Realizou-se a modelagem da degradação de vitamina C em ameixas desidratadas e submetidas a diferentes condições de temperatura e umidade relativa, com o auxílio da equação de Bigelow. As ameixas in natura foram liofilizadas e acondicionadas em dessecadores contendo diferentes soluções salinas saturadas na temperatura de 4ºC. Após atingir o equilíbrio, os dessecadores foram submetidos a temperaturas na faixa que variou entre 40 e 80ºC. A degradação de vitamina C foi analisada ao longo de 5 dias, aplicando-se o método de titulação com solução padronizada de 2,6-diclorofenolindofenol 0,01%. As amostras apresentaram os seguintes conteúdos de umidade: 0,05; 0,11; 0,18; 0,38 e 1,40g água/g sólido seco. A partir dos parâmetros da equação de Bigelow, tempo de redução decimal (D T) e valor z, os resultados indicaram que as amostras submetidas à faixa de temperatura entre 40 - 60ºC apresentaram uma perda mais lenta de vitamina C (D T no conteúdo de umidade de 0,05 apresentou valores na faixa de 1672 - 275h). Por outro lado, em altas temperaturas a degradação do ácido ascórbico ocorreu mais rapidamente (D T para X = 0,05 forneceu valores entre 110 e 47h). Os parâmetros z e D T apresentaram uma dependência linear e quadrática com o conteúdo de umidade das amostras, respectivamente. De modo geral, em altos teores de umidade, houve uma maior perda de vitamina C, devido a sua alta solubilidade.

The goat placental immunomodulatory peptides were produced by fermentation with Aspergillus Niger. The objective of the present study was to investigate the effects of fermentation parameters (carbon source content, pH, and time) on spleen lymphocyte proliferation for the highest immune activity of the fermentation broth using response surface methodology (RSM). According to the data analysis by the Design-Expert® software, the stimulation index value (23.51%), which is the maximum immune activity, was obtained under the following conditions: content of carbon source 1.97 g·L-1, initial pH 5.0, and 74.43 h of fermentation time. Under the optimized fermentation conditions, at a certain concentration range, the fermentation broth produced a significant effect on the proliferation of mouse spleen lymphocytes. Ultrafiltration technique was performed to separate the fermentation broth with different MW (molecular weight). It was found that peptides in the range of <10 KDa were the main bioactivity fractions for the immunomodulatory and antioxidant activities.

Abstract Optimization of polyphenols extraction from plum (Prunus salicina Lindl.) was evaluated using response surface methodology. The Box-Behnken experimental results showed the optimal conditions involved an extraction temperature of 59 °C, a sonication time of 47 min, and an ethanol concentration of 61% respectively. The maximum extraction yield of total polyphenols was 44.74 mg gallic acid equivalents per gram of dried plum at optimal conditions. Polyphenol extracts exhibited stronger antioxidant activities than Vc by evaluating of 1,1-diphenyl-2-picrylhydrazyl (DPPH) and hydroxyl radical scavenging activity. Furthermore, polyphenol extracts (IC50 = 179 g/mL) showed obvious inhibitory effects on xanthine oxidase. These findings suggest that polyphenol extracts from P. salicina can be potentially used as natural antioxidant and xanthine oxidase inhibitory agents.

Computer Supported Collaborative Learning (CSCL) is a teaching and learning approach which is widely adopted. However there are still some problems can be found when CSCL takes place. Studies show that using game-like mechanics can increase motivation, engagement, as well as modelling behaviors of players. Gamification is a rapid growing trend by applying the same mechanics. It refers to use game design elements in non-game contexts. This thesis is about combining gamification concept and computer supported collaborative learning together in software engineering education field. And finally a gamified prototype system is designed.
