Este trabalho teve como objetivo avaliar características de carcaça por ultra-som de 28 bubalinos jovens Mediterrâneo terminados em confinamento e abatidos aos 450, 480, 510 e 540 kg de peso vivo (PV). Foi utilizado um equipamento de ultra-som Piemedical Scanner 200 Vet, com transdutor linear de 178 mm e 3,5 MHz, a cada intervalo de aproximadamente 28 dias, para obter a área do longíssímus dorsí (ALOU), espessura de gordura subcutânea (EGSU) entre a 12ª e 13ª costelas e a espessura de gordura na picanha (EGP8U), sob o terço superior do músculo bíceps femorís. Após atingirem os pesos de abate pré-estabelecidos, os animais foram abatidos e obteve-se o peso de carcaça quente (PCQ) e o rendimento de carcaça (RC). Após 24 horas de resfriamento, as carcaças foram seccionadas entre a 12a e 13a costelas e obtidas a área do longíssímus dorsí (ALOC), a espessura de gordura (EGSC) e a espessura de gordura sob o bíceps femorís (EGP8C) na carcaça. As correlações entre as medidas por ultra-som e na carcaça foram de 0,96 entre ALOU e ALOC, de 0,99 entre EGSU e EGSC e de 0,91 entre EGP8U e EGP8C. Equações de regressão utilizando o peso vivo (PV), ALOU, EGSU e EGP8U explicaram 95% da variação do PCQ quando a medida foi realizada imediatamente antes do abate. As equações para estimar o RC utilizando as mesmas características explicaram cerca de 32% da variação quando a medida foi realizada imediatamente antes do abate. O peso da porção comestível do corte traseiro a partir de medidas efetuadas por ultra-som e na carcaça é predito com maior magnitude que a percentagem da porção comestível. Os resultados indicam que as equações para as medidas ultra-sônicas apresentaram boa acurácia e podem ser utilizadas para estimar diferenças entre grupos de animais, mas há a necessidade de mais estudos envolvendo maior número de animais e de outros grupos genéticos de bubalinos.

For a lamb feedlot system became competitive it is essential that an equilibrate nutrition and functional feeding management happens naturally. Therefore, this experiment has the objective to evaluate the efficiency of whole corn grain diet on lambs performance and carcass quality parameters and ruminal papillae development. During the experiment twenty Dorper/Santa Inescrossbred lambs were used, divided randomly in two treatments: control diet and whole grain diet. The experimental design was completely randomized design and data analysis done by SISVAR using the Tukey test at 5% of probability. No statistical differences were observed on the characteristics evaluated for performance and carcass as well as the length and width of ruminal papillae. The composition of the diet together with the weight gain potential of the lambs can explain the good average daily weight gain of 0.284 kg. The initial body condition average was 2.1 (thin) and improved at the end of the trial period achieving3.15 (normal). Carcass yield reached 46.24%, the results is between the range ideal for specialty meat breeds ranging from 40 to 50%. The carcass conformation, fat cover conformation and the thickness of subcutaneous fat found can be classified as medians. Also there was no difference in the characteristics of ruminal papillae. Thus, it is concluded that the use of whole grain diet did not influence the characteristics evaluated; and the choice of diet should be made with regard to profitability, simplicity of use and availability of forage in feedlot. Temperament in cattle is defined as the fear-related behavioral responses when exposed to human handling. Our group evaluates cattle temperament using 1) chute score on a 1 to 5 scale that increases according to excitable behavior during restraint in a squeeze chute, 2) exit velocity (speed of an animal exiting the squeeze chute), 3) exit score (dividing cattle according to exit velocity into quintiles using a 1 to 5 scale where 1 = cattle in the slowest quintile and 5 = cattle in the fastest quintile), and 4) temperament score (average of chute and exit scores). Subsequently, cattle are assigned a temperament type of adequate temperament (ADQ; temperament score <= 3) or excitable temperament (EXC; temperament score > 3). To assess the impacts of temperament on various beef production systems, our group associated these evaluation criteria with productive, reproductive, and health characteristics of Bos taurus and Bos indicus-influenced cattle. As expected, EXC cattle had greater plasma cortisol vs. ADQ cattle during handling, independent of breed type (B. indicus x B. taurus, P < 0.01; B. taurus, P < 0.01; B. indicus, P = 0.04) or age (cows, P < 0.01; heifers or steers, P < 0.01). In regards to reproduction, EXC females had reduced annual pregnancy rates vs. ADQ cohorts across breed types (B. taurus, P = 0.03; B. indicus, P = 0.05). Moreover, B. taurus EXC cows also had decreased calving rate (P = 0.04), weaning rate (P = 0.09), and kilograms of calf weaned/cow exposed to breeding (P = 0.08) vs. ADQ cohorts. In regards to feedlot cattle, B. indicus EXC steers had reduced ADG (P = 0.02) and G:F (P = 0.03) during a 109-d finishing period compared with ADQ cohorts. Bos taurus EXC cattle had reduced weaning BW (P = 0.04), greater acute-phase protein response on feedlot entry (P <= 0.05), impaired feedlot receiving ADG (P = 0.05), and reduced carcass weight (P = 0.07) vs. ADQ cohorts. Acclimating B. indicus x B. taurus or B. taurus heifers to human handling improved temperament (P <= 0.02), reduced plasma cortisol (P < 0.01), and hastened puberty attainment (P <= 0.02). However, no benefits were observed when mature cows or feeder cattle were acclimated to human handling. In conclusion, temperament impacts productive, reproductive, and health characteristics of beef cattle independent of breed type. Hence, strategies to improve herd temperament are imperative for optimal production efficiency of beef operations based on B. taurus and B. indicus-influenced cattle.

