Este estudo teve como objetivo validar critérios testados em laboratório, visando à preservação de vitamina C (Ácido Ascórbico (AA) e Ácido Desidroascórbico (DHA) em couve e tomate preparados em Unidade de Alimentação e Nutrição (UAN) hospitalar. Os critérios foram: armazenamento por 24 horas sob refrigeração (10 °C), sanitização por 15 minutos e distribuição logo após o preparo. Avaliou-se também o conteúdo e a retenção de vitamina C após diferentes tempos de exposição para consumo, rotineiramente utilizados pela UAN. As análises foram realizadas por Cromatografia Líquida de Alta Eficiência (CLAE), utilizando como fase móvel fosfato de sódio 1 mM, EDTA 1mM, diluídos em água ultrapura, pH 3,0 ajustado com ácido fosfórico. A ANOVA (α = 0,05) foi utilizada para análise dos dados. Não houve diferenças significativas quanto ao conteúdo de vitamina C após as etapas de manipulação das hortaliças, confirmando alta estabilidade da vitamina quanto aos critérios adotados. Entretanto, observou-se redução da retenção de AA em couve aos 60 minutos de exposição para consumo (retenção: 46,94%) e em tomate aos 120 minutos de exposição (retenção: 71,81%). Os critérios mostraram-se eficientes no controle de perdas de vitamina C, recomendando-se sua adoção em outras UAN.

Este estudo teve como objetivo avaliar a influência da lavagem e da adição de eritorbato de sódio e tripolifosfato de sódio na estabilidade de Carne Mecanicamente Separada (CMS) de tilápia de Nilo (Oreochromis niloticus) durante 6 meses de armazenamento a -18 ºC. A CMS obtida por meio de máquina separadora de carne e ossos foi dividida em quatro tratamentos (CMS lavada com e sem aditivos, e CMS não lavada com e sem aditivos) e mantida sob congelamento a -18 ºC, por 180 dias. A estabilidade foi avaliada por meio de análises microbiológicas e determinações de nitrogênio não proteico (NNP), bases nitrogenadas voláteis (BNV), substâncias reativas ao ácido tiobarbitúrico (TBARS), pH e drip (perda de água no descongelamento). O processo de lavagem causou redução de aproximadamente 41, 44 e 66% nos teores de proteína bruta, lipídios e cinzas, respectivamente, reduzindo também os valores iniciais de NNP, BNV e TBARS. Durante o armazenamento, foram observados aumentos (p < 0,05) nos teores de NNP, BNV e pH em praticamente todos os tratamentos, exceto na CMS lavada com aditivos, que não apresentou aumentos significativos nos teores de NNP e pH. O uso de aditivos nas CMS diminuiu o drip ao longo do armazenamento, mas não alterou (p > 0,05) os teores de TBARS. Os parâmetros microbiológicos avaliados não ultrapassaram os limites permitidos pela legislação. As CMS permaneceram estáveis e em boas condições de utilização, independentemente da inclusão de aditivo, sendo viável sua estocagem a -18 ºC por 180 dias.

Durante o armazenamento de farinha de trigo, podem ocorrer mudanças bioquímicas que resultam em alterações nutricionais e tecnológicas, sendo que em baixa temperatura estas mudanças ocorrem mais lentamente. Entre as alterações, pode-se citar o aumento da acidez, a redução do pH e as modificações na sua cor. O presente trabalho teve por objetivo avaliar os efeitos do armazenamento à baixa temperatura (-4 ºC) na cor e na acidez da farinha de trigo durante seis meses e correlacionar os resultados obtidos para investigar se a acidez tem relação com a cor da farinha. Foram utilizadas farinhas provenientes de dez genótipos de trigo cultivados em Cascavel, no Estado do Paraná. A cor foi determinada no sistema CIEL*a*b* através dos parâmetros de cor: L* (luminosidade), a* e b* (coordenadas de cromaticidade). Usou-se procedimento da AOAC para determinação da acidez de lipídios. As farinhas apresentaram tendência ao branqueamento durante o período de seis meses de armazenamento, com ocorrência de leve aumento da acidez, mas dentro dos teores aceitáveis. A acidez não foi considerada um fator envolvido na alteração da cor das farinhas no armazenamento à baixa temperatura, pois não houve correlação entre estes dois parâmetros.

