Background: Dietary behaviour interventions have the potential to reduce diet-related disease. Ample opportunity exists to implement these interventions in the workplace. The overall aim is to assess the effectiveness and cost-effectiveness of complex dietary interventions focused on environmental dietary modification alone or in combination with nutrition education in large manufacturing workplace settings. Methods/design: A clustered controlled trial involving four large multinational manufacturing workplaces in Cork will be conducted. The complex intervention design has been developed using the Medical Research Council's framework and the National Institute for Health and Clinical Excellence (NICE) guidelines and will be reported using the TREND statement for the transparent reporting of evaluations with non-randomized designs. It will draw on a soft paternalistic 'nudge' theoretical perspective. It will draw on a soft paternalistic "nudge" theoretical perspective. Nutrition education will include three elements: group presentations, individual nutrition consultations and detailed nutrition information. Environmental dietary modification will consist of five elements: (a) restriction of fat, saturated fat, sugar and salt, (b) increase in fibre, fruit and vegetables, (c) price discounts for whole fresh fruit, (d) strategic positioning of healthier alternatives and (e) portion size control. No intervention will be offered in workplace A (control). Workplace B will receive nutrition education. Workplace C will receive nutrition education and environmental dietary modification. Workplace D will receive environmental dietary modification alone. A total of 448 participants aged 18 to 64 years will be selected randomly. All permanent, full-time employees, purchasing at least one main meal in the workplace daily, will be eligible. Changes in dietary behaviours, nutrition knowledge, health status with measurements obtained at baseline and at intervals of 3 to 4 months, 7 to 9 months and 13 to 16 months will be recorded. A process evaluation and cost-effectiveness economic evaluation will be undertaken. Discussion: A 'Food Choice at Work' toolbox (concise teaching kit to replicate the intervention) will be developed to inform and guide future researchers, workplace stakeholders, policy makers and the food industry. The purpose of this research is to investigate the various social, political and economic factors that contributed to Canada’s failure to implement a universal school lunch program during the 1940s. Although Canada developed several other social welfare programs in the post-war period, it remains one of the only industrialized nations that does not provide hot meals to children in elementary or secondary schools. Data from the province of Ontario, a major site of postwar reconstruction and policy-making, has been taken up to inform the broader national discourse on school lunches from the 1940s. National, Ontario provincial and City of Toronto archival records were collected and analyzed according to common themes, in order to identify key barriers that constrained government support of a hot meal program. Archival records were identified using key words, and were limited to materials created between 1930-1952. Analysis suggests that sufficient need for a hot meal program had not been established during the 1940s. Despite misleading nutrition messages, rates of malnutrition and nutrient-related disease were at an all-time low, and many Ontario school boards did not appear to have the necessary infrastructure required to supply all pupils with hot meals. The Canadian government had already employed significant resources to improve existing social security programs by coupling them with health education. This strategy reflected a shift in understanding malnutrition as a knowledge-based problem, as opposed to income-based. This understanding was further reinforced through the moralized dissemination of nutrition information, which placed blame on women for improperly raising their children. Ultimately, the strong uptake of nutrition as a public health issue in Ontario may have limited prospective responses to solutions already utilized in the public health domain, and directed favour away from a universal school lunch program for Canada.

This report was commissioned by the Department of Health, Ireland. Obesity is a public health problem in Ireland which is largely responsible for the increasing prevalence of diet-related diseases and growing financial burden on our healthcare system. Although overweight and obesity rates may have reached a plateau in Irish adults and children, they remain at an extremely high level as 1 in 4 children areoverweight or obese and an estimated 61% of adults are overweight or obese. Urgent public health action is required to reduce the levels of obesity among our children and adults. A sustainable national intervention strategy that combines government and community-led interventions is required. These interventions need to incorporate both nutrition education and environmental modification strategies to reduce levels of obesity. International literature suggests that calorie posting has the potential to have a positive effect on the obesity crisis by encouraging people to make healthier food choices through informed consumer decisions. This evaluation focuses on the uptake of voluntary calorie posting from a national representative sample of food service businesses in Ireland and explores the attitudes of food service businesses that do and do not display calories. This evaluation will explore the most effective and efficient way of implementing mandatory calorie posting on menus in Ireland.

