This study was conducted to assess the effect of air-dried Moringa stenopetala leaf (MSL) supplementation on carcass components and meat quality in Arsi-Bale goats. A total of 24 yearling goats with initial body weight of 13.6+/-0.25 kg were randomly divided into four treatments with six goats each. All goats received a basal diet of natural grass hay ad libitum and 340 g head^(−1) d^(−1) concentrate. The treatment diets contain a control diet without supplementation (T1) and diets supplemented with MSL at a rate of 120 g head^(−1) d^(−1) (T2), 170 g head^(−1) d^(−1) (T3) and 220 g head^(−1) d^(−1) (T4). The results indicated that the average slaughter weight of goats reared on T3 and T4 was 18.2 and 18.3 kg, respectively, being (P<0.05) higher than those of T1 (15.8 kg) and T2 (16.5 kg). Goats fed on T3 and T4 diets had higher (P<0.05) daily weight gain compared with those of T1 and T2. The hot carcass weight in goats reared on T3 and T4 diets was 6.40 and 7.30 kg, respectively, being (P<0.05) higher than those of T1 (4.81 kg) and T2 (5.06 kg). Goats reared on T4 had higher (P<0.05) dressing percentage than those reared in other treatment diets. The rib-eye area in goats reared on T2, T3 and T4 diets was higher (P<0.05) than those of T1. The protein content of the meat in goats reared on T3 and T4 was 24.0 and 26.4%, respectively being significantly higher than those of T1 (19.1%) and T2 (20.1%). In conclusion, the supplementation of MSL to natural grass hay improved the weight gain and carcass parts of Arsi-Bale goats indicating Moringa leaves as alternative protein supplements to poor quality forages.

The effects of supplementing diets with n-3 alpha-linolenic acid (ALA) and docosahexaenoic acid (DHA) on plasma metabolites, carcass yield, muscle n-3 fatty acids and liver messenger RNA (mRNA) in lambs were investigated. Lambs (n = 120) were stratified to 12 groups based on body weight (35 ± 3.1 kg), and within groups randomly allocated to four dietary treatments: basal diet (BAS), BAS with 10.7 % flaxseed supplement (Flax), BAS with 1.8 % algae supplement (DHA), BAS with Flax and DHA (FlaxDHA). Lambs were fed for 56 days. Blood samples were collected on day 0 and day 56, and plasma analysed for insulin and lipids. Lambs were slaughtered, and carcass traits measured. At 30 min and 24 h, liver and muscle samples, respectively, were collected for determination of mRNA (FADS1, FADS2, CPT1A, ACOX1) and fatty acid composition. Lambs fed Flax had higher plasma triacylglycerol, body weight, body fat and carcass yield compared with the BAS group (P < 0.001). DHA supplementation increased carcass yield and muscle DHA while lowering plasma insulin compared with the BAS diet (P < 0.01). Flax treatment increased (P < 0.001) muscle ALA concentration, while DHA treatment increased (P < 0.001) muscle DHA concentration. Liver mRNA FADS2 was higher and CPT1A lower in the DHA group (P < 0.05). The FlaxDHA diet had additive effects, including higher FADS1 and ACOX1 mRNA than for the Flax or DHA diet. In summary, supplementation with ALA or DHA modulated plasma metabolites, muscle DHA, body fat and liver gene expression differently.

Background The ghrelin axis is involved in the regulation of metabolism, energy balance, and the immune, cardiovascular and reproductive systems. The manipulation of this axis has potential for improving economically valuable traits in production animals, and polymorphisms in the ghrelin (GHRL) and ghrelin receptor (GHSR) genes have been associated with growth and carcass traits. Here we investigate the structure and expression of the ghrelin gene (GHRL) in sheep, Ovis aries. Results We identify two ghrelin mRNA isoforms, which we have designated Δex2 preproghrelin and Δex2,3 preproghrelin. Expression of Δex2,3 preproghrelin is likely to be restricted to ruminants, and would encode truncated ghrelin and a novel C-terminal peptide. Both Δex2 preproghrelin and canonical preproghrelin mRNA isoforms were expressed in a range of tissues. Expression of the Δex2,3 preproghrelin isoform, however, was restricted to white blood cells (WBC; where the wild-type preproghrelin isoform is not co-expressed), and gastrointestinal tissues. Expression of Δex2 preproghrelin and Δex2,3 preproghrelin mRNA was elevated in white blood cells in response to parasitic worm (helminth) infection in genetically susceptible sheep, but not in resistant sheep. Conclusions The restricted expression of the novel preproghrelin variants and their distinct WBC expression pattern during parasite infection may indicate a novel link between the ghrelin axis and metabolic and immune function in ruminants.

