Abstract A wide range of quality parameters have been used to describe maize flours for food use, but there is no general agreement about the most suitable parameters for breadmaking. The objective of this study was to identify the maize flour parameters related to the consumer perceived quality of Portuguese broa bread (more than 50% maize flour). The influence of eleven maize landraces was assessed and compared with commercial flour using baking tests. The broa were evaluated by instrumental (colour, firmness) and sensory hedonic analysis with a consumer panel of 52 assessors. The broa sensory analysis revealed similar assessments among landraces and the lowest scores for commercial flour. The flour particle size distribution is the major influence, with commercial flour showing the highest mean diameter and a large particle distribution range. Broa consumer panel linkage associations and specific sensory descriptors have been identified; age as an influence on colour, cohesiveness, and source region as an influence on appearance and texture.

Abstract A challenge to the food sector has been the development of new products incorporating co-products from the food processing industry with minimal impact on their pre-determined structures and adding nutritional quality. In order to add value and develop alternatives for the use of co-products generated during the agroindustrial processing, this work aimed to study the stability of gluten-free sweet biscuits developed with soybean okara, rice bran and broken rice. The formulations were elaborated with increasing percentages of these ingredients and compared with the standard (commercial sweet biscuit) for ten months. The analyses were: weight, diameters (internal and external), thickness, specific volume, instrumental parameters of color, texture, scanning electron microscopy, water activity, proximal composition and isoflavones. The experimental sweet biscuits had characteristics of color, weight, volume and diameters (internal and external) very similar to the commercial, whereas texture, lipids and energy value decreased, and aw, moisture and protein increased during storage. During the 1950’s, the Rittenhouse family of Vineland in the Niagara Peninsula opened a craft store and studio. Within a short period of time, they realized that resources for the craft of rug hooking were in demand and they began to build their business around this niche. Edna Rittenhouse, the mother, was the wool dyer; Margaret Rowan, the daughter, was the pattern designer; Ted Rowan, the son-in-law, changed careers and became the manager of the family business. The 1960’s were a prosperous time, not only in the Niagara Peninsula, but also for the Rittenhouse business. Edna Rittenhouse had been hooking rugs for decades but she and her family worked at developing and sharing newer techniques with newer materials. Shading manuals were authored and published; students became teachers; creativity abounded in the demand for and the creation of new designs. Instead of using woolen yarn, they were using pure woolen fabric; instead of using a standard cutter, they began using a uniquely designed cutter; instead of using frames, they employed a table top method. The new material and technique resulted in a rug with a smooth, uniform texture and a soft nap. Since many crafters belonged to crafters guilds, Margaret and Ted Rowan began promoting the idea of a guild for rug hookers and in time the Ontario Hooking Craft Guild was also a reality. A joint project between Chatelaine magazine and the Rittermere studio for Canada’s centennial year of 1967 was extremely well received within the circle of hooking crafters and the Rittermere Farm Craft Studio became a North American landmark for crafters. From this point onward the studio had a large customer base not only in North America but also overseas. The studio remained popular until 1984 when Margaret and Ted Rowan decided to retire. The Rittermere name has been preserved in the name of Rittermere-Hurst-Field which is a similar business located in Aurora which is just north of Toronto.