Anchoíta (Engraulis anchoita) é uma espécie pelágica encontrada no Sudoeste do Oceano Atlântico. Estima-se que 135000 toneladas/ano desse peixe possam ser exploradas ao longo do litoral sul do Brasil. Entretanto, os recursos pesqueiros do país são ainda inexplorados, o que torna esta matéria prima candidata em potencial para a fabricação de novos produtos a base desse pescado. Com o apoio de programas governamentais sociais, a tendência para o Brasil é para o desenvolvimento de produtos de anchoíta alternativos e que sejam capazes de suprir as necessidades específicas de cada grupo de consumo alvo. Dentro desse cenário, um estudo de novos produtos de pescado frente ao mercado se faz necessário, na tentativa de compreender as variáveis influentes do setor. Para tanto, na presente tese teve objetivou-se desenvolver produtos à base de anchoíta e estudar o comportamento do mercado consumidor frente a esses novos produtos de pescado. Um total de seis artigos foi gerado. O primeiro artigo intitulou-se: “Potencial de inserção de empanados de pescado na merenda escolar mediante determinantes individuais”. Neste objetivou-se detectar os determinantes individuais do consumo de pescado com adolescentes em idade de 12 a 17 anos, visando à inserção de empanados de pescado na merenda escolar. Foi verificado que as variáveis que melhor discriminaram a frequência de consumo foram “gosta de pescado” e “grau de escolaridade dos pais”. Os resultados indicaram um potencial de consumo de empanados de pescado por adolescentes, associado à necessidade de educação alimentar. O segundo artigo “Elaboração de hambúrguer a partir de base proteica de anchoíta (Engraulis anchoita)” no qual se objetivou avaliar o efeito de diferentes combinações de solventes para a obtenção de base proteica de anchoíta visando à elaboração de hambúrguer de pescado. As lavagens com ácido fosfórico e mais dois ciclos de água foram as que apresentaram os melhores valores para a obtenção da base proteica, baseando-se na remoção de nitrogenados e respostas sensoriais. No terceiro artigo “Aceitação de empanados de pescado (Engraulis anchoita) na merenda escolar no extremo sul do Brasil” o objetivo foi avaliar a aceitação de empanados de pescado (Engraulis anchoita) com alunos (n = 830) da rede pública de ensino, em idades entre 5 e 18 anos, de duas cidades do estado do Rio Grande do Sul, Brasil. Os resultados indicaram relação inversa entre a aceitação de empanados de pescado e o aumento da idade das crianças. O quarto artigo estudou “Razões subjacentes ao baixo consumo de pescado pelo consumidor brasileiro.” Neste objetivou-se investigar o comportamento referente ao consumo de pescado de uma população com baixo consumo de pescado (Brasil), aplicando a Teoria do Comportamento Planejado (TCP). Os resultados indicaram que tanto a intenção como a atitude provou serem determinantes significativos na frequência de comer pescado, sendo a atitude inversamente correlacionada com o consumo de pescado. Hábito apareceu como uma importante variável discriminante para o consumo de pescado. O quinto artigo intitula-se “Modelagem de equações estruturais e associação de palavras como ferramentas para melhor compreensão do baixo consumo de pescado”. O objetivo foi desenvolver um modelo e explicar o conjunto das relações entre os construtos do consumo de pescado em uma população com baixo consumo de pescado (Brasil) através da aplicação da TCP e pelo Questionário das Escolhas dos Alimentos. Além disso, a percepção cognitiva de produtos de pescado (Engraulis anchoíta) foi avaliada pela mesma população. Os resultados indicaram um bom ajuste para o modelo proposto e mostraram que os construtos “saúde” e “controle de peso” são bons preditores da intenção. A técnica associação de palavras provou ser um método útil para a análise de percepção de um novo produto de pescado, além de ajudar a explicar os resultados obtidos pelas equações estruturais. O sexto e último artigo “Percepção de saudável em produtos de pescado em uma população com alto consumo de pescado. Uma investigação por eye tracking” em que se objetivou explorar o uso do método eye tracking para estudar a percepção de saudável em diferentes produtos de pescado. Dois pontos importantes podem ser salientados como influentes na percepção de saudável: produtos de pescado processados e alimentos fritos.

Objetivo: Relatar a experiência das atividades de educação alimentar e nutricional (EAN) desenvolvidas em pacientes com sobrepeso e obesidade. Síntese de dados: Realizaramse sessões de educação alimentar e nutricional (EAN) com pacientes com sobrepeso e obesidade graus I e II atendidos no ambulatório do Hospital Universitário da Universidade Federal de Juiz de Fora (HU/UFJF), integrantes do projeto de extensão “Saúde na Balança”. As sessões ocorreram em grupo, semanalmente no 1º mês, quinzenalmente no 2º e 3º mês e mensalmente até o 6º mês, no período de setembro de 2012 a setembro de 2013. Durante um ano de atividades, foram realizados 4 grupos, com um total de 46 integrantes, que aceitaram participar das sessões. Nestas, foram abordados temas em nutrição que apoiavam o atendimento individual. A equipe identificou que local, horário, periodicidade das sessões, disponibilidade de tempo e falta de recursos financeiros eram fatores que influenciavam a adesão do paciente ao tratamento, sendo alguns deles modificados, já se observando melhora da adesão no último grupo. Entretanto, ainda foram registradas 17 desistências. Com o autorrelato dos pacientes, foi possível perceber mudanças positivas nos hábitos alimentares e na forma de se relacionar com a obesidade e as comorbidades associadas. Conclusão: No decorrer das atividades, criou-se vínculo entre equipe e participantes, permitindo identificação de demandas e de formas efetivas de atuação nos grupos, demonstrando que a EAN auxilia a abordagem individual, na medida em que permite troca de experiências e informações, ampliando o poder de escolha por hábitos de vida saudáveis.