The objective of this study was evaluate the effects of immunocastration on body weight gain, carcass characteristics and meat quality of Nellore beef cattle. Eighty Nellore beef cattle, with initial body weight of 357 +/- 8.63 kg, were placed in feedlots and distributed in two treatments (40 animals per treatments) as follow: one - non-vaccinated bulls and two - immunocastrated bulls (Bopriva (R), Pfizer Animal Health). The animals placed on treatment two were vaccinated in two doses, first application 30 days before they arrive on the feedlots and second on the day they arrive on feedlots. After 67 days of experimental period, was calculated the daily gain of live weight in kg/day of the 80 animals and selected 20 animals from each treatment for the slaughter and carcass evaluations, and ten from each group for the meat analyzes. The data were submitted to analysis of variance. Immunocastrated animals showed lower daily weight gain, hot carcass weight, carcass yield, pH, leg thickness, muscle depth, loin muscle area, carcass muscle percentage, shear force and moisture. However, this animals had higher concentration of lactate and cortisol blood, chest depth, fat thickness, finishing degree, a *, b * and c*, liquid loss in thawing process, myofibrillar fragmentation index and ether extract of meat when compared to non-vaccinated bulss. The immunocastration (Bopriva (R)) is an alternative for improving the quality of meat by the higher fat deposition and by the reduction of the shear force of the meat when compared to non-vaccinated bulls.

The objetive of this research was to study the relation among body weight and average daily gain in different ages, using principal components analysis. Data on 1663 birth weight (BW), weaning weight adjusted to 230 days (WW), yearling weight adjusted to 365 days (YW), long yearling weight adjusted to 550 days (LYW), average daily gain from birth to weaning (AGW), average daily gain from weaning to 365 days (AGY) and average daily gain from 365 days weight to 550 day weight (AGL) from crossbred animals, and data on 320 observations of the same traits from straightbreed Nellore animals were analysed. The model included the fixed effects of breed (only crossbred data), contemporary group, and linear and quadratic effects of age at calving. For body weight in different ages, the first principal component contrasted heavier and light animals after birth and explained about 79,0% and 78,0% of the variation for data on crossbred and Nellore animals, respectively. The second principal component compared heavier animals at weaning and yearling weight those at long yearling weight. It explained around 13,5% and 15,5% of the total variation, respectively, for data on F1 and Nellore breed. The major source of variation among animals on the two data set for body weight was due to differences in weight followed by differences in the ages they got those weight. For the traits expressed as average daily gain, the variation among animals was due to differences in birth season, the first principal component explaining about 52,0% of the variation on crossbred animals. This component compared animal with higher AGY with those with higher AGW and AGL. For data on Nellore breed, the first component explain about 56,0% of the total variation and also compared animals with higher AGY with those with higher AGW and AGL.
