Functional foods are defined as those that provide additional benefits to consumers. The market for foods with functional properties is expanding, supported by scientific evidences, which leads the developing of different special foods. This market segment is related to the innovations, as well as the traditional functional dairy and non dairy products, gain traction in the marketplace for innovative products like based whey sports beverage. Besides the functionality of muscle protein synthesis, these beverages are entering into areas such as clinical nutrition and satiety. Thus, it can be supposed that the composition and technological versatility of the whey support the use asinnovative ingredient for foods and beverages. This review aim to supply an overview about functional foods, mainly the segment of whey based beverages. The success of this new nutritional approach is close related to the requirement to identify, to characterize and to develop methodologies to measure and to validate more precisely the relevant functional markers, making them open for a public domain.

This article describes the evolution of Innovaton concepts, specifically Technological Innovation. It seeks to demonstrate that this conceptual evolution opens new paths for the development of Innovations and for the creation of Competitive Opportunities. It presents a model for searching and assessing the risk of these innovations regarding the adopted Technologies and the targeted market. A traditional tool for the Adoption of Innovations is introduced to be used in risk assessment. We seek to propose a strategy to search for, to identify and to assess innovations based on the involvement of the entire organization, by means of activities guided by creativity. Important aspects regarding the process of adopting Innovations are described to demonstrate the importance of the "time" dimension, as well as to contribute for the Innovation search practice.

A partir de uma revisão sistemática de literatura recente sobre o universo do empreendedorismo por meio de empresas nascentes na área do jornalismo, o trabalho procura caracterizar esse nosso ecossistema econômico e identificar oportunidades para o lançamento de novos produtos e serviços informativos em plataformas digitais. Paralelamente, são mapeados três casos específicos de startups brasileira do setor e avaliados os principais motivos que levaram ao seu sucesso ou fracasso, conforme as estratégias e modelos de negócio adotados. Com base em entrevistas realizadas com gestores, o trabalho examina fatores críticos para o sucesso ou o fracasso desses empreendimentos, discutindo, por fim, alguns dos motivos específicos que levam parte dessas operações a encerrarem suas atividades ou alterarem suas estratégias de negócio precocemente

The objective of this work is to determine the membership functions for the construction of a fuzzy controller to evaluate the energy situation of the company with respect to load and power factors. The energy assessment of a company is performed by technicians and experts based on the indices of load and power factors, and analysis of the machines used in production processes. This assessment is conducted periodically to detect whether the procedures performed by employees in relation to how of use electricity energy are correct. With a fuzzy controller, this performed can be done by machines. The construction of a fuzzy controller is initially characterized by the definition of input and output variables, and their associated membership functions. We also need to define a method of inference and a processor output. Finally, you need the help of technicians and experts to build a rule base, consisting of answers that provide these professionals in function of characteristics of the input variables. The controller proposed in this paper has as input variables load and power factors, and output the company situation. Their membership functions representing fuzzy sets called by linguistic qualities, as “VERY BAD” and “GOOD”. With the method of inference Mandani and the processor to exit from the Center of Area chosen, the structure of a fuzzy controller is established, simply by the choice by technicians and experts of the field energy to determine a set of rules appropriate for the chosen company. Thus, the interpretation of load and power factors by software comes to meeting the need of creating a single index that indicates an overall basis (rational and efficient) as the energy is being used.

This study aims to develop innovative proposals for production agriculture management and plans to build a participatory model, through the digital inclusion of members of the family farm gathered in a cooperative venture seeking to establish new environmental management efficiency for household production. The first part of the hypothesis assumes that a major obstacle to the insertion of small family farms into the markets is skilled labor, human capital. A training model has been developed for traceability and tracking activities on family farms, based on the atemoya culture. The second hypothesis predicts that it is possible to create a model that is scientifically supported by widely accepted rules derived from GlobalGAP standard certification, a global benchmark for good agricultural practices. Using these rules the model seeks to achieve the traceability of agricultural products and operations from the preservation of identity information within the production chain. The results obtained by the computerized system confirmed the presented hypotheses by demonstrating that technological innovation through intensive communication and information technologies education as well as other associated forms are important drivers of regional development, especially if implemented through a digital inclusion project using the state program Infocentros Access São Paulo.

