O objetivo deste trabalho foi avaliar morfologicamente as membranas de PES preparadas a partir do uso de misturas de polivinilpirrolidona (PVP K-30 e K-90), visando ajustar as condições de síntese para a obtenção de uma membrana isenta de macroporos.

This work presents a computational, called MOMENTS, code developed to be used in process control to determine a characteristic transfer function to industrial units when radiotracer techniques were been applied to study the unit´s performance. The methodology is based on the measuring the residence time distribution function (RTD) and calculate the first and second temporal moments of the tracer data obtained by two scintillators detectors NaI positioned to register a complete tracer movement inside the unit. Non linear regression technique has been used to fit various mathematical models and a statistical test was used to select the best result to the transfer function. Using the code MOMENTS, twelve different models can be used to fit a curve and calculate technical parameters to the unit.

The main aim of this work is to develop a methodology to evaluate the characteristics of porous media in filter using the radio-tracing technique. To do this, an experimental prototype filter made up of an acrylic cylinder, vertically mounted and supported on the lower side by a controlled leaking valve was developed. Two filters (spheres of acrylic and silica crystals) were used to check the movement of the water through the porous media using 123I in its MIBG (iodine-123-meta-iodo benzyl-guanidine) form. Further up the filter an instantaneous injection of the substance makes it possible to see the passage of radioactive clouds through the two scintillatory detectors NaI (2x2)” positioned before and immediately after the cylinder with the filtering element (porous media). The are caused by the detectors on the passage of the radioactive cloud are analyzed through statistical functions using the weighted moment method which makes it possible to calculate the Residence-Time (the amount of time the tracer takes to thoroughly pass through the filter) per the equation of dispersion in tubular flow and the one-directional flow of the radiotracer in the porous media.

