubilização e de precipitação isoelétrica. A curva apontou um pH alcalino de 11,0 para etapa de solubilização e de 5,25 para etapa de precipitação proteica. As proteínas obtidas foram caracterizadas quanto sua composição proximal, índice de acidez (IA), índice de peróxidos (IP) e substâncias reativas ao ácido tiobarbitúrico (TBARS) além de propriedades funcionais de solubilidade, capacidade de retenção de água (CRA) e capacidade de retenção de óleo (CRO); e nutricionais de digestibilidade proteica. Comparativamente foram analisadas farinhas de vísceras comerciais nos mesmos parâmetros. Um aumento de escala do processo foi realizado e avaliado pelas mesmas respostas do produto da escala laboratorial. Foi obtido um teor proteico de 82 e 85% em escala laboratorial e aumento de escala, respectivamente, e também uma redução lipídica de 75%, e de cinzas de 85%, em relação à MP. A composição proximal das farinhas analisadas ficou entre 67-72% para proteína bruta, 17-22% para lipídios e 9-15% para cinzas. O IA, apresentou valores de 2,2 e 3,1 meq/g de isolado e de 1,6 a 2,0 meq/g de farinha. Já para IP, obteve-se valores de 0,003 a 0,005 meq/g de isolado e de 0,002 a 0,049 meq/g de farinha. Os índices de TBARS apontaram valores de 0,081 e 0,214 mg MA/g de isolado e 0,041 a 0,128 mg MA/g de farinha. A solubilidade das proteínas do isolado apontou 84 e 81% em pH 3 e 11 respectivamente e de 5% em pH 5, já para farinhas variaram de 22 a 31% em pH de 3 a 11. A CRA obtida no isolado foi 3,1 a 16,5 g água/g de proteína e de 3,8 a 10,9 g água/g de proteína nas farinhas. A CRO ficou em 4,2 mL de óleo/g de proteína do isolados e 2,6 mL de óleo/g de proteína da farinhas. Os isolados proteicos apresentaram 92 e 95% de digestibilidade das proteínas, em comparação aos 84% das farinhas comerciais. Os índices acumulados e apresentados neste trabalho concluíram que foi possível aumentar a escala do processo de variação de pH, sem perder qualidade nos índices físico-químicos e de digestibilidade proteica.

Wet litter in meat chicken sheds occurs as the result of multiple, interrelated causes. This paper discusses some of the sources of water in meat chicken sheds, the properties of litter and the contribution of the shed micro-environment. By increasing awareness of the factors associated with wet litter, it will empower the chicken meat industry with knowledge to identify causes and address local incidences through improved litter management. In general, wet litter will be caused by excess water going into the litter, insufficient evaporation and/or limited water holding capability of the litter. Some strategies to improve the effectiveness of ventilation to maintain litter dryness are discussed

Odour impacts and concerns are an impediment to the growth of the Australian chicken meat industry. To manage these, the industry has to be able to demonstrate the efficacy of its odour reduction strategies scientifically and defensibly; however, it currently lacks reliable, cost effective and objective tools to do so. This report describes the development of an artificial olfaction system (AOS) to measure meat chicken farm odour. This report describes the market research undertaken to determine the demand for such a tool, the development and evaluation of three AOS prototypes, data analysis and odour prediction modelling, and the development of two complementary odour measurement tools, namely, a volatile organic compound (VOC) pre-concentrator and a field olfactometer. This report is aimed at investors in poultry odour research and those charged with, or interested in, assessment of odour on chicken farms, including farm managers, integrators, their consultants, regulators and researchers. The findings will influence the focus of future environmental odour measurement research.