In this work, we address the informational Density Index (IDI) a methodological Option How To be used on the Research Procedures Analysis of Commerce Geography. The IDI and an indicator of Technological Complexity level of economic activities and a review and made a database from CNEFE / NCEA, where the first signifies the National Register of Establishments for statistical purposes and the second means a National Classification Economic Activities. Elaborated with emphasis on discussion of between center and centrality relations, wish to present a constitution of a data base on level sampling with an analysis elaboration do IDI from the criteria: home-page and e - commerce. This methodology helps us understand how polycentric structures, locational enterprise well as a reflection on the middle cities using a through the analysis on city of São Carlos/SP. Where we see the establishments with greater and lesser content as well as its geographical distribution, noting of according to the criteria listed number of establishments with IDI 0 very relevant. Our analysis as well as such divisions that meet greater index, so, IDI 2 like to financial activities. Apesar dos benefícios nutricionais e de seu potencial como alimento funcional, o amaranto ainda é um alimento pouco difundido no Brasil. Para o aumento do consumo desta matéria-prima, preconiza-se a sua incorporação na formulação de produtos convencionais, como os snacks extrudados que vêm sendo elaborados com a farinha de amaranto desengordurada. Pouco tem sido pesquisado sobre a extrusão direta do grão integral de amaranto, o que permitiria eliminar as etapas de moagem e de desengorduramento. Assim, a pesquisa avaliou e comparou a qualidade tecnológica de snacks obtidos por extrusão de grão integral de amaranto e de farinha de amaranto desengordurada, e suas misturas com 25 e 50% de fubá de milho. Verificou-se que o teor de lipídeos presentes no grão de amaranto (8%) prejudicou a expansão e a textura dos extrudados. Mesmo com a adição de fubá de milho, os snacks extrudados à base de grão integral de amaranto foram rejeitados sensorialmente (aceitação global entre 3 e 4, numa escala hedônica estruturada de nove pontos), pois apresentaram baixa expansão, textura dura, cor escura e forte sabor residual. Já os snacks extrudados obtidos com farinha de amaranto desengordurada isoladamente e em combinação com fubá de milho apresentaram maior expansão, textura crocante e cor mais clara, e, por isso, maior aceitabilidade (aceitação global > 5). Conclui-se, nas condições do experimento, que não foi possível obter snacks extrudados à base de grãos de amaranto de boa aceitação e que a produção de snacks extrudados à base de farinha de amaranto desengordurada proporciona produtos com melhor aceitação por parte do consumidor.

[ES]Según el Real Decreto 1196/2003 del 19 de Septiembre, donde se aprueba la Directiz básica de Protección Civil para el control y planificación ante el riesgo de accidentes graves en los que intervienen sustancias peligrosas, las empresas que almacenen sustancias peligrosas deben realizar un plan de autoprotección denominado: Plan de Emergencias, dónde se realizará el análisis y evaluación de los riesgos además de otra serie de medidas que no competen a este proyecto. El proyecto ha consistido en la creación de un prototipo de plataforma web para el análisis de riesgos en entornos industriales. La plataforma genera una serie de resultados que además pueden ser representados en un visor. Está compuesta de tres partes: aplicación web o cliente, servidor web y base de datos. La aplicación web pretende servir de ayuda a los analistas de riesgos. Estos analistas, en primer lugar deberán hacer un estudio donde se determinen cuáles son los riesgos existentes, a continuación han de recopilar todos los datos para el estudio. Una vez dispongan de estos datos, podrán utilizar la aplicación para establecer cuáles serían las consecuencias en caso de producirse alguno de los accidentes. Los resultados obtenidos se calcularán en base a unos modelos matemáticos e indicarán de forma analítica y/o visual el alcance del accidente.