This study was designed to compare the quality of veal produced from ‘Tudanca x Charolais’ cross (n=6) and Limousin (n=6) breeds when allowed to feed freely on mountain pastures and suckle naturally from birth to 7 months of age. After 80 days of age calves also had access to concentrate (maximum of 3 Kg/day), while mothers did not. At slaughter, Limousin calves were heavier (P<0.01) and provided better carcass yield (P<0.05) and conformation (P<0.001) than Tudanca calves. Tudanca beef provided higher fat content (P<0.05) was less tough (P<0.05), and was scored as more tender and juicy (P<0.1) with higher acceptability than Limousin beef (P<0.1). In general, Tudanca had a better fatty acid profile than Limousin beef, especially in terms of the content of polyunsaturated (P<0.05), long-chain polyunsaturated fatty acids (P<0.05) and their n-6/n-3 ratios (P<0.1), as well as vaccenic acid (P<0.1) and the overall trans-18:1 isomer profile.

Objetivou-se estudar as características quantitativas da carcaça de 36 bubalinos (12 Murrah 12 Jafarabadi e 12 Mediterrâneo), com idade média de 18 meses e peso vivo inicial de 330 kg, terminados em confinamento. Os 12 animais de cada grupo genético foram divididos aleatoriamente em três subgrupos de quatro animais e submetidos aos seguintes tratamentos: Maturidade 1: 400 kg PV ao abate; Maturidade 2: 450 kg PV ao abate; Maturidade 3: 500 kg PV ao abate. Durante o experimento, uma ração única, em que 50% da MS foi composta por volumoso, foi fornecida, ad libitum, para todos os animais. Após os abates pré-fixados, determinou-se o peso corporal vazio (PCVZ) dos animais pelo somatório das partes integrantes do corpo. Não houve diferença entre grupos genéticos e maturidades, em relação à porcentagem dos cortes dianteiro, paleta, traseiro total e alcatra completa. O rendimento de traseiro especial foi maior nos animais abatidos aos 400 kg PV e menor naqueles com 500 kg PV, enquanto o dos animais com 450 kg PV não diferiu dos demais. O rendimento de ponta-de-agulha, por sua vez, foi maior nos animais com 500 kg PV e menor nos com 400 kg PV. Os valores observados nesses dois pesos de abate não diferiram do obtido nos animais com 450 kg. A produção de carne a partir das raças Murrah, Jafarabadi e Mediterrâneo criadas no Brasil não difere quanto aos rendimentos de carcaça, traseiro, dianteiro e dos principais cortes básicos de interesse comercial.

The objective of the present study was to evaluate the effects of different dietary energy levels and stocking densities on the thermoregulating parameters, live performance, and carcass traits of broilers reared under tropical winter conditions at different times of the day. In total, 1,312 one-d-old male broilers were used. Birds were allotted to three different stocking densities (10, 14 or 18 birds/m²) and two dietary energy levels (2900 or 3200 kcal ME/kg). The following parameters were evaluated:radiant heat load (RHL), rectal temperature (RT), feed intake (FI), weight gain (WG), feed conversion ratio (FCR), livability (L), production of live weight per area (WA), and carcass yield. Stocking density did not affect sensible heat loss (SRL) or rectal temperature (RT); however, as expected, sensible heat loss (SRL) and RT were influenced by time of the day, with higher values in the morning and in the afternoon, respectively. There was no effect of treatment (p>0.05) on carcass or parts yield. Feed intake was reduced in 3%, whereas weight gain and feed conversion ratio improved in 8 and 10%, respectively, as dietary energy level increased. on the other hand, stocking density did not influence live performance or carcass traits. Based on the present results, it is concluded that sensible heat loss depends on dietary energy levels and particularly on time of the day. Therefore, environmental house management is suggested during tropical winters in order to reduce differences between broiler skin and environmental temperatures in the morning and in the afternoon.