The theme Corporate Social Responsibility is relatively recent both in the academic field and in the business practice. Because of the lack of socialization of experiences and precision of concepts, there are gaps regarding the understanding of the subject and, also, how to conduct operations. This study just seeks to investigate such matter, focusing applications of social responsibility in business. It takes, as empirical field, winners of the PSQT - SESI Prize of Quality at Work in Rio Grande do Norte (2002-2007) in order to systematize the various approaches on the issue, aiming to reveal subjective visions and perspectives of the theme. It is characterized as a qualitative study, carried out by structured interview. The universe was composed by 15 companies. It was used analysis of content categorical as an axis for the interpretation of the information. Three approaches guided the analysis: Business Ethics, (normative); Business & Society (contractual); Social Issues Management (strategic). The findings are related in three ways: 1) reasons for the CSR practice; 2) the results obtained; 3) the means of CSR. It was found that the award participation occurs, mostly, linked to SESI invitations, so, as an articulated movement of industrial corporations in Brazil it occurs, also, because of the organizational commitment with the society and the possibility of internal and social growths and because of the importance attributed to the report as an instrument of consultancy. There are no indicators to check impacts of organizational interventions, in spite of the existence of planning for the actions. Social responsibility appears as a tool to reinforce the organizational image and to increase satisfaction of the employees. There is a tendency of large and medium firms to a contractual commitment while the small and the micros firms are on strategic or normative level. O presente trabalho tem como propósito responder a questão "qual o interesse estratégico de empresas do distrito de Aveiro se internacionalizarem para os Países Africanos de Língua Oficial Portuguesa (PALOP) e/ ou Brasil - Ceará?". O objeto de estudo surgiu após a integração num estágio curricular na AIDA - Associação Industrial do Distrito de Aveiro - e levou à revisão da literatura dos temas estratégia e internacionalização, assim como ao trabalho de campo (6 entrevistas a colaboradoras da AIDA), proporcionando as componentes conceptual e empírica. Verificou-se que o setor de atividade é fundamental para o sucesso das empresas nas missões. Designadamente, bastantes empresas ligadas ao setor metalomecânico, que tendem a recorrer a estes mercados dos PALOP e/ ou Brasil - Ceará, alcançaram, em muitos casos, o sucesso - isto é, a concretização de negócios com novos clientes e / ou o investimento direto nesses países. O contributo do presente trabalho reside também na perspetiva, resultante de um inquérito desenvolido no âmbito do estágio no Gabinete de Relações Exteriores da AIDA, de que ainda que se verifique uma janela de oportunidade para algumas das empresas nos referidos mercados (PALOP e Brasil - Ceará), entende-se que, para o sucesso efetivo destas empresas, outras formas de empreender poderiam ser colocadas em prática, nomeadamente alianças estratégicas entre pequenas e médias empresas (PME) de setores semelhantes, a nível local (Portugal), para competirem a nível internacional com os respetivos líderes de mercado. Desta forma, sugere-se lutar pela competitividade não só nos PALOP mas também nos mercados desenvolvidos, tais como Alemanha, Estados Unidos da América e/ ou países escandinavos - pois somente com clientes exigentes e com a pressão de concorrentes fortes poder-se-ão criar indústrias desenvolvidas e capazes de competir ao mais elevado nível e pelos melhores clientes, com poder de compra e fontes de inovação (Porter, 1990). Estas lições parecem, por ezes, esquecidas, mas segundo Gibbs (2007) um dos propósitos da investigação é também o de lembrar o que foi esquecido e/ ou ignorado. As entrevistas realizadas ofereceram contributo na medida em que proporcionam a compreensão dos motivos para as empresas portuguesas escolherem estes mercados, das razões para o sucesso ou insucesso nos PALOP e/ ou Brasil - Ceará, do investimento e esforço por parte das entidades não-governamentais portuguesas em internacionalizar empresas do setor da metalomecânica, das forças e fraquezas das missões empresariais, de que aspetos fazem da AIDA um agente de mudança e das áreas em que poderia haver maior diligência por parte da AIDA.São também sugeridas recomendações a associação, entre outras, a inclusão das questões culturais de cada país nos estudos de mercado não só sobre PALOP e Brasil - Ceará, mas também nos estudos de mercado do distrito de Aveiro, assim como de Portugal, para fazer divulgação a potenciais importadores; melhoria de processos, implementando-se um software de gestão/ partilha de conhecimento das várias oportunidades de negócio, rentabilizando o processo de estabelecimento de interesse em realizar negócio, no âmbito do EEN (Entelprise Eumpe Netwrk); intervenção na plataforma do IAPMEI por informáticos habilitados; e armazenamento de dados em cloud storage - um serviço do género da Dropbox, de modo a rentabilizar o tempo dispendido, assim como a tornar as pastas acedidas via intranet mais pequenas.

The state of Rio Grande do Norte counts with a relevant potential in the shrimp farming supply chain. In the larviculture step the state responds for more than half of the national production. In the farming step it is the second largest producer. In the industrial step, its industries have almost 40% of the shrimp processing capacity of the northeast of Brazil. However, this country has the highest tax rate comparing with the main shrimp producer countries. Considering the influence of taxes in the competition among companies, the main goal of this research is to analyze the impact of indirect taxes in the above steps of the supply chain. To achieve it, it will be used the data of the 2011 Census of the Shrimp Farming and it will be applied the Herfindahl-Hirschman Index to identify the market form of those steps. In order to contribute with the characterization of the supply chain, CEO´s of farms and industries will be interviewed. The price-elasticity of the shrimp larvae, the in natura shrimp and the processed shrimp will be analyzed in order to verify the possibility that each one of those three steps has to pass-through the onus of the end of benefit over the ICMS. The data analysis shows that the larviculture step functions as a duopoly and, facing the end of that benefit, it will be able to pass-through most its onus to the farming step. On the other hand, this step functions similar to a perfect competing market, which diminishes its capacity to pass-through that onus to the processing step. This step operates as oligopoly with a lower concentration than the larviculture step but, due to the fact that it faces an oligopsony, it will end up assuming most of that onus, which will cause a decrease in the amount of processed shrimp. It is concluded that the end of that benefit would impact negatively, in this state, the supply chain at all, but mainly the farming and the industrial steps

