Die thermische Verarbeitung von Lebensmitteln beeinflusst deren Qualität und ernährungsphysiologischen Eigenschaften. Im Haushalt ist die Überwachung der Temperatur innerhalb des Lebensmittels sehr schwierig. Zudem ist das Wissen über optimale Temperatur- und Zeitparameter für die verschiedenen Speisen oft unzureichend. Die optimale Steuerung der thermischen Zubereitung ist maßgeblich abhängig von der Art des Lebensmittels und der äußeren und inneren Temperatureinwirkung während des Garvorgangs. Das Ziel der Arbeiten war die Entwicklung eines automatischen Backofens, der in der Lage ist, die Art des Lebensmittels zu erkennen und die Temperatur im Inneren des Lebensmittels während des Backens zu errechnen. Die für die Temperaturberechnung benötigten Daten wurden mit mehreren Sensoren erfasst. Hierzu kam ein Infrarotthermometer, ein Infrarotabstandssensor, eine Kamera, ein Temperatursensor und ein Lambdasonde innerhalb des Ofens zum Einsatz. Ferner wurden eine Wägezelle, ein Strom- sowie Spannungs-Sensor und ein Temperatursensor außerhalb des Ofens genutzt. Die während der Aufheizphase aufgenommen Datensätze ermöglichten das Training mehrerer künstlicher neuronaler Netze, die die verschiedenen Lebensmittel in die entsprechenden Kategorien einordnen konnten, um so das optimale Backprogram auszuwählen. Zur Abschätzung der thermische Diffusivität der Nahrung, die von der Zusammensetzung (Kohlenhydrate, Fett, Protein, Wasser) abhängt, wurden mehrere künstliche neuronale Netze trainiert. Mit Ausnahme des Fettanteils der Lebensmittel konnten alle Komponenten durch verschiedene KNNs mit einem Maximum von 8 versteckten Neuronen ausreichend genau abgeschätzt werden um auf deren Grundlage die Temperatur im inneren des Lebensmittels zu berechnen. Die durchgeführte Arbeit zeigt, dass mit Hilfe verschiedenster Sensoren zur direkten beziehungsweise indirekten Messung der äußeren Eigenschaften der Lebensmittel sowie KNNs für die Kategorisierung und Abschätzung der Lebensmittelzusammensetzung die automatische Erkennung und Berechnung der inneren Temperatur von verschiedensten Lebensmitteln möglich ist.

Households in much of the tropics depend for their livelihoods on the variety and continued production of food and other products that are provided by their own farms. In such systems, maintenance of agrobiodiversity and ensuring food security are important for the well being of the population. The enset-coffee agroforestry homegardens of Southern Ethiopia that are dominated by two native perennial crops, Coffee (Coffea arabica L.) and Enset (Enset ventricosum Welw. Cheesman), are examples of such agricultural systems. This study was conducted in Sidama administrative zone of Southern Ethiopia to determine the factors that influence the diversity and composition of crops in the systems. Data were collected from 144 sample homegardens selected from four districts. Stepwise multiple regression analysis was used to relate indices of crop diversity and area share of major crops with the physical and socioeconomic factors. The study revealed that socioeconomic factors, mainly proximity to markets, affected negatively crop species richness. The production area of the main crops enset and coffee decreased with increasing proximity to market and road while that of maize and khat increased. At household level, farm size had a significant effect on area share of enset and coffee. As farm size increased the share of the cash crop, coffee increased but that of the staple, enset declined. Enset, which is the backbone of the system in terms of food security, is declining on small farms and the share of monoculture maize system is increasing. The trend towards declining agrobiodiversity, and reduction in the production area of the main perennial crops and their gradual replacement with monoculture fields could make the systems liable to instability and collapse. As these sites are high potential agricultural areas, intensification can be achieved by integrating high-value and more productive crops, such as fruits, spices and vegetables, while maintaining the integrated and complex nature of the systems.

This study was conducted in 2010 in Eastern Nuba Mountains, Sudan to investigate ethnobotanical food and non-food uses of 16 wild edible fruit producing trees. Quantitative and qualitative information was collected from 105 individuals distributed in 7 villages using a semi-structured questionnaire. Also gathering of data was done using a number of rapid rural appraisal techniques, including key informant interviews, group discussion, secondary data sources and direct observations. Data was analysed using fidelity level and informant consensus factor methods to reveal the cultural importance of species and use category. Utilizations for timber products were found of most community importance than food usages, especially during cultivated food abundance. Balanites aegyptiaca, Ziziphus spina-christi and Tamarindus indica fruits were asserted as most preferable over the others and of high marketability in most of the study sites. Harvesting for timber-based utilizations in addition to agricultural expansion and overgrazing were the principal threats to wild edible food producing trees in the area. The on and off prevailing armed conflict in the area make it crucial to conserve wild food trees which usually play a more significant role in securing food supply during emergency times, especially in times of famine and wars. Increasing the awareness of population on importance of wild food trees and securing alternative income sources, other than wood products, is necessary in any rural development programme aiming at securing food and sustaining its resources in the area.