Fifty six crossbred kids Parda Alpina x Gurgueia were separeted into four groups of 14 (seven male and seven female) and submited to four treatments with different levels of milk goat substitution by cheese serum. The treatments were : T1=milk goat (testify); T2=15% serum at 23 days and 33% at 55 days; T3=15% serum starting from 16 days, 33% on 23 days and 51% on 72 days of age; and T4=33% on 16 days and 69% of liquid diet in the final fase. At 92 days of age, all animals were slaughtered for carcass evaluation. Pallete were separeted from 20 male animals (five by treatment) and the physical and chemical analysis of the meat were realized using these materials. The studied characteristics were: total weight (TW), meat weight (MW), bone weigth (BW) of the pallete, and percentage of umidity (U), ashes (A), protein (P), fat (F) and pH of the pallete meat. There was significant effect of the treatment over F. Means of PW, A and BW were, respectively 491, 342 and 149.8 g. The meal represented 69,6% of total pallete weight. Means of U, A, P and F were 73, 1.0, 19 and 1.95%, respectively. The pH was 6.7. Results allow to conclude that only the fat percentage of the meat was modified, due to the administration of serun milk on the liquid diet of the kids, during the milking fase.

Para estudar o efeito da suplementação da dieta sobre o desempenho de novilhas na fase de terminação mantidas em pastagem de capim-marandu sob lotação intermitente, durante a estação chuvosa, foram utilizadas 20 novilhas cruzadas (¼ Nelore, ¼ Santa Gertrudes, ½ Braunvieh) com peso corporal médio de 300 kg e 22 meses de idade. Os tratamentos constituíram-se de dois tipos de suplementação: sal mineral (SM) ad libtum e suplemento protéico energético (SPE) fornecido a 0,3% do peso corporal (PC) por dia com avaliações realizadas a cada 28 dias, no período entre dezembro de 2006 e março de 2007 Foram avaliados o desempenho animal e as características de carcaça medidas por ultrassom. Observou-se o efeito (P=0,057) da suplementação sobre o ganho de peso dos animais suplementados, 0,700 kg/dia e 0,587 kg/dia dos animais que receberam sal-mineral. Houve efeito da suplementação na área de olho de lombo e profundidade do músculo Gluteus medius. As demais características analisadas pela técnica de ultrassom não diferiram entre si em função da suplementação. A suplementação protéica energética da dieta permite ganhos adicionais, o que reflete em aumento da deposição de músculo de novilhas mantidas em pastagem de capim-marandu durante o período das águas.

Foi realizado um experimento utilizando-se 468 fêmeas, com peso inicial de 84,77 ± 7,20 kg, alojadas em 36 baias, para avaliar os efeitos da adição de ractopamina nas dietas sobre o desempenho, as características e os rendimentos de cortes comerciais da carcaça, a composição e os cortes cárneos do pernil. O desenho experimental usado foi o de blocos ao acaso com quatro níveis de ractopamina (0, 5, 10 e 15 mg/kg de dieta) e nove repetições com 13 animais por unidade experimental. O critério para formação dos blocos foi o peso inicial dos animais. Não foram observados efeitos dos níveis de ractopamina sobre o ganho de peso diário dos animais. O consumo diário de ração apresentou redução linear com o aumento do nível de ractopamina nas dietas. A conversão alimentar dos animais melhorou de forma linear com a inclusão de ractopamina na dieta dos animais. Verificaram-se também diferenças significativas na proporção de gordura e carne na carcaça e nos cortes cárneos. Houve efeito linear decrescente da ractopamina sobre a quantidade e profundidade de gordura e efeito linear crescente sobre a porcentagem de carne magra, de carne no pernil e sobre os pesos de semimembranosus e gluteus medius. Dietas para fêmeas suínas em fase final de terminação devem conter 15 mg de ractopamina por kg.

O objetivo neste estudo foi estimar as correlações genéticas entre escores visuais e características de carcaça medidas por ultrassonografia em bovinos da raça Nelore utilizando a estatística bayesiana por meio da Amostragem de Gibbs, sob modelo animal linear-limiar. Foram estudadas as características categóricas morfológicas de musculosidade, estrutura física, conformação e sacro, avaliadas aos 15 e 22 meses de idade. Para as características de carcaça, foram avaliadas as características área de olho-de-lombo, espessura de gordura subcutânea, espessura de gordura subcutânea na garupa e altura na garupa. Os escores visuais devem ser empregados como critérios de seleção para aumentar o progresso genético para a característica área de olhode-lombo e, consequentemente, melhorar o rendimento de carcaça. As estimativas de correlação genética obtidas para musculosidade com espessura de gordura subcutânea e espessura de gordura subcutânea na garupa indicaram que a seleção para musculosidade pode levar a animais com melhor acabamento de carcaça. A seleção para a estrutura física e conformação aos 15 e 22 meses de idade pode promover resposta correlacionada para o aumento da altura na garupa.