Ganoderma lucidum is a medicinal mushroom traditionally consumed in Asian countries that presents several beneficial effects already verified. Despite all studies about their bioactive compounds, the best cultivation media enrichment aiming to increase the production of these compounds is still uncertain. Besides, few studies are related to the performance of production animals. In order to test different cultivation media for G. lucidum mycelia, agricultural residues (solid state fermentation) and different sugars and aminoacids (in culture media with agar), were tested to evaluate G. lucidum mycelium growth. Supply of flour with G. lucidum mycelia obtained by solid state fermentation (wheat grain) for rabbits was also evaluated. Mycelium of G. lucidum developed very well in all agricultural residues, soybean hulls was the residue that presented higher growth rate and higher concentration of β-glucans. In the cultivation media experiment, G. lucidum also developed well, media that contained cellobiose and tyrosine, despite presenting lower growth rates and total growth within 10 days, produced mycelia with higher concentration of β-glucans and trolox equivalent antioxidant capacity (TEAC), respectively. Rabbits did not show any sign of intolerance to feed with different concentrations of flour with G. lucidum mycelium. All performance parameters and dressing percentages were adequate to the age at which they were slaughtered. Histological evaluation of organs presented alterations in renal cells (tubular and glomerulus), indicating a possible renal lesion according to the increase of flour with mycelium in feed. Histomorphometric evaluation showed increased vilous height in ileum and decreased vilous width of jejunus at 0.5% concentration, and decrease in crypt diameter according to the increase of concentration of flour with mycelium in feed. These results indicate the possibility of more studies regarding the aspects about cellobiose and tyrosine utilization for the production of bioactive compounds, and about toxicity of this mushroom mycelia, assuring the safety in supplying this product for animails.

The objective of this study was to determine the antioxidant effect of essential oregano and alfavaca oil on the fatty acid profile of palm oil, used in industrial potato chips processing, aiming to reduce the oxidative state of palm oil. Essential oregano oil was obtained from industrial residues and commercial essential oregano oil was also acquired. The antioxidant activity of Oregano’s essential oil was taken by DPPH method. The DPPH analysis of the essential oil of oregano residue resulted in an IC50 of 797.04 mg.mL-1 and the essential oil of commercial oregano was 424.25 mg.mL-1. Regarding the content of total phenols, the essential oil of commercial oregano showed 0.167 ± 0.058 ug EAG.g-1. Based on these results, concentrations of 50, 100 e 150ug.g-1 of commercial oregano essential oil was added to palm oil and the fatty acid profile was determined by gas cromatography. Analysis were done with palm oil without being used in frying processes and without added essential oil, as well as with the different essential oil concentrations submitted at three frying processes at one single day. In the second part of the project, the effect of oreganos’s comercial essential oil compared to alfavacão essential oil, at the concentration of 100ug.g-1 in palm oil, and submitted to three frying processes during eleven cycles, was studied. The lipid profile was similar to that described in the literature, which an increase in the number of frying times caused a polyunsaturated fatty acids decrease and, therefore, a proportional increase in saturated fatty acids. It was noted an increase in the amounts of total saturated fatty acids from 43.36% (control) to 43.60% (palm oil with essential oil after 11 frying cycles at the concentration of 100ug.g-1). This fact proves that during the frying process, there is an increase in the rate of formation of saturated fatty acids. However, the addition of oregano essential oil did not provide significant change in the fatty acids of palm oil used in frying process of potato chips. The addition of oregano essential oil in a concentration of 100 ug./mL-1 until the third frying cycle showed a reduction effect of trans fatty acid formation. Although, during 11 frying cycles it was not noticed the essential oil effect under trans fatty acid formation. It can be suggested that this factor may be correlated to the frying time, which may not have been sufficient for significant formation of saturated and trans compounds.

