The aim of this study was to produce and physicochemically characterize beer elaborated with honey. Beer production assays were carried out with nine treatments, the combination of three concentrations of the original extract (11, 13 and 15 ºBrix) with three percentages of honey in the wort formulation (0, 20 and 40%). The experiment was completely randomized with two replicates, giving a total of eighteen trials. Mashing was carried out by infusion and the honey was added during the boiling step. After clarification, the extract content was corrected with water and the wort then inoculated with bottom-fermenting yeast. Fermentation was at 10 ºC. The beer was bottled manually and stored in a freezer at a temperature of 0 ºC for 15 days, for maturation. The beers were analyzed for their alcohol content, true extract, apparent extract, colour, bitterness, turbidity, pH, total acidity, carbon dioxide, foam density and total foam. The results of the physicochemical analysis were subjected to an analysis of variance, and the means compared by Tukey's test at 5% probability. All beers were considered to be pale. The presence of honey in the formulation enhanced carbonation, foam density and total foam, but the beers were less bitter and less acid.

As ciclodextrinas (CDs) são oligossacarídeos cíclicos que solubilizam e modificam moléculas por possuir uma cavidade interna hidrofílica e região externa hidrofóbica, com uma estrutura tronco-cônica, conferindo a estes açúcares cíclicos propriedades físico-químicas para complexação de uma grande variedade de moléculas. A enzima ciclodextrina glicosiltransferase (CGTase) catalisa reações de conversão de amido em diferentes tipos de CDs, a sua produção é influenciada por vários fatores. As pesquisas dirigidas para a produção de CGTases de menor custo são importantes para viabilizar economicamente o uso das CDs em escala industrial. No presente estudo, as CDs foram produzidas a partir de diferentes fontes de carbono pelo micro-organismo Bacillus circulans ATCC 21783, estudou-se seu crescimento celular assim como sua produção enzimática, utilizando a ferramenta estatística de planejamento experimental. O micro-organismo Bacillus circulans ATCC 21783 mostrou-se ser eficiente na produção da enzima CGTase, os resultados indicaram a potencialidade do grão de sorgo como o melhor substrato para fermentação na produção de CGTase. Quanto maior o tamanho do grão de sorgo, maiores concentrações de glicose e amido estarão presentes, o que influencia diretamente a produção enzimática. Por meio do planejamento experimental foram proposto modelos matemáticos que expressam tanto a produção enzimática quanto a concentração das variáveis das concentrações da fonte de carbono, pH e a temperatura. A importância de desenvolver o modelo é demonstrar a sua aplicação bem-sucedida para determinação das condições ideais que representam o processo de alta produtividade enzimática da CGTase. Means for milk, not otherwise specified, the product from complete and uninterrupted milking , in a hygienic, healthy cows, well fed and rested. The milk of other animals must be called according to origin of species. One of the main characteristics that defined the milk is the set of their sensory characteristics, and the main flavor. The control of milk quality in Brazil has been an important factor for the consolidation of the entire production chain, passing necessarily by the dairy industry. The production of milk with good quality guarantees, of course, food safety for consumers. The measures to obtain milk begin on the property, in carrying out correct procedures for milking, storage and transportation of the product also in the dairy. Later, in the laboratory evaluation of physicochemical properties, research fraud, and microbiological examinations. Finally, measures of health education are need for producers to become aware of the economic benefits by obtaining a better quality milk. The objective of this review is to emphasize the importance of using diagnostic procedures methods for the control of mastitis and consequently obtain better Milk quality

The monolithic glassy carbon is a carbonaceous material, isotropic, non graphitizable obtained by means of carbonization of resins up to 1000 °C. The good physicochemical properties make this material applied in several areas such as aerospace, medicine, electronics, chemistry, among others. It has generally been processed from the use of phenolic and furfuryl alcohol resins. These resins have high crosslink density and high fixed carbon content and are therefore widely applied in aerospace. The combination phenol / furfuryl alcohol resins search for obtaining the most suitable process for the glass-like carbon processing with phenolic resins currently available and of lower cost and easier to synthesize than the furfuryl alcohol resin. The main objective of this work is to obtain a phenol-furfuryl resin with high fixed carbon content combined with low porosity of the material. Different synthesis routes have been adopted along with thermal analysis techniques, FTIR and image analysis. Mass spectrometry is a diagnosis that can aid in the understanding of the kinetics of chemical plasma environment. Through this you can get information about some species present in the environment and make inferences about the behavior of the plasma when parameters such as pressure and applied power changes. When analyzed plasmas generated by the discharge of argon and diglyme (both individually and mixtures of them in various proportions) could be found conditions in which the plasma behavior was different from what is often found in the literature. By the end some peculiar characteristics of plasmas generated by mixing argon / diglyme were raised and it was found that the noble gas is a good mediator of physical and chemical reactions that occur in the environment, and help in the understanding of chemical kinetics. Therefore mass spectrometry was shown highly important tool for the study of plasma environment

The decreasing availability of drinking water is a problem that has existed for a long time and continues to be aggravated, especially by the increase in population and pollution of water resources. Due to the need to find alternatives in order to ensure water supplies in sufficient quantity and quality for consumption by populations, rainwater collection arises as an alternative. The present study was developed in Ipeúna-SP, consisting of an experimental system of collection and storage of rainwater on the roofs of buildings. Samples of the same precipitation, differentiated through the initial disposal and treatment of the collected water, were stored during a period of six months and monitored through physical, chemical and microbiological analyses. With the results, the qualitative characteristics of the stored precipitation were found, the main differences among the samples were identified and the needs of treatment were studied.

