The aim of this study was to determine the antioxidant activity of Moringa (Moringa oleifera Lam.) leaves flour in beef burger during storage for 120 days. Six hamburger formulations were processed: one control (without the use of additives), four with addition of Moringa leaves flour (0.10, 0.15, 0.20, and 0.25 g/100 g aggregate), and one with addition of synthetic antioxidant Propyl Gallate (0.01 g/100 g aggregate). The products were analyzed for their chemical composition with determinations of moisture, protein, dietary fiber, lipids, ash, carbohydrate, and caloric value after preparation. Microbiological and acceptance testing were performed at the beginning and after 120 days of storage. Determination of pH, instrumental color and lipid oxidation (TBARS) were performed at 1, 30, 60, 90 and 120 days of storage. All samples showed physical-chemical and microbiological tests in accordance with the Brazilian legislation. pH measurements were between 5.48 and 5.90; however, the intensity of red has changed according to the treatments and storage periods. The addition of Moringa leaves flour had no antioxidant effect on burgers, but its inclusion not only contributed to the improvement of nutritional quality, but also did not harm product acceptance.

The paper presents the results of a doctoral dissertation that covered the analysis of knowledge involving the everyday teaching and administrative practices of school managers who worked with the proposed construction of a citywide system of inclusive e ducation, while an educational policy. The aim was to follow the school management towards the proposed inclusive educationin three elementary schools in a medium-sized city in the state of São Paulo. The data were collected at the earlier school, a middle-aged one and another recently opened. The stages of the study were: 1) review of literature on: a) qualitative ethnographic research applied to education, b) principles of autonomy, planning, decentralization, c) the education of the school manager and d) relationship between school management and inclusive school; 2) data collection in schools, 3) description and categorization of data and 4) analysis and interpretation of results. To develop the methodology were used observations of the participants, semi-structured interviews, analysis of official documents of the school (internal and external). It was concluded that there is a lack of political-pedagogical project collectively built, a difficulty in developing coordinated actions aimed at the realitiy, problems in interpersonal relationships; a gap gulf between the proposed policy, the discourse about it and the daily practice. The school management is responsible for the construction of an inclusive school, but in the reality studied it was directed at administrative issues at the expense of the pedagogic ones.

The alimentation of fitness people is fundamental by health. This study it has for objective to evaluate of quali-quantitative form the proteic-caloric ingestion, the nitrogen balance and its relation caloric ingestion/estimated metabolic rate, in colleges student practicing of body-building. Eleven body-builders student (18 until 30 years old), both sex, had been analyzed. The attainment of data used an alimentary register, and the gotten information were analyzed together with the nitrogen balance from 24 hours of piss collection. We observed that the nitrogen balance of individuals that make use of some protein supplement is significantly bigger than individuals that do not consume no type of it. This because, the percentile caloric obtained from protein ingestion is significantly raised, and this associate to the caloric ingestion in this group also is raised, determines the obtained results.

Damage to health caused by excess body fat also generating a negative economic impact, with significant increase in public spending. The metabolic syndrome, which also gets several other names, such as plurimetabolic syndrome or syndrome X, is nothing more than the combined incidence of some diseases or metabolic disorders in which obesity, besides being one of them, seems to promote parallel effects that contribute to the development of other chronic diseases such as diabetes and cardiovascular disease. Researchers agree that hyper caloric diets associated with a sedentary lifestyle are the main triggers of disease, including the increasing on genetic predisposition to this disease in children and adolescents. In the case of children and adolescents the diagnosis is complicated by the lack of a consensus accepted by the scientific community. In addition to behavioral and environmental factors unfavorable to health, in a more detailed analysis also found hereditary aspects or simply genetic, such as hepatic enzyme Butyrylcholinesterase. When compared to eutrophic, obese adolescents, like adults obese, have higher serum concentration values as well as major activity for this enzyme. Increasing evidence suggests that excess body weight assumes an important role in the variation of metabolic functions in adolescents, favoring the emergence of early diagnostic indicators of metabolic syndrome.