Orosensory perception strongly influences liking and consumption of foods and beverages. This thesis examines the influence of biological sources of individual variation on the perception of prototypical orosensory stimuli, food liking, self-reported alcohol liking and consumption, and indices of health. Two orosensory indices were examined: propylthiouracil (PROP) responsiveness, a genetically-mediated index of individual variation associated with enhanced responsiveness to orosensory stimuli often expressed as PROP taster status (PTS); and thermal taster status (TTS), a recently reported index of orosensory responsiveness. Taster status in PTS and/or TTS confers greater responsiveness to most orosensory stimuli. Gender, age, ethnicity, and fungiform papillae (FP) density were not associated with orosensory responsiveness to tastants, an astringent, and a flavour. Unlike PROP responsiveness, FP density was not associated with TTS. Both PROP responsiveness and TTS were associated with increased responsiveness to orosensory stimuli, including temperature and astringency. For PROP, this association did not hold when stimuli were presented at cold or warm temperatures, which are ecologically valid since most foods and beverages are not consumed at ambient temperature. Thermal tasters (TTs), who perceive 'phantom' taste sensations with lingual thermal stimulation, were more responsive to stimuli at both temperatures than thermal non-tasters (TnTs). While PTS, TIS, and gender affected self-reported liking and consumption of some alcoholic beverages, gender associated with the greatest number of beverage types and consumption parameters, with males generally liking and consuming alcoholic beverages more than females. Age and gender were the best predictors of alcoholic beverageAiking and consumption. As expected, .. liking of bitter and fatty foods and cream was inversely related to PROP responsiveness. TTS did not associate with body mass index or waist circumference, and contrary to previous studies, neither did PROP responsiveness. Taken together, TnTs' greater liking of cooked fruits and vegetables and high alcohol, and astringent alcoholic beverages than TTs suggests differences between TTS groups may be driven by perceived temperature and texture. Neither an interaction between PTS and TTS nor a TTS effect on PROP responsiveness was observed, suggesting these two indices of individual variation exert their influences on orosensory perception independently.

The relationships between vine water status, soil texture, and vine size were observed in four Niagara, Ontario Pinot noir vineyards in 2008 and 2009. The vineyards were divided into water status zones using geographic information systems (GIS) software to map the seasonal mean midday leaf water potential (,P), and dormant pruning shoot weights following the 2008 season. Fruit was harvested from all sentinel vines, bulked by water status zones and made into wine. Sensory analysis included a multidimensional sorting (MDS) task and descriptive analysis (DA) of the 2008 wines. Airborne multispectral images, with a spatial resolution of 38 cm, were captured four times in 2008 and three times in 2009, with the final flights around veraison. A semi-automatic process was developed to extract NDVI from the images, and a masking procedure was identified to create a vine-only NDVI image. 2008 and 2009 were cooler and wetter than mean years, and the range of water status zones was narrow. Yield per vine, vine size, anthocyanins and phenols were the least consistent variables. Divided by water status or vine size, there were no variables with differences between zones in all four vineyards in either year. Wines were not different between water status zones in any chemical analysis, and HPLC revealed that there were no differences in individual anthocyanins or phenolic compounds between water status zones within the vineyard sites. There were some notable correlations between vineyard and grape composition variables, and spatial trends were observed to be qualitatively related for many of the variables. The MDS task revealed that wines from each vineyard were more affected by random fermentation effects than water status effects. This was confirmed by the DA; there were no differences between wines from the water status zones within vineyard sites for any attribute. Remotely sensed NDVI (normalized difference vegetation index) correlated reasonably well with a number of grape composition variables, as well as soil type. Resampling to a lower spatial resolution did not appreciably affect the strength of correlations, and corresponded to the information contained in the masked images, while maintaining the range of values of NDVI. This study showed that in cool climates, there is the potential for using precision viticulture techniques to understand the variability in vineyards, but the variable weather presents a challenge for understanding the driving forces of that variability.

The focus of this study was to detennine whether soil texture and composition variables were related to vine water status and both yield components and grape composition, and whether multispectral high definition airborne imagery could be used to segregate zones in vineyards to target fruit of highest quality for premium winemaking. The study took place on a 10-ha commercial Riesling vineyard at Thirty Bench Winemakers, in Beamsville (Ontario). Results showed that Soil moisture and leaf'l' were temporally stable and related to berry composition and remotely-sensed data. Remote-sensing, through the calculation of vegetation indices, was particularly useful to predict vine vigor, yield, fruit maturity as well as berry monoterpene concentration; it could also clearly assist in making wines that are more representative ofthe cultivar used, and also wines that are a reflection of a specific terroir, since calculated vegetation indices were highly correlated to typical Riesling.