O presente estudo teve como objetivos principais analisar a biodiversidade de macroinvertebrados bentônicos em diferentes pontos localizados no fundo da Lagoa do Mian, zona de desembocadura do rio Paranapanema, na Represa de Jurumirim, Estado de São Paulo. Nove pontos de amostragem ao longo da lagoa foram selecionados, distribuídos em três transectos. Cada transecto possuía um ponto na margem direita, um ponto na margem esquerda e um ponto no meio. As coletas foram realizadas em dois períodos do ano, um em março e outro em agosto, para fins de comparação. 2009 representou um ano atípico com relação aos níveis pluviométricos, ocorrendo chuvas intensas no período de julho (um mês tipicamente seco). Foram medidas as variáveis físico-químicas da água, tais como: transparência, profundidade, oxigênio dissolvido, pH, condutividade elétrica e temperatura. Foram recolhidas amostras do sedimento para análise da fauna bentônica e análise do sedimento (quantidade de matéria orgânica presente e granulometria) utilizando-se a draga de Petersen. O material foi triado sob microscópio estereoscópico. A seguir, foi feita a identificação e contagem dos indivíduos. Medidas de densidade, abundância relativa, riqueza, diversidade e equitabilidade foram calculadas. A análise mostrou maior abundância dos táxons no mês de agosto, apontando para a predominância de alguns grupos, como Chaoboridae, Nematoda, Oligochaeta e Chironomidae, este último apenas no segundo mês de coleta. A distribuição dos organismos foi mais significativamente influenciada pela a condutividade elétrica da água, pela transparência, pelo oxigênio dissolvido e por características do sedimento

Brazilian wines are appreciated by consumers for having fruity odor and taste which are typical from Vitis labrusca cultivars. The rusticity of these cultivars, the winemaking and the physicochemical properties are some of the key factors to obtain a quality beverage. In this context, the aim of this article was to analyze the quality of three white wines from wineries located in northwest region of São Paulo state by determining physicochemical properties and sensory profile. Data were analyzed by statistical tests and by Principal Component Analysis (PCA). It was possible to observe statistical differences (P<0,05) in most physicochemical properties. Furthermore, the PCA showed that the attributes body and color significantly explained the variance of the first and second component, respectively, higlighting the Vitis vinifera wine. Thus the connection between the physicochemical and sensory properties of white wines was important for characterization of these beverages produced in the northwest of São Paulo.

Brazilian red wines are very appreciated by consumers from tropical regions, because they typically have aromatic and fruity taste. Thus, the aim of this article is to verify the quality of red wines from wineries located in Northwest region of São Paulo, based on the relationship between physicochemical properties and sensory attributes. Three red wines from this region was evaluated by sensory and analytical methods and it was possible to observe significant differences in the fixed acidity, alcoholic content, total phenolic content and total dry extract. Multidimensional Scaling showed relationship between total phenolic content and astringency, total dry extract and body and the relationship of volatile acidity in the assessment of odor samples. It was possible to see the physicochemical influence in sensory evaluation, indicating the importance of the chemical profile in the elucidation of possible sensory alterations in red wines.

O cólon tem sido explorado nas últimas décadas como sítio de liberação de fármacos. A goma gelana e a pectina são polissacarídeos hidrofílicos naturais promissores para a obtenção de sistemas de liberação cólon-específica de fármacos, uma vez que são degradados especificamente por enzimas produzidas pela microbiota deste órgão. Filmes poliméricos apresentam grande aplicação no revestimento de formas farmacêuticas sólidas e podem permitir o controle das taxas de liberação de fármacos e/ou seu direcionamento para um órgão específico. Além disso, modificações químicas como a reticulação iônica podem alterar propriedades físico-químicas como reduzir a hidrofilia do sistema. Neste trabalho foram obtidos e caracterizados filmes de goma gelana e pectina reticuladas ionicamente com cátion trivalente (Al3+). Os efeitos da concentração de polímeros, agente reticulante e plastificante (glicerol) utilizados na preparação das amostras foram avaliados a partir da caracterização das propriedades mecânicas, físicas e químicas dos filmes. A análise macroscópica revelou filmes flexíveis, homogêneos e translúcidos e a análise por microscopia eletrônica de varredura mostrou que a reticulação contribuiu para a formação de filmes com superfícies rugosas. Os baixos valores de transmissão de vapor d'água obtidos indicam a possibilidade de uma importante proteção contra a umidade. A absorção de líquido pH-dependente dos filmes foi demonstrada e a menor absorção de líquido em meio ácido deve garantir uma proteção da forma farmacêutica, quando em contato com o meio gástrico. Os filmes se mostraram bastante mucoadesivos, o que deve favorecer a retenção da forma farmacêutica no sítio alvo e as características mecânicas se mostraram favoráveis para a elaboração de filmes para revestimento de formas farmacêuticas sólidas

Two drainage basins located in the mid-southern region of Paraná state were comparatively studied for analysis of limnological characteristics in lotic ecosystems. Ten segments of rivers and streams were evaluated in each basin, from June 4th through to June, 29th , 2007. The following physical and chemical parameters were measured: water temperature, specific conductance, oxygen saturation, pH, turbidity, current velocity and depth. The two drainage basins presented similar nominal values for all parameters investigated. There were significant differences between the two environments in relation to temperature, pH, and oxygen saturation. Cluster analysis revealed five small groups of samplings, each one with particular limnological characteristics. The Principal Components Analysis (PCA) confirmed the difference among the drainage basins. These results suggest an influence of regional and local factors in limnological characteristics of rivers and streams in the studied drainage basins.