No Brasil, a aceroleira, decorrente principalmente da propagação por sementes, tem dado origem a plantios comerciais cujos frutos apresentam parâmetros de qualidade diferenciados. Características físico-químicas de frutos de 18 genótipos de aceroleira (Malpighia emarginata DC.) do Banco Ativo de Germoplasma da Universidade Federal Rural de Pernambuco - UFRPE foram avaliados. O rendimento em polpa variou de 41,06% (PL 40) a 72,54% (PL 43) e, com exceção do genótipo PL 37, os demais apresentaram frutos com teores de ácido ascórbico superiores a 1000 mg.100 g-1. O genótipo PL 39 destacou-se por apresentar o maior teor de ácido ascórbico (1667 mg.100 g-1), SST e flavonóis (15,04 mg.100 g-1), além de elevado teor de antocianinas, sendo, portanto, o mais promissor. Os frutos do genótipo PL 34 revelaram o maior valor de SST/ATT, indicando ser o mais doce

A pesquisa teve por objetivo avaliar a variação do teor de vitamina C em diferentes variedades de laranjas e tangerinas de significado comercial no Brasil, como também medir a capacidade antioxidante destes citros. Foram realizadas análises para avaliação do índice de maturação no suco dos citros, como pH, sólidos solúveis totais e acidez total titulável, e foram determinados os teores de vitamina C e capacidade antioxidante, sendo os dados comparados para verificar as diferenças pelo teste de Tukey (p < 0,05). As tangerinas apresentaram teores de vitamina C e capacidade antioxidante menores que as laranjas. Os teores de vitamina C variaram entre 21,47 e 84,03 mg ácido ascórbico.100 mL-1 de suco, apresentados, respectivamente, pela tangerina-murcote e laranja-natal. A tangerina-murcote também apresentou a menor capacidade antioxidante (12,78%) e a maior capacidade antioxidante foi da laranja-lima (66,24%). Conclui-se que as diferentes variedades de laranjas e tangerinas possuem variação significativa nas variáveis analisadas, sendo que as laranjas apresentaram os maiores teores de vitamina C e capacidade antioxidante.

This study was carried out to evaluate the antioxidant capacity of the agro-industrial waste from acerola. Hydroacetone, hydroethanolic, and hydromethanolic extracts were obtained using the sequential extraction process, and they were screened for their free radical DPPH• (1,1-diphenyl-2-picrilhidrazil) and ABTS•+ (2,2'-azino-bis-(3-etilbenzotiazolin 6-sulfonic acid) scavenging activity and their effect on the linoleic acid peroxidation by the ferric thiocyanate method. Soybean oil with the addition of the extracts (200 ppm) was submitted to Schaal oven test (60 °C, 28 days), in which the samples were analyzed for peroxide value and conjugated dienes. Hydroethanolic and hydromethanolic extracts exhibited good DPPH scavenging activity (low value of EC50 and TEC50 and high value of AE), good ABTS scavenging capacity (1445.1 and 1145.5 µMol TEAC.g-1, respectively), and high percentage inhibition of peroxidation of linoleic acid (96.12 and 91.84%, respectively) and showed the ability to retard the formation of peroxides and conjugated dienes.

The physiological state of a fruit is closely related to ripening and climatic conditions during the growing period when the fruit undergo changes in color, texture, and flavor. The ripening of the fruit can involve a complex series of biochemical reactions with alteration in enzymes activities, phenols, tannins, and ascorbic acid. The activity of enzymes (carboximethylcellulase, polygalacturonase, and pectinlyase), the total concentration of phenolic compounds, condensed tannins, and vitamin C in five stages of maturation were studied. Significant changes were observed between the maturity stages. The phenolic compounds were higher at green stage (705.01 ± 7.41); tannins were higher at green/purple stage (699.45 ± 0.22). The results showed that the ascorbic acid levels of the pulp varied significantly from 50.81 ± 1.43 to 6.61 ± 1.04 mg.100 g-1 during maturation. The specific activity of pectin lyase was higher at green stage (1531.90 ± 5.83). The specific activity of polygalacturonase was higher at mature stage (1.83 ± 0.0018). The specific activity of carboximetilcelulose was higher at ripe mature stage (4.61 ± 0.0024). The low ascorbic acid content found in jambolan fruit indicates that this fruit is not a rich source of this nutrient; however, other characteristics can make jambolan products fit for human consumption.