The major focus of this dissertation was to explain terroir effects that impact wine varietal character and to elucidate potential determinants of terroir by testing vine water status (VWS) as the major factor of the terroir effect. It was hypothesized that consistent water status zones could be identified within vineyard sites, and, that differences in vine performance, fruit composition and wine sensory attributes could be related to VWS. To test this hypothesis, ten commercial Riesling vineyards representative of each Vintners Quality Alliance sub-appellation were selected. Vineyards were delineated using global positioning systems and 75 to 80 sentinel vines per vineyard were geo-referenced for data collection. During the 2005 to 2007 growing seasons, VWS measurements [midday leaf water potential ('l')] were collected from a subset of these sentinel vines. Data were collected on soil texture and composition, soil moisture, vine performance (yield components, vine size) and fruit composition. These variables were mapped using global information system (GIS) software and relationships between them were elucidated. Vines were categorized into "low" and "high" water status regions within each vineyard block and replicate wines were made from each. Many geospatial patterns and relationships were spatially and temporally stable within vineyards. Leaf'l' was temporally stable within vineyards despite different weather conditions during each growing season. Generally, spatial relationships between 'l', soil moisture, vine size, berry weight and yield were stable from year to year. Leaf", impacted fruit composition in several vineyards. Through sorting tasks and multidimensional scaling, wines of similar VWS had similar sensory properties. Descriptive analysis further indicated that VWS impacted wine sensory profiles, with similar attributes being different for wines from different water status zones. Vineyard designation had an effect on wine profiles, with certain sensory and chemical attributes being associated from different subappellations. However, wines were generally grouped in terms of their regional designation ('Lakeshore', 'Bench', 'Plains') within the Niagara Peninsula. Through multivariate analyses, specific sensory attributes, viticulture and chemical variables were associated with wines of different VWS. Vine water status was a major contributor to the terroir effect, as it had a major impact on vine size, berry weight and wine sensory characteristics.

Grapevine winter hardiness is a key factor in vineyard success in many cool climate wine regions. Winter hardiness may be governed by a myriad of factors in addition to extreme weather conditions – e.g. soil factors (texture, chemical composition, moisture, drainage), vine water status, and yield– that are unique to each site. It was hypothesized that winter hardiness would be influenced by certain terroir factors , specifically that vines with low water status [more negative leaf water potential (leaf ψ)] would be more winter hardy than vines with high water status (more positive leaf ψ). Twelve different vineyard blocks (six each of Riesling and Cabernet franc) throughout the Niagara Region in Ontario, Canada were chosen. Data were collected during the growing season (soil moisture, leaf ψ), at harvest (yield components, berry composition), and during the winter (bud LT50, bud survival). Interpolation and mapping of the variables was completed using ArcGIS 10.1 (ESRI, Redlands, CA) and statistical analyses (Pearson’s correlation, principal component analysis, multilinear regression) were performed using XLSTAT. Clear spatial trends were observed in each vineyard for soil moisture, leaf ψ, yield components, berry composition, and LT50. Both leaf ψ and berry weight could predict the LT50 value, with strong positive correlations being observed between LT50 and leaf ψ values in eight of the 12 vineyard blocks. In addition, vineyards in different appellations showed many similarities (Niagara Lakeshore, Lincoln Lakeshore, Four Mile Creek, Beamsville Bench). These results suggest that there is a spatial component to winter injury, as with other aspects of terroir, in the Niagara region.

