There is an enormous demand for chemical sensors in many areas and disciplines including chemistry, biology, clinical analysis, environmental science. Chemical sensing refers to the continuous monitoring of the presence of chemical species and is a rapidly developing field of science and technology. They are analytical devices which transform chemical information generating from a reaction of the analyte into an measurable signal. Due to their high selectivity, sensitivity, fast response and low cost, electrochemical and fluorescent sensors have attracted great interest among the researchers in various fields. Development of four electrochemical sensors and three fluorescent sensors for food additives and neurotransmitters are presented in the thesis. Based on the excellent properties of multi walled carbon nanotube (MWCNT), poly (L-cysteine) and gold nanoparticles (AuNP) four voltammetric sensors were developed for various food additives like propyl gallate, allura red and sunset yellow. Nanosized fluorescent probes including gold nanoclusters (AuNCs) and CdS quantum dots (QDs) were used for the fluorescent sensing of butylated hydroxyanisole, dopamine and norepinephrine. A total of seven sensors including four electrochemical sensors and three fluorescence sensors have been developed for food additives and neurotransmitters.

Fish and fishery products are having a unique place in global food market due to its unique taste and flavour; moreover, the presence of easily digestible proteins, lipids, vitamins and minerals make it a highly demanded food commodity.Fishery products constitute a major portion of international trade, which is a valuable source of foreign exchange to many developing countries.Several new technologies are emerging to produce various value added products from food; “extrusion technology” is one among them. Food extruder is a better choice for producing a wide variety of high value products at low volume because of its versatility. Extruded products are shelf-stable at ambient temperature. Extrusion cooking is used in the manufacture of food products such as ready-to-eat breakfast cereals, expanded snacks, pasta, fat-bread, soup and drink bases. The raw materialin the form of powder at ambient temperature is fed into extruder at a known feeding rate. The material first gets compacted and then softens and gelatinizes and/or melts to form a plasticized material, which flows downstream into extruder channel and the final quality of the end products depends on the characteristics of starch in the cereals and protein ingredient as affected by extrusion process. The advantages of extrusion process are the process is thermodynamically most efficient, high temperature short time enables destruction of bacteria and anti-nutritional factors, one step cooking process thereby minimizing wastage and destruction of fat hydrolyzing enzymes during extrusion process and enzymes associated with rancidity.

Since July 2010, all pre-packed organic food produced in the European Union (EU) must carry the new mandatory EU logo for organic food. Voluntary organic labels (such as national governmental logos and logos of private farmers’ associations and control bodies) can still be used, but only in addition to the mandatory EU logo. This change in the regulatory environment of organic labelling raises a number of questions regarding consumer preferences for different kinds of organic certification logos, which the present dissertation addressed. The first objective was to explore and analyse consumer perceptions, attitudes, preferences and willingness-to-pay (WTP) regarding different voluntary organic labels. The second objective was to investigate consumer perceptions and attitudes towards a mandatory EU logo. A combination of qualitative and quantitative methods of consumer research in six European countries was employed including focus group discussions, choice experiments and structured interviews. Based on the empirical results, recommendations are drawn for different actors in the organic sector.

One of the major problems facing aquaculture is the inadequate supply of fish oil mostly used for fish feed manufacturing. The continued growth in aquaculture production cannot depend on this finite feed resources, therefore, it is imperative that cheap and readily available substitutes that do not compromise fish growth and fillet quality be found. To achieve this, a 12-week feeding trial with Heterobranchus longifilis fed diets differing in lipid source was conducted. Diets were supplemented with 6% lipid as fish oil, soybean oil, palm oil, coconut oil, groundnut oil and melon seed oil. Triplicate groups of 20 H. longifilis were fed the experimental diets two times a day to apparent satiation, over 84 days. Growth, digestibility, and muscle fatty acid profile were measured to assess diet effects. At the end of the study, survival, feed intake and hepatosomatic index were similar for fish fed experimental diets. However, weight gain, SGR and FCR of fish fed soybean oil-based diet was significantly reduced. Apparent nutrient digestibility coefficients were significantly lower in fish fed soybean, coconut and groundnut oil-based diets. Fillet and hepatic fatty acid compositions differed and reflected the fatty acid compositions of the diets. Docosahexaenoic acid (22:6n-3), 20:5n-3 and 20:4n-6 were conserved in vegetable oils-based diets fed fish possibly due to synthesis of HUFA from 18:3n-3 and 18:4n-6. Palm oil diet was the least expensive, and had the best economic conversion ratio. The use of vegetable oils in the diets had positive effect on growth and fillet composition of H. longifilis.

The importance of oil palm sector for Indonesia is inevitable as the country currently serves as the world’s largest producer of crude palm oil. This paper focuses on the situation of workers on Indonesian oil palm plantations. It attempts to investigate whether the remarkable development of the sector is followed by employment opportunities and income generation for workers. This question is posed within the theoretical framework on the link between trade liberalisation and labour rights, particularly in a labour-intensive and low-skilled sector. Based on extensive field research in Riau, this paper confirms that despite the rapid development of the oil palm plantation sector in Indonesia, the situations of workers in the sector remain deplorable, particularly their employment status and income. This also attests that trade liberalisation in the sector adversely affects labour rights. The poor working conditions also have ramifications for food security at the micro level.