Comparing the experiences of selected Latin America and the Caribbean countries and their trajectories over the past 15 years offers rich insights into the dynamics and causes for not meeting the 2015 MDGs. They also offer clues for post-MDG strategies. Central to achieving sustainable growth are government policies able to support small and medium-sized farms and peasants, as they are crucial for the achievement of several goals, centrally: to achieve food security; to provide a sound and stable rural environment able to resist external (financial) shocks; to secure healthy food; to secure local food; and to protect vibrant and culturally rich local communities. This paper analyses and compares the most successful government policies to the least successful policies carried out over the last 15 years in selected Latin American and Caribbean countries and based on this analysis, offers strategies for more promising post-MDG politics, able to reduce poverty, reduce inequality, fight back informality, and achieve more decent work in poor countries.

Sweden’s recent report on Urban Sustainable Development calls out a missing link between the urban design process and citizens. This paper investigates if engaging citizens as design agents by providing a platform for alternate participation can bridge this gap, through the transfer of spatial agency and new modes of critical cartography. To assess whether this is the case, the approaches are applied to Stockholm’s urban agriculture movement in a staged intervention. The aim of the intervention was to engage citizens in locating existing and potential places for growing food and in gathering information from these sites to inform design in urban agriculture. The design-based methodologies incorporated digital and bodily interfaces for this cartography to take place. The Urban CoMapper, a smartphone digital app, captured real-time perspectives through crowd-sourced mapping. In the bodily cartography, participant’s used their bodies to trace the site and reveal their sensorial perceptions. The data gathered from these approaches gave way to a mode of artistic research for exploring urban agriculture, along with inviting artists to be engaged in the dialogues. In sum, results showed that a combination of digital and bodily approaches was necessary for a critical cartography if we want to engage citizens holistically into the urban design process as spatial agents informing urban policy. Such methodologies formed a reflective interrogation and encouraged a new intimacy with nature, in this instance, one that can transform our urban conduct by questioning our eating habits: where we get our food from and how we eat it seasonally.

The objective of this paper is to understand how Chinese consumers perceive certified organic food, especially the differences between locally and nationally produced organic food compared to food produced overseas. In 2012, a consumer survey was conducted at supermarkets in Hong Kong and Shanghai (N=245). Participants were asked for their perception on four different food origins: locally produced organic food, organic food from China, imported organic food, and locally produced conventional food. Consumers in Hong Kong had a positive attitude towards local organic food and imported organic food. However, they were sceptical about organic food from China, in particular regarding chemical residues and the trustworthiness of producers. Consumers in Shanghai, in contrast, had a positive attitude towards all three tested geographical origins of organic food. Overall, the results suggest that it is challenging for marketers to promote and boost the sales of China-produced organic food in China. Better communication is essential to convince consumers that organic food from China is of similar quality as organic food produced elsewhere.

El presente trabajo pretendía investigar y analizar el funcionamiento del mercado de hidrocarburos y gas natural, en busca de determinar la Influencia de la exploración y el almacenamiento de petróleo y gas natural en la relación de las organizaciones con las comunidades. Teniendo en cuenta el concepto de comunidad a partir del marketing relacional donde la comunidad se refiere a los consumidores y el entorno en el cual están inmersos. En este contexto se definieron los principales actores que participan en la relación comercial, el tipo de relación presente entre ellos y todos los factores que intervienen en desarrollo de esta relación que cada vez es más inestable y de corto plazo. Al finalizar esta investigación se reunió información acerca de las relaciones comerciales en el mercado de hidrocarburos, que servirán de fundamento para investigaciones futuras que permitirán plantear alternativas para sobrellevar la incertidumbre de este mercado y de esa manera lograr desarrollar una relación más confiable y duradera entre las organizaciones y las comunidades que intervienen en el proceso comercial. Debido a que aunque existe gran diversidad estrategias que pueden ser implementadas para mantener una relación estable, estas en la mayor parte de los casos no son utilizadas.