In this work, we consider the properties of planar topological defects in unconventional superconductors. Specifically, we calculate microscopically the interaction energy of domain walls separating degenerate ground states in a chiral p-wave fermionic superfluid. The interaction is mediated by the quasiparticles experiencing Andreev scattering at the domain walls. As a by-product, we derive a useful general expression for the free energy of an arbitrary nonuniform texture of the order parameter in terms of the quasiparticle scattering matrix. The thesis is structured as follows. We begin with a historical review of the theories of superconductivity (Sec. 1.1), which led the way to the celebrated Bardeen-Cooper- Schrieffer (BCS) theory (Sec. 1.3). Then we proceed to the treatment of superconductors with so-called "unconventional pairing" in Sec. 1.4, and in Sec. 1.5 we introduce the specific case of chiral p-wave superconductivity. After introducing in Sec. 2 the domain wall (DW) model that will be considered throughout the work, we derive the Bogoliubov-de Gennes (BdG) equations in Sec. 3.1, which determine the quasiparticle excitation spectrum for a nonuniform superconductor. In this work, we use the semiclassical (Andreev) approximation, and solve the Andreev equations (which are a particular case of the BdG equations) in Sec. 4 to determine the quasiparticle spectrum for both the single- and two-DW textures. The Andreev equations are derived in Sec. 3.2, and the formal properties of the Andreev scattering coefficients are discussed in the following subsection. In Sec. 5, we use the transfer matrix method to relate the interaction energy of the DWs to the scattering matrix of the Bogoliubov quasiparticles. This facilitates the derivation of an analytical expression for the interaction energy between the two DWs in Sec. 5.3. Finally, to illustrate the general applicability our method, we apply it in Sec. 6 to the interaction between phase solitons in a two-band s-wave superconductor.

Genetic Programming (GP) is a widely used methodology for solving various computational problems. GP's problem solving ability is usually hindered by its long execution times. In this thesis, GP is applied toward real-time computer vision. In particular, object classification and tracking using a parallel GP system is discussed. First, a study of suitable GP languages for object classification is presented. Two main GP approaches for visual pattern classification, namely the block-classifiers and the pixel-classifiers, were studied. Results showed that the pixel-classifiers generally performed better. Using these results, a suitable language was selected for the real-time implementation. Synthetic video data was used in the experiments. The goal of the experiments was to evolve a unique classifier for each texture pattern that existed in the video. The experiments revealed that the system was capable of correctly tracking the textures in the video. The performance of the system was on-par with real-time requirements.

Broadside, 90 cm. x 55 cm. made from canvas. This broadside is for a centennial celebration of the settlement of Ontario by the United Empire Loyalists. The first line reads “1774 -1884” [it should be 1784-1884]. The celebration was to be held on the historic plains of Niagara. The names of the general committee of the celebration are listed as well as the names of Major Hiscott, warden; F.A.B. Clench, chairman and Dan Servos. It is written in pencil that “this was given by J.B. Secord”. There are some small holes in the broadside and a small bit of canvas has lost some of its texture. This affects the text very slightly. 1884

Associée à d'autres techniques observationnelles, la polarimétrie dans le visible ou dans le proche infrarouge permet d'étudier la morphologie des champs magnétiques à la périphérie de nombreuses régions de formation stellaire. A l'intérieur des nuages molécualires la morphologie des champs est connue par polarimétrie submillimétrique, mais rarement pour les mêmes régions. Habituellement, il manque une échelle spatiale intermédiaire pour pouvoir comparer correctement la morphologie du champ magnétique galactique avec celle située à l'intérieur des nuages moléculaires. -- Cette thèse propose les moyens nécessaires pour réaliser ce type d'analyse multi-échelle afin de mieux comprendre le rôle que peuvent jouer les champs magnétiques dans les processus de formation stellaire. La première analyse traite de la région GF 9. Vient ensuite une étude de la morphologie du champ magnétique dans les filaments OMC-2 et OMC-3 suivie d'une analyse multi-échelle dans le complexe de nuages moléculaires Orion A dont OMC-2 et OMC-3 font partie. -- La synthèse des résultats couvrant GF 9 et Orion A est la suivante. Les approches statistiques employées montrent qu'aux grandes échelles spatiales la morphologie des champs magnétiques est poloïdale dans la région GF 9, et probablement hélicoïdale dans la région Orion A. A l'échelle spatiale des enveloppes des nuages moléculaires, les champs magnétiques apparaissent alignés avec les champs situés à leur périphérie. A l'échelle spatiale des coeurs, le champ magnétique poloïdal environnant la région GF 9 est apparemment entraîné par le coeur en rotation, et la diffusion ambipolaire n'y semble pas effective actuellement. Dans Orion A, la morphologie des champs est difficilement détectable dans les sites actifs de formation d'OMC-2, ou bien très fortement contrainte par les effets de la gravité dans OMC-1. Des effets probables de la turbulence ne seont détectés dans aucune des régions observées. -- Les analyses multi-échelles suggèrent donc qu'indépendamment du stade évolutif et de la gamme de masse des régions de formation stellaires, le champ magnétique galactique subit des modifications de sa morphologie aux échelles spatiales comparables à celles des coeurs protostellaires, de la même façon que les propriétés structurelles des nuages moléculaires suivent des lois d'autosimilarité jusqu'à des échelles comparables à celles des coeurs.