The measurement of feed intake, feeding time and rumination time, summarized by the term feeding behavior, are helpful indicators for early recognition of animals which show deviations in their behavior. The overall objective of this work was the development of an early warning system for inadequate feeding rations and digestive and metabolic disorders, which prevention constitutes the basis for health, performance, and reproduction. In a literature review, the current state of the art and the suitability of different measurement tools to determine feeding behavior of ruminants was discussed. Five measurement methods based on different methodological approaches (visual observance, pressure transducer, electrical switches, electrical deformation sensors and acoustic biotelemetry), and three selected measurement techniques (the IGER Behavior Recorder, the Hi-Tag rumination monitoring system and RumiWatchSystem) were described, assessed and compared to each other within this review. In the second study, the new system for measuring feeding behavior of dairy cows was evaluated. The measurement of feeding behavior ensues through electromyography (EMG). For validation, the feeding behavior of 14 cows was determined by both the EMG system and by visual observation. The high correlation coefficients indicate that the current system is a reliable and suitable tool for monitoring the feeding behavior of dairy cows. The aim of a further study was to compare the DairyCheck (DC) system and two additional measurement systems for measuring rumination behavior in relation to efficiency, reliability and reproducibility, with respect to each other. The two additional systems were labeled as the Lely Qwes HR (HR) sensor, and the RumiWatchSystem (RW). Results of accordance of RW and DC to each other were high. The last study examined whether rumination time (RT) is affected by the onset of calving and if it might be a useful indicator for the prediction of imminent birth. Data analysis referred to the final 72h before the onset of calving, which were divided into twelve 6h-blocks. The results showed that RT was significantly reduced in the final 6h before imminent birth.

Das Ernährungsverhalten einer Bevölkerung hat einen wesentlichen Einfluss auf das Wohlbefinden, die Gesundheit und Leistungsfähigkeit der Menschen. Ernährungsbedingte, chronische Erkrankungen weisen in den westlichen Industrienationen eine hohe Inzidenz und Prävalenz auf. Präventionsmaßnahmen im Setting Schule sollen das Ernährungsverhalten der Kinder- und Jugendlichen positiv beeinflussen. Gerade in diesem Setting können Personen mit unterschiedlichem sozioökonomischem Status, sowie Personen aus diversen Lebensbereichen angesprochen werden. Der Ernährungsführerschein (EFS) ist eine schulbasierte Primärpräventions-maßnahme, der in der 3. Jahrgangsstufe/Grundschule durchgeführt wird. In 6 – 7 Unterrichtseinheiten erfolgt eine praxisnahe Vermittlung von Grundkenntnissen über Ernährung, Lebensmittel und deren Zubereitung. Der EFS möchte eine Verhaltensänderung der Schulkinder bewirken. Sie erlernen Kompetenzen, damit sie in der Lage sind, sich selbst eine gesunde Mahlzeit zubereiten zu können. Aber kann dieses Projekt eine nachhaltige Verhaltensänderung bewirken? Die folgende Studie mit Mixed-Methods-Ansatz im Explanatory-Sequential-Design versucht genau dieser Frage nachzugehen. Auf eine quantitative Prä- und Postbefragung in 16 Klassen an 12 Grundschulen im Landkreis Marburg Biedenkopf und insgesamt 992 Befragungen folgte eine qualitative Studie mit neun problemzentrierten, leitfadengestützten Interviews. Der EFS zeigt keinen signifikanten Einfluss auf die Veränderung des Ernährungsverhaltens. Positiv zu bewerten ist, dass durch den EFS Alltagskompetenzen bei der Nahrungszubereitung gefördert wurden. Dieser positive Einfluss muss jedoch differenziert betrachtet werden, denn die qualitativen Studie zeigt, dass der EFS sehr gut in Familien aufgenommen wird, die sich bereits mit Ernährungsfragen auseinandersetzen und darauf achten, einen ernährungsphysiologisch günstigen Ernährungsstil zu leben oder anzustreben. In Familien der Billig- und Fleischesser konnte der EFS die Türen nicht öffnen. Aber gerade in diesem Segment wäre eine Veränderung des Essverhaltens induziert. Die Untersuchung ergab, dass der EFS für sich alleine nicht den Anspruch erheben kann, die Ernährungssituation der Kinder und Familien zu verbessern. Aber er bietet ein methodisch-didaktisch gut ausgearbeitetes Konzept und könnte als Baustein in die Entwicklung eines praxisnahen, erlebnisorientierten und ganzheitlichen Ernährungsbildungskonzepts unter Berücksichtigung diverser Settings und Lebenswelten der Kinder und Familien einfließen.