Some quality defects can cause changes in attributes of the meat, among these we can detach the PSE meat (Pale, Soft and Exudative). The PSE meat is pale, flaccid and exudative and result from sudden pH decrease while the carcass is still under high temperature. The identification of PSE meat has been done by measuring pH and L* (Lightness). However, studies suggest that a more precise evaluation of the kinetics of pH and temperature decrease has to be conducted to better understand the etiology of PSE meat in poultry. The aim of this study was to obtain the glycolytic curve for normal and PSE meat of chicken, through the pH, L* and CRA (water holding capacity) analysis. This experiment was conducted with carcasses obtained from a commercial slaughterhouse (n = 35) of Cobb lineage, 50 days old, from the same batch of creation and with the same pre-slaughter fasting time (10h). Samples of breast fillets were obtained from carcasses randomly collected immediately at the output of pre-cooling chiller, and the analysis of pH, temperature and L * were conducted in the same in times 1h35, 2h35, 3h35, 5h35, 8h35, 11h35, 14h35, 17h35, 20h35, 23h35 and 25h35 post mortem. The CRA analyzes were performed at the time of 25h35 post mortem. The pH measurements indicated that only from the 04 time (8h35 post mortem) was possible to verify an indicative of stabilization, being that PSE meat pH was 5,69±0,07, and normal meat was 5,93±0,09. The final pH (25h35 post mortem) was 5,98±0,06 and L* 57,30± 2,39 for normal meat, while for PSE meat the result was 5,72±0,06 and L* 59,44±1,51. To CRA, the average of the samples (67,19±3.13 and 64,45± 2.66) showed a difference between the normal chicken fillets and PSE respectively. The data found in this study are consistent with those reported by own research group in another slaughterhouse and contradicts similar works, but made at room temperature, indicating that for chickens under commercial conditions the resolution of rigor mortis occurs after 8h35 post mortem.