Fruits are important sources of nutrients in human diet, and Barbados Cherry (Malpighia glabra L.) is of particular interest due to its high content of antioxidants. Diets rich in fruits and vegetables protect individuals against diseases and cancer, but excessive intake of vitamins may act as pro-oxidant and generate changes in DNA. To evaluate the effect of different in natura (BAN) and frozen (BAF) Barbados Cherry pulp concentrations and synthetic vitamin C in liquid form (VC) on the chromosome level and the cell cycle division, root meristeme cells of Allium cepa L. and bone marrow cells of Wistar rats Rattus norvegicus, were used as test system. In Allium cepa L., BAN, at the highest concentration (0.4 mg.mL-1) and BAF, at the lowest concentration (0.2 mg.mL-1), inhibited cell division, and there was recovery of cell division after the recovery period in water only for BAN. In the Wistar rats, all treatments with Barbados Cherry, either acute or subchronic, were not cytotoxic or mutagenic; only the highest concentration of VC increased significantly the rate of chromosomal abnormalities. The data obtained are important to reinforce the use of Barbados Cherry fruit in the diet.

Orange seeds are a promising agroindustry-waste which can be implemented in the extraction and production of vegetable oil. The relationship between moisture content and water activity provides useful information for the processing and storage of this waste item. The aim of this study was to determine the mechanism of water sorption enthalpy-entropy of orange seeds (C. sinensis cv. Brazilians) according to the moisture content. Therefore, desorption isotherms were determined at five different temperature (30, 40, 50, 60, and 70 ºC) under a wide range of moisture content (0.005-0.057 kg kg-1 d.b.) and water activity (0.02-0.756). Theoretical and empirical models were used for modeling the desorption isotherms. An analytical solution of the Clausius-Clapeyron equation was proposed to compute the isosteric heat of sorption, the differential entropy, and Gibbs free energy using the Oswin model when the effect of temperature on the hygroscopic equilibrium was considered.

The objective of this study was to evaluate the influence of vitamin C (VC), vitamin E (VE), and two selenium sources on the performance, yield, and composition of Nile tilapia fillet. The experiment was conducted in a completely randomized design consisting of six treatments with the addition of 100, 200, and 400 mg kg-1 VC and VE and 0.1, 0.2, and 0.4 of two sources of selenium. Each treatment had five replicates of 30 fish each. The diet with 200 mg kg-1 VC and VE + 0.2 mg.k-1 organic selenium resulted in weight gain, length gain, and feed conversion ratio similar to that of the treatment with 400 mg kg-1 VC and VE + 0.4 mg kg-1 organic or inorganic selenium. The addition of organic selenium to the diet improved the weight gain and feed conversion ratio in comparison with the addition of inorganic selenium. The diet with 0.2 mg kg-1 organic selenium showed glutathione peroxidase level equal to the diet with 0.4 mg kg-1 of inorganic selenium. Carcass and fillet yields were not affected by treatments; however, there was treatment effect on the fillet's chemical composition.

The importance of minimally processed commodities in the retail groceries of most developed countries has been rising continuously during the last decades. Cantaloupe melon is used more than any other fruit in fresh-cut processing. Ultraviolet (UV) light has been extensively used to simulate biological stres in plants and for determining resistance mechanisms of plant tissues. In this study the effect of ultraviolet irradiation on some properties of fresh-cut cantalope melon was determined during storage. Freshly cut cantalope melons cubes treated with ultraviolet irradiation at the doses of 1, 2 or 3 min before storage, and then placed in a cold room at 5±1°C temperature and 85-90% RH. Hue angle values of control group is low compared to UV-C treated samples, whereas L values of is high. EL of UV treated samples higher than those of control group. Total soluble solids of fresh-cut melon samples in UC3 treatment increased during storage. The results indicate that UV-C treatments on fresh-cut cantaloupe melon cubes increased total soluble solids independently from water loss.