Trois expériences ont été menées dans le but de déterminer quels codes sous-tendant la représentation de l’organisation spatiale des composantes des formes complexes contribuent aux discriminations d’objets complexes. Les trois expériences ont utilisé une tâche d’appariement simultané d’objets complexes. Aux essais négatifs, les objets pouvaient avoir des différences catégorielles de configuration, des différences métriques de configuration, des différences métriques de configuration et du rôle des parties ou des différences du rôle des parties seulement. La distance angulaire 2D ou 3D entre les stimuli pouvait varier. À l’expérience 1, les stimuli étaient présentés avec stéréoscopie et avaient une surface avec un gradient de texture de haut contraste. L’expérience 2 constitue une réplication de l’expérience 1 hormis pour l’utilisation de stimuli dont le contraste était réduit. Le but de cette manipulation était de vérifier si les résultats de l’expérience 1 sont répliqués avec une tâche dont le niveau de difficulté est plus élevé. Les stimuli de la troisième expérience avaient une surface gris mat et étaient présentés sans stéréoscopie. Les trois expériences ont montré que des codes catégoriel et pertinent aux rôles des parties contribuent à la discrimination d’objets complexes. Toutefois, ces codes sont dépendants aux orientations 2D et 3D, et ce, peu importe la richesse de l’information de profondeur présente dans les stimuli. De plus, nos résultats démontrent une plus grande sensibilité aux différences catégorielles de configuration qu’aux différences métriques. Enfin, un code métrique contribue également aux discriminations. Toutefois, la contribution de ce code disparaît lorsque la quantité d’information de profondeur est réduite.

Le présent mémoire comprend un survol des principales méthodes de rendu en demi-tons, de l’analog screening à la recherche binaire directe en passant par l’ordered dither, avec une attention particulière pour la diffusion d’erreur. Ces méthodes seront comparées dans la perspective moderne de la sensibilité à la structure. Une nouvelle méthode de rendu en demi-tons par diffusion d’erreur est présentée et soumise à diverses évaluations. La méthode proposée se veut originale, simple, autant à même de préserver le caractère structurel des images que la méthode à l’état de l’art, et plus rapide que cette dernière par deux à trois ordres de magnitude. D’abord, l’image est décomposée en fréquences locales caractéristiques. Puis, le comportement de base de la méthode proposée est donné. Ensuite, un ensemble minutieusement choisi de paramètres permet de modifier ce comportement de façon à épouser les différents caractères fréquentiels locaux. Finalement, une calibration détermine les bons paramètres à associer à chaque fréquence possible. Une fois l’algorithme assemblé, toute image peut être traitée très rapidement : chaque pixel est attaché à une fréquence propre, cette fréquence sert d’indice pour la table de calibration, les paramètres de diffusion appropriés sont récupérés, et la couleur de sortie déterminée pour le pixel contribue en espérance à souligner la structure dont il fait partie.
