O presente trabalho envolveu três experimentos: Influência da imunização passiva contra estradiol (E2) e a aspiração do maior folículo (F1) no momento do desvio folicular esperado, sobre a ocorrência do desvio folicular observado. Também foi objetivo verificar o efeito desses tratamentos sobre o perfil de hormônio folículo estimulante (FSH), hormônio luteinizante (LH) e inibina total circulante. Para tanto, os animais foram imunizados com dose única de soro anti-E2 (G anti-E2) ou o F1 foi aspirado no momento do desvio esperado (GAF1). O plasma sangüíneo foi obtido no período pré e póstratamento. O intervalo entre o dia da aplicação do soro (desvio esperado) e o dia da detecção do desvio foi em média o mesmo para o G anti-E2 e controle. No GAF1, a eliminação do maior folículo provocou atraso no momento da detecção do desvio folicular entre o segundo (F2) e o terceiro (F3) maior folículo, comparado ao controle. Em ambos os tratamentos o perfil de FSH, LH e inibina total foi similar ao controle. O experimento 2 tratou de um projeto piloto visando dominar a técnica de colheita de fluido dos grandes folículos ovarianos por meio de punção com agulha fina e o efeito desse procedimento sobre o folículo e às concentrações hormonais. Foram utilizados dois grupos de animais, G1 o folículo foi mantido intacto (controle) e G2 foi utilizada uma punção folicular quando o maior folículo atingiu diâmetro ~35 mm. Ultrasonografia ovariana foi realizada desde o ínicio da detecção de um folículo ~25mm, seguindo até a detecção da ovulação. O terceiro experimento objetivou verificar a influência de gonadotrofina coriônica humana (hCG) em folículos de 30 ou 35mm sobre as concentrações de hormônios esteróides e fatores intrafoliculares. The objective of this study was evaluate the effects of immunocastration on body weight gain, carcass characteristics and meat quality of Nellore beef cattle. Eighty Nellore beef cattle, with initial body weight of 357 +/- 8.63 kg, were placed in feedlots and distributed in two treatments (40 animals per treatments) as follow: one - non-vaccinated bulls and two - immunocastrated bulls (Bopriva (R), Pfizer Animal Health). The animals placed on treatment two were vaccinated in two doses, first application 30 days before they arrive on the feedlots and second on the day they arrive on feedlots. After 67 days of experimental period, was calculated the daily gain of live weight in kg/day of the 80 animals and selected 20 animals from each treatment for the slaughter and carcass evaluations, and ten from each group for the meat analyzes. The data were submitted to analysis of variance. Immunocastrated animals showed lower daily weight gain, hot carcass weight, carcass yield, pH, leg thickness, muscle depth, loin muscle area, carcass muscle percentage, shear force and moisture. However, this animals had higher concentration of lactate and cortisol blood, chest depth, fat thickness, finishing degree, a *, b * and c*, liquid loss in thawing process, myofibrillar fragmentation index and ether extract of meat when compared to non-vaccinated bulss. The immunocastration (Bopriva (R)) is an alternative for improving the quality of meat by the higher fat deposition and by the reduction of the shear force of the meat when compared to non-vaccinated bulls.

Bovine meat exerts an important contribution to the human diet, mainly by its high biological value. For this reason the productivity and the quality of beef are so discussed. Productivity is defined as the ratio between production and the factors of production used and quality defined as an adjective given to the product that suits the consumer implicit and explicit. Brazil is the world leader in tonnage exported bovine meat, however the country has a relatively low income, since no exports to the markets of greater added value. Quantify the degree of importance of these two factors in a capitalist market is not easy, so knowing the science that involves this product is vital for both factors. We must know that there is a wide variability in the markets importers and Brazil should seek to be the leader everywhere, whether carcass with better conformation and degree of finish, is lean beef, organic meat is even

There are diseases in vertebrates associated with the structure of bone tissue that directly affect the locomotor system of the animal. Being a endoskeleton, the diagnosis of these diseases becomes difficult in vivo. The characterization of the physical structure of the bone tissue of healthy animals becomes a major tool in the diagnosis comparison of live animals. Thus, the objective of this work is to determine the average value of the key physical properties of the bone structure used in the clinical diagnosis, such as: bone density, porosity, and mass attenuation coefficient of 59.6 keV photons of bone tissue and bovine and equine check variations in these values. The samples were provided by the pathology department of the Faculty of Veterinary Medicine and Zootechny of Botucatu-SP, which are of one male equine and one female bovine animals, using the radio and metacarpus, together with these materials were supplied the historic them. They were withdrawn ten samples in cuts of 10cm over the bone . These samples were submitted to the wet method of immersion in water for the density, by the method of attenuation of gamma radiation of radioisotope 241Am, it is estimated the mass attenuation coefficient, and then were dried in the oven for determining the content moisture. In determining the porosity of the samples was tight ground, in order to obtain the density of particles. The results for the mass attenuation coefficient of gamma radiation to the levels of saturated humidity, environment humidity, dry humidity respectively 0289 ± 0039; 0286 ± 0040 and 0297 ± 0042. And the density of particles was 2.2691 g/cm3

