The objective of this study was evaluate the effects of immunocastration on body weight gain, carcass characteristics and meat quality of Nellore beef cattle. Eighty Nellore beef cattle, with initial body weight of 357 +/- 8.63 kg, were placed in feedlots and distributed in two treatments (40 animals per treatments) as follow: one - non-vaccinated bulls and two - immunocastrated bulls (Bopriva (R), Pfizer Animal Health). The animals placed on treatment two were vaccinated in two doses, first application 30 days before they arrive on the feedlots and second on the day they arrive on feedlots. After 67 days of experimental period, was calculated the daily gain of live weight in kg/day of the 80 animals and selected 20 animals from each treatment for the slaughter and carcass evaluations, and ten from each group for the meat analyzes. The data were submitted to analysis of variance. Immunocastrated animals showed lower daily weight gain, hot carcass weight, carcass yield, pH, leg thickness, muscle depth, loin muscle area, carcass muscle percentage, shear force and moisture. However, this animals had higher concentration of lactate and cortisol blood, chest depth, fat thickness, finishing degree, a *, b * and c*, liquid loss in thawing process, myofibrillar fragmentation index and ether extract of meat when compared to non-vaccinated bulss. The immunocastration (Bopriva (R)) is an alternative for improving the quality of meat by the higher fat deposition and by the reduction of the shear force of the meat when compared to non-vaccinated bulls.

Com o objetivo de avaliar as características de carcaça e a alometria dos cortes comerciais e dos tecidos de cabritos F1 Boer × Saanen, 35 animais foram abatidos ao atingirem 5, 10, 15, 20 e 25 kg de peso vivo (PV). A dieta dos animais foi composta de leite de vaca nos primeiros 49 dias e ração à vontade do sétimo dia até o abate. Os cortes foram obtidos após o resfriamento da carcaça e a perna foi dissecada em músculo, osso e gordura. O PV teve efeito linear decrescente no rendimento de carcaça fria e na área de olho-de-lombo por kg de carcaça. Os pesos de perna, paleta e pescoço em relação à carcaça fria decresceram linearmente, mas houve efeito quadrático sobre o rendimento de costelas e lombo. O crescimento de paleta, pescoço e perna foi isométrico (b=1) ao do corpo, enquanto o das costelas e do lombo foi mais lento (b¹ 1). Os músculos da perna cresceram igualmente, a gordura mais lenta e os ossos mais rapidamente que a perna, enquanto o desenvolvimento da gordura subcutânea foi mais tardio que o da intermuscular. Para obtenção de carcaça de 8 a 11 kg com rendimento superior a 44%, boa proporção de músculo e gordura com menor perda durante o resfriamento, recomenda-se abater os animais com PV entre 20 e 25 kg, mas, se o objetivo for carcaça de menor peso, o abate dos animais deve ser feito ao final do aleitamento com aproximadamente 10 kg de peso corporal.

