The goal of this work was to develop a strawberry fl avored dairy beverages carbonated and fermented with potential probiotic bacteria. Four formulations of dairy beverages were elaborated: Control (BL); Fermented (BLF); Carbonated (BLC) and Carbonated Fermented (BLFC). In samples submitted for carbonation, a carbonator was used for the carbon dioxide (CO2 ) gas injection dissolved in drinking water and the cultivation consisting of lactic bacteria Lactobacillus acidophilusLA-5®, Bifi dobacterium BB-12® and Streptococcus thermophilus (Biorich, Chr. Hansen) was employed on the fermented samples. The samples were characterized by physical and chemical, microbiological and sensory parameters. The BLC sample showed the presence of yeasts and coliform counts, but the counts indicated that it was suitable for consumption in 28 days time. The BL presented average coliform counts above the limit established by the law after 21 days of refrigerated storage. The presence of lactic bacteria and CO2 and their effects on lower proteolysis indexes, lower pH values and higher acidity values were correlated with signifi cant inhibitory effect of contaminated microorganisms in the BLF and BLFC. The carbonation was not stimulatory for the growth of lactic crops, mainly in the genus Bifi dobacterium spp. and Streptococcus spp. The BLF drink presented greater sensory acceptance and purchase intention test results, however the carbonated beverage presented positive results, with mean values greater than 50% in the acceptance tests with potential inclusion as sensory differential in dairy beverages. Just BLFC drink was considered potentially probiotic, by presenting minimum counts of Lactobacillus spp. during storage. Further studies should be conducted with the technology of carbonation, since it has been proven the correlation of the presence of CO2 with inhibitory effect of contaminated microorganisms and lower physical and chemical changes of dairy beverages.

This work had with objective to characterize and evaluate the performance of the combined system, involving activated charcoal and ionic exchange resins in the removal of substances organic contaminating of the ethyl alcohol from the fermentation of the cassava starch. To testing was used ethyl alcohol PA 96 oGL, conductivity of 0.90 μS/cm at 25 oC, acidity of 60 mg/L and Barbet test of 43 minutes at 15 oC. The contaminated alcohol was composed of ethyl alcohol additive of higher alcohols, organic acids, ester, diol, aldehydes, ketone and ether. Contaminated alcohol was added 2% activated charcoal and after the adsorption isotherm in ionic exchange resins was tested. The adsorption with activated charcoal was performed in a Water Bath at 30 oC for one hour and a half and shaking. Already adsorption ionic exchange columns occurred at room temperature on columns of 93,4 cm in filling height and diameter of 2.29 cm, for flows of 180 mL/min and 90 mL/min. Samples were collected in the tests with charcoal and with each one of the resins and the following analyses were performed: conductivity, acidity and Barbet test. The medium values for conductivity, acidity and Barbet test after the adsorption in charcoal and cation and anion resins were respectively: conductivity was 240; 354 and 465 μS/cm to 25 oC; acidity of 1.081; 1.103 and 1.062 mg/L and the Barbet test was 21; 20 and 9 minutes to 15 oC. It was observed that the addition of 2% of activated charcoal and the permanence in the columns of adsorption was not sufficient to remove the organic substances contaminating of the ethyl alcohol.

Aiming to get the best economic advantage in ethanol production from cassava roots, this study presented a physiochemical characterization from two different types of solid waste in two types of processing of the raw materials in manufacturing ethanol. The processing of cassava roots begins with the disintegration and washing the roots with the addition of 20% more water to obtain a pulp which was treated and stirred in the reactor while adding enzyme α-amylase at a temperature of 90°C for 2 hours. Then we performed a pH adjustment while lowering the temperature to 60 ° C with the addition of the enzyme amiloglucosidase and then stirring for 14 hours. The hydrolyzate obtained was the source of two types of waste which are: i) Solid residue obtained after filtration of the hydrolyatze and ii) Solid waste obtained from filtering wine after alcoholic fermentation of the hydrolyzate with the addition of a dried yeast strain Y-940 manufactured by MAURI OF BRAZIL SA (2%) at a temperature of 25º C. The results of the laboratory analysis showed that the byproducts derived from the hydrolysis and fermentation showed very similar chemical compositions. With levels between 39 and 41% fiber, 0.5% lipids, 20 and 30% carbohydrates, protein 0.5 and 1.50, 6 and 8% acidity, and 20 and 30% soluble solids.