O trabalho teve por objetivo caracterizar o estoque de anchoita (Engraulis anchoita) capturado na região sul do Brasil, visando à utilização deste recurso de alto valor biológico no desenvolvimento de produtos semi-prontos e de fácil preparo, tipo empanado. Os experimentos foram conduzidos com anchoita resultante de cruzeiros realizados pelo Navio Oceanográfico Atlântico Sul da Universidade Federal do Rio Grande (FURG), RS, Brasil. Os exemplares foram capturados entre a cidade de Rio Grande (32ºS, RS-Brasil) e 51ºW. Após captura, o pescado foi armazenado a bordo em mistura de gelo e água do mar, na razão 1:1. As amostras foram transportadas para o laboratório de Biotecnologia da FURG e mantidas sob congelamento a -18°C, até a realização das análises. O trabalho está constituído por uma revisão bibliográfica, que enfatiza a importância do recurso pesqueiro em estudo como potencial a ser explorado, discorre sobre ácidos graxos e perfil de voláteis, bem como, o desenvolvimento de produtos à base de pescado. O desenvolvimento do trabalho é expresso por quatro artigos. O primeiro teve como objetivo caracterizar o estoque de anchoita segundo a biometria, rendimento, composição proximal, compostos nitrogenados e ácidos graxos. O rendimento, a composição proximal e o perfil de ácidos graxos foram realizados nas três frações que compõe o peixe: músculo claro, escuro e vísceras. A análise dos resultados demonstrou a variabilidade dos componentes em função das frações avaliadas e da época de captura, o que pode contribuir para a escolha do processo tecnológico a ser aplicado no desenvolvimento de produtos de alto valor agregado a partir dessa matéria-prima. No segundo artigo foi determinado o perfil de ácidos graxos da anchoita e avaliado o comportamento destes compostos durante o armazenamento congelado, bem como, dos voláteis gerados. Os resultados demonstraram a influência do armazenamento na modificação dos ácidos graxos, em especial, EPA e DHA, e que os voláteis gerados podem ser um índice em potencial para avaliar a qualidade da anchoita congelada. No terceiro artigo objetivou-se selecionar e treinar julgadores para avaliação do odor a pescado utilizando os padrões referência obtidos a partir do perfil de voláteis. Neste sentido, foi levantada a terminologia que descreve o odor da anchoita, definido padrões referência, bem como, selecionado e treinado uma equipe de julgadores. Foram utilizados 20 candidatos, deste total, 9 foram selecionados pelo método das amplitudes. Os julgadores selecionados foram submetidos ao treinamento no uso de escala não estruturada e na avaliação da intensidade do odor a pescado. O desempenho dos julgadores foi definido utilizando como amostra solução de lavagem resultante do processo de obtenção de base protéica de anchoita. Os resultados foram avaliados com base no poder de discriminação, repetibilidade das respostas e concordância entre julgadores, segundo análise de variância, com duas fontes de variação (amostra e repetições). Foram obtidos os valores de Famostra e Frepetição, para cada julgador. Os julgadores com o valor de Famostra significativo (p≤0,30) e Frepetição não significativo (p>0,05), bem como, concordância de médias com os demais julgadores foram considerados treinados. Segundo esse processo a equipe foi constituída por 8 julgadores selecionados e treinados na avaliação do odor a pescado. Finalmente, no quarto artigo foi avaliada a possibilidade de uso de base protéica (BPP) de anchoita na elaboração de massa base de empanados, bem como, em substituição a farinha de cobertura. Para obtenção das BPPs, foram testadas duas soluções extratoras (3 ciclos de extração com ácido fosfórico 0,05% e 1 ciclo de ácido fosfórico seguido de 2 ciclos com água). A BPP obtida na melhor condição utilizada foi seca a 70°C e submetida ao processo de moagem em moinho de facas para ser utilizada como farinha de cobertura. Formulações de empanado utilizando diferentes concentrações (25, 50, 75 e 100%) de anchoita desidratada na cobertura foram testadas no produto frito e forneado. Um teste de preferência com consumidores em potencial foi aplicado às diferentes formulações. Os resultados indicaram que a melhor condição de lavagem para obtenção das BPPs testadas foi quando são utilizados 3 ciclos de extração com ácido fosfórico. A avaliação da preferência junto ao consumidor em potencial demonstrou que a anchoita desidratada pode ser utilizada como farinha de cobertura em empanados na concentração de até 75%.

The seaweed Gracilaria domingensis is a common species in the coast of Rio Grande do Norte. This species lives in the intertidal zone, where colour strains (red, green and brown) co-occur during the whole year. Seaweeds that live in this region are exposed to daily changes and to the rhythm of the tide. During the low tide they are exposed to dissection, hiper-or hipo-osmotic shock, high temperatures and high irradiance. The aim of this study was to analyze whether the pigment and protein content of the colour strains of G. domingensis is affected by some environmental parameters in a temporal scale. The seaweeds were collected during 10 months in the seashore of Rio do Fogo (RN). The total soluble proteins and the phycobiliprotein were extracted in phosphate buffer and the carotenoids were analyzed by a standardized method through HPLC-UV. The pigments analysis showed that phycoerithrin is the most abundant pigment in the three strains. This pigment was strongly correlated with nitrogen and the photosynthetically active radiation. Chlorophyll presented higher concentrations than carotenoids during the whole, but the ratio carotenoid/chlorophyll-a was modified by incident radiation. The most abundant carotenoid was ß-carotene and zeaxanthin, which had higher concentrations in the higher radiation months. The concentration increase of zeaxanthin in this period indicated a photoprotective response of the seaweed. The three strains presented a pigment profile that indicates different radiation tolerance profile. Our results pointed that the green strain is better adapted to high irradiance levels than the red and brown strains