A research has been conducted to investigate the performance of entik as result crossbreed of muscovy and duck as a meat producer. The method using of this research was experimental method. As the base design was Randomized Completely Design with factorial design (2x3x3) that consisted of the first factor was sex (S) comprised : s1=male and s2=female. The second factor was feed from (P) comprised: p1=mush, p2=crumble and p3=Paste, whereas the third factor was slaughtering age (U) that comprised u1=six weeks and u2=eight weeks and u3=ten weeks. The investigated parameters were carcass weight, percentage of meat weight, meat weight of carcass. Result of the research obtained the lowest average of carcass weight for male entik aged 6.8 and 10 weeks respectively was 750.26 g, 1142.69 g, and the highest was 1024.93 g, 1336.08 g, and 760.40 g, 1098 g, 1180.26 g and the highest was 985.28 g, 1378.96 g and 1390.20 g. The lowest average parentage carcass for male entik respectively was 59.63%, 60.14% and 61.76%; the highest was 57.17%, 61.02% and 67.86%. Whereas for the female the lowest was 57.17%, 62.30%, and 61.02% and the highest was 68.99% ,67.59%, and 67.45 %. The average of meat carcass weight for the whole treatment was 733.99±158.23 g with range around 466.15 up to 956.42 g, and the highest average was reached by female entik aged eight weeks who was feeding by mash that was 916.95±39.36 g. The average of meat carcass weight was 64.57±1.35% with the range around 56.66 up to 73.60%. Result of the analysis of variances showed that the interaction factor between the sex, feed form ands slaughtering age affected no significantly (P>0.05) on the carcass weight, percentage of carcass weight, meat carcass weight and the percentage of carcass weight, meat carcass weight and the percentage of meat carcass weight and the percentage of meat carcass weight. Review for each treatment concludes that the sex factor highest effect just only for percentage of meat carcass weight (P<0.01), feed form factor had a high significant effect (P<0.01) on the carcass weight and the meat carcass weight, whereas the slaughtering age factor has a high significant effect linearly (P<0.05) on the percentage of carcass weight. This may concluded that the female entik give the percentage of meat carcass weight more high then the male, feeding by mash form for entik which slaughtering eight weeks old increase the percentage of carcass weight and meat carcass weight. The aim of this study was to compare wild boar (chromosomal number 2n = 36) to phenotypically similar animals of 2n = 37 and 2n = 38 chromosomes (crossbreeds) with respect to live weight, carcass yield, meat yield, fat and weight of inner organs. All animals were born and raised on the same farm and slaughtered at 39 weeks. The final live weight of wild boar 2n = 36 was significantly lower (47.2 kg) as compared to crossbreeds (80.0 kg). Animals 2n = 36 had more carcass yields (65.5%) than 2n = 37 karyotype (64.9%) and 2n = 38 (64.4%). Wild boar had the highest yields for the cuts with bones and boneless cuts compared to crossbreeds. Therefore, variations in karyotype are accompanied by differences in some carcass quantitative traits, i.e., 2n = 36 grow and fatten slower than crossbreeds 2n = 37 and 2n = 38. Four Venda indigenous scavenging (VIS) chickens (one young male and one young female of 10-16 weeks of age, a mature cockerel and a mature hen) were randomly purchased from each of six adjacent rural villages during three different seasons (autumn, winter and spring) to determine the meat yield and carcass chemical composition. A total of 72 chickens were slaughtered and feathers, head, neck, viscera, feet and lungs were removed. The live body weight, dressed carcass weight and also the mass of the breast without wings, thighs and drumsticks were recorded with bones and skin. The muscle tissues of the breast and both legs without tendons and fat were sampled for chemical analysis and were analysed for dry matter, ether extract, crude protein and ash. The carcass weight, dressing %, mass of the breast, mass of the thighs, mass of the drumsticks, breast yield, thighs yield and drumsticks yield of both grower and adult VIS chickens were not influenced by season. The crude protein of the grower chickens breast muscles and fat content of the adult chicken leg muscles differed with season. The meat from VIS chickens provided a constant nutrient (crude protein) supply throughout the year to the rural communities.

This trial was conducted to evaluate the utilization of low-protein diets formulated based on the ideal protein concept for broiler chickens from 7 to 21 days of age reared at different environmental temperatures. Nine hundred male Cobb-500® chickens were used. At day seven chicks were distributed according to a completely randomized design in a 3 x 3 factorial with four replications of 25 birds each. It was used three crude protein levels in the diet (21.5; 20.0 and 18.5%) and three environmental temperatures (low, thermoneutral and high). The performance, carcass characteristics (yield and chemical composition), and nitrogen ingestion and excretion were assessed. There was no significant interaction among the factors for the evaluated variables. Environmental temperatures affected differently chicken performance. High environmental temperature resulted in lower weight gain and higher wing fat percentage, whereas cold temperature resulted in higher feed conversion. on the other hand, low-protein diets decreased weight gain, breast yield, nitrogen excretion and influenced breast and wings chemical composition. Birds reared at high environmental temperature showed lower nitrogen intake and excretion. The results showed that the decrease in protein levels from 7 to 21 days of age contributed to lower nitrogen excretion in broiler chickens, but impaired performance and carcass characteristics independent of rearing temperature.