Boruca es una comunidad que está situada al sur del país, en la provincia de Puntarenas. Su extensión en territorio es de 12.470 hectáreas y según el censo poblacional del 2000 tiene una población de 1.386 indígenas, entre la cual hay una importante cantidad de niños, niñas y adolescentes en edad escolar, así como también egresados/as de secundaria.Según el informe sobre desarrollo humano en Centroamérica y Panamá del 2004:"tener acceso al conocimiento es un factor que determina en gran medida el bienestar actual y futuro de las personas. El conocimiento implica por una parte, acceso a la educación o capacitación y por otra, acceso a información pertinente, veraz y oportuna. Se ha establecido que un más alto nivel de formación de las personas contribuye a que gocen de un mejor estado de salud, alcancen empleos superiores y obtengan mayores ingresos. El nivel y calidad de la formación es un factor importante en la promoción personal, en el ascenso social y en el progreso colectivo del país"Partiendo de lo anterior, reflexiono que en las comunidades indígenas de nuestro país no existen unidades de información que sirvan de apoyo en sus procesos de enseñanza y aprendizaje, tampoco cuentan con un espacio físico de encuentro donde los y las jóvenes y las demás personas puedan expresar sus destrezas, sus gustos por la lectura, buscar información y usar la tecnología. Y qué pasa además con sus necesidades básicas, ¿estarán cubiertas?, ¿sus problemas diarios tendrán solución?, ¿vivirán en condiciones de extrema pobreza?, ¿cuentan con suficientes alimentos?, ¿sus relaciones familiares son armoniosas? Por lo tanto, ¿esimportante una biblioteca en la comunidad?, ¿para qué serviría y apoyaría a estas poblaciones?

Inclusive education became a global promise corroborated by international declarations such as the Salamanca Statement (1994) and the Incheon Declaration (2015). Most countries worldwide have committed to the goal of inclusive education, putting a lot of pressure on so-called developing countries. Against this backdrop the threefold purpose of this book is to: 1. Generate research evidence on the development and implementation of inclusive education in developing countries, 2. University students are more globally mobile than ever before, increasingly receiving education outside of their home countries. One significant student exchange pattern is between China and the United States; Chinese students are the largest population of international students in the U.S. (Institute of International Education, 2014). Differences between Chinese and American culture in turn influence higher education praxis in both countries, and students are enculturated into the expectations and practices of their home countries. This implies significant changes for students who must navigate cultural differences, academic expectations, and social norms during the process of transition to a system of higher education outside their home country. Despite the trends in students’ global mobility and implications for international students’ transitions, scholarship about international students does not examine students’ experiences with the transition process to a new country and system of higher education. Related models were developed with American organizations and individuals, making it unlikely that they would be culturally transferable to Chinese international students’ transitions. This study used qualitative methods to deepen the understanding of Chinese international students’ transition processes. Grounded theory methods were used to invite the narratives of 18 Chinese international students at a large public American university, analyze the data, and build a theory that reflects Chinese international students’ experiences transitioning to American university life. Findings of the study show that Chinese international students experience a complex process of transition to study in the United States. Students’ pre-departure experiences, including previous exposure to American culture, family expectations, and language preparation, informed their transition. Upon arrival, students navigate resource seeking to fulfill their practical, emotional, social, intellectual, and ideological needs. As students experienced various positive and discouraging events, they developed responses to the pivotal moments. These behaviors formed patterns in which students sought familiarity or challenge subsequent to certain events. The findings and resulting theory provide a framework through which to better understand the experiences of Chinese international students in the context of American higher education.