You can set the resistance training such as making a move against a resistance by performing a muscle contraction and generating a muscular adaptation. This form of training, was initially used only in training athletes aiming to strengthen and improve fitness. Some coaches did not give proper focus, as the increase in muscle mass would cause loss of flexibility and agility. But over time a huge evolution occurred within this area and the practitioners of resistance training are no longer just athletes, and reached the whole community, from young to elderly, being a physical activity that generates a large caloric expenditure and has several health benefits, improve the cardiovascular system and decreasing the amount of body fat in the body. Cortisol is a hormone secreted from a stressful stimulus to the body, secretion undergoes control of the hypothalamic-pituitary axis, which releases the hormone into the bloodstream andrenocorticotrópico, going to the adrenal cortex responsible for their release. This has catabolic function, acting in the metabolism of carbohydrates, proteins and lipids, as well as having an important effect antiflamatório. Testosterone is a steroid hormone cholesterol from being produced by the testicles in men, as in women is produced to a lesser extent in ovary and adrenal glands, has functions androgenic and anabolic. Androgen function is responsible for the development of male sexual characteristics, while on anabolic function operates in the growth of muscles and bones, influencing the development of the human body organs. Within the metabolic changes that occur in the resistance training testosterone plays an important role in protein synthesis, influencing the production of strength and / or power during exercise. The permanence of the corn grain in the field, after physiological maturity, is an important cause of crop losses, both in quantitative and qualitative aspect. By ceasing the supply of assimilated substances to grains, due to physiological maturity, the synthesis reactions are overcome by breathing, responsible for the maintenance of the living tissues of the grains, which occur at the expense of reserves accumulated during grain formation. In addition, there are losses from fungus and insects attack due to adverse weather conditions. Technological advances in recent decades, the develop of grain dryers with different capacities and efficiencies, has led to the early withdrawal of the product from the field, still damp, reducing spoilage. Moreover, the use of artificial drying systems can represent a significant cost to the producer. Thus, the present work aimed to study the effect of natural and artificial methods of drying on maize dry matter losses, for Botucatu, city of Sao Paulo state, Brazil. The cornfield production was conducted at the Experimental Farm “Lageado” and the experimental treatments were conducted in the Laboratory of Agricultural Products Processing, in the Department of Rural Engineering, where the drying systems were tested. The treatments were: shade (control), artificial with heated air, artificial unheated air and, drying attached to the plant. The following analyzes for quality monitoring were performed: weight test, thousand-grain weight test and, grain dry weight. The results showed significant loss in quality of drying beans attached to the plant, by assessing the dry matter loss and by the variation of the grain weight. The weight test showed that the worst performance was the artificial with heated air treatment. We used mathematical modeling techniques to describe the dry matter loss and adjusted the mathematical model to the experimental data analyzed. From the experimental data obtained during drying the grain attached to the plant, it was still possible to fit a regression model that estimates the loss of grain dry matter under the climate from Botucatu during the 2011/2012 harvest period.

The present work is about a comparative study of two methodologies (MIALHE and ASABE), used to calculate the cost per hectare in the tillage operation in the culture of corn. The methodology of ASABE presents a higher cost per hectare in relation to the MIALHE proposal, being that the methodologies presents similar costs related to the depreciation expenses, accommodation and insurance. The differences were that in the ASABE proposal, the biggest expenses involved the payment of interest, fuel, lube and handwork, while in the MIALHE methodology, only the expense regarding to maintenance was more. The methodology of ASABE most suitable for management costs per hectare.

The objective of this work was to calculate the energetic values in passion fruit commercial beverages (whole juices, reconstituted juices, tropical juices, and nectars) by their centesimal composition. Then, the energetic values were compared to the caloric values as described on the nutritional facts from the beverageslabels. Analyses of moisture, protein, lipids, ashes, and carbohydrates were done in 25 commercialbeverages samples. In order to calculate the energetic value of each sample, the following conversion factors were used: 4 kcal.g-1 for carbohydrates, 4 kcal.g-1 for proteins and 9 kcal.g-1 for lipids. To allow the comparison of the results, the energetic values printed on the labels were converted into kcal.100g-1 usingthe beverages density. Overall, the commercial beverages calculated energetic values were similar to the nutritional facts.

The root growth is genetically controlled. There is variability among cultivars and soil factors such as toxicant Al and low contents of Ca and Mg can harm it. The objective of this study was to evaluate the root growth and the shoot growth of millet cultivars in response to liming. The experiment was carried out in pots with 13 dm3 of soil, in greenhouse conditions until 62 days after the emergence of the plants. The used experimental design was completely randomized, in a 2x4 factorial scheme, that is to say,two painço cultivars (AL Mogi e AL Tibagi), and four level of calcareous (0,0; 0,83, 1,67 e 3,34 g dm-3 ), with four replications. Liming promotes increase of the root system and of the aerial parts of the cultivars. The AL Tibagi cultivar presents a root system more tolerant to the low saturation by bases in comparison to the AL Mogi, however, the maximum root growth was occurred in saturations at around 64%. Millet cultivars in high acidity conditions reduce root diameter at the expense of the growth in length.