The objective of this investigation was to evaluate the weight and percentage of the non-carcass components and the mineral content (macro minerals and trace minerals), crude protein, ether extract, moisture and vitamin E of the heart, liver, tongue, lungs, reticulum, kidneys and meat from the longissimus dorsi of lambs in feedlot finishing. Thirty-two non-castrated Ile de France male lambs, fed diets containing sunflower seeds and vitamin E from 15 to 32 kg of body weight were allotted in a completely randomized design in a 2 × 2 factorial arrangement. The weight of the gastrointestinal tract was higher in the lambs fed diets containing vitamin E (10%). No difference was observed in the liver as to the mineral matter, crude protein, ether extract, moisture (2.01; 20.03; 2.39 and 74.78 g/100 g, respectively), the macro minerals and trace minerals, except iron. In the tongue, lungs, reticulum, kidneys and meat there was no in fluence of diets in the studied variables. The liver and the meat presented different values of crude protein (20.01 and 18.34 g/100 g, respectively), and the heart (1.03 mg/100 g) showed a higher content of vitamin E. High contents of manganese, zinc and copper were observed in the liver. The evaluated non-carcass components were nutritionally equal to the sheep meat, once, in addition to their high yield in relation to the body weight at slaughter, the non-carcass components are sources of nutrients.

The objective of this study was to evaluate animal performance and carcass characteristics of 64 Nellore young bulls at 22 months of age finished in a feedlot and slaughtered at five body weights (350; 455; 485; 555 and 580 kg) fed diets containing coated or uncoated urea. The experimental design adopted was completely randomized, set in a 4 × 2 factorial arrangement, and for the variables assessed in the control animals, it was 5 × 2. No effect of interaction between slaughter weights and diets were observed, so the variables were analyzed separately, compared by polynomial contrasts and by the F test, respectively. The time animals remained in the feedlot to reach slaughter weights was 66, 88, 145 and 194 days. Average daily gain (ADG) showed quadratic behavior, with a maximum of 1.44 kg/day with animals of 491.7 kg. Dry matter intake (DMI) (kg/day) was similar in all the treatments, but it decreased linearly as body weight increased. The bionutritional efficiency worsened linearly as body weight rose. The elevation in slaughter weight resulted in linear decrease in the percentage of beef round and increase in forequarter. Backfat thickness and rib eye area of the longissimus increased linearly and the percentages of muscle and protein in the carcass reduced and those of fat and ether extract increased linearly as body weight increased. Average daily gain, DMI, feed efficiency and carcass characteristics were not affected by diets containing coated or uncoated urea. However, animals fed coated urea presenter better crude fiber and neutral detergent fiber intake.

Objetivou-se, com este trabalho, estudar as características de carcaça e qualidade da carne do peito depois da inclusão de fitase em dietas para frangos de corte, com diferentes níveis de energia metabolizável aparente corrigida para nitrogênio (EMAn) e proteína bruta (PB) reduzida, suplementadas com aminoácidos essenciais seguindo o conceito de proteína ideal. Foram utilizados 1.500 frangos machos Cobb dos 22 aos 42 dias de idade com peso inicial de 833 ± 7 g e final de 2741 ± 48 g distribuídos em delineamento inteiramente casualizado em esquema fatorial 3x3+1 (três níveis de EMAn - 2950, 3100 e 3250 kcal/kg - e três de PB - 14, 16 e 18% - e um tratamento adicional - controle, sem fitase, com 3100 kcal/kg EMAn, 19,2% de PB e 0,4% de fósforo disponível) em seis repetições com 25 aves cada. Ao final do experimento, duas aves de cada parcela foram sacrificadas para a mensuração do rendimento de carcaça e de cortes e determinação da composição química da carne do peito. Os níveis de energia e proteína em rações com fitase influenciaram (P<0,05) os rendimentos de carcaça, peito e gordura abdominal a porcentagem de umidade, proteína e lipídios no músculo pectoralis major das aves, sendo os níveis de 3100 kcal EMAn/kg e 18% de PB os que proporcionaram maiores rendimentos de carcaça e de peito e menor deposição de gordura abdominal, mas em maior teor de lipídios na carne do peito. Conclui-se que a manipulação da energia em rações com reduzido teor de proteína e suplementadas com aminoácidos e fitase influencia o rendimento de cortes e a qualidade da carne do peito de frangos aos 42 dias.