Introduction : Extenso, le centre de référence en nutrition de l’Université de Montréal, a développé les formations Croqu’Plaisir destinées aux intervenants en services de garde à la petite enfance et des nutritionnistes furent sélectionnées afin de les déployer au Québec. Étant donné le volume imposant de nouvelles connaissances à intégrer pour les diététistes-nutritionnistes, l’utilisation d’un outil pédagogique visant à structurer la pensée semblait pertinente. Cette étude avait pour objectif de décrire l’utilisation de cartes conceptuelles par des nutritionnistes formatrices à la petite enfance au Québec. Méthode : Les nutritionnistes formatrices ont assisté à une formation sur les cartes conceptuelles qui leur a permis de développer une carte conceptuelle à l’aide du logiciel CmapTools sur un sujet de leur choix. Puis, leurs perceptions furent recensées lors d'entrevues dirigées et individuelles. Résultats : 8 diététistes-nutritionnistes possédant de 2 à 15 ans d’expérience et ayant animé de 0 à 32 formations Croqu’Plaisir ont participé à l’étude. Les participantes de l’étude ont affirmé être assez autonomes pour utiliser les fonctions de base du logiciel, mais ont vécu des difficultés lors de la conception de leur carte. Conclusion : Plusieurs commentaires des participantes révèlent des barrières à leur utilisation, soit le temps, la résistance au changement et les barrières organisationnelles. Pour que la place des cartes conceptuelles en nutrition se développe et que leur utilisation soit valorisée, un contexte propice à leur utilisation doit être crée, tant d’un point de vue personnel qu’organisationnel, tant en milieu académique que professionnel.

Introduction : Les taux d’obésité et de diabète de type 2 et leurs complications sont plus élevés chez les populations autochtones que chez la population générale. Une des raisons pour ces taux très élevés de complications est la résistance culturelle des autochtones envers les soins de santé contemporains souvent dus aux traitements culturellement inadéquats pour ces affections. Afin d’adresser cette problématique, l’équipe sur les médecines autochtones antidiabétiques des Instituts de recherche en santé du Canada (ÉMAAD-IRSC) a étudié 17 plantes de la pharmacopée traditionnelle des Cris de la Nation de la Baie James, dont le peuplier baumier Populus balsamifera. Objectifs : Le but de cette présente étude est d’examiner les effets de P. balsamifera sur les contenus lipidiques de l’intestin ainsi que la composition des protéines clés impliquées dans le métabolisme des lipides. Matériel et méthodes : Les souris étaient assignées à huit semaines de diètes, soit la diète standard (CHOW), une diète à forte teneur lipidique (HFD) ou une HFD avec ajout de 125 mg/kg de Populus balsamifera. Résultats : Les résultats ont montré que les teneurs totales de l’intestin en cholestérol, en phospholipides et en triglycérides ne sont pas influencées par l’absence ou la présence de l’extrait de P. balsamifera. La teneur en acides gras a significativement augmenté dans le traitement HFD comparé au groupe contrôle CHOW. Le traitement avec P. balsamifera a significativement réduit le contenu d’acides gras dans le jéjunum vers des valeurs observées pour la diète contrôle. Une modification non significative a été notée dans l’expression des protéines FAS, CPT-1, ACC-P. Conclusion : Ces résultats renforcent davantage le potentiel d’utilisation de l’extrait de peuplier baumier dans le contexte de forte prévalence d’obésité dans les populations autochtones.

Prior to 2000, there were less than 1.6 million students enrolled in at least one online course. By fall 2010, student enrollment in online distance education showed a phenomenal 283% increase to 6.1 million. Two years later, this number had grown to 7.1 million. In light of this significant growth and skepticism about quality, there have been calls for greater oversight of this format of educational delivery. Accrediting bodies tasked with this oversight have developed guidelines and standards for online education. ^ There is a lack of empirical studies that examine the relationship between accrediting standards and student success. The purpose of this study was to examine the relationship between the presence of Southern Association of Colleges and Schools Commission on College (SACSCOC) standards for online education in online courses, (a) student support services and (b) curriculum and instruction, and student success. An original 24-item survey with an overall reliability coefficient of .94 was administered to students (N=464) at Florida International University, enrolled in 24 university-wide undergraduate online courses during fall 2014, who rated the presence of these standards in their online courses. The general linear model was utilized to analyze the data. The results of the study indicated that the two standards, student support services and curriculum and instruction were both significantly and positively correlated with student success but with small R2 and strengths of association less than .35 and .20 respectively. Mixed results were produced from Chi-square tests for differences in student success between higher and lower rated online courses when controlling for various covariates such as discipline, gender, race/ethnicity, GPA, age, and number of online courses previously taken. A multiple linear regression analysis revealed that the curriculum and instruction standard was the only variable that accounted for a significant amount of unique variance in student success. Another regression test revealed that no significant interaction effect exists between the two SACSCOC standards and GPA in predicting student success. ^ The results of this study are useful for administrators, faculty, and researchers who are interested in accreditation standards for online education and how these standards relate to student success.^