This monograph seeks to provide an exposition and theoretical examination of Ciência da Carne (“Science of the Flesh”), a series of artworks in woodcut printing executed after research into the artistic aspects of Human Anatomy, done throughout the Graduate Course in Visual Arts at UNESP’s Art Institute. Traditional procedures of naturalistic representation of the human figure often adopt the scientific basis of Anatomy as a means of interpreting the surface contours of the body from its inside out. The historical connection between Anatomy and Art, however, is not merely accidental, for it is integral to the development of both disciplines, which find themselves deeply related in the human impulse for self-discovery and reinvention of its own likeness. The series of artworks collected in Ciência da Carne explores, through the particular graphical language provided by woodcut printing, abstract arrangements of isolated anatomical elements, at once removed from the context of traditional figurative representation and from the didactic goals of medical illustration.

The organic wastes need to be adequately managed, in order to avoid the environmental pollution and damage to the public health. So, this work aimed to study the composting process using two methods: manual and mechanized, for the treatment of bovine ruminal waste. This residue is generated in large proportions during the bovine slaughter process, and it can lead environmental degradation and contamination, or even damage to the public health, when not treated. For the initial adjustment of the composting parameters, it was incorporated the residue of coffee husks. The manual composting system was done by the manually aerated piles, while the mechanized composting system was done in a reactor coupled to a compressor that enabled the aeration of the system. The proportions used in both systems were: 90% bovine rumen (R) and 10% coffe husks (CC); 85% bovine rumen and 15% coffe husks; 80% bovine rumen and 20% coffe husks. The parameters determined during the monitoring of the composting process were: temperature, pH, moisture, organic matter, ash, organic carbon, Kjeldahl nitrogen and C/N ratio. The results obtained during the monitoring of the piles and reactors presented similar behavior, except for the parameters Kjeldahl nitrogen and C/N ratio. When compared to the “Instrução Normativa no 25 de 23/07/2009 do Ministério da Agricultura, Pecuária e Abastecimento”, the organic produced composts with the best results were: pile 2 (85% R; 15% CC) and reactors 1 (90% R; 10% CC) e 2 (85% R; 15% CC)

The meat quality is evaluated by consumers according to their physical characteristics, such as color, texture, juiciness, tenderness and odor. The stress during the life of the animal and at the moment before the slaughter may be responsible for changes in the transformation of muscle into meat. Such changes may lead to the appearance of DFD (Dark, Firm and Dry) and PSE (Pale, Soft and Exudative) meats, which are poorly accepted in the market – because of their unusual aspect – and inadequate to industrial processing. Factors related to the handling, loading, transport, unloading, resting period and stunning are singled out as critical, since that, in these phases the animals are subjected to adverse situations to which they are accustomed. The aim of this study is to identify the process of ante-mortem and the slaughter itself in which the animals are subjected to stressful situations, as well as the consequences of stress on meat quality

O consumo de carne bovina pela população brasileira está relacionado a aspectos que sejam sociais ou de saúde. Além disso, pode afetar também o nosso meio ambiente, aumentando impactos ambientais. Em se tratando do Brasil, temos uma grande demanda deste alimento, influenciada pelos hábitos alimentares da população, exigindo, por conseguinte, uma grande produção. Através da construção de cenários e modelagem ambiental, este trabalho avaliou algumas das consequências ambientais da pecuária de corte no Brasil. Para tanto, usamos estimativas de consumo da população, produção da carne bovina e também de valores que relacionem o uso da terra com as emissões de gás carbônico para avaliar os problemas ambientais. Contabilizamos as emissões de gases de efeito estufa associadas as mudanças de uso da terra, fermentação entérica e o manejo de dejetos do gado bovino. Obtive que em alguns cenários extremistas como o Con2a as emissões foram no total de 1,77 PgCO2e anualmente. Enquanto no cenário nacional obtive um total de 1,2 PgCO2e das emissões anuais associadas a todos os seus setores. Em nossos resultados notamos a forte influência do nível de consumo de carne e do sistema de manejo nas emissões de gases efeito estufa dos cenários estudados

É notável a importância da União Europeia para o setor exportador brasileiro, principalmente no caso da exportação de carne bovina. Conduto, este comércio bilateral encontra entraves para seu desenvolvimento causados principalmente pela União Europeia, tais como barreiras não tarifárias (barreiras técnicas, sanitárias, fitossanitárias etc) além de exigências acerca de produtos exportados para o mercado europeu por países terceiros, como, por exemplo, medidas de rastreabilidade, certificação, rotulagem e conformidade com regras europeias. Este estudo visa analisar este comércio bilateral, os obstáculos existentes e como o Brasil lida com esta situação