The planting of seedlings, the establishment and maintenance of the natural regeneration process, or the combination thereof, are methods used in the recovery of degraded or disturbed environments, however, often require the addition of soil conditioners. This study aimed to evaluate the influence of conditioners, introduced in degraded soil on growth and nutritional status of Astronium fraxinifolium seedlings. To conduct the experimentation were used as degraded soil conditioner, ash from sugarcane bagasse (CZ) and macrophytes (MC), at the doses of 0, 15, 30 and 45 t ha-1 and 0, 16 and 32 t ha-1 respectively, which combined produced 12 treatments, with three replications, and for field installation, was used the experimental randomized block design. Astronium fraxinifolium (Gonçalo Alves) seedlings, native tree species in cerrado, were introduced in the experimental area and, after 12 months, were evaluated for leaf concentration of nitrogen, phosphorus, potassium, calcium, magnesium, sulfur, boron, copper, iron, manganese and zinc (N, P, K, Ca, Mg, S, B, Cu, Fe, Mn and Zn, respectively). Seedlings and adult plants of A. fraxinifolium were collected in preserved cerrado reserve were also analyzed for nutrients foliar concentration to perform a comparative analysis. The leaves collection in the preserved cerrado and experimental area, was accompanied by soil sampling (0.0 - 0,20 m deep), which was analyzed for phosphorus, OM (organic matter), pH, K, Ca, Mg, Al+H (potential acidity), Al (aluminum), Cu, Fe, Mn and Zn. The results show that the applied residues contributed to raise the foliar concentration of Cu and Fe. The foliar concentration of nutrients was higher in A. fraxinifolium seedlings from preserved cerrado, except for B, which was similar between areas, besides Cu and Fe with higher levels in the seedlings from experimental area. The present study had as objective contribute to the characterization of beekeeping in the Pernambuco State and evaluate the physical-chemical quality of the honeys produced in the region. For this, was applied a directed formulary to the representative organ of beekeeping class aboutthe productives and technicals aspects of beekeepers. Was obtained 14 samples of honey by Apis mellifera africanized, stored in sterile plastic vessels was sent to the Beekeeping Products Quality Control Laboratory (CEA-UNITAU). Was observed that the most of beekeepers have of 50 to 100 hives (57,14%), 28,57% of 100 to 200 hives and 14,28% more than 500 hives, being that 85,71% produce 30 to 50 kg honey/hives/flowering. All use the standard hive Langstroth and 85,71% obtain their swarm by capture. About the physical-chemical quality of the honey, was observed that moisture content varied from 18,2% to 22,0%, with mean value of 19,80±1,11; the water activity varied from 0,70 to 0,84 aw, with mean value of 0,79±0,05 aw; the total acidity was 24,91±8,99 meq/kg and the average index of hydroxymethylfurfural was 16,32±17,88 meq/kg. The results obtained are according to the quality limits established by the brazilian legislation, excepted the water activity that exceeded the maximum limit of 0,65 aw. The datasobtained in this paper shows the development of beekeeping in Pernambuco State and the honey presents nice quality.

The objective of this work was to typify, through physicochemical parameters, honey from Campos do Jordão’s microrregion, and verify how samples are grouped in accordance with the climatic production seasonality (summer and winter). It were assessed 30 samples of honey from beekeepers located in the cities of Monteiro Lobato, Campos do Jordão, Santo Antonio do Pinhal e São Bento do Sapucaí-SP, regarding both periods of honey production (November to February; July to September, during 2007 and 2008; n = 30). Samples were submitted to physicochemical analysis of total acidity, pH, humidity, water activity, density, aminoacids, ashes, color and electrical conductivity, identifying physicochemical standards of honey samples from both periods of production. Next, we carried out a cluster analysis of data using k-means algorithm, which grouped the samples into two classes (summer and winter). Thus, there was a supervised training of an Artificial Neural Network (ANN) using backpropagation algorithm. According to the analysis, the knowledge gained through the ANN classified the samples with 80% accuracy. It was observed that the ANNs have proved an effective tool to group samples of honey of the region of Campos do Jordao according to their physicochemical characteristics, depending on the different production periods.

The soil acidity in no tillage system could be resolved by lime superficial application, improvement to crop mineral nutrition and yield. The experiment carried out on a Rhodic Kandiudalf in Botucatu, São Paulo State, Brazil, in dry conditions, aiming to evaluate the agronomic development and leaf diagnosis of black oat plants, under superficial liming in no tillage system. A randomized complete block design was used, with four replications, the treatments were superficial application of different dolomítico lime rates (R0 = zero – without lime; R1 = 1,8 t ha-1 – lime to increase the base saturation at 50%; R2 = 3,6 t ha-1 – lime to increase the base saturation at 70% and R3 = 5,4 t ha-1 – lime to increase the base saturation at 90%), in October 2002. The black oat Common cultivar was seed in April 2004, in to second year, after the crop rotation of millet (spring) – common bean (summer) – black oat (autumn-winter). The results showed that: the black oat had yield increase by superficial liming, mainly to most dry matter and grain per panicule. Beyond, the superficial liming application did not prejudice leaf diagnosis of culture.

In this study, we aimed to evaluate the effect of five drying systems on the quality of crambe seed and the influence of the pericarp in its electrical conductivity. The experimental design adopted was randomized blocks with four replications. The following drying methods were applied: drying in the field, on the patio, under shade, with heated air, and non-heated air. To evaluate the electrical conductivity and the fat acidity, the seeds, from the cultivar FMS Brilhante, were analyzed with and without pericarp. . An analysis of variance was performed and the means were compared by Tukey test (p≤0,05). We also performed the Pearson linear correlation between electrical conductivity and fat acidity in order to evaluate the pericarp influence. The 4 drying system using shades cause less damage to the seeds; and the presence of pericarp decreased the sensitivity of the electrical conductivity

The Culture of crambe became promising since its grains presents high oil content. The methods of drying may influence the quality of crude oil extracted from the beans, depending on the way it is managed. This study goal was to evaluate the influence of different drying methods on the quality of the crude oil extracted from crambe grain. The experimental design was completely randomized with five treatments (drying with heated air, natural air, yard, shade, and at the field), and with four tests for each. In order to check the quality of the grains, we performed an analysis of fat acidity, and to evaluate the crude oil quality, we conducted analysis of iodine value, acid value, water content, density at 20ºC, and a kinematic viscosity at 40°. After obtaining the data, the results were submitted to analysis of variance. When significant means were detected, they were compared by t-test (p ≤ 0.05). The method of drying with heated air provided a lower rate of fatty acid in grains. The drying methods evaluated did not compromise the quality of the oil extracted from the crambe grain.