The Baccharis oreophila Malme belongs to the Asteraceae family. In Brazil are reported 120 species of Baccharis, most located in the South and Southeast regions, the latter presents the highest prevalence, especially in the state of São Paulo. Asteraceae is well known for the production of essential oils, which are liquid, volatile and aromatic substances produced by plants specialized for metabolism possess antibacterial, antifungal, and antioxidant properties. Thus, this study aimed, perform chemical and evaluate the antimicrobial and antioxidant activity of essential oil from dried leaves of B. oreophila collected in winter in Piraquara, Paraná. Obtaining essential oil was given by hydrodistillation in Clevenger apparatus, in triplicate, and the analysis was done using a gas chromatograph coupled to mass spectrometry GC / MS. The identification of the components was made based on retention indices calculated from the co-injection of a series of n-alkanes, followed by comparison of their mass spectra with literature. The antimicrobial activity was assessed by disk diffusion method and microdilution. The antioxidant activity was evaluated by the methods DPPH equivalent Trolox, ABTS and FRAP equivalent Trolox equivalent ferrous sulfate. The essential oil showed 0.47% yield. They identified 57 components (89.38%), 1.51% were classified as hydrogenated monoterpenes, oxygenated monoterpenes 15.14%, 34.84% and 37.87% hydrogenated sesquiterpenes sesquiterpenes oxygenates. As the major components were detected kusimono (16.37%), spathulenol (16.12%), the δ-cadinene (5.68%) and bicyclogermacrene (4.09%). The antimicrobial activity of essential oil was performed for the microorganisms Escherichia coli ATCC 25922, Staphylococcus aureus ATCC 25923, Candida albicans ATCC 18804 and Candida tropicalis ATCC 13803, the results showed that the essential oil showed activity against S. aureus Inhibitory Concentration minimum (CIM) 1250 g/mL. In the evaluation of antioxidant activity essential oil showed antioxidant potential for the three methods evaluated, with values of 1,468 m.mol.L-1, 7.126 m.mol.L-1 and 45.515 m.mol.L-1 for ABTS, DPPH and FRAP, respectively. These results demonstrate that the essential oil of B. oreophila showed antimicrobial potential against S. aureus and interesting antioxidant activity, especially for the reducing power of iron ion, demonstrating their potential for future industrial applications. It is important to emphasize that were not observed in the literature reports highlighting such biological properties of B. oreophila oil.

Objetivo: Analisar os teores de íons de fluoreto e o padrão microbiológico encontrado nas águas de abastecimento público dos municípios alagoanos que fluoretam suas águas. Métodos: Estudo transversal descritivo realizado no período de 2012 a 2014, no qual se analisaram todos os laudos emitidos pelo Laboratório Central de Saúde Pública de Alagoas (LACEN-AL) com os resultados da análise da qualidade da água para consumo humano dos onze municípios alagoanos que fluoretaram suas águas, totalizando 3.089 laudos. Avaliouse o número total de amostras enviadas para análise da qualidade da água, a quantidade de amostras em que foi solicitada a análise de fluoreto, teores e variações dos íons de fluoreto e o padrão microbiológico das amostras fluoretadas. Realizou-se a análise descritiva dos dados, obtendo-se as frequências absolutas e relativas percentuais. Resultados: Foram encontradas 429 (83,9%) amostras coletadas no intervalo 0,0-0,5 mgF/L, número considerado abaixo do recomendável, além de grande variação na concentração dos íons de fluoreto e 128 (26,3%) amostras de água fluoretada fora dos padrões de potabilidade. Conclusão: Os dados mostraram uma grande variação e um alto percentual de amostras com baixas concentrações de fluoreto, assim como a necessidade de melhoria da qualidade da água ofertada, de modo a garantir para a população o acesso contínuo à água potável.