Rancidity development during frozen storage (–20 °C) of sierra fish (Scomberomorus sierra) was studied. Fillets were packed in low-density polyethylene films with and without butylated hydroxytoluene added (BHT-LDPE and LDPE respectively). Fillets stored with no package were used as control. Special attention was given to the effect of previous ice storage (0, 3, 6, 9 and 15 days) on the quality of the frozen fish. Physical (pH and texture) and chemical (peroxide value, PV and thiobarbituric acid index, TBA-i) analyses were carried out. Lipid oxidation increased with ice storage time in fish muscle without film packing, being greater than the film packed muscle (with and without antioxidant). An effect of previous ice storage time was observed on the frozen product (in all treatments). However, fish muscle with film packing containing antioxidant showed less lipid deterioration. Under the conditions applied in this study, the plastic films with antioxidant prevented the lipids oxidation during the cold handling of the sierra muscle.

Pearl millet flour was utilized in kibbeh formulations instead of whole-wheat flour. Physicochemical properties, oxidation stability and sensorial characteristics of control kibbeh made with whole-wheat flour (CT) were compared with kibbehs prepared with millet flour (roasted or wet) and stored for 90 days (–18 °C). Kibbeh prepared with millet flour presented good oxidation stability (TBARS concentration). Baked kibbehs (with roasted millet flour) presented good acceptability and kibbeh samples did not differ significantly (p > 0.05) from the whole-wheat flour sample, when global appearance, texture and flavor were evaluated. Millet flour could be a suitable ingredient for kibbeh formulations, maintaining their nutritional value and sensorial quality in addition to being a gluten-free product.

Abstract Pecan nutshell is a residue from food industry that has potential to be used as biopreservative in foods. The objective of this study was to evaluate the antimicrobial activity of pecan nutshell aqueous extract in vitro and its effectiveness to inhibit spoilage microorganisms on lettuce leaves. The results indicate that the aqueous extract presents inhibitory activity against important foodborne pathogenic bacteria such as Listeria monocytogenes, Salmonella Enteritidis, Staphylococcus aureus, Bacillus cereus, Aeromonas hydrophila and Pseudomonas aeruginosa. Antimicrobial activity was not observed against Corynebacterium fimi, Clostridium perfringens, Escherichia coli, and the phytopathogenic fungi tested. When applied onto lettuce leaves, pecan nutshell extract reduced the counts of mesophilic and psychrotrophic bacteria in 2 and 4 log CFU/g, respectively, during storage of leafy for 5 days at refrigeration temperature (5 °C). The extract was not effective to inhibit yeast on lettuce leaves. Thus, the aqueous extract of pecan shell showed great potential to be used as a natural preservative in foods, acting mainly in the inhibition of spoilage and pathogenic bacteria.

Abstract The aim of this study was to determine chemical, nutritional and microbiological evaluation of whole or gutted meagre stored at 4 ± 1 oC. Whole ungutted (Group A), eviscerated (Group B), beheaded-eviscerated fish (Group C) and fillets (Group D) groups were created for this study. According to fatty acid analysis, it was determined that meagre is rich in PUFA content and the n3/n6 ratio is within the ideal limits. In all 4 groups, obtained from fillets values were the highest in general, quality parameters were found within acceptable limits. Psychrophilic and mesophilic aerobic bacteria counts exceeded the standards for fillet groups on 7th days of storage. According to microbiological analysis, ungutted, beheaded, eviscerated samples were not exceeded limit values on 9th day. In conclusion, whole or gutted (headed and eviscerated) storage of meagre is found to be more advantageous compared to fillets for storage at 4 ± 1 oC.
